Meat from wild boar (musculus teres major, n = 160) originating from two localities with different production systems was analysed. The contents of crude protein, pure protein, fat, collagen, dry matter and ash were determined in each sample. The effect of locality, age and sex on the chemical properties of the wild boar meat was studied with the use of statistical analysis. The values obtained for the chemical composition of the muscle tissue of the wild boar from localities A and B corresponded to the results obtained in other countries. The protein content fell within the range of 20.49–21.26% at locality A and 18.77–20.34% at locality B. The fat content fell within the wide range of 0.83–2.38% (0.83–1.67% at locality A and 1.51–2.38% at locality B). It is clear from the statistical evaluation that wild boar hunted in the enclosed locality had a significantly higher (P < 0.05) fat content and a lower content of crude (P < 0.05) and pure (P < 0.05) protein in comparison with wild boar from the unenclosed locality. A significant difference in the fat content was also demonstrated between localities in animals aged 0–12 months (P < 0.05), though only in females (P < 0.05) when younger animals (0–12 months) were divided by sex, and also in females aged 12–24 months (P < 0.05). The results confirm that the composition of wild boar meat in the Czech Republic is very variable and influenced by multiple factors.

The influence of fuel composition on soot emissions from continuous flow combustors is examined. A study of the combustion characteristics of a wide range of present and potential aviation fuels suggests that smoke point provides a better indication of sooting tendency than does hydrogen content. It is concluded from this study that the best empirical relationship between fuel chemical composition and soot emissions is one which combines two fuel composition parameters — smoke point and naphthalene content — into a single parameter which is shown to correlate successfully soot emissions data acquired from several different fuels burning in a variety of gas turbine and model combustors.

The colour, chemical composition, texture parameters, hydration properties and fatty acids profile of fresh wild boar meat and meat after 2 months of freezing were compared. The research material was the M. longissimus dorsi muscle cut out of wild boar carcasses (Sus crofa). Analyses of physical and chemical properties of samples taken from 16 boars were performed. Samples were packed and frozen to –18°C and stored under such conditions for a period of two months. Freezing storage significantly increased the elasticity value and the colour of the meat as indicated by the decrease in L* and b* values. In frozen meat there slightly increased thermal drip and forced drip. The changes in the fatty acid profile under the effect of freezing were found more often in fat from muscle M. longissimus dorsi than in back fat of wild boar. In conclusion, it should be noted that freezing storage in a short time does not affect negatively the quality of frozen meat.

This article shows the prospect of the system BaO–Al2O3–B2O3–SiO2 as the basis of vitreous and glass ceramic materials, which are widely used in rocket production for high-temperature protection of heat resistant alloys, in the power industry for sealing solid oxide fuel cells, and in the production of heat resistant glass ceramic materials. We examined the conditions of glass formation and properties of glasses with the following content of components (mol.%): BaO 30–70, B2O3 10–50, SiO2 20–60, and Al2O3 0–10. We established experimentally that the physical and chemical properties of glass, depending on its chemical composition, vary within the following limits: coefficient of linear thermal expansion of (71–122)10–7 К–1; glass transition temperature of 500–6500С; dilatometric softening point of 540–6700С; and density of 3.20–4.21 g cm–3. The volume resistivity of the studied glasses is within 1011–1013 Ohmcm at the temperature of 1500С. Generalization of the dependences of glass properties on their chemical composition was carried out with the use of the additive equations, for which the partial contributions of oxides to the values of the corresponding properties were determined by experimental and statistical methods. The established patterns of influence of components and conditions of glass formation on the physical and chemical characteristics of glasses allows implementing the process of designing of a wide range of glass compositions with the complex of specified properties in order to solve the tasks of their practical use.

Context. The chemical and physical properties of interstellar dust in the densest regions of the Galaxy are still not well understood. X-rays provide a powerful probe since they can penetrate gas and dust over a wide range of column densities (up to 1024 cm-2). The interaction (scattering and absorption) with the medium imprints spectral signatures that reflect the individual atoms which constitute the gas, molecule, or solid. Aims. In this work we investigate the ability of high resolution X-ray spectroscopy to probe the properties of cosmic grains containing iron. Although iron is heavily depleted into interstellar dust, the nature of the Fe-bearing grains is still largely uncertain. Methods. In our analysis we use iron K-edge synchrotron data of minerals likely present in the ISM dust taken at the European Synchrotron Radiation Facility. We explore the prospects of determining the chemical composition and the size of astrophysical dust in the Galactic centre and in molecular clouds with future X-ray missions. The energy resolution and the effective area of the present X-ray telescopes are not sufficient to detect and study the Fe K-edge, even for bright X-ray sources. Results. From the analysis of the extinction cross sections of our dust models implemented in the spectral fitting program SPEX, the Fe K-edge is promising for investigating both the chemistry and the size distribution of the interstellar dust. We find that the chemical composition regulates the X-ray absorption fine structures in the post edge region, whereas the scattering feature in the pre-edge is sensitive to the mean grain size. Finally, we note that the Fe K-edge is insensitive to other dust properties, such as the porosity and the geometry of the dust.

Наведені результати дослідження хімічного скла-ду та фізико-хімічних властивостей м’язової й жирової тканини свиней, відгодованих на раціонах із використанням білкових соєвих кормів різних технологій виробництва: експандування під тис-ком (концентрат сухий білковий соєвий кормовий – КСБСК), віджим під пресом (макуха соєва), екст-рузія (екструдат соєвий). За контроль використа-на макуха соняшникова. Встановлено, що за хіміч-ним складом і фізико-хімічними властивостями м’язова та жирова тканини всіх піддослідних груп свиней знаходяться на рівні нормативних показни-ків, що свідчить про достатньо високу якість сви-нини. У процесі порівняння якісних показників між дослідними групами аналогів вірогідної різниці не встановлено. Проте у м’язовій тканині тварин, відгодованих на КСБСК, простежувалася тенден-ція певного збільшення показників сухої та органі-чної речовини, протеїну й енерґетичної цінності.  The results of the chemical composition and physico-chemical properties of the muscle and adipose tissues of pigs fed on the diets with soya protein feed of different technologies are given: expansion as the pressure (soy protein concentrate, dry fodder – KSBSK), extraction under pressure (soybean cake), extrusion (soy extrudate). Sunflower cake is used as a control. It was found that the chemical composition and physico-chemical properties of muscle and adipose tissue of all experimental groups of pigs are at the level of normative parameters, indicating high quality pork. In the process of comparing quality indicators between the groups of analogues significant difference has not been established. However, in the muscle tissue of animals that are fed on KSBSK, the tendency of increase in the dry and organic matter, protein and energy content was observed.

The work is devoted to the development of a methodology for the operational forecast of the properties of the final blast furnace slag by its chemical composition and temperature to improve the quality of hot metal in terms of sulfur content.The analysis of the accumulated experimental data on the properties of modern blast furnace slags is performed, using the criteria of the theory of directed chemical bonding the dependences of liquidus temperature on model parameters are established and an adequate forecast model of bucket slag liquid temperature on its model parameters is obtained.The created technique allows to obtain temperature dependences of density, surface tension, viscosity and electrical conductivity of real blast furnace slags in the temperature range 1200-1400 ° С.The approach to modeling of slag melts at the level of interatomic interaction used in the article can be used to develop predictive models of different technological properties of furnace slags in a wide range of temperatures. The obtained results are of practical importance and can be used for rapid prediction of the liquidity temperature of furnace slags and adjustment of their chemical composition in accordance with technological requirements.

Представлены результаты исследований физико-механических свойств, химического состава и показателей безопасности составных частей (мякоть, кожура, семена) дыни сорта «Торпеда». В результате сопоставительного анализа химического состава мякоти, кожуры и семян дыни показано их существенное различие. Так, содержание жира в мякоти составляет 0,26±0,003 г, в кожуре - 1,24±0,01 г, в семенах - 26,21±0,31, содержание белка составляет 7,56±0,11; 9,92±0,14 и 21,52±0,32 г соответственно. Изучение содержания редуцирующих веществ и сырой клетчатки показало их высокое содержание в кожуре по сравнению с мякотью и семенами. Установлено, что высокое содержание калия (934,88±14,02 г) и натрия (270,54±3,78 г) сосредоточены в мякоти, высокое содержание железа (15,12±0,23) - в кожуре, а высокое содержание фосфора (854,72±0,82 г) - в семенах. По результатам исследований доказано, что показатели безопасности дыни сорта «Торпеда» полностью соответствуют требованиям ТР ТС 021/2011. The results of studies of the physical and mechanical properties, chemical composition and safety indicators of the constituent parts (pulp, peel, seeds) of «Torpedo» melon are presented. As a result of a comparative analysis of the chemical composition of the pulp, peel and seeds of the melon, their significant difference was shown. Thus, the fat content in the pulp is 0.26±0.003 g, in the peel - 1.24±0.01 g, in the seeds - 26.21±0.31, the protein content is, respectively, 7.56±0.11; 9.92±0.14 and 21.52±0.32 g. The study of the content of reducing substances and crude fiber showed their high content in the peel, in comparison with the pulp and seeds. It was found that a high content of potassium (934.88±14.02 g) and sodium (270.54±3.78 g) are concentrated in the pulp, a high content of iron (15.12±0.23) - in the peel, and a high phosphorus content (854.72±0.82 g) - in seeds. According to the research results, it has been proven that the safety indicators of the Torpedo melon fully comply with the requirements of TR CU 021/2011.

Abstract. The experiment involved 68 heifers obtained from Polish Black-and-White Lowland dams (with no more than 50% Holstein Friesian blood) sired by Limousin bulls. The study was arranged to determine the slaughter and carcass traits, chemical composition and physical properties of musculus longissimus lumborum (MLL) as related to the level of marbling, and to examine the correlation between some of the traits mentioned above and the culinary characteristics of meat. The results of the study show that marbling significantly affected the dressing percentage and carcass traits such as subcutaneous fat content, fat of valuable cuts and MLL area. Most of the physico-chemical properties of tested muscles, with the exception of total protein and total collagen content, were related to the level of marbling. Based on the results obtained, it appears that age at slaughter and carcass weight turned out to be poor predictors of colour lightness within all marbling classes. The same conclusion applies to the amount of total collagen in large and strong marbled muscles for shear force value. In turn, soluble collagen content for shear force could be a quite good forecaster of meat tenderness but not in highly marbled muscles. Of all tested slaughter and carcass traits, only MLL fat content seems to be appropriate to assess both: the tenderness and lightness of meat.

The objective of this study was to contribute in improving knowledge on rabbit feeding in Gabon. This work was conducted with the aim of studying carcass characteristics and chemical composition of meat from rabbit induced by feeds containing P. phaseoloides. To that effect, 20 young female rabbits from local breed, weighing averagely 611 ± 33.20 g and aged about 6 weeks were randomly distributed in 4 groups of 5 animals each. The groups R0, R15, R20 and R25 were fed rations containing respectively 0%, 15%, 20% and 25% of P. phaseoloides. At the end of the trial, animals were slaughtered then eviscerated in order to evaluate carcass characteristics. Muscles were taken, ground and mixed for chemical analysis. No matter the ration, carcass characteristics showed no significant difference (p > 0.05). Highest protein contents in meat were recorded in animals from R15 (23.90% DM) and R20 (22.46% DM). The lowest fat content (5.41% DM) was that of animals from R25, followed by that from R20 (6.67% DM). Based on these results obtained, the ration containing 20% Pueraria phaseolides (R20) could be recommended.
