Tomato is one of the high antioxidant potential vegetables. Nowadays, there are many techniques of tomato processings instead of fresh consumption, i.e. boiled, steamed, juiced and sauteed. Every treatment of cooking will influence the chemical compound inside the fruits and the body's nutrition intake. It is important to conduct the research on antioxidant compound especially lycopene, β-carotene, vitamin C, α-tocopherol, and its activity after processing. This research has been done using the experimental method. Tomatoes were cooked into six difference ways, and then it was extracted using the same procedure continued with antioxidant measurement. The research results showed that steaming had promoted the higher antioxidant numbers (lycopene. α-tocopherol, β-carotene and vitamin C) and higher TCA and antioxidant activities in the tomatoes than other processings. It was indicated that steaming was the best way to enhance amount, capacity and activities of antioxidants of the tomatoes.

<p><strong>Object: </strong>The aim of this study was to evaluate the antioxidant activities of <em>Tamus communis</em> L. (<em>T .communis</em>) roots. This plant is used in folk medicine in the treatment of rheumatism, arthritis and lumbago.</p><p><strong>Methods</strong>: The extraction of polyphenols has been followed by the determination of total polyphenols and flavonoids. The methanol extract (MeOHE) was chromatographied on a silica gel column. The column was eluted with chloroform and then with chloroform /methanol mixtures of increasing polarity, 6 main fractions (FI--FVI)) were collected and grouped according to their TLC (Thin layer chromatography). Several methods were used to evaluate the <em>in vitro</em> antioxidant activity such as DPPH (2,2'-diphenyl-1-picrylhydrazy), bleaching of β-carotene for 24 hours, lipid peroxidation and anti-hemolytic activity. An <em>in vivo</em> approach was carried out on mice treated with CE (crud extract) at a dose of 100 mg / Kg / day for 21 consecutive days, and one group was treated with vitamin C (Vit C 50 mg/kg) as a standard drug. To determine the improvement of antioxidant potential, basic biochemical parameters were used in tissue (liver), plasma and whole blood.</p><p><strong>Results</strong>: The results showed that the highest level of polyphenols was recorded in FII (73.143±0.009<strong> </strong>mg GA-Eq/g extract (Gallic Acid Equivalent)) / g of extract) followed by MeOHE (69.786±0.10 mg GA-Eq/g extract). Total flavonoid contents of extracts / fractions showed that MeOHE contains the highest level. Inhibition of DPPH radical showed that MeOHE (0.1187 ± 0.025 mg / ml) and CE (0.2363 ± 0.019 mg / ml) have the most efficient antioxidant activity.  All the extracts were capable of inhibiting the bleaching of β-carotene by scavenging linoleate derived free radicals, and all the studied extracts have a very important antihemolytic activity (p&lt;0.001) and revealed an extension of hemolysis half time from 70.34±2.15 min of CTL (AAPH (2,2-azo- bis (2-amidinopropane) dihydrochloride)) and 207 ± 5.65 min for FI. The in vivo assay was</p><p>exhibited a significant decrease (54.09%) of the content of malondialdehyde (MDA) in the liver and increased glutathione (GSH) and catalase (47.30% and 46.87% respectively).</p><p><strong>Conclusion</strong>: These findings suggest that the extract obtained from <em>T.  communis</em> have active substances contributing to the increase in natural antioxidant potential.</p>

The aim of the study was to evaluate the impact of processing by cooking in natura fruits on the content of bioactive compounds - vitamin C and ascorbic acid, phenolic compounds, flavonoids, carotenoids and anthocyanins, lycopene and β-carotene - and on antioxidant activity - DPPH and FRAP - of 9 varieties of commercial and non-commercial tomatoes. The fruits were harvested when they reached the point of physiological maturation, selected and evaluated in natura, and after grinding and cooking for 30 minutes. At the end of the experiment it was found that all bioactive compounds analyzed showed quantitative reductions when the fruits were processed, with cherry cultivars - 7, 8 and 9 - those that showed superior results compared to different bioactive compounds evaluated, proving to be interesting to be better explored. Regarding the antioxidant activities, the processed fruits of these cultivars showed less losses showing potential to be submitted to processing.

Antioxidant activities of acetone and ethyl acetate extracts from Metaplexis japonica Makino, one of famous medicine plants in the eastnorth region of China, named luomo in Chinese, were examined by a DPPH (1,1-Diphenyl-2-picrylhydrazyl) radical-scavenging assay and a β-carotene-linoleic acid test. In DPPH, the antioxidant activity of the acetone extracts, ethyl acetate extracts and derivative were IC50 were 313.21, 266.92 and 118.78μg/mL, respectively. In the β-carotene-linoleic acid test, IC50 were 285.09, 351.57 and 123.89μg/mL. It was concluded that Metaplexis japonica Makino and its derivatives might be a potential natural source of antioxidants .

The objective of the current study was to evaluate the antioxidant activity and enzyme inhibitory effect of different parts of medlar including fruit, leaf and flower bud by using various in vitro methods, and also determination of total phenolic and flavonoid content in the samples. Ethanol extracts of medlar parts were prepared and their antioxidant activities were determined using 1,1-diphenyl-2-picryl-hydrazil (DPPH•) scavenging and β-carotene bleaching methods. The leaf extract showed the strongest antioxidant activity. DPPHradical scavenging activity was in the order of BHA > leaf > bud > fruit. This ordering was the same for β-carotene bleaching activity, tocopherol > leaf > bud > fruit. The highest total phenolic (60.3 ± 1.69 mg GAE g-1 extract) and flavonoid (14.77 ± 1.15 mg QE g-1 extract) content were determined in leaf extract. For possible antidiabetic effects of extracts, α-amylase and α-glucosidase inhibitory activities were investigated, the bud extract showed the highest inhibition activities among the all extracts.

Cucurbitaceae is a family of health-promoting plants due to their compounds with beneficial effects. The aim of this study was to analyze, for the first time, the chemical composition, the antioxidant activity and the metal chelating properties of fruit juices obtained from four different species of the Cucurbitaceae family cultivated in Romania, namely Momordica charantia, Cucumis metuliferus, Benincasa hispida and Trichosanthes cucumerina. The samples of juice were analyzed by high-performance liquid chromatography (HPLC) and all the four species displayed high levels of the two triterpenes, oleanolic and ursolic acids, and also in phenolic compounds, including catechin, (−)-epicatechin and gallic acid. The juices demonstrated significant antioxidant activity against the free radical 2,2-diphenyl-1-picrylhydrazyl (ranging from 20 to 95%,), a good iron binding ability (ranging from 7.45 ± 0.28% to 86.95 ± 0.97%) and also promising antioxidant potential against the ABTS radical (ranging from 4.97 to 32.60 μETx/mL juice). Our findings raise interesting questions for further research on Cucurbitaceae fruit juices and, consequently, their very good antioxidant potential suggests these fruits should be further explored for their protective effect against oxidative damage. This is the first time the chemical composition and antioxidant activities of fruit juices from these four Romanian Cucurbitaceae varieties have been investigated.

Abstract In recent years, natural products with antifungal and antioxidant activities are being increasingly researched for a more sustainable alternative to the chemicals currently used for the same purpose. The plant pathogenic fungus Alternaria alternata is a causative agent of diseases in citrus, leading to huge economic losses. Antioxidants are important for the production of medicines for various diseases that may be related to the presence of free radicals, such as cancer, and in the cosmetic industry as an anti-aging agent and the food industry as preservatives. This study evaluated the antifungal and antioxidant potential of extracts of mature leaves of Myrcia splendens, a tree species that occurs in the Brazilian Cerrado. The antioxidant potential was analyzed by an assay of 1,1-diphenyl-2-picrylhydrazyl radical-scavenging method, and the antifungal activity was assessed through the evaluation of mycelial growth. Majority of the extracts exhibited a strong antioxidant activity, especially the acetonic extract (4A). The antioxidant activity may be related to the presence of phenolic compounds. However, the extracts showed no inhibitory activity of mycelial growth of the fungus tested, with the exception of dichloromethanic extract (2B), which had an inhibitory effect (10.2%) at the end of testing.

AbstractAntioxidant activity of the aerial part and bulbs of Allium paradoxum was investigated by eight in vitro assay systems. Extracts showed good antioxidant activity. IC50 for 1,1-diphenyl-2-picryl hydrazyl radical-scavenging activity was 890.9±43.2 and 984.9±33.5 µg/ml for the aerial part and bulbs, respectively. The aerial parts have better reducing power than bulb extracts but not comparable with Vitamin C (P>0.001). Extracts showed weak Fe2+ chelating ability, the IC50 being 959±47 and 530±24 µg/ml for bulbs and aerial parts, respectively. Both tested extracts exhibited good hydrogen peroxide scavenging in a concentration dependent manner. They exhibited good antioxidant activity against the hemoglobin-induced linoleic acid system that was comparable with vitamin C (P>0.01). They showed good activity against cumene hydro peroxide induced hemolysis in RBCs. In addition, they possessed antihemolytic activity. The extract from aerial parts had significantly higher total phenol and flavonoid content than did bulbs. Amounts of eight elements (Cu, Mn, Zn, Fe, Ni, Pb, Cd and Cr) were also determined in the bulb and aerial part using atomic absorption spectroscopy. They contained higher Fe and Mn contents than other elements.

This study used S. polycystum and T. deccurens were extracted with various solvents (n-hexane, ethyl acetate and ethanol) to determine phytochemical screening and antioxidant activities. Extraction of samples by maceration method, antioxidant activity assay using the immersion method of DPPH (1,1-Diphenyl-2-picryl Hidrazil) measured absorption at a wavelength of 515 nm and compared with the control of antioxidant vitamin C. The results showed that antioxidant activity of the methanol, ethyl acetate, n-hexane extract of S. polycystum have low antioxidant activity with the value IC50 340,06, 180,54, and 502,25 mg/mL. Methanol, ethyl acetate, n-hexane extracts of  T. deccurens have low antioxidant activity with value IC50 491,02, 411,80, and 502,7 mg/mL. This potential is lower than vitamin C IC50 value of 1,72 mg/mL.

This paper aimed at studying the antioxidant efficacy of the methanolic leaf extract of Clerodendrum splendens, a plant of the Lamiaceae family. Phytochemical tests carried out on extracts of Clerodendrum splendens leaves have been able to detect the presence of secondary metabolites such as Flavonoids, Tannins, Saponins and Terpenoids. The results of the antioxidant activity have shown that CSF2, CSF3 fractions and CSB, CSG fractions similarly inhibited hepatic lipids but significantly less than vitamin C. Compared to all fractions, the CSB fraction shows the best inhibitor on the peroxidation of hepatic lipids because at 150 μg/mL, there is a maximum activity (2.5 μg/mL of protein). However, it is found that CSF3, CSF2 and CSG have higher IC50 values than vitamin C (5.613±0.117) while CSEB, CSB and CSC fractions showed lower IC50 values than vitamin C, which is used as the reference reducing compound. The lower the IC50 value compared to vitamin C, the greater the antioxidant capacity of the plant extract. The results of this study suggest that Clerodendrum splendens represents an untapped source of compounds with potential antioxidant activity that could be explored in the development of new therapeutic natural products.
