The antioxidant activity of three lettuce varieties (Lactuca sativa L.) Emerald, Vera and Neva, cultivated in two kinds of protected spaces, a glasshouse and a plastic greenhouse, under controlled conditions, was determined. The content of antioxidant compounds: total phenols, flavonoids, L-ascorbic acid, ?-carotene and lycopene, were determined in ethanolic extracts of the lettuce with spectrophotometric methods. The largest content of total phenols (78.98 ? 0.67 mg GAE/g of dry extract) was found in ethanolic extract of the lettuce variety Neva cultivated in a plastic greenhouse, whereas the largest content of flavonoids (35.45 ? 0.95 mg RU/g of dry extract) was displayed in the lettuce Emerald cultivated in a glasshouse. It was observed that the lettuce cultivated in the glasshouse contained a somewhat higher content of L-ascorbic acid than the lettuce same variety from plastic greenhouse. The content of lycopene in the examined lettuce is negligible, and the content of ?-carotene is low. On the other hand, the high content of phenolic components causes favourable antioxidant properties found in all varieties of examined lettuce.

Pasta is one of the basic foods of the Mediterranean diet and for this reason it was chosen for this study to evaluate its antioxidant properties. Three types of pasta were selected: buckwheat, rye and egg pasta. Qualitative–quantitative characterization analyses were carried out by HPLC-DAD to identify antioxidant compounds. The data showed the presence of carotenoids such as lutein and polyphenols such as indoleacetic acid, (carotenoids from 0.08 to 0.16 mg/100 g, polyphenols from 3.7 to 7.4 mg/100 g). To assess the effect of the detected metabolites, in vitro experimentation was carried out on kidney cells models: HEK-293 and MDCK. Standards of β-carotene, indoleacetic acid and caffeic acid, hydroalcoholic and carotenoid-enriched extracts from samples of pasta were tested in presence of antioxidant agent to determine viability variations. β-carotene and indoleacetic acid standards exerted a protective effect on HEK-293 cells while no effect was detected on MDCK. The concentrations tested are likely in the range of those reached in body after the consumption of a standard pasta meal. Carotenoid-enriched extracts and hydroalcoholic extracts showed different effects, observing rescues for rye pasta hydroalcoholic extract and buckwheat pasta carotenoid-enriched extract, while egg pasta showed milder dose depending effects assuming pro-oxidant behavior at high concentrations. The preliminary results suggest behaviors to be traced back to the whole phytocomplexes respect to single molecules and need further investigations.

In order to demonstrate whether the known biological effects ofAloe vera(L.) Burm. fil. could correlate with the antioxidant activity of the plant, the antioxidant activity of the aqueous leaf extract was investigated. The present study demonstrated that the aqueous extract fromA. veraleaves contained naturally occuring antioxidant components, including total phenols, flavonoids, ascorbic acid, β-carotene and α-tocopherol. The extract exhibited inhibitory capacity against Fe3+/ascorbic acid induced phosphatidylcholine liposome oxidation, scavenged stable DPPH•, ABTS•+and superoxide anion radicals, and acted as reductant. In contrast, the leaf inner gel did not show any antioxidant activity. It was concluded that the known beneficial effects ofAloe veracould be attributed to its antioxidant activity and could be related to the presence of phenolic compounds and antioxidant vitamins.

Present study was directed to analyze and compare the bioactive compounds (total phenols, total anthocyanins), vitamins (ascorbic acid, β-carotene, vitamin A), minerals including Ca, Mg, Na, P, K, Fe, Cu, Zn, Co, Mn and heavy metals (Cd, Hg, Pb) of freeze-dried (lyophilized) phalsa pulp and seed powder. In lyophilized pulp powder (LPP) higher amount of total phenols (78.11 mg/100g), total anthocyanin (82.94 mg/100g), ascorbic acid (5.21 mg/100g), β-carotene (0.54 µg/100g), vitamin A (0.89 I.U.) were observed than lyophilized seed powder (LSP). Na, K, Mg and Co (0.41, 0.39, 1.08, 0.46 mg/100g, respectively) were higher in LPP as compared to LSP (0.29, 0.11, 0.76 and 0.40 mg/100g, respectively) whereas, Ca, P and Cu were detected more in LSP. This study opens the prospect of using dry phalsa powder in the preparation of various nutraceutical and functional foods for their therapeutic as well as prophylactic purposes.

The presence of natural antioxidant in plants is well known. Plant phenolics constitute one of the major groups of components that act as antioxidant and free radical terminator. Hence, this study focused on investigating the antioxidant activity of Celery plant (Apium graveolens L). The fresh leaves were collected, crushed and extracted with ethanol and acetone by maceration. The radical scavenging properties of the extracts were determined by measuring changes in absorbance of DPPH radical at a wave lenght of 517 nm by UV and ascorbic acid is used as the standard. It showed that the crude ethanolic extract has higher antioxidant activity compared to ascorbic acid and acetone extract with less scavenging activity. The values were (IC50 114.6 µg/mL) for ascorbic acid, (IC50 112 µg/mL) for the crude ethanolic extract and (IC50172 µg/mL) for crude acetone extract. The result shows that Celery plant grown in Jos possess good antioxidant properties which may be linked to the presence of phenolics and flavonoids in the plant, which justifies its use as a medicinal plant. This can be further investigated for the isolation and identification of active compounds of medicinal utilities.

Nowadays, the number of studies about fruit conservation as well as the benefits of consumption of foods rich in antioxidant compounds was increased. This study aimed to quantify antioxidant compounds and their activity and to evaluate the physical and chemical changes during the post-harvest storage of Eva's apple cultivars that were subjected to gamma irradiation at doses of 0; 0.5; 1.0 and 1.5 kGy. The antioxidant activity was measured by the 2.2-diphenyl-1-picrylhydrazyl (DPPH) and the β-carotene/linolenic acid methods. Levels of total phenolics, ascorbic acid, color, and soluble solids were evaluated. The results showed that, regardless of the irradiation dose, there was an increase in % SRL during post-harvest storage of Eva's apples. Low irradiation doses were able to preserve the phenolic compounds, maintain the ascorbic acid levels and avoid an increase in the soluble solids content.

Boletus edulisis a wild edible mushroom habitually consumed by rural populations. Ethanolic and methanolic extracts was obtained in cold and hot water from dried fruit bodies. The antioxidant activity of freeze-dried extracts fromB. eduliswere investigated using free radicals scavenging activity, reducing power, metal chelating effect, inhibition of lipid peroxidation, and the identification of antioxidant compounds. The levels of different compounds with antioxidant properties were higher in alcoholic extracts compared with aqueous extracts. Rosmarinic acid was the major phenolic compound, it being identified in a concentration between7±0.23and56±0.15 mg/100 g extract. A positive correlation between the content of total phenols, flavonoids, anthocyanins, and tocopherols, and the antioxidant capacity of the extracts was determined. The results showed that the ethanolic extract of Romanian wild mushroomB. edulisrepresents a natural source of functional compounds.

The tomato is a Solanaceae plant which globally has the second highest production rate, making it one of the most important vegetative products in global production and consumption. Furthermore, the tomato is valued for its antioxidant components, most notably vitamin C, phenolic components and carotenoids such as lycopene and β-carotene. The present study aimed to evaluate the influence of three drying temperatures (50, 60 and 70°C) on the physicochemical, microstructural, and antioxidant characteristics of the tomato. The study analyzed the parameters for color using the coordinates CIE L* a* b* and texture analysis using the methodology of TPA for instrumental analysis and PCA for data analysis, antioxidant capacity and content were measured by spectrophotometric methods and microestructure by Scanning Electron Microscope. The results showed changes in color for the tomato samples treated with 70°C. In addition, the texture of the samples treated at 60°C presented significant differences from the samples dried at 50 and 70°C regarding the fracturability, having a crispier texture and good balance between masticability and hardness. The total carotenoid content increased with the drying process, while the total phenol content decreased. The antioxidant activity was not affected by the temperature variation with respect to the fresh tomato.

This study was aimed at evaluating the antioxidant activity and efficacy of the ethanolic extract of the ultrasonic extracts of leek Allium porrum L. Ethanolic (50%; v/v) extracts of edible leek parts (stem and leaf) were prepared by ultrasound-assisted extraction, which was followed by evaluation of total phenols, flavonoids and antioxidant activity. Total phenols were determined using the modified Folin-Ciocalteu method. Antioxidant activity was assessed by scavenging the stable free radical 2,2-diphenyl-1-picrylhydrazyl (DPPH). The results of antioxidant activity were compared with control antioxidants: vitamin C and BHT. The higher content of phenols (69.46 mg GAE/g dry extract) and flavonoids (33.53 mg CE/g dry extract) was found in the ethanolic extract of leek stem. The measured values of IC50 were 98.90 g/ml and 61.05 g/ml for the ethanolic extract of leek leaf and stem, respectively.

In the last decades, it has been intensively studied natural alternatives to synthetic products. Chassalia kolly is one of the medicinal plants used traditionally for treatment of skin infections. This study aimed at identifying the diversity secondary metabolites, to investigate the antioxidant and anti-inflammatory activities of ethanolic extract of Chassalia kolly leaves. Total phenols were determined by Folin Ciocalteu method. The aluminum trichloride method has been used to quantify total flavonoids, while the determination of condensed tannins was carried out by the hydrochloric vanillin method. The antioxidant capacity was evaluated by 2, 2-diphenyl-l-picrylhydrazyl (DPPH), 2, 2'-Azino-bis- (3-ethylbenzothiazolin-6-sulfonic acid) (ABTS) and phosphomolybdenum methods. In vitro anti-inflammatory activity of ethanolic extract of Chassalia kolly leaves was evaluated by method membrane stabilization. In this results, Chassalia kolly leaves contain flavonoid, mucilages, anthocyans, sterols and terpenes, saponosides, alkaloids and reducing compounds. The contents of total phenols, total flavonoids and total tannins are respectively (20.41±2.11) µgGAE/mgDM; (30.29±2.18) µgQE/mgDM and (1.211±0.122)µgCE/mgDM. The results obtained during this work allowed us to assert that all extracts of the studied plant have very good antioxidant properties (IC50=0.05µg/µL). The ethanolic extract of the leaves of Chassalia kolly showed an anti-inflammatory activity more interesting than aspirin which is the reference compound used in this study.

ABSTRACT: The Brassicaceae plants are among the most consumed vegetables in the world. They feature a large biodiversity, in which landraces and primitive cultivars still play a major role on the cultivation systems of many countries. Brassicas and especially broccoli are closely linked to antioxidant compounds that play a key role for human health. This experiment aimed to characterize some Italian unknown broccoli landraces from the antioxidant point of view. Five landraces named BF, BF4, BFT, BB and BS were evaluated. The total antioxidant properties of broccoli were significantly different among ecotypes and the higher values were recorded in BS and BF4. Total phenols showed the higher values in BF4 and concerning the ascorbic acid content found in the different ecotypes results can be summarized in three groups: the first one is represented by BB with higher values, the second one by BF4 and BS and then BF and BFT. BB represented the lower amount of hydroxycinnamic acids, whereas BF4 showed quite higher sulforaphane content (+95%) than other cultivars. The high content of phenolic acids, vitamin C and antioxidant compounds make these broccoli landraces, still little known, an important natural source of dietary antioxidant.
