The work is aimed at assessing the vitamin value of yogurt after adding berries from the Lipetsk region retail chain to its recipe. The addition of crushed strawberries, cherries, blueberries and cranberries to yogurt preserves the organoleptic characteristics of the product within the GOST 31981-2013 standard. The introduction of strawberries, cherries and cranberries into the yogurt recipe gives the product a light pink, and blueberries - a light blue color. Of the berries used, only cranberries did not give the yogurt any taste. This berry acidified yogurt to the greatest extent. All the added fruits reduced the density of yogurt, especially strawberries. Judging by the acidity of the yogurt, the shelf life at a temperature of 4 oC of the control sample, as well as with the addi-tion of blueberries and strawberries, was the longest – 7 days. On the 6th day, the cherry variant went beyond the standard for acidity, on the 5th day - the cranberry variant. Taking into account the organoleptic parameters, the shelf life of acidity and the content of nutrients in yogurt, it is necessary to single out the option with the addition of blueberries as the most successful.

Improvement of consumer’s palatability of Heterotis niloticus was investigated by value addition with natural spices and salt to improve its  palatability and shelf-life. The major problem of H. niloticus is its poor taste, hence low demand and poor consumer’s acceptability which affects the market value. The objective of this study was to improve the palatability and shelf-life of H. niloticus using selected natural spices. Heterotis niloticus, procured and treated with natural spices and salt were allowed to drain for one hour, subjected to charcoal fired smoking kiln for 12 hours, cooled and stored for 8 weeks at ambient temperature before microbial analysis. The result showed that treatment 1 had the best quality (37.7%), followed by control sample (34.7%), and treatment 2 (28.9%), while the least was treatment 3 (21.6%). Microbial analysis shows that no Salmonella, Coliforms and E. coli were detected from the samples after smoking. Staphylococcus aureus count ranged from 2 × 102 to 9 × 102 but it was not detected in treatment 1. Improvement of the consumers’ palatability of H. niloticus and improved storage stability by spicing methods improved the  poor taste of H. niloticus which has been discriminated despites excellent muscle quality. Для обогащения хлебобулочных изделий используют биоактивированное зерно пшеницы, что обусловливает введение дополнительной стадии технологического процесса – биоактивации. Снизить трудоемкость и сократить продолжительность процесса приготовления зернового хлеба из биоактивированной пшеницы, что особенно важно в условиях предприятий малой мощности, позволяет применение технологии глубокой заморозки теста. Однако продолжительная заморозка снижает активность клеток бродильной микрофлоры теста, поэтому необходимо установить оптимальный срок хранения замороженного тестового полуфабриката. Для исследований зерно пшеницы предварительно очищали от сорной и зерновой примеси, мыли, оставляли для набухания в воде на 22–24 ч, проращивали в течение 11–12 ч и измельчали путем пропускания через матрицу с диаметром отверстий 2 мм. Тестовые полуфабрикаты изготавливали по рецептуре для хлеба «Айсбрэд», затем их подвергали шоковой заморозке при температуре –35°С и хранили при –18°С в течение 7, 14, 21 и 28 сут. Перед использованием тесто размораживали, полуфабрикат выбраживал, из него формовали тестовые заготовки массой 0,07 кг, которые после расстойки выпекали. Контролем служило тесто без заморозки, приготовленное по рецептуре для хлеба «Колосок». Через 20 ч после выпечки оценивали физико-химические и органолептические показатели изделий. Методом микроскопирования выявлено, что с увеличением продолжительности хранения в замороженных тестовых полуфабрикатах повышается содержание мертвых клеток дрожжей. Наименьшее количество их наблюдалось в образце теста без заморозки – 12,2%, что на 29,0% меньше, чем в образце замороженного теста при хранении 28 сут. Установлено, что при хранении замороженного теста в течение 7, 21 и 28 сут содержание восстановленного глутатиона в нем соответственно на 1,6; 7,4 и 7,8% выше, чем в тесте без заморозки. Количество выделенного диоксида углерода через 120 мин брожения в образцах замороженного теста, хранившихся 7, 14, 21 и 28 сут, было меньше в 1,4; 1,5; 2,5 и 2,8 раза соответственно, чем в контрольном образце. По показателям качества изделия, выпеченные из теста после заморозки и без нее, существенно не отличались. На основании результатов исследований рекомендовано хранить замороженный тестовый полуфабрикат для приготовления зернового хлеба при температуре –18°С не более чем 21 сут. For the enrichment of bakery products, bioactivated wheat grain is used, which leads to the introduction of an additional stage of the technological process – bioactivation. The use of deep-freezing technology allows you to reduce the labor intensity and reduce the duration of the process of preparing grain bread from bioactivated wheat, which is especially important in the conditions of small-scale enterprises. However prolonged freezing reduces the activity of the cells of the fermentation microflora of the dough, so it is necessary to establish the optimal shelf life of the frozen dough semi-finished product. For research, wheat grain was previously cleaned from weed and grain impurities, washed, left to swell in water for 22–24 hours, germinated for 11–12 hours and ground by passing through a matrix with a hole diameter of 2 mm. The dough pieces were made according to the recipe for «Aysbred» bread, then they were subjected to shock freezing at a temperature of –35°C and stored at –18°C for 7, 14, 21 and 28 days. Before use, the dough was thawed, the semi-finished product was fermented, and dough pieces weighing 0,07 kg were formed from it, which were baked after proofing. The control was the dough without freezing, prepared according to the recipe for bread «Kolosok». After 20 hours after baking, the physico-chemical and organoleptic parameters of the baked bread were evaluated. Microscopy revealed that with an increase in the shelf life of frozen semi-finished products, the content of dead yeast cells increases. Their lowest number was observed in the sample of the test without freezing – 12,2%, which is by 29,0% less than in the sample of the frozen test, stored for 28 days. It was found that in the frozen dough samples stored for 7, 21 and 28 days, the content of reduced glutathione was by 1,6; 7,4 and 7,8% higher respectively, than in the control sample. After 120 min of fermentation, the amount of carbon dioxide released in the frozen dough samples stored for 7, 14, 21 and 28 days was in 1,4; 1,5; 2,5 and 2,8 times less respectively, than in the test without freezing. In terms of quality, the products baked from the dough after freezing and without it did not differ significantly. Based on the research results, it is recommended to store the frozen test semi-finished product for the preparation of grain bread at a temperature of –18°C for no more than 21 days.

This article presents the results of studies of the properties of marmalade with natural plant cryoadditives during storage for 3 months (90 days). To improve the organoleptic characteristics and antioxidant properties of marmalade, plant additives of cryogenic origin were used, namely cryopastes from quince, apple, carrot, pumpkin, grapes, and cryopowders from rose hips, sea buckthorn, and grapes. It is shown that the use of plant cryoadditives makes it possible to increase the biological value and antioxidant properties of new types of marmalade. For new types of marmalade with cryoadditives, during its shelf life, these properties have not been studied earlier. However, it should be noted that such studies are necessary and relevant for solving the problem of preserving the quality indicators and antioxidant capacity of marmalade with cryoadditives. New kinds of marmalade have high organoleptic characteristics during the whole storage period. It is shown that the storage conditions of marmalade, according to current regulatory documentation, are suitable for new marmalade products, since the physico-chemical and microbiological indicators vary, but remain within acceptable limits. Thus, the moisture content decreases to almost 31%, the acidity rises by 12–16%, compared to freshly prepared samples. The content of reducing substances increases by 30–64%. It is determined that the value of the antioxidant capacity of all the samples developed is much higher – almost 2.3–8 times than the same figure for the control sample. After the storage period, the antioxidant capacity is reduced by 15–35%, but this data also significantly exceeds the antioxidant capacity of the control sample. Storage of marmalade with cryopastes and cryopowders for 90 days is possible, since all the basic physico-chemical, microbiological, and organoleptic indicators at the end of shelf life meet the requirements. Indicators of antioxidant capacity for them also remain at a fairly high level. New technologies of jelly-fruit marmalade with plant cryoadditives have been introduced at 4 enterprises. 2 utility model patents have been received, and regulatory documents have been developed and approved for the manufacture of new jelly products.

In the course of the work, the influence of the amount of crushed green buckwheat on the organoleptic characteristics of the product was studied, taking into account the degree of grinding. 1, 2, 3, 4 and 5% fraction of green buckwheat were added to the curd base. On the first day of storage, the chemical composition of the samples was analyzed. The results show that the percentage of fat in the image samples was increased compared to the control - from 1.77 to 1.88. The content of the proportion of protein in the control sample was 3.86%. An increase in the size of protein compression was noted in all samples. The ash content in the samples showed a tendency to increase in comparison with the control and varied in the range from 0.72 to 0.90%. The moisture content in the control sample was 86.67%, in the remaining samples - from 83.96 to 85.92%. In the course of the analysis, the change in the samples of the experiment with green buckwheat during storage was studied, taking into account the organoleptic indicators. Analysis of the data obtained shows that initially the pH changes little up to 15 days of storage, then gradually decreases. Initial CFU values were 6.00 ? 107 for sample (2%), 7.50 ? 107, 5.00 ? 107, and 6.50 ? 107 for sample (3%), sample (1%), and sample 2 (3% ). ) respectively. B shows a trend towards a tracked decrease before the end of the shelf life. The guaranteed shelf life of the green buckwheat curd product is 14 days at a temperature of 4 ± 2?С, which is experimentally substantiated. This storage time is a satisfactory indicator. The product is promising for sale to consumers.

The research was conducted in 2021 on the basis of the laboratory of the Department of Technolo-gy of Storage and Processing of Agricultural Products of the I. A. Bunin Yelets State University. The aim of the research was to find out the comparative effect of adding some fruits and berries on the vitamin value of kefir. As the main raw material for the experiment, drinking pasteurized milk was used according to the state standard 31450-2013. Cranberry berries were used frozen from the retail chain, the rest were collected in the Yelets district and frozen before the start of the experiment. Of all the berries used, only cranberries and mountain ash did not worsen the organo-leptic parameters of kefir. Judging by the acidity of kefir, the shelf life of the control sample and with cranberries was the longest – 14 days. On the 12th day, the options with mountain ash and black currant went beyond the standard for acidity. The shelf life of kefir with sea buckthorn fruits was only 9 days. The addition of fruits and berries to kefir increased the content of biologically active substances in it: rowan-dry substances, carotenoids and flavonols, and black currant-coloring substances and anthocyanins. Taking into account the organoleptic indicators, the shelf life for acidity and the content of useful substances in kefir, it is necessary to single out the option with the addition of rowan fruits as the most successful.

Abstract One of the actual areas of processing the aquatic biological resources is the production of chilled fish semi-finished products, the most prepared for heat treatment. Such products have a very limited shelf life, because fish raw materials have high enzymatic activity. This research work aimed to improve the technology of chilled fish semi-finished products from Japanese mackerel with an extended shelf life. To achieve this goal, Japanese mackerel was injected with multicomponent salting media, containing food additives that slow down microbial contamination, have a bacteriostatic effect and assist in improving the organoleptic characteristics of the finished product. New receptions of salting multicomponent compositions provide faster salting and ripening of raw materials compared to the control sample. Salt concentration in fish, amine nitrogen and peroxide value were determined by titration methods. The total number of mesophilic aerobic and facultative anaerobic microorganisms (КMAFAnM) in fish semi-finished products was determined by identifying the number of grown colonies of microorganisms on nutrient media from agar. The treatment of Japanese mackerel with developed salting media, including moisture-retaining components, organic acids and flavoring additives with anti-bactericidal properties, improves the organoleptic characteristics of the finished product, promotes more salting and maturation of fish, as well as reducing the number of microorganisms (KMAFAnM). The increase in amine nitrogen content ranged from 1.4 g/kg (at the beginning of the salting) to 1.55 g/kg in the control and up to 3.05 g/kg in the test samples by the end of the salting. Salt concentration in Japanese mackerel treated with control salting media amounted to 1.19%, new developed salting media - from 2.84% to 3.17%. The total abundance of microorganisms in Japanese mackerel was 2.0 x 102 CFU/g, after salting it decreased to 0.1 to 3.0 x 101 CFU/g depending on the formulation of media for salting. According to the research results, the rational duration of the salting of Japanese mackerel, with new media for salting was 4 to 5 h at a temperature of 6 °С to 8 °С. Along with the salting media developed by us, the use of modern packaging materials in the technology provided chilled culinary semi – finished products from Japanese mackerel with longer shelf life of up to 20 days at a temperature of 0 °С to 5 °C, and humidity 95% to 98%.

Extra virgin olive oil (EVOO) is one of the most distinctive ingredients of the Mediterranean diet. There are many properties related to this golden ingredient, from supreme organoleptic characteristics to benefits for human health. EVOO contains in its composition molecules capable of exerting bioactivities such as cardio protection, antioxidant, anti-inflammatory, antidiabetic, and anticancer activity, among others, mainly caused by unsaturated fatty acids and certain minor compounds such as tocopherols or phenolic compounds. EVOO is considered the highest quality vegetable oil, which also implies a high sensory quality. The organoleptic properties related to the flavor of this valued product are also due to the presence of a series of compounds in its composition, mainly some carbonyl compounds found in the volatile fraction, although some minor compounds such as phenolic compounds also contribute. However, these properties are greatly affected by the incidence of certain factors, both intrinsic, such as the olive variety, and extrinsic, such as the growing conditions, so that each EVOO has a particular flavor. Furthermore, these flavors are susceptible to change under the influence of other factors throughout the oil's shelf-life, such as oxidation or temperature. This work offers a description of some of the most remarkable compounds responsible for EVOO’s unique flavor and aroma, the factors affecting them, the mechanism that lead to the degradation of EVOO, and how flavors can be altered during the shelf-life of the oil, as well as several strategies suggested for the preservation of this flavor, on which the quality of the product also depends.

Представлен комплексный подход к оптимизации состава мучной поликомпонентной смеси для ржано-пшеничных хлебобулочных изделий, учитывающий химический состав и технологические свойства пищевых ингредиентов смеси, а также их влияние на основной технологически формирующий компонент – ржано-пшеничную муку. Проектирование состава поликомпонентных смесей осуществляли с помощью разработанной ранее программы. Было сгенерировано более 20 образцов модельных мучных смесей, из которых отобрано 4 образца с показателями биологической ценности не менее 70% для приготовления хлебобулочных изделий. Приготовление осуществляли ускоренным способом с использованием подкислителя «Лезизауэр», прессованных дрожжей и соли в количестве, % от массы смеси, 2,0; 2,2 и 1,5 соответственно. Воду вносили по расчету с учетом массовой доли влаги ингредиентов. Продолжительность брожения составляла 60–70 мин, расстойки – 35–40 мин. Изделия выпекали при (200 ± 10)ºС до температуры внутри мякиша 97–98ºС. В качестве контроля был приобретенный в торговой сети хлеб ржано-пшеничный «Спасский», выпеченный АО «Орловский хлебокомбинат». Установлено, что выпеченные образцы ржано-пшеничного хлеба из разработанных мучных поликомпонентых смесей имеют сбалансированный состав белков, жиров и углеводов – 1,0 : 0,8 : 3,9–4,8 соответственно и кальция, фосфора и магния – 1,0 : 0,5–0,6 : 1,2–1,5 соответственно. По сравнению с хлебом ржано-пшеничным «Спасский» в хлебобулочных изделиях из мучных поликомпонентных смесей повысилось содержание белка и липидов соответственно на 0,8–2,3 и 2,7–3,5%, количество углеводов снизилось на 5,5–7,2%, увеличилось количество клетчатки в 4,5–5,5 раза, кальция в 5,5–7,5 раза, фосфора в 1,5–1,6 раза, магния в 1,1–1,2 раза. Биологическая ценность разработанных хлебобулочных изделий повысилась на 7,9–18,4% в сравнении с контрольным образцом. A comprehensive approach to optimizing the composition of a multi-component flour mixture for rye-wheat bakery products, taking into account the chemical composition and technological properties of the food ingredients of the mixture, as well as their influence on the main technologically forming component – rye-wheat flour, is presented. The design of the composition of multicomponent mixtures was carried out using a previously developed program. More than 20 samples of model flour mixtures were generated, of which 4 samples with indicators of biological value of at least 70% were selected for the preparation of bakery products. Preparation was carried out by an accelerated method using the acidifier «Lezisauer», compressed yeast and salt in an amount, % of the mass of the mixture, 2,0; 2,2 and 1,5 respectively. Water is added according to the calculation taking into account the mass fraction of moisture of the ingredients. The duration of fermentation was 60–70 minutes, proofing – 35–40 minutes. The products were baked at (200 ± 10)°C to the temperature inside the crumb 97–98°C. The rye-wheat bread «Spassky» purchased in the retail chain was used as a control. It was found that the baked samples of rye-wheat bread from the developed multi-component flour mixtures have a balanced composition of proteins, fats and carbohydrates – 1,0 : 0,8 : 3,9–4,8 respectively and calcium, phosphorus and magnesium – 1,0 : 0,5–0,6 : 1,2–1,5 accordingly. Compared with rye-wheat bread «Spassky» in bakery products made from flour multicomponent mixtures, the content of protein and lipids increased respectively by 0,8–2,3 and 2,7–3,5%, the amount of carbohydrates decreased by 5,5–7,2%, the amount of fiber increased by 4,5–5,5 times, calcium by 5,5–7,5 times, phosphorus by 1,5–1,6 times, magnesium by 1,1–1,2 times. The biological value of the developed bakery products increased by 7,9–18,4% in comparison with the control sample.

Aims. With the aim of performing a suitable comparison of the internal process of galactic bars with respect to the external effect of interactions on driving gas toward the inner most region of the galaxies, we explored and compared the efficiency of both mechanisms on central nuclear activity in optically selected active galactic nuclei (AGNs) in spiral galaxies. Methods. We selected homogeneous samples of barred AGNs and active objects residing in pair systems, derived from the Sloan Digital Sky Survey (SDSS). In order to carry out a reliable comparison of both samples (AGNs in barred hosts in isolation and in galaxy pairs), we selected spiral AGN galaxies with similar distributions of redshift, magnitude, stellar mass, color and stellar age population from both catalogs. With the goal of providing an appropriate quantification of the influence of strong bars and interactions on nuclear activity, we also constructed a suitable control sample of unbarred spiral AGNs without a companion and with similar host properties to the other two samples. Results. We found that barred optically selected AGNs show an excess of nuclear activity (as derived from the Lum[OIII]) and accretion rate onto a central black hole (ℛ) with respect to AGNs in pairs. In addition, both samples show an excess of high values of Lum[OIII] and ℛ with respect to unbarred AGNs in the control sample. We also found that the fractions of AGNs with powerful nuclear activity and high accretion rates increase toward more massive hosts with bluer colors and younger stellar populations. Moreover, AGNs with bars exhibit a higher fraction of galaxies with powerful Lum[OIII] and efficient ℛ with respect to AGN galaxies inhabiting pair systems, in bins of different galaxy properties. Regarding AGNs belonging to pair systems, we found that the central nuclear activity is remarkably dependent on the galaxy pair companion features. The Lum[OIII] for AGNs in pairs is clearly enhanced when the galaxy companion exhibits a bright and more massive host with high metallicity, blue color, efficient star formation activity and young stellar population. The results of this work reveal an important capacity of both mechanisms, bars and interactions, to transport material towards the galaxy central regions. In this context, it should also be noted that the internal process of the bar is more efficient at improving the central nuclear activity in AGN objects than that corresponding to the external mechanism of the galaxy–galaxy interactions.

The technology of sweet-sour dessert oil with maple syrup has been developed. It is of scientific interest to study its quality indices when stored. The organoleptic characteristics of the butter of the sweetener with flavor components were determined in the scores. The score of the ball was 20 points. The chemical parameters of sweet dessert oil with maple syrup are found: mass fraction of fat, not less than – 62%, mass fraction of dry substances, not less – 9,5%, mass fraction of moisture, not more than – 28,5%. The conformity of oil indicators with the norms specified in TP TS 033/2013 for cream butter with the components is established: mass fraction of fat – 50 to 69%, mass fraction of moisture – 16 to 45%. The thermostability of butter of sweet-dessert dessert oil with maple syrup has been determined – 0,7, i.e. the indicator is characterized as satisfactory. A good consistency of sweet dessert oil with maple syrup is found on the slice – the plate has a dense, even surface and edges, with slight pressure bending. The shelf life of sweet dessert oil with maple syrup is 15 days. Acidity of the fat phase was determined over a period of 21 days (taking into account the time reserve). The index of acidity of the analyzed sample for 15 days was – 2.7 °C, which corresponds to the norm. Estimation of the acidity of the fatty phase and the acidity of the plasma of the oil showed an insignificant increase during the warranty period of shelf life. The stability of fatty oil of sweet-dessert dessert with maple syrup has been determined. During the experiment, the color became yellow, the smell is sweet, creamy, pleasant, the aroma of maple syrup is pronounced. The specimen withstood the test for 8 hours, no damage to the fat is noted. The microbiological parameters of the oil have been determined. The conformity of oil with the requirements of State standard 32899–2014 and TP TS 033/2013 during storage is established.
