Abstract“Eu,” is a traditional millet-based mild alcoholic beverage consumed by the Toto tribe of West Bengal. Eu is prepared through the fermentation of millet with locally groomed starter culture “Moaa.” The study highlighted the overview of the traditional process of Eu preparation along with its molecular and biochemical characterization. Semi-structured interviews were conducted for collecting the ethnobotanical data and the samples. We have also included qualitative assays like acute toxicity, antioxidant, gas chromatography-mass spectrometry (GC-MS), molecular docking, and physiochemical characteristics such as pH and alcohol content. Moreover, metagenomics of the starter culture has been reported. This type of study on Eu has not been done previously. Therefore, it seems to be a pioneer report especially on the metagenomic analysis of Eu. Results revealed that Eu has a very low alcohol content (approximately 1-3%) and a high antioxidant capacity. GC-MS analysis identified thirteen different bioactive compounds. Metagenomics analysis revealed that the Eu has a high source of various beneficial gut microflora. Overall Lactobacillus, Lactococcus, Enterococcus, Leuconostoc, and Pediococcus are dominant genera identified in the starter culture. The present study revealed that the consumption of Eu is safe and has the potential to scavenge reactive oxygen species (ROS). Hence, the commercialization of Eu can be an alternative source of income for the poor endangered Toto tribe.

This study investigates the use of sprouted oat flour as a substrate to develop a novel gluten-free beverage by fermentation with a probiotic (Lactobacillus plantarum WCFS1) starter culture. Physicochemical, microbiological, nutritional and sensory properties of sprouted oat fermented beverage (SOFB) were characterized. After fermentation for 4 h, SOFB exhibited an acidity of 0.42 g lactic acid/100 mL, contents of lactic and acetic acids of 1.6 and 0.09 g/L, respectively, and high viable counts of probiotic starter culture (8.9 Log CFU/mL). Furthermore, SOFB was a good source of protein (1.7 g/100 mL), β-glucan (79 mg/100 mL), thiamine (676 μg/100 mL), riboflavin (28.1 μg/100 mL) and phenolic compounds (61.4 mg GAE/100 mL), and had a high antioxidant potential (164.3 mg TE/100 mL). Spoilage and pathogenic microorganisms were not detected in SOFB. The sensory attributes evaluated received scores higher than 6 in a 9-point hedonic scale, indicating that SOFB was well accepted by panelists. Storage of SOFB at 4 °C for 20 days maintained L. plantarum viability and a good microbial quality and did not substantially affect β-glucan content. SOFB fulfils current consumer demands regarding natural and wholesome plant-based foods.

Abstract Local knowledge of biodiversity has been applied in support of research focused on utilizing and management of natural resources and promotion of conservation. Among these resources, Pequi (Caryocar brasiliense Cambess.) is important as a source of income and food for communities living in the Cerrado biome. In Pontinha, a “quilombola” community, which is located in the central region of State of Minas Gerais, Brazil, an ethnoecological study about Pequi was conducted to support initiatives for generating income for this community. Data were collected through semi-structured interviews, participant observation, and crossing. The most relevant uses of Pequi were family food (97%), soap production (67%), oil production (37%), medical treatments (17%), and trade (3%). Bees were the floral visitors with the highest Salience Index (S=0.639). Among frugivores that feed on unfallen fruits, birds showed a higher Salience (S=0.359) and among frugivores who use fallen fruits insects were the most important (S=0.574). Borers (folivorous caterpillars) that attack trunks and roots were the most common pests cited. According to the respondents, young individuals of Pequi are the most affected by fire due to their smaller size and thinner bark. Recognition of the cultural and ecological importance of Pequi has mobilized the community, which has shown interest in incorporating this species as an alternative source of income.

OBJETIVE: Greater information regarding motivations and treatment barriers faced by substance-dependent individuals has clinical and public health implications. This study aimed to formulate hypotheses regarding psychological, social and family variables that can be constructed as motivations or subjective barriers for the early seeking of formal treatment. METHODS: A qualitative study was conducted in an intentional sample (selected through saturation and variety of types) of 13 substance-dependent individuals who sought treatment. In-depth, semi-structured interviews were conducted using open questions, and the transcribed data were subjected to qualitative analysis. RESULTS: Four types of spontaneous harm reduction measures were identified, according to the subjective logic of each participant: having some periods at rest (not using and recovering from adverse effects); caretaking by close acquaintances (relatives, partners, drug dealers and alcoholic beverage sellers); selectivity regarding substance source, type and means of administration; establishing "healthy" limits of ingestion. CONCLUSIONS: The measures identified might represent barriers to the early seeking of treatment but might also represent spontaneous learning of abilities beneficial to future treatment. Health care professionals should take into consideration their existence and should address them in clinical settings. Issues representative of the formulated categories should be presented in structured questionnaires used in future quantitative studies of barriers to treatment in this population.

Although according to some scholars, Serbia does not have great immigration potential, there is more and more research within social science?s framework about immigrants in Serbia. However, the majority of these papers focus on current ?migration crisis? and, in relation to this, asylum seekers and irregular migrants. Therefore, this paper has had manifold aims. Firstly, the paper has drawn attention to the anthropological study of foreigners who live and work in Serbia. Secondly, it has revealed some of the problems they had been confronted with in reality. Within this framework, the focus was on highly qualified female foreigners from the EU countries who came for love or/and work which is a topic that does not occupy a prominent place in anthropological research in Serbia. However, with regard to the EU-integration of Serbia and Europeanization of migratory policies, the research of personal experiences of foreigners living in Serbia could signify the gaps in migrants? integration policy and in the adaptation of migration strategies. Thus, in this research were used in-depth semi-structured interviews conducted in 2016 in Belgrade as a method of collecting data and the ?bottom-up? approach. As a result, in this paper were analyzed narratives of a German and a British woman about their everyday experiences connected with their residing and working status. Their narratives showed their struggle with Serbian bureaucracy and related to this, how they legalized their ?migratory status?. Furthermore, in the analysis of the micro context the term ?ethnography of particular? was used, an approach developed by Lila Abu-Lughod in order to, one the one hand, avoid generalization and, on the other, to focus on individual life histories, which is an approach usually used in socio-anthropological studies. In particular, the paper stresses the relevance of individual strategies used for regulation of residence of foreigners in Serbia. Both British and German woman are married to Serbs, have no children, speak The Serbian language, socialize mainly with the Serbs and live and work in Belgrade. While German woman came during Milosevic?s regime in 1999, the British woman came in 2002. Although they did not suffer from ?professional deskilling?, which is typical for female migration in general, they both had to prequalify in order to find a job in Serbia. However, they both found it was easier to regulate their residence status through family, not working, visa, especially before new legal documents concerning foreigners? status were introduced. For instance, the most important legal document adopted as part of EU-integration process are Law on Foreigners (2008), Law on Migration Management (2012) and Law on Employment and Work of Foreign Citizens (2014). Foreigners living in Serbia represent the important group as many of them either work or use their pensions in Serbia. Therefore, having in mind the importance of Europeanization of migratory strategies in Serbia within Europeanization of Serbia and EU-integration process in general and possible migration of EU nationals to Serbia, this paper discussed the importance of individual (working) migration to Serbia on a micro level.

Abstract After the publication of high levels of acrylamide (AA) in food, many research activities started all over the world in order to determine the occurrence and the concentration of this substance in various types of food. As no validated methods were available at that time, interlaboratory studies on the determination of AA in food were of the highest priority. Under the boundary conditions of applying well-established evaluation schemes, the results of 2 studies conducted by the Federal Institute for Risk Assessment (BfR) in Germany and by the European Commission's Directorate General Joint Research Center (JRC) exhibited an overall acceptable performance of the participants in these studies. Nevertheless, many laboratories showed problems in determining AA in food with a complex matrix such as cocoa. The results of analysis also showed a broader variation of AA for samples with low AA concentrations and indicated a bias of the results obtained by gas chromatography–mass spectrometry without derivatization. Improvements of the performance of some laboratories appeared to be necessary.

Although a growing body of scholarship seeks to understand the motivations behind the ‘Brexit’ vote – including that which centralises explorations of racism, nationalism and post-colonialism – little consideration has been given to the ways in which ‘post-race’ racisms underpin the narratives of Leave voters. This article draws on data generated through 13 semi-structured interviews to examine the subtle and subterranean ways in which xeno-racism is articulated in the accounts of some Leave voters in the Greater Manchester city of Salford: a city that saw a higher percentage of the electorate (56.8%) vote to leave the EU than the national average (51.9%). Whilst restricting immigration was a key motivator of Leave voters in our research, interviewees vehemently rejected accusations of racism. Instead, couching their views in seemingly non-racial ways, they framed their concerns about immigration as a ‘legitimate’ response to a victimised whiteness. Thus, in discussing our data, we argue that far from living in a ‘post-racial’ epoch, racisms continue to thrive through new modes of articulation. These new racisms emerge from the shadows at key times, such as the EU Referendum, and refashion themselves in ways that are considered more palatable than the older (explicit) racisms of past.

Chicken eggs provide essential nutrients to consumers around the world. Although both genetic and environmental factors influence the quality of eggs, it is unclear how these factors affect the egg traits including egg metabolites. In this study, we investigated breed and feed effects on 10 egg traits, using two breeds (Rhode Island Red and Australorp) and two feed conditions (mixed feed and fermented feed). We also used gas chromatography–mass spectrometry (GC–MS/MS) to analyze 138 yolk and 132 albumen metabolites. Significant breed effects were found on yolk weight, eggshell weight, eggshell colors, and one albumen metabolite (ribitol). Three yolk metabolites (erythritol, threitol, and urea) and 12 albumen metabolites (erythritol, threitol, ribitol, linoleic acid, isoleucine, dihydrouracil, 4-hydroxyphenyllactic acid, alanine, glycine, N-butyrylglycine, pyruvic acid, and valine) were significantly altered by feed, and a significant interaction between breed and feed was discovered in one albumen metabolite (N-butyrylglycine). Yolk and albumin had higher levels of sugar alcohols when hens were fed a fermented diet, which indicates that sugar alcohol content can be transferred from diet into eggs. Linoleic acid was also enriched in albumen under fermented feed conditions. This study shows that yolk and albumen metabolites will be affected by breed and feed, which is the first step towards manipulating genetic and environmental factors to create “designer eggs.”
