Duck egg is known to have an unpleasant fishy odor which often becomes a factor reducing its acceptance in public.  This odor is resulted from lipid oxidation which can be avoided by using an antioxidant.  This study was aimed at assessing the effects of the inclusion of star gooseberry (Sauropus androgynus) dried leaf extract in ration on egg organoleptic quality of local duck.  The study was conducted in a completely randomized design with 4 treatments and 4 replicates.  Sensory test by 60 semi-trained panelists and hedonic quality and hedonic tests were conducted.  Data were subjected to a Kruskal-Wallis test.  Results showed that treatments gave significant effects (P <0.05) on aroma (hedonic), yolk color, and aroma (hedonic quality).  It was concluded that the inclusion of star gooseberry dried leaf extract by 1,5% in ration improved the quality of egg yolk color, egg aroma, and consumers’ preference.  A further study on the effects of DSGLE on meat quality and protein digestibility in ducks was recommended.

Hen egg is easy to get and affordable. Besides having a complete nutritional content, chicken eggs are also easily damaged due to microbial activity during storage so that it can reduce egg quality. Therefore, a preservation process is needed to maintain egg quality. This study aims to determine the effect of soursop leaf extract concentrations on decreasing the quality of eggs. This research used a completely randomized design with two factors, the first factor was the concentration of soursop leaf extract (20, 30, 40%) and the second was the shelf life (0, 7, 14, 21 and 28 days). Observation included egg white index, egg yolk index, haugh unit, and weights of eggs. The results indicate that eggs with soursop leaf extract immersion treatment can maintain egg quality. The concentration of soursop leaf extract as much as 40% gives better results in maintaining the quality of eggs.

ABSTRAK Tujuan penelitian ini adalah untuk mengetahui motilitas dan viabilitas spermatozoa semen hasil sexing kambing Peranakan Etawa (PE) dengan metode sedimentasi putih telur menggunakan pengencer yang berbeda. Materi yang digunakan dalam penelitian ini adalah semen segar kambing Peranakan Etawa (PE) berumur 2 tahun dan bobot badan 120 kg dari Balai Besar Inseminasi Buatan (BBIB)  Singosari Malang. Metode penelitian ini yang digunakan adalah penelitian laboratorium dengan menggunakan rancangan acak lengkap (RAL). Perlakuan terdiri dari semen sexing dengan menggunakan pengencer Andromed lapisan atas dan Andromed lapisan bawah dan Tris Aminomethan Kuning Telur lapisan atas dan Tris Aminomethan Kuning Telur lapisan bawah dengan masing-masing 10 ulangan. Variabel yang diamati adalah motilitas dan viabilitas spermatozoa semen sexing dengan pengencer yang berbeda, proses sexing menggunakan metode sedimentasi putih telur. Data yang diperoleh dianalisis menggunakan Analisis Varian  (ANOVA) apabila perlakuan memberikan perbedaan, maka dilanjutkan dengan Uji BNT. Hasil penelitian menunjukkan bahwa metode sedimentasi putih telur dengan pengencer yang berbeda pada kambing Peranakan Etawa (PE) memberikan pengaruh yang sangat nyata (P<0,01) terhadap motilitas dan viabilitas spermatozoa semen sexing. Motilitas dan viabilitas terbaik terdapat pada pengencer Tris aminomethan kuning telur lapisan atas sebesar 75,65%, 74,41% dan Andromed lapisan atas sebesar 65,4%, 60%. Berdasarkan hasil penelitian dapat disimpulkan bahwa kualitas spermatozoa semen sexing kambing PE dengan menggunakan pengencer Tris aminomethan memberikan hasil terbaik terhadap motilitas dan viabilitas. Berdasarkan hasil penelitian ini maka disarankan agar menggunakan pengencer Tris aminomethan kuning telur sebagai pengencer sexing spermatozoa.   ABSTRACT The purpose of this study was to determine the motility and viability of PE sperm sexing with egg white sedimentation method using different diluents. This research method used was laboratory research using a completely randomized design (CRD) treatment PE sexing sperm. The results showed that the quality of PE sperm goat with various diluents showed a significant influence (P<0,01). The variables observed were motility and viability of sperm. The data obtained were analyzed using variance analysis (ANOVA) with complete randomized design (CRD). Motility and viability at best against Tris aminomethane top layer of egg yolk 65,4% and the top layer of Andromed 75,65%, 74,41%. Based on the results it is suggested that using Tris aminomethane yolk as a diluents sexing sperm. It can be concluded that the quality of sexing sperm goat PE by using tris aminomethane diluent gives the best result on motility and viability.

This study aims to determine the quality of jackfruit seed juice drinks with the addition of red ginger and to determine the level of acceptance of panelists on jackfruit seed juice drinks. Parameters observed included water content, protein content, carbohydrate content and organoleptic including color, taste, aroma and texture. This study used a Completely Randomized Design (CRD) consisting of one factor, namely the concentration of red ginger juice with four treatments, namely: 0%, 6%, 12%, 18%, each repeated three times. The results showed that jackfruit seed juice drink with the addition of 18% red ginger was the best treatment from the results of organoleptic tests. The proximate test results showed that the best treatment was 3.13% water content in 12% ginger treatment, 2.17% protein in 18% red ginger treatment and 95.61 carbohydrate in 18% red ginger treatment.

ABSTRACTEucheuma cottonii (E. cottonii) seaweed is a low level plant that has a high nutritional value. One of the ingredients that play a role in the formation of texture is carrageenan.Carrageenan is a type of hydrocolloid extracted from the seaweed of the red algae group (Rhodophyceae). The purpose of this study was to determine the quality of yields of Seaweed Carrageenan Extract (E. cottonii) obtained from Tablolong beach in the form of yield, ash content and fat content. The method used in this study is an experimental method with a completely randomized design (CRD) and for fat testing using quantitative descriptive methods. This study uses various concentrations of 0.1 N KOH, 0.2 N KOH, 0.3 N KOH and 0.4 N KOH. The results of the carrageenan yield test show that the addition of 0.1 N KOH concentration has a value of 56.10, KOH 0 , 2 N 62.16, KOH 0.3 N 72.73 and the best treatment was at P4 KOH 0.4 N 80.90. Carrageenan ash content test results showed that the addition of KOH concentration value obtained P1 KOH 0.1 N was 60.50, P2 KOH 0.2 N was 70.70, P3 KOH 0.3 N was 80.50, and P4 KOH 0.4 with a value of 90.50. The results of the carrageenan fat content of 0.1 KOH treatment has a fat content of 0, 2 while the treatment of KOH 0,2, KOH 0,3, KOH 0,4 have no fat content by showing the value (0). The results showed that the highest yield in the treatment of KOH concentration of 0.4 N with a value 80.95% and carrageenan ash content has the highest value in the treatment concentration of 0.4 N with a value of 90.50% while the fat content has a value of 0.2 in the treatment of KOH concentration of 0.1 N Keywords: Carrageenan, extract of E. cottonii seaweed.

Quality of spermatozoa motility and viability from rejected limousin bull semen diluted with skim milk egg yolk sitrat added with various levels of glucose. Glucose level used were 0%, 0,5%, 1,5%, 2,5%, and 3,5%. Writer was using on four years old Limousine bull. Bull semen used in this research was bull rejected semen with bellow 70% motility. Semen observation was done at 0 hour, 24 hours and 48 hours. Research design used in this study was completely randomized design with faktorial pattern with 5 replicates. Highest result in motility this research was showed at 24 hours with 30% value in glucose 2,5% treatment and 48 hours with 10% value. The lowest result showed in glucose 0% treatment at 24 hours and 0% at 48 hours. Highest result in viability showed on glucose 2,5% treatment with 62,6% value at 24 hours and at 48 hours with 53,4% value. Lowest result in viability showed on glucose 0% treatment with 44,2% value at 24 hours and 31,4% value at 48 hours.

Abstract. Khaeruddin, Junaedi, Hastuti. 2020. Cryopreservation of Indonesian native chicken semen by using dimethyl sulfoxide and various level of ethylene glycol as cryoprotectants. Biodiversitas 21: 5718-5722. Imported purebred chickens are becoming more popular and a regular staple in Indonesia. Therefore, it is necessary to strengthen conservation efforts to preserve Indonesian chickens, one of which is by means of sperm cryopreservation. This study aimed to determine the effects of the addition of DMSO and different concentrations of ethylene glycol to a Ringer’s lactate egg yolk (RLY)-or coconut water egg yolk (CWY)-based extender on the quality of frozen-thawed Indonesian chicken sperm. This study was used nine Indonesian native roosters about 20 months of age. The semen extenders used in this study were RLY + DMSO 7%, RLY + ethylene glycol 3%, RLY + ethylene glycol 5%, RLY + ethylene glycol 7%, CWY + DMSO 7%, CWY + ethylene glycol 3%, CWY + ethylene glycol 5% and CWY + ethylene glycol 7%. Liquid semen was packaged in 0.25 mL straw, then cooled at 5oC for 2 hours, frozen at 5 cm above liquid nitrogen for 10 minutes, following stored in a liquid nitrogen container for 24 hours. The semen straws were thawed at 37oC for 30 seconds. Statistical analysis for multiple comparisons was performed as a completely randomized design with eight treatment levels and seven replications. The results showed that there were no differences in sperm motility, recovery rate, and abnormality between extenders after the freeze-thaw process. Whereas, RLY + DMSO 7% was the highest sperm viability.

UTILIZATION AND INTERNAL QUALITY OF EGG ON PAPAYA PEEL MEAL DIET (CARICA PAPAYA L). The aim of research was to utilization and internal quality of eggs on papaya (carica papaya L) peel meal diet. The material used in this study were one hundred laying hens (MB 402). The completely randomized design (CRD) was done in this research for analysing of statistics to five treatments and four replications, each replications was occupied by five laying hens (MB 402). The variable measured were egg weight, egg yolk, colour of egg yolk.  The result of this research showed that egg weight, egg yolk, the colour egg yolk was not significantly different (P>0.05). Conclusion, the utilization of flour skin papaya until 16% in feed will increase the quality of chicken eggs. Kata Kunci: Papaya peel meal, laying feed, the quality internal egg.

This study aims to determine the quality of Bali cattle spermatozoa diluted using sugarcane juice-egg yolk. This research was carried out in the stables and Laboratory of the Faculty of Agriculture, University of Timor in August-September 2020. Semen was collected from an adult male bali cattle, aged ± 4.5 years in healthy condition. The method used in this study is an experimental method using a completely randomized design consisting of 4 treatments and 5 replications. Each treatment was T1: 0.075 ml semen + 0.3 ml of egg yolk sugarcane juice diluent and stored for 24 hours, T2: semen 0.075 ml + 0.3 ml of diluent for egg yolk cane juice and stored for 48 hours, T3: semen 0.075 ml + 0.3 ml of diluent for egg yolk sugarcane juice and stored for 72 hours, T4: semen 0.075 ml + 0 ,3 ml of egg yolk sugarcane juice diluent and stored for 96 hours. The variables measured were individual motility, viability, spermatozoa abnormalities, and semen pH. The results showed that the T4 treatment on a shelf life of 96 hours still showed a good average value with individual spermatozoa motility values of 45%, spermatozoa viability of 77.3%, spermatozoa abnormalities of 12.5% and semen pH 6.6. It can be concluded that the use of cane juice-egg yolk diluent has a positive impact because it is able to maintain the viability of spermatozoa for 96 hours.

Jelly candy is a soft textured candy processed with hydrocolloid components such as gum, pectin, agar, starch, carrageenan, gelatin. These are used to modify the chewy texture. This study aimed was to determine the effect of the combination of chicken feet gelatin and agar on the quality of jelly candy. Processing of chicken feet gelatin jelly candy based on Caeccar et.al (2018) method by modification. The study used a completely randomized design (CRD) with one factor, five levels and three replications. The factors studied were the ratio of chicken feet gelatin and agar 80:20; 60:40; 40:60; 20:80; 0:100. Product quality characteristics observed in this study were water content, ash content, reducing sugar content, sucrose content, and organoleptic quality. The results showed that the combination of chicken feet gelatine and agar were significantly affected water, ash, reducing sucrose content. Jelly candy with a treatment combination of 80% chicken feet gelatine and 20% agar was the best treatment. The results of the analysis of the candy were water content of 11.02± 0.04%, ash content of 0.89± 0.00%, reducing sugar content of 10.83± 0.01%, sucrose content of 50.68± 0.28%. The organoleptic test results showed that chicken feet gelatine improved the texture and taste of jelly candy.

Kitosan merupakan produk limbah krustacea bersifat biodegradable, tidak beracun  dan mampu mengikat kolesterol, sehingga meningkatkan kualitas telur.  Tujuan penelitian adalah melihat pengaruh pemberian kitosan dalam ransum terhadap bobot dan kadar kolesterol telur itik.  Penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan  4 perlakuan dan 5 ulangan.  Masing-masing ulangan terdiri dari 2 ekor itik sebagai satuan percobaan.  Perlakuan adalah R0 = 0% kitosan, R1 = 0,5% kitosan, R2 = 2% kitosan dan R3 = 2,5% kitosan. Peubah yang diukur adalah bobot telur total selama penelitian dan kolesterol telur itik.  Data diolah menggunakan program SAS Windows 16.  Hasil penelitian menunjukkan bahwa pemberian kitosan memberikan rataan persentase bobot telur yang berimbang antar perlakuan (P>0,05) dan kitosan 0,5% nyata menurunkan kadar kolesterol telur itik terendah (P<0,05)  yaitu 10,28 (mg/dg).Kata Kunci : Kitosan, Ransum, Bobot, Kolesterol, Telur ABSTRACTChitosan is a waste product of crustaceans that is biodegradable, non-toxic and able to bind cholesterol, thereby increasing the quality of eggs. The aim of the study was to see the effect of chitosan in the ration on the weight and cholesterol level of duck eggs. The study used a completely randomized design (CRD) with 4 treatments and 5 replications. Each replication consisted of 2 ducks as the experimental unit. The treatments were R0 = 0% chitosan, R1 = 0.5% chitosan, R2 = 2% chitosan and R3 = 2.5% chitosan. The measured variables are total egg weight during research and duck egg cholesterol. The data was processed using SAS Windows 16. The results showed that chitosan gave an average percentage of balanced egg weight between treatments (P> 0.05) and chitosan 0.5% significantly lowered the lowest cholesterol level of duck eggs (P <0.05) that is 10.28 (mg / dg).Keywords: Chitosan, Ration, Weight, Cholesterol, Eggs
