This research has been carried out to determine the effects of the current misinformation (hormone, antibiotic, feed additives and growth of broiler chickens in a short period) on consumers' view of the poultry meat sector. The survey was conducted in Istanbul province which better reflects the socio-cultural and socio-economic structure of Turkey, and with different demographic structure of 384 people face to face survey method was applied. Questions were asked to determine whether antibiotics and hormones were used in the diet of broiler chickens, and consumers' perceptions, attitudes and behaviors about the reliability of chicken meat. According to the results of the study, 73.4% of the consumers stated that they did not know about the contents of broiler diets. A big majority of the consumers (88.3%) stated that they think hormone is used and 84.6% think antibiotics is used in the feeding of broiler chickens. 78.4% of consumers surveyed stated that they think that broiler chickens are not fed with healthy feed. Also, 70.6% of consumers stated that rapid growth was due to use of antibiotics and hormones. Although the use of hormones and antibiotics as growth promoters in poultry feeds is prohibited, consumers think that they are used as additives and broiler meat is not safe food. According to these results, creating a positive effect on the purchasing decisions of the consumers is important for the sustainability and future of the sector.

The acidifying agents are being used more often as an alternative to fodder antibiotics in order to preserve bird’s stock and increase productivity. We created the new liquid acidifier “Aquasan” for broiler chickens on the basis of organic and inorganic acids. The application of various feed additives or drugs to the diet of chickens leads to changes in the chemical composition of meat. The purpose of the paper was to research the slaughter qualities and the chemical composition of broiler chicken meat in case of feeding the stock with the “Aquasan” acidifier. The research was conducted on three groups of chicken broilers of the breed Ross 308 – 50 heads in each group. The first group of chickens was the control one, the second group of chickens was given the acidifier analogue called “FEEDACID MAX L”, and the third group was given the new acidifier “Aquasan”. The process of feeding of 0.1% of the working acidifier solutions was performed from the 27th day of fattening within 10 days (27th–31st and 34th–38th day). The growing period lasted 43 days. The moisture content of meat was determined by the method of drying, the content of protein – by the Kjeldahl method, total fat – by the Soxhlet method, the ash content – by the charring method. It has been established that the use of the “Aquasan” acidifier contributed to the increase in the productivity of broilers, the live weight of chickens on the 43rd day of breeding increased by 1.1 times (Р ≤ 0.05), and the weight of a carcass by 1.2 times (Р ≤ 0.05), in particular, by 310 g and 350 g, respectively. Also, the use of the acidifier allowed increasing the livability of chicken stock by 6% (Р ≤ 0.001). The average yield of carcasses of broilers increased by 4.4% (Р ≤ 0.05), which is 2% more than the standard values for this breed of chickens called Ross 308. With the use of the “Aquasan” acidifier, an increased content of dry matter in the broiler meat by 1.5% (Р ≤ 0.05) was noted and, accordingly, a decrease in the same percentage of moisture in meat. The protein content of chicken meat on the 43rd day of breeding increased by 0.9% (Р ≤ 0.05), ash increased by 0.3% (Р ≤ 0.05), and the fat content decreased by 0.4% (Р ≤ 0.05). Similar changes in slaughter rates and chemical composition of chicken meat were also observed in case of feeding the acidifier analogue “FEEDACID MAX L”; the difference compared with the new “Aquasan” acidifier was insignificant. Consequently, the feeding of the liquid acidifier “Aquasan” to chicken broilers from the 27th day of their breeding does not lead to deterioration in the quality of the slaughter and the chemical composition of poultry meat.

Скрябина и ФГБНУ ФНЦ ВИЭВ РАН, аминокислотный состав мяса перепелов в Государственном бюджетном учреждении Краснодарского края Кропоткинская краевая ветеринарная лаборатория . Из цыплят в суточном возрасте кросса Кобб500 было сформировано три группы по 10 голов в каждой две опытные и контрольная опытным группам выпаивали кормовые добавки из расчета 1 мл/кг живой массы птицы до 50 суток выращивания, убой птицы проводили на 56 сутки. Тушки птицы после 24х часов созревания в холодильной камере при температуре 4 С подвергали исследованиям по общепринятым методикам: ГОСТ Р 519442002. Мясо птицы. Методы органолептических показателей, температуры и массы ГОСТ 314702012. Мясо птицы, субпродукты и полуфабрикаты из мяса птицы. Методы органолептических и физикохимических исследований аминокислотный состав мяса исследовали согласно М 0438 2009. Корма, комбикорма и сырье для их производства. Методика измерений массовой доли аминокислот методом капиллярного электрофореза с использованием системы капиллярного электрофореза Капель. Применение кормовых добавок в дозе 1 мл/кг живой массы способствовало увеличению живой массы птицы при применении Абиотоника на 54,23, а при применении Чиктоника на 37,70 по отношению к контролю. Во всех исследуемых пробах количество ЛЖК находится в пределах нормы и составило: в 1й опытной 1,390,03 мг КОН, во 2й опытной 1,420,04 мг КОН и в контрольной группе 1,810,06 мг КОН, что говорит о свежести и доброкачественности мяса. Значение рН мяса цыплятбройлеров находилось в трех группах в пределах нормы и не превышало 6,0. Abstract: The Animal husbandry department of Kerala and local self-government department and Kudumbashree mission has started a plan during 2018-19 entitled “Backyard broiler farming” at Vattamkulam Gramapanchayath, Edappal, Malappuram district. The said plan was advertised as ‘Earn money at your doorstep through broiler farming’ and was welcomed by more than 40 household women. The farmers who owned a land area, not less than 10 cents were selected for this model. The local self- Government provided the shelter arrangements including cages for free of cost. The Animal husbandry department has supplied chicks (Day old Cobb varieties) and feed and aided Kudumbashree unit to market these broilers. The speciality of broiler farming is that within a short period (35 – 40 days) a chick gains an average weight of 2 – 2.3 kg, which can be sold at market to earn a reasonable margin of profit for farmers. The usual mortality rate was 5% for broiler farming, but it was less than 2 % in this model. Modified vaccination protocol against the viral disease Gumboro (I.B.D), has been adopted for this model to reduce the mortality rate. Also, antibiotics as feed additives were not supplemented in this model. Within 40 days, these women entrepreneurs are getting a good profit from meat production alone. This broiler meat is marketed under the brand name of Vattamkulam Safe Chicken. The Vattamkulam backyard broiler farming helps the household women support themselves and provide safe and quality meat to society in which they belong. During growth period of 6 to 7 weeks, broiler chickens are exposed to different stressors, the effects of which are dependent on the type, duration and intensity of stress that affects the bird. Stress-induced changes in muscular metabolism alter the physico-chemical traits of meat, thus affecting its quality (Ali et al., 1999). The negative effect of ante-mortem thermal stress on the quality of broiler meat has been the object of many studies and is relatively well documented (Warriss et al., 1999). There is a scarcity of data on whether and to what degree hyperthermia in growing chickens affects the technological parameters of poultry meat. Therefore we carried out an experiment to determine the effect of 5-day heat stress in 4-week-old broiler chickens on their later meat quality.

The paper presents the study on an impact of feed additives Peak anti-stress and SPAO (SPAO-complex) with different lithium content on meat productivity and meat quality of broiler chickens. The feed additives exert a pronounced metabolic effect, have adaptogen properties and allow forming a mechanism that facilitates compensation of the expenditure of the body, which significantly increases upon stress development. It was established that the average daily gain of the broiler chickens increased by 1.8% and 4.3% on the background of using SPAO-complex and Peak anti-stress, respectively, compared to the broiler chickens that did not receive the feed additives in the daily diet. It was shown that addition of feed additives with lithium into a diet led to an improvement of the indices of broiler meat productivity and meat quality: a level of yield of the carcasses of the 1st category increased up to 56.2–79.1%, high organoleptic indices of meat were ensured, the protein content in white and red chicken meat increased and functional-technological properties of minced meat improved. The use of feed additives ensured profitability of industrial poultry production; the highest indices of profitability were established upon introduction of the feed additive Peak anti-stress into a diet — up to 8.67 rubles per each ruble of expenses. The obtained results of the study should be taken into consideration in the technological processes when raising broiler chickens.

The authors considered organic poultry production and presented a qualitative analysis of the diets used in raising broiler chickens. The authors also evaluated the possibility of switching from traditional diets to diets without chemical and microbial synthesis ingredients based on comparative data on the performance and economics of broiler chicken meat production. Organic requirements prohibit the use of microbial and chemical synthesis and genetically modified products in poultry feed. Obtaining large quantities of poultry products in a short period and at an affordable price involves using all kinds of additives that do not allow the products to qualify as organic. Surveys and opinion polls show that a new layer of consumers is today willing to buy organic poultry meat at a higher price. The aim of this work is to evaluate the possibility of producing organic meat from broiler chickens. The research was carried out at the Berdskaya poultry farm, and the test object was broiler chickens of the Iza cross. The age of broiler chickens ranged from one to 40 days old. The authors compared the effectiveness of traditional industrial diets and diets without microbial and chemical synthesis products. During the experiment, live poultry weight, average daily and gross gains, survival, feed costs and cost-effectiveness were considered. In commercial broiler chickens raised on diets without chemical and microbial synthesis ingredients during slaughter, the average live weight was 64.0% lower than that of broiler chickens in the experimental group. The average daily gain of these same broilers was also 52.9% lower. Feed costs per unit of production in industrial broiler chickens increased 1.7 times with the same survival rate of young animals (92.2%). Increasing the rearing period to 70 days resulted in a 1.4-fold increase in feed costs. The level of profitability decreased by 61.2 %, with a decrease in productivity. Increasing the price per kg of meat by 25 50 100 % would increase the profitability level by 22.4 4.7 -133.5 %, respectively, compared to the traditional method.

Introduction: Various types of feed additives have been evaluated under commercial conditions and in experimental trials with the aim to achieve improvements on growth performance and the best economic return. Herbs, including Sesame indicum leaves, spices and various plant extracts/essential oils can be used as alternatives to replace antibiotic growth promoters as they are rich in phytochemicals (active compounds) that can be used to stimulate growth and health of the animals. The uses of all these herbs should be studied in relation to the blood and serum indices of the animals in order to determine their harmful level of consuming them by the animals. Therefore, the aim of the study is to determine the effect of different dietary inclusion levels of Sesame indicum leaves on haematology and serum parameters of broiler chickens at both starter and finisher phases. Methods: A total of one hundred and fifty 1-day old, unsexed (Marshal) broiler chicks were randomly divided into five experimental groups at rate of 30 birds per group. Each group was further subdivided into three replicates at the rate of ten chicks per replicate in a Complete Randomized Design. A maize-soybean basal diet served as control while the Sesame indicum leaves was added to the basal diets at level (0g, 10g, 20g, 30g and 40g/kg) resulting in five formulae, respectively. At the end of the 4th and 8th weeks respectively, six birds were randomly selected from each of the replicate and blood samples were collected from the jugular vein of birds for haematology and serum. Results: The results indicated that all the haematology and serum parameters were significantly (p < 0.05) affected by the different inclusion levels of S. indicum leaves but the value obtained were within the recommended range while birds fed with the diet containing 40g/kg of S. indicum leaves had the highest values. Conclusion: Inclusion of S. indicum leaves in the diets appear not to have detrimental effect on the haematology and serum parameters of the experimental birds. The study recommended that 40g/kg inclusion level be adopted as it improved growth performance and general well-being of broiler chickens.
