ABSTRACTPumpkin (Cucurbita moschata (Duch.) Poir ) is one of the vegetables that is rich in β-carotene as a precursor of vitamin A and has a fairly high carbohydrate content. Pumpkin processing can be done to produce various kinds of products, one of which is cake. Cake is a baked dough and liquid dough made from flour, sugar, salt, ingredients, shortening, milk, eggs, and aroma enhancer. This study aims to determine the levels of β-carotene contained in pumpkin cake and to determine the acceptability of β-carotene in pumpkin cake. This research is an experimental research. The experimental design used was Completely Randomized Design (CRD) with 1 control 4 treatments and each treatment was repeated 3 times. The research phase consisted of making flour and making cake. Data collection methods include organoleptic tests and β-carotene tests. Data were analyzed using analysis of variance / ANOVA to determine differences in quality, and if there is an influence then proceed with the Tukey test. Organoleptic test results show that the best treatment of pumpkin cake in terms of color is A1 with a value of 3.88, in terms of aroma namely A0 with a value of 3.92, in terms of texture is A0 with a value of 4.28 and in terms of taste is A0 with value of 4.16. As for the β-carotene test, the treatment of pumpkin cake with the highest β-carotene content was found in A4 with an average of 0.262 and the lowest level was in A0 with an average of 0.018. Based on research data, pumpkin flour is worthy of being used as an alternative source of flour because the resulting cake meets SNI quality standards both in terms of color, taste, aroma, texture and β-carotene content.Keywords : Cake, Pumpkin, β-Carotene, Organoleptic

ABSTRACTEucheuma cottonii (E. cottonii) seaweed is a low level plant that has a high nutritional value. One of the ingredients that play a role in the formation of texture is carrageenan.Carrageenan is a type of hydrocolloid extracted from the seaweed of the red algae group (Rhodophyceae). The purpose of this study was to determine the quality of yields of Seaweed Carrageenan Extract (E. cottonii) obtained from Tablolong beach in the form of yield, ash content and fat content. The method used in this study is an experimental method with a completely randomized design (CRD) and for fat testing using quantitative descriptive methods. This study uses various concentrations of 0.1 N KOH, 0.2 N KOH, 0.3 N KOH and 0.4 N KOH. The results of the carrageenan yield test show that the addition of 0.1 N KOH concentration has a value of 56.10, KOH 0 , 2 N 62.16, KOH 0.3 N 72.73 and the best treatment was at P4 KOH 0.4 N 80.90. Carrageenan ash content test results showed that the addition of KOH concentration value obtained P1 KOH 0.1 N was 60.50, P2 KOH 0.2 N was 70.70, P3 KOH 0.3 N was 80.50, and P4 KOH 0.4 with a value of 90.50. The results of the carrageenan fat content of 0.1 KOH treatment has a fat content of 0, 2 while the treatment of KOH 0,2, KOH 0,3, KOH 0,4 have no fat content by showing the value (0). The results showed that the highest yield in the treatment of KOH concentration of 0.4 N with a value 80.95% and carrageenan ash content has the highest value in the treatment concentration of 0.4 N with a value of 90.50% while the fat content has a value of 0.2 in the treatment of KOH concentration of 0.1 N Keywords: Carrageenan, extract of E. cottonii seaweed.

This research aims to determine the effect of the comparison of wheat flour with puree of pumpkin on the characteristics of nastar cake and to find out the right comparison of wheat flour with puree of pumpkin to produced nastar cake with the best characteristics. The experimental design used in this research was a Completely Randomized Design (CRD) with a comparison of wheat flour and puree of pumpkin consisting of 5 treatments namely 100% : 0%, 95% : 5%, 90% : 10%, 85% : 15%, and 80% : 20%. All treatments were repeated four times so that they were obtained 20 experimental units. The data obtained were analyzed by variance and if the treatment had significant effect then followed by Duncan’s Multiple Range Test. The results showed that the comparison of wheat flour and puree of pumpkin had a significant effect on the water content, total carotene content, antioxidant activity (?-carotene bleaching), color, texture, flavor, taste, and overall acceptance. Ratio of 80% wheat flour and 20% puree of pumpkin had the best characteristics with water content of 2.55%, ash content of 0.75%, ?-carotene content of 4.63 mg/100g, antioxidant activity of 1.71 mg/ml, color liked, texture rather liked, flavor liked, taste liked, and overall acceptance liked.

AbstrakPenelitian ini bertujuan untuk mengetahui pengaruh penambahan daging gurita terhadap nilai organoleptik, proksimat stik gurita. Metode penelitian ini menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari tiga perlakuan yaitu P1 (Daging gurita 35%), P2 (Daging gurita 45%), P3 (Daging gurita 55%). Data hasil pengamatan dianalisa menggunakan ANOVA (Analysis of Variance) pada taraf 95%, apabila terdapat beda nyata (p>0,05) maka dilakukan uji lanjut dengan uji DMRT (Duncam Multiple Range Test) pada taraf nyata 95%. Kandungan protein dan lemak diuji menggunakan metode AOAC dan kandungan karbohidrat di uji menggunakan metode nelson-smogiy. Hasil uji kandungan kadar lemak dan karbohidrat tertinggi terdapat pada perlakuan P1 dengan nilai 34,27% dan 7,81% dan Kandungan protein tertinggi pada perlakuan P3 dengan nilai 32,04%. Hasil penelitian ini menunjukan bahwa terdapat pengaruh nyata terhadap kandungan lemak dan karbohidrat serta tidak terdapat pengaruh nyata pada kandungan air dan protein pada stik gurita. Kata kunci: Daging gurita (Octopus cyanea), stik gurita, kandungan proksimat, uji organoleptik  AbstractThis study aims to determine the effect Octopus cyanea addition on organoleptic values and proximate content of octopus sticks. This research method used a completely randomized design (CRD) consisting of three treatments P1 (35% octopus meat), P2 (45% octopus meat), P3 (55% octopus meat). Observation data were analyzed using ANOVA (Analysis of Variance) at the level 95%, if there were significant differences (p>0,05) then further testing was carried out with DMRT (Duncan Multiple Range Test) at 95%. The content of protein and fat was tested by the AOAC method and the carbohydrate content was tested by the nelson-smogiy method. The highest test results for the content of  fat and carbohydrate were found in treatment P1 with a value of 34.27% and 7.81% and the highest protein content found in treatment P3 with a value of 32.04%. The results of this study indicated that there is a real effect on the content of fat and carbohydrates and there is no significant effect on the water content and protein of octopus sticks. Key words: Octopus cyanea, octopus stick, proximate content, organoleptic value

Not infectious disease (PTM) have become a health problem for every country. One of the main contributors who use PTM is food control, by consuming foods that contain inulin (bengkuang tubers) and anthocyanins (dragon fruit). Intermittent food products consisting of velva become more effective because in one product already has a lot of special nutritional content of inulin and anthocyanin fibers. The design of this study was experimental with a completely randomized design (CRD). The research method uses hedonic tests, spectrophotometry for anthocyanin levels, and literature tests for inulin fiber levels. This study involved 30 panelists who were apparently students of the Nutrition Department of the Poltekkes Bandung. This product formulation consists of three dragons and bengkuang, which is counterpart 1 (30%: 70%), counterpart 2 (70%: 30%), and counterpart 3 (50%: 50%). The hedonic test results showed that the level of preference consisted of counterpart 2 and the Kruskal-Wallis test results showed differences between the aspects of color, taste, and aroma with a value of p <α and also none in the design of the texture with p> α. The level of anthocyanin product serving is 6.04 mg and can fulfill 81% of the anthocyanin requirement by consuming two serving sizes. While the level of inulin per serving amounted to 2.1 g and can meet the needs of inulin at least a day from 350% snack.

The aims of this study were to determine the effect of substitution of sesame powder ( Sesamum indicum) to nutrient content and organoleptic quality on pumpkin biscuits (Cucurbita moschata). This study was an experimental study using the desaign of completely randomized design (CRD) which consist of four treatments. This study was conducted in December 2017 with made to taste (organoleptic test) with 20 panelist and and laboratory test including analysis of ash content, water, protein, fat, carbohydrate and calcium biscuits. Based on organoleptic test results obtained that the best treatment is P3 with composition of wheat, pumpkin powder, and sesame powder (65% : 12% : 23%). The treatment P3 liked by panelist of color and texture attribute. The most biscuit aroma liked by panelist is P0's treatment  (without sesame flour increase). The most biscuit taste liked by panelist which is P2's treatment biscuit with whole-wheat compare composition, pumpkin powder and sesame powder (76%: 12%: 12%).  The highest average yield of calcium levels on P3 treatment of 0.65%. The higher the addition of sesame powder, the calcium biscuit level will increase so are with water content, ash, protein and fat will increase along with the addition of sesame powder. This is inversely related to carbohydrate levels of biscuits, which the more addition of sesame powder the carbohydrate content in biscuits decreased.

The purpose of this study was to determine the effect adding gruel of basil leave to the nutritional content of sago crackers. The experimental design used was a Completely Randomized Design (CRD) consisting of the concentration of the adding gruel of basil leave, namely: 0% (Control), 10%, 15%, and 20%. The parameters observed in this study were chemical analysis (water content, levels of provitamin A (β-carotene), phosphorus content, antioxidant content) and organoleptic value of sago crackers. The results showed that the concentration of adding gruel of basil leave affect water content, levels of provitamin A, especially β-carotene, phosphorus levels, and antioxidant levels of sago crackers. Likewise, on the results of acceptance or the level of panelist fondness. The best treatment, in terms of chemical analysis and organoleptic test, is sago crackers with the addition of 10% concentration of adding gruel of basil leave, with a value water content of 7.96%, provitamin A content (β-carotene) level of 1.96%, phosphorus content of 0.045%, and 3.98% antioxidant content, fondness value of color 3.23, fondness value of aroma 3.65, fondness value of flavour 3.87, and fondness value of texture 3.93

ABSTRACT CARCASS QUALITY OF BROILERS FED RATION CONTAINING WASTE OF SAWI. Study was conducted to evaluate the effect of substituting part of ration with sawi waste meal on carcass quality and abdominal fat of broilers. Total of sixty unsexed day old chick broilers of MB-202 P strain were randomly divided into twenty units of pens, each of pen was filled with three heads of chicks.  Birds were maintained during forty days. Levels of substituting part of ration with sawi waste meal were  0, 5, 10, 15, and 20 percents. Each treatment had four replications using completely randomized design with 5 x 4. Fresh water and ration were given ad libitum. Birds from day old chick to the age of twenty one days old were fed with BR-21E ration for all treatments. The treatments of ration were fed at ages of twenty two days old to the end of study (period when all animals were slaughtered). Data were analyzed using F test and Tukey test for the significant F test. Results showed that control treatments were significantly different (P<0.05) with those others four treatments for carcass weight, but not significantly different with those others four treatments for carcass percentages and abdominal fat. Therefore, sawi waste meal can be used to substitute part of ration up to 20 percents for broilers ration in term of the carcass percentages and abdominal fat.   Key words: Sawi waste meal, broilers, carcass quality.

1. With the object of determining the vitamin A value of carotene in different green fodders, an investigation has been undertaken to study (i) the relation between the chemically determined carotene and its biological activity as compared with that of standard carotene, (ii) the purity of apparent carotene from different sources, (iii) absorption of carotene in rats, and (iv) the relative efficiency of the standard carotene and preformed vitamin A.2. Biological tests have shown that the chemical method of assay is a fair index of the true carotene content in green fodders, and carotene in the form of an extract is quite as effective in the system as that present in the plant tissues. β-Carotene appears to be predominant in these materials.

The purpose of this study was to determine the effect of substitution ketapan seed to chemical and organoleptic properties of  the resulted snack food, knowing the exact level of substitution, so obtain the snack food liked the panelists. The design used in this study was completely randomized design (CRD) with single factor that influences the concentration of seed flour substitution ketapan seed consisting of 5 treatments. Each treatment be repeated 3 times. The data obtained was analyzed by Analysis of Variance (ANOVA), if there was a difference between the treatment of advanced test conducted by Duncan`s Multiple Ranges Test Method (DMRT) at the level of 5%. Substitution of wheat flour with ketapan seed flour  affects the snack food produced, which can reduce the water content of the snack food and increase levels of protein and fiber snack food. Ketapan seed flour substitution preferred by the panelists was substitution ketapan seed flour up to 30% with a value of 3.52 and the criteria snack food produced had a water content of 3.67%, 15.10% db protein content, fiber content of 3.64 % db, brownish yellow color (2.95), a rather tasted wheat flour (3.35), and crispy (3.60).

The carpel is the female reproductive structure composed of a set of stigma, style and ovary. Normally passionflower have three carpels, however, some cultivars have this structure in greater quantity. The objective of this work was to identify relationships between the number of carpels and the physical characteristics of BRS Gigante Amarelo fruits. The flowers with three and four carpels were marked, pollinated and the fruits harvested from these flowers analyzed for transverse diameter, longitudinal diameter, pericarp thickness, fruit mass, pulp mass, pulp ratio, number and weight of seeds. A completely randomized design with 10 replicates per treatment was used and each plot had the average of 3 fruits. The data were submitted to variance analysis and the means were compared by the Tukey test at 5% of probability. The fruits generated by flowers with 4 carpels were 18,30% heavier, their pulp were on average 20.75% heavier, presented transverse diameter 7,53% superior to that of fruits generated by flowers with 3 carpels. Similar increments were identified regarding the number of seeds and the weight of seeds per fruit that increased 18,85% and 52.42%, respectively. This result indicates that cv. BRS Yellow Giant with 4 carpels generates heavier fruits, pulp and seeds with a more spherical shape.
