The purpose of this study was to evaluate the rigor mortis development and its effects on striploins quality of Murrah buffalos from meat (males) and dairy (females) productions. The rigor was monitored during carcass chilling (up to 22 h postmortem) and the meat physicochemical traits was accessed after 72 h postmortem. Glycolytic rate, measured by decreasing pH and glycogen content, was higher (p < 0.05) in female than in male buffalo, leading to a different onset rigor time (5-6 h and 9-10 h, respectively). Male meat had (p < 0.05) lower fat (1.41 vs 3.58%) and insoluble collagen (1.18 vs 1.58 mg g-1) contents, but higher soluble collagen content (5.16 vs 20.38%), sarcomere length (1.65 vs 1.84 µm), myofibrillar fragmentation (334 vs 295) and shear force (39.38 vs 25.92 N) than females. These results suggest that dairy buffalo meat is more tender and can be used on the market as high-quality meat such as from buffalo raised to meat production.

The effects of sex and production systems on carcass yield, meat quality and proximate composition of sub-adult impala were evaluated by culling 35 impala from intensive (12 males) and semi-extensive (12 males and 11 females) production systems within the same game farm. While no sexual dimorphism was found for carcass weights, male impala had a higher dressing percentage than females, indicating a higher meat production potential. Few differences were observed for yields between the male impala from the different production systems, but physical meat quality parameters indicated possible stress for those kept intensively. Minor differences existed in physiochemical parameters between various impala muscles for the two sexes and production systems, providing little motivation for these factors to be considered when processing sub-adult impala carcasses. Impala meat from both sexes, all muscles and all production systems produced meat with shear force values below 43 N, and thus may be considered as tender. Furthermore, the proximate composition of all impala meat in this study ranged from 74.7 to 77.0 g/100g moisture, 20.7 to 23.5 g/100g protein, 1.2 to 2.2 g/100g fat and 1.1 to 1.3 g/100g ash content. These values compare favorably to other game species, indicating that impala meat may serve as a lean protein source.

Background: A large number of indiscriminate research reports on buffaloes have been published from Bangladesh but a systematic review based on these findings is lacking in literature. This review was conducted to analyze and summarize all the available inland research reports on buffaloes to identify gaps and to provide recommendations that would be required for future academic and research plan for buffalo development. Objective: The purpose of this review was to assess and provide the research progress on buffaloes to maximize the direction and benefits for the future academicians, research scientists, producers and consumers. Materials and Methods: A comprehensive scientific literature search on all the aspects of buffaloes published in peer-reviewed journals from Bangladesh was reviewed during two years periods of 2018 to 2019. Results: Bangladesh has only 1.485 million indigenous buffaloes distributed throughout the country with higher concentration (40%) in coastal districts and some buffalo pockets. A limited number of imported Nili-Ravi and Murrah buffaloes and their crosses are reared in some farms and smallholder farmers in Bangladesh. Buffalo has been ‘undervalued’ and not addressed properly for development in Bangladesh. Most of the indigenous buffaloes are reared with very minimum housing facilities and limited feed supply. Some farmers are usually supplied local grass (4.98 ± 2.89 kg/DM/day) and rice straw (10.90 ± 2.85 kg DM/day) with one or two concentrate feed (1.51 ± 0.80 kg/DM/day) in their lactating buffaloes. Natural breeding (95.7%) is more prominent practice than AI (4.3%). The buffalo breeders and farmers are facing challenges in terms of poor reproductive efficiency, sub-optimal production potential, lack of feed and fodders, infertility and high calf mortality. However, a total of 236 research reports have been reviewed on buffaloes, which 126 on production and 110 on health aspects. The research on productive and reproductive performances, live weight and meat production, feeds and feeding, balanced rations for calves and lactating cows have been reviewed and described. The buffalo health research includes on anatomy, histology, physiology, biochemistry, microbiology, parasitology, pathology and clinical sciences with emphasis to toxoascariasis, mastitis, rotavirus and calf mortality have been described and discussed. Conclusions: The demand of draught animals at rural level decreased due to mechanization whereas the demand of animal sources protein (milk & meat) increased tremendously due to urbanization. Therefore, there is a great scope for dairy buffalo production side by side cattle dairy industry in Bangladesh. The indigenous buffaloes with poor reproductive and productive performances need to be improved through upgrading the genetic improvement by AI with Nili-Ravi and Murrah buffalo semen and adequate provision of feed and fodder with balanced ration, better management practices, adequate veterinary medical services with appropriate extension are required for dairy buffalo production in Bangladesh. An attempt at government level and concerned scientists would be required to solve the seven recognized constraints related to buffalo production and health to promote the livelihood of smallholder farmer’s via-a-vis national economy of Bangladesh. Meat is a product formed from skeletal muscles of animals through different biochemical processes following rigor mortis. Therefore, characteristics of muscle tissue, its structure, number, diameter and percentage of different muscle fiber types would greatly determine the quantity and the quality of meat. Having in mind that selection and nutrition led to nearly a maximum in meat production, and consumers are having higher and higher demands for „organic“ products, products from more natural production, their concern for animal welfare is rising, the implementation of physical activity in animal rearing could be of more importance in the future. Physical activity could imply outdoor systems, or semi-confinement systems with enriched environment. Also, the impact of this factor could be of higher importance in pigs and chicken, where intensive selection towards lean meat content increased the number of glycolytic fibers in muscles, leading to more pronounced problems with meat quality (PSE meat).


This article presents the results of studying the impact of housing and feeding conditions on broiler chickens of Hubbard RedBro cross, as well as the quality of products obtained when using floor and cage content, in a farm. It established that when receiving a mixed feed of own production using feed raw materials grown on a farm without the use of pesticides, a statistically significant decrease in potentially dangerous substances for animal health is recorded. Compared with factory feed, it has reduced the content of pesticides by 14 times, and mercury and arsenic by 24 times, cadmium by five times, and lead by ten times. The results of the study of economic indicators of growing Hubbard RedBro cross broiler chickens, as well as the chemical composition and quality of carcasses, indicated that there was no significant difference between the floor and cell conditions of keeping. Still, the use of a diet based on eco-feeds contributed to a statistically significant decrease in the concentration of toxic metals in the muscles of the poultry of the experimental groups. As a result, it found that the use of the studied compound feed in the diets of broiler chickens increased the indicators of Biosafety and ensured the production of environmentally safe ("organic") poultry meat products.

Background: Studies were carried out on two breeds of pigs - Pietrain (P), and Kemerovo (K), contrasting in composition of carcasses, and their hybrids. Objective: The purpose of this work was to establish the characteristics of the composition of lipids of intramuscular fat (IMF), back fat and serum, organoleptic qualities in animals of these breeds. Methods: Animals of 10 individuals in each group were fed on a standard feed and slaughtered with a live weight of 95-100 kg. The quality of carcasses, the biochemical characteristics of blood, the composition of fatty acids and cholesterol in meat and fat, and blood lipid peroxidation were determined. Results: Thickness on the back fat (BF) at the level of 6-7 thoracic vertebrae with a live weight of 100 kg was 35.8 ± 1.65 mm in pigs of breed K, in hybrids - 27.6 ± 1.06, and in breed P - 19, 6 ± 1.43 mm. IMF in pigs of breed K was almost 4.5 times greater than that of breed P. IMF K breed contained 2 times less cholesterol than in P (2.34 vs. 4.68%). In the IMF, K was 2 times less polyunsaturated fatty acids (PUFA), than P, 7.82 and 15.22%, linoleic acid, 6.74% and 12.42% respectively (p &lt;0.005).The organoleptic properties of meat and salted back fat were significantly higher in breed K (P = 0.05). Conclusion: The data obtained allow us to establish priorities in the use of products of specific breeds of pigs, depending on medical requirements.

The catchment area of River das Antas (Irati, Paraná, Brazil) is of high importance both for human consumption and irrigation. Within Irati, this river passes through a rural area and through the city of Irati, crossing both poor and rich neighbourhoods. We selected three study areas downstream (a rural area, poor community, and rich neighbourhood) in which we measured turbidity, the concentration of sediments and pH during rainy days. Our results showed downstream trends of increasing turbidity and concentrations of sediments with decreasing pH. The values of turbidity and of concentration of sediments were significantly different in the rural area, while the pH values were significantly different between the three study areas. These findings highlight the effect of agricultural activities in the generation of sediments and turbidity. The—presumably expected—effects of organic urban waste from the poor neighbourhood were also detected in the pH values. We conclude that efforts should be made to ensure that land planning and training/education programmes on sustainable farming practices are undertaken by the authorities to reduce water pollution and its effects on water bodies during rainfall events, since paving streets is not a feasible option in the short term due to the high costs associated with this measure.

Metabolic energy budgeting (MEB) was used to evaluate evolution over 30 years (1980–1981 to 2010–2011) in New Zealand southern North Island ‘hill country’ sheep and beef cattle systems. MEB calculates energy required by animals for body weight maintenance, weight gain or loss, pregnancy, and lactation to estimate the system feed demand and thereby provide a basis for calculating feed conversion efficiency. Historic production systems were reconstructed and modeled using averaged data from industry surveys and data from owners’ diaries of three case-study farms and reviewed for patterns of change over time. The modeling indicated that pasture productivity was 11% lower and herbage harvested was 14% lower in 2010–2011 than in the early 1980s. This productivity decline is attributable to warmer, drier summer weather in recent years. However, primarily through increased lambing percentage, feed conversion efficiency based on industry data improved over the study period from 25 to 19 kg feed consumed per kg lamb weaned, while meat production rose from 137 to 147 kg per ha per year. Similar improvements were observed for the three case farms. The New Zealand MEB model was found effective for analysis of tropical beef production systems in Sabah, Malaysia.

Small ruminants have been one of the first domesticated species and from their origins have produced multiple benefits to humans. In the last two centuries, world sheep production has become more and more specialised upon geographical areas. But, recent changes in consumer attitudes, together with the increment in artificial fibre industries and human world population, some crisis related with the international wool market and some increments in lamb prices, have provoked that lamb meat has increased its relative importance inside the global sheep income. Also, sheep production systems vary considerably across the world, and reflect the different local environmental conditions, which determine, to a large extent, breeds, housing, levels of intensification and, at the end, local market requirements and qualities. However, among all the meats, sheep meat remains the most internationally traded (16 % of total world production is exported), which explains the potential existence of different lamb products in the same market. Then, the new requirements have created a higher interest for meat production, including its quality and quality marks. This interest from producers and the industry should be reflected in a proportional higher interest from the researches towards sheep and goat, where it exists, in general, important lacks of knowledge and, in particular, in lamb and kid meat Science. In the present speech we will made a special incidence on the relationship between carcass quality and lamb acceptability and on some factors like breed and species, diet and production system, slaughter weight and ageing time and their importance on the variation of the carcass and meat quality, including consumer acceptability.
