The acidifying agents are being used more often as an alternative to fodder antibiotics in order to preserve bird’s stock and increase productivity. We created the new liquid acidifier “Aquasan” for broiler chickens on the basis of organic and inorganic acids. The application of various feed additives or drugs to the diet of chickens leads to changes in the chemical composition of meat. The purpose of the paper was to research the slaughter qualities and the chemical composition of broiler chicken meat in case of feeding the stock with the “Aquasan” acidifier. The research was conducted on three groups of chicken broilers of the breed Ross 308 – 50 heads in each group. The first group of chickens was the control one, the second group of chickens was given the acidifier analogue called “FEEDACID MAX L”, and the third group was given the new acidifier “Aquasan”. The process of feeding of 0.1% of the working acidifier solutions was performed from the 27th day of fattening within 10 days (27th–31st and 34th–38th day). The growing period lasted 43 days. The moisture content of meat was determined by the method of drying, the content of protein – by the Kjeldahl method, total fat – by the Soxhlet method, the ash content – by the charring method. It has been established that the use of the “Aquasan” acidifier contributed to the increase in the productivity of broilers, the live weight of chickens on the 43rd day of breeding increased by 1.1 times (Р ≤ 0.05), and the weight of a carcass by 1.2 times (Р ≤ 0.05), in particular, by 310 g and 350 g, respectively. Also, the use of the acidifier allowed increasing the livability of chicken stock by 6% (Р ≤ 0.001). The average yield of carcasses of broilers increased by 4.4% (Р ≤ 0.05), which is 2% more than the standard values for this breed of chickens called Ross 308. With the use of the “Aquasan” acidifier, an increased content of dry matter in the broiler meat by 1.5% (Р ≤ 0.05) was noted and, accordingly, a decrease in the same percentage of moisture in meat. The protein content of chicken meat on the 43rd day of breeding increased by 0.9% (Р ≤ 0.05), ash increased by 0.3% (Р ≤ 0.05), and the fat content decreased by 0.4% (Р ≤ 0.05). Similar changes in slaughter rates and chemical composition of chicken meat were also observed in case of feeding the acidifier analogue “FEEDACID MAX L”; the difference compared with the new “Aquasan” acidifier was insignificant. Consequently, the feeding of the liquid acidifier “Aquasan” to chicken broilers from the 27th day of their breeding does not lead to deterioration in the quality of the slaughter and the chemical composition of poultry meat.

In order to increase the meat productivity of poultry scientists around the all world are working to improve the breeding traits and technologies of housing and feeding. However, the efficiency of poultry meat production on an industrial basis depends not only on the strengthening and inheritance of breed qualities, but also on a complete and balanced feeding, including the use of new feed additives. All this generally affects the duration of rearing, the average daily and absolute live weight gains, the biological value and nutritional value of poultry meat produced in industrial conditions. The purpose of the work was to study the effect of the amino acid complex and silicon dioxide on the productivity and quality of broiler chicken meat. The paper scientifi cally substantiates and experimentally proves the effectiveness of using a rational dose of ultrafine silicon dioxide (300 mg/kg of feed) and the complex of amino acids (arginine – 7 g/kg, lysine – 6 g/kg, methionine – 2 g/kg) in the rearing of broiler chickens. Data on the positive influence of the studied factor on the consumption, digestibility and use of feed nutrients, as well as meat productivity and quality of broiler chicken meat have been obtained. The dependence of meat productivity and quality of chicken meat on physiological and biochemical parameters has been proved. Analysis of the results of the production experiment has been shown that the livability of poultry in the experimental group was higher than the control group by 1,4 %. This made it possible to reduce feed consumption to 100 g/head, and feed consumption per 1 kg of chicken growth in the experimental group by 9,2 %. Activation of metabolic processes of the body of broiler chickens of the experimental group contributed to the increase in their live weight, which increased the weight of the gutted carcass, the yield of meat by 13,8 %, and meat with off al for sale by 18,0 %. The efficiency of the complex application of amino acids and silicon dioxide in the production of poultry meat is economically justified.

This study aims to examine the purchase of turmeric flour and papaya flour in the ration on the quality of broiler chicken meat. The design used was a completely randomized design (CRD) with 4 treatments and 5 replications. Treatment with various levels of turmeric flour and papaya leaf flour consists of P0: ration without the addition of turmeric flour and papaya leaf flour; P1: ration with the addition of 0.5% turmeric flour; P2: Ration with addition of 2,5% papaya leaf flour and P3: Ration with addition of 0.5% turmeric flour and 2,5% papaya leaf flour. The parameters studied were the level of meat protein, meat fat content, tenderness of meat and shrinkage of cooked meat. The results showed that the treatment effect was a very significant effect   (P<0.01) on meat protein content and  meat fat content, meat tenderness showed significantly different results (P<0.05), but did not provide a significant difference (P<0.05) for  moisture content of meat and to cook meat shrinkage. The conclusion of this study is the addition of turmeric flour and papaya leaves as feed additives in broiler chickens which have a significant effect on the quality of broiler chicken meat.

Экспериментальные исследования кормовых добавок Абиотоник и Чиктоник проводили на базе вивария кафедры эпизоотологии и организации ветеринарного дела, а ветеринарносанитарную экспертизу продуктов убоя цыплятбройлеров проводили на кафедре паразитологии и ветеринарносанитарной экспертизы ФГБОУ ВО МГАВМиБ МВА имени К.И. Скрябина и ФГБНУ ФНЦ ВИЭВ РАН, аминокислотный состав мяса перепелов в Государственном бюджетном учреждении Краснодарского края Кропоткинская краевая ветеринарная лаборатория . Из цыплят в суточном возрасте кросса Кобб500 было сформировано три группы по 10 голов в каждой две опытные и контрольная опытным группам выпаивали кормовые добавки из расчета 1 мл/кг живой массы птицы до 50 суток выращивания, убой птицы проводили на 56 сутки. Тушки птицы после 24х часов созревания в холодильной камере при температуре 4 С подвергали исследованиям по общепринятым методикам: ГОСТ Р 519442002. Мясо птицы. Методы органолептических показателей, температуры и массы ГОСТ 314702012. Мясо птицы, субпродукты и полуфабрикаты из мяса птицы. Методы органолептических и физикохимических исследований аминокислотный состав мяса исследовали согласно М 0438 2009. Корма, комбикорма и сырье для их производства. Методика измерений массовой доли аминокислот методом капиллярного электрофореза с использованием системы капиллярного электрофореза Капель. Применение кормовых добавок в дозе 1 мл/кг живой массы способствовало увеличению живой массы птицы при применении Абиотоника на 54,23, а при применении Чиктоника на 37,70 по отношению к контролю. Во всех исследуемых пробах количество ЛЖК находится в пределах нормы и составило: в 1й опытной 1,390,03 мг КОН, во 2й опытной 1,420,04 мг КОН и в контрольной группе 1,810,06 мг КОН, что говорит о свежести и доброкачественности мяса. Значение рН мяса цыплятбройлеров находилось в трех группах в пределах нормы и не превышало 6,0. The article analyses the issues of balanced feeding of broiler chickens and their balanced diet. The results of studies aimed to determine the effect of mixed feeds on the productivity of Arbor Acres cross broiler chickens and the economic efficiency of poultry meat production companies are presented. It was found that broilers from the experimental group, who were fed with improved compound feed with additional sources of proteins and carbohydrates and feed additives exceeded broilers from the control group by their live weight at all ages. At the slaughter age, the average weight was more than 39.2%. The experimental group consumed 10-15% less feed whose conversion was 2.4 and 1.9 kg in favour of the group feeding with the new compound feed. The new compound feed had a positive effect on the viability of broilers: there were no deaths during the period under study. According to the control slaughter results, it was found that the pre-slaughter live weight was higher by 35% in the experimental group. The weight of edible parts increased by 6%. The improved compound feed can be used both in industrial conditions and by poultry farms.

A study of the effectiveness of the use of feed additive Liaform in relation to its effect on the growth and development of broiler chickens. For research, 2 groups of broiler chickens of 55 heads (control and experimental) from 8 days of age were formed on the principle of analogues. Feeding of the control group was carried out with standard complete feed. Feeding of the experimental group was carried out with standard complete feed, in which the feed additive Liaform was added at the rate of 2 g / kg. During the experiment, the general condition of the bird, the safety of the bird, zootechnical and hematological parameters were monitored. It is established that the studied feed additive has a positive effect on the productivity of broiler chickens, improves feed absorption. As a result of the use of feed additive Liaform live weight of broiler chickens in the experimental group was 4.3 % higher compared to the control. The average daily gain of chickens in the experimental group exceeded this figure of chickens in the control group by 4,1 %. The use of feed additives helped to increase feed conversion. The use of Liaform feed increased the protein level in poultry meat

The aim of this research was to know the effect of supplemented fermented purslane flour (FPF) in diet on the chemical quality, and microbiology of broiler chicken meat. One hundred DOC were used in this research. This research used a completely randomized design with 5 treatments and 4 replications. The treatments were K0 = commercial diet without FPF, K1 = commercial diet + 2.5% FPF, K2 = commercial diet + 5% FPF, K3 = commercial diet + 7.5% FPF, and K4 = commercial diet + 10% FPF. The variables studied were water content, protein content, and cholesterol levels of meat and contamination of Salmonella sp. Data were analyzed using Analysis of Variance (ANOVA). The results showed that the supplemented fermented purslane flour in diet significantly affected the water content and protein content of meat, but it did not significantly affect the cholesterol meat levels and contamination of Salmonella sp. It was concluded that the supplemented of fermented purslane flour in broiler chickens with a level of 10% was the best level. At this level, chicken meat is produced with the lowest water content while the highest protein content.

This research has been carried out to determine the effects of the current misinformation (hormone, antibiotic, feed additives and growth of broiler chickens in a short period) on consumers' view of the poultry meat sector. The survey was conducted in Istanbul province which better reflects the socio-cultural and socio-economic structure of Turkey, and with different demographic structure of 384 people face to face survey method was applied. Questions were asked to determine whether antibiotics and hormones were used in the diet of broiler chickens, and consumers' perceptions, attitudes and behaviors about the reliability of chicken meat. According to the results of the study, 73.4% of the consumers stated that they did not know about the contents of broiler diets. A big majority of the consumers (88.3%) stated that they think hormone is used and 84.6% think antibiotics is used in the feeding of broiler chickens. 78.4% of consumers surveyed stated that they think that broiler chickens are not fed with healthy feed. Also, 70.6% of consumers stated that rapid growth was due to use of antibiotics and hormones. Although the use of hormones and antibiotics as growth promoters in poultry feeds is prohibited, consumers think that they are used as additives and broiler meat is not safe food. According to these results, creating a positive effect on the purchasing decisions of the consumers is important for the sustainability and future of the sector.

The development of the poultry industry signifi cantly solves the problem of food for the population and is one of the important tasks of the any state. The use of modern technologies and the use of meat crosses with high productivity is the basis for effi cient production of broiler meat. The purpose of the work was the expediency and effi ciency of enriching compound feed with the plant feed additive Biostrong 510 to increase meat productivity and quality of broiler chickens. In order to study the feasibility and eff ectiveness of feeding the plant feed additive Biostrong 510 in compound feed for broiler chickens under the environments of LLC “Akashevskaya poultry Farm” in the Republic of Mari El, a scientifi c and economic experiment has been carried out. The object of research was broiler chickens of the Cobb 500 cross. Comprehensive studies have been conducted to study the eff ect of diff erent doses of the plant feed additive Biostrong 510 in the technology of feeding broiler chickens. The eff ect of the additive on meat productivity and quality of meat, morphological and biochemical parameters of blood of broiler chickens, and economic eff ectiveness has been studied. Recipes for compound feed with diff erent doses of the feed additive Biostrong 510 have been developed. The absolute gain in live weight in experimental broiler chickens for the accounting period of all experimental groups was greater in comparison with the control group and amounted to 2148,2; 2233,1; 2221,5 g, respectively, for the experimental groups, compared to 2058,5 g in the control group. It has been found that the use of the plant feed additive Biostrong 510 increases the economic eff ectiveness of broiler meat production. The best results have been obtained when this additive was added to the compound feed of broiler chickens of the 2nd experimental group in the amount of 150 g per 1 ton of compound feed.

Abstract The sensory properties of poultry meat obtained from meat-type broiler chickens fed with fermented cereals and two different fermented supplements, and Japanese quails (Coturnix japonica) fed diets including fermented cereals (wheat, barley or oats), three probiotics (from E. faecium, B. subtilis, S. cerevisiae) and two different phytase preparations were evaluated. Fermented grains (particularly wheat and barley) decreased the sensory quality of meat. The use of three probiotic products and phytase did not negatively influence the sensory quality of the quail meats. The diets containing S. cerevisiae (probiotic) produced a highly appreciated meat. The less preferred meat samples were obtained from the quails fed diets containing fermented wheat, fermented barley, and E. faecium, due to the off-flavour and odour as well as tanginess. The supplementation of naturally or yeast-fermented liquid whey and lemon pomace was very effective to overcome the bad sensory quality (fish and metallic off-flavour and taste) of the broiler meat obtained by administering the control diet (rich in vegetable oil and fermented wheat).

<p>The experiment was conducted to examine the influence of probiotic preparation on the mineral contamination of the broiler chicken muscles. Investigational product contains probiotic lactic acid bacteria of genus Lactobacillus and Enterococcus. It is proved that additional feeding of probiotic “Entero-active” to broiler chickens increases retention of mineral elements of the fodder. To study the effect of probiotic on chicken meat the contamination of minerals in the experimental poultry meat was researched. The studies proved that the additional use of the studied probiotic supplements with food of broiler chickens allowed increasing phosphorus contamination by 4.7%, magnesium by 3.9% and iron by 46.5% in the pectoral muscles compared with the control group. The use of probiotic for broilers feeding has increased phosphorus by 4.7%, calcium by 4.1 times, iron by 70.5%, zinc by 5.4%, magnesium by 31.5% and copper in 4.2 times in thigh muscles of poultry. Thus, consumption of probiotic preparation by broilers in various doses improves the mineral compound of meat carcasses this meat is also considered as free range food. It was proved that probiotic increases the synthesis of such essential amino acids in the pectoral muscles as lysine by 1.66%, histidine by 0.03%, arginine by 0.38%, threonine by 0.07%, valine by 0.16%, methionine by 0.33%, leucine by 0.1% and phenylalanine by 0.17%. The increasing of level of lysine and histidine respectively by 0.05 and 0.08% is observed in the thigh muscles of broilers under the influence of probiotic. We have proved that the optimal dose for broiler chickens is 0.25% for the age of 1-10 days, 0.1% for the age of 11-28 days, 0.05 % for the age of 29-42 days, the percentage is for broiler chickens feed weight. </p>
