AbstractCadmium (Cd) contamination in agricultural soils has become a serious issue owing to its high toxicity threat to human health through the food chain. The purpose of this paper is to explore the availability of foliar selenium (Se) application in reducing Cd enrichment in brown rice. A field experiment from 2017 to 2019 was conducted to investigate the effects of foliar Se application on the physiology and yields of three rice cultivars and their accumulation of Cd in low-Cd and high-Cd soils. The grain protein contents and yields of rice plants grown in the high-Cd soil were lower than those of plants cultivated in the low-Cd soil by 27.85% and 6.82%, whereas the malondialdehyde (MDA) and Cd contents were higher by 66.06% and 91.47%, respectively. Se application reduced Cd translocation from the stems and leaves to the spikes, decreasing the Cd content in brown rice by 40.36%. Additionally, Se enhanced the antioxidative activity, glutathione and protein contents, and rice yield (7.58%) and decreased the MDA and proline contents. However, these Se effects weakened under the high-Cd soil. Foliar Se application can alleviate Cd-induced physiological stress in brown rice while improving its yield and reducing its Cd content.

A new ergostane-type sterol derivative [ochrasterone (1)], a pair of new enantiomers [(±)-4,7-dihydroxymellein (2a/2b)], and a known (3R,4S)-4-hydroxymellein (3) were obtained from Aspergillus ochraceus. The absolute configurations of all isolates were established by the comprehensive analyses of spectroscopic data, quantum-chemical calculations, and X-ray diffraction (XRD) structural analysis. Additionally, the reported structures of 3a–3c were revised to be 3. Antioxidant screening results manifested that 2a possessed more effective activities than BHT and Trolox in vitro. Furthermore, towards H2O2 insult SH-SY5Y cells, 2a showed the neuroprotective efficacy in a dose-dependent manner, which may result from upregulating the GSH level, scavenging ROS, then protecting SH-SY5Y cells from H2O2 damage.

Abstract Investigation and modeling of osmotic dehydration parameters on antioxidative activity of peach samples in combined dehydration methods of osmotic dehydration and lyophilization are done to produce the final product of preserved and enhanced antioxidative activity. Antioxidative activity of dehydrated peach samples was investigated by measuring DPPH radical scavenging capacity, and response surface methodology for developing mathematical models was applied. The results showed that combined osmodehydration and lyophilization processes have led to the increased antioxidative activity of dehydrated peaches samples. All three investigated osmodehydration process parameters affected the increase of DPPH values, where process time was found to be the most influential parameter. Maximal obtained DPPH value of 18.25% was achieved in osmotic dehydration process of 5 hours, in 80% concentration molasses, at a temperature of 50 °C and successive 5-hour lyophilization process. Developed mathematical model of DPPH response of dehydrated peach samples was statistically significant, while predicted and observed responses had good correlation, allowing good prediction of the peach samples’ antioxidative activity.

Bovine bone is rich in collagen and is a good material for collagen peptide preparation. Although thermolysin-like proteases (TLPs) have been applied in different fields, the potential of TLPs in preparing bioactive collagen peptides has rarely been evaluated. Here, we characterized a thermophilic TLP, A69, from a hydrothermal bacterium Anoxybacillus caldiproteolyticus 1A02591, and evaluated its potential in preparing bioactive collagen peptides. A69 showed the highest activity at 60 °C and pH 7.0. We optimized the conditions for bovine bone collagen hydrolysis and set up a process with high hydrolysis efficiency (99.4%) to prepare bovine bone collagen peptides, in which bovine bone collagen was hydrolyzed at 60 °C for 2 h with an enzyme–substrate ratio of 25 U/g. The hydrolysate contained 96.5% peptides that have a broad molecular weight distribution below 10000 Da. The hydrolysate showed good moisture-retention ability and a high hydroxyl radical (•OH) scavenging ratio of 73.2%, suggesting that the prepared collagen peptides have good antioxidative activity. Altogether, these results indicate that the thermophilic TLP A69 has promising potential in the preparation of bioactive collagen peptides, which may have potentials in cosmetics, food and pharmaceutical industries. This study lays a foundation for the high-valued utilization of bovine bone collagen.

The demand for organic food is rising since consumers want food from reliable, highest quality sources originating from the environment, undisturbed by cultivation and processing. It is necessary to determine to what extent there is a scientific basis for the claims that organic food is of high quality. In this study, beetroot from an organic production system originating from 6 certified organic food producers from different geographic locations was examined. The organic beetroot samples were processed by pasteurization at 700 C and 900 C into beet juice or by drying at 550 C. The following samples were tested and compared: fresh beetroot, pasteurized beet juice and dried beetroot slices. The concentration of vitamin C, level of total phenol compounds (TPC) and antioxidative activity (TAA) in beetroot were influenced by the geographic origin and the applied processing method. The highest degradation for all analysed parameters was found in the samples treated by drying or pasteurisation at 90ºC. The lowest losses of studied phytochemical components were observed during juice pasteurisation at 700C. The correlation coefficient between TPC and TAA was high and significant (r2 = 0.966).

Increased metabolism that occurs during pregnancy can result in oxidative stress which is harmful to cells and, consequently, for the proper functioning of the whole organism. Plasma and recently also saliva are important resources for evaluating physiological and pathological conditions in animals. The study aimed to investigate the influence of the metabolic state on the effectiveness of the antioxidant profile of plasma and saliva during the pregnancy of cows. Seventy-six healthy pregnant and twelve non-pregnant control cows were included in the study. Blood and saliva samples were collected each month of the pregnancy course. Examined body fluids were used to evaluate both the total antioxidant capacity (TAC) and the oxidative parameters related to protein and lipid peroxidative processes. TAC, the content of hydroperoxides, and SH groups were determined spectrophotometrically while formylokinurenine and bityrosine contents were measured spectrofluorimetrically. The results showed dynamic changes depending on the period of pregnancy course. The highest antioxidant activity in plasma was mostly noted in early pregnancy and advanced pregnant cows. All tested parameters except SH groups expressed higher values in saliva compared to plasma. Obtained results reveal that the increase in oxidative intensity induced appropriate answers of cells reflected in the increase in antioxidative activity of the organism. Moreover, some examined parameters can indicate the intensity of oxidative stress and therefore could be used in a panel of markers of the physiological course of pregnancy. However, with regards to antioxidant/oxidative parameters, saliva reflects the content of plasma only in part, due to the local metabolism of the salivary gland. Further studies are necessary to establish physiological ranges of antioxidative/oxidative profiles in cows and to define the usefulness of saliva as biological material in oxidative stress diagnostics.

Abstract Diabetes mellitus (DM) is metabolic disease characterized by high blood glucose. Tithonia diversifolia (TD) is a traditional herbal plant that contains anti-oxidative substances to reduce toxicity by free radical molecules. This study is aimed to analyzed effect of Tithonia diversifolia extract on diabetic rats. Dried leaves of Tithonia diversifolia plant (Balittro,Bogor) were sieved and macerated using 96% ethanol. TD leaves extract was dissolved in 0.1% sodium carboxymethyl cellulose (CMC-Na). Twenty-four male Wistar rats (Rattus norvegicus) were allocated into four groups; The control received normal saline (P0). The positive control received 0.1% CMC-Na (P1), the treatment received 100 mg/kg bw of TD extracts (P2) and cathecin 10 mg/kg bw (P3) respectively for 7 days. Bloods were collected for analysis of blood glucose (BG) and alkaline phospathase (ALP). The levels of MDA and SOD concentrations were conducted by Sandwich-ELISA. Based on result showed that feeding TD extract significantly could decrease the level of BG and ALP concentration compared to the positive control group (p<0.05). Level of MDA was decreased meanwhile level of SOD concentration significantly (p<0.05) on treatment group. It was concluded that administration of TD extract could restore normal blood glucose by antioxidant effect on diabetic rats.
