As already noted in the previous work, “Nutrition on Aircrafts: a Menu Analysis (Part 1)”, the organization of passenger service for air transport consists not only in the transportation of passengers, but also in the organization of meals on board airliners. The assortment of dishes depends on many factors such as: budget of the airline, season, flight duration, class of service, departure time, national characteristics and category of passengers. In this paper, the menus of Nordwind Airlines and Azur Air are considered. The airline “Nordwind Airlines” at the stage of purchasing tickets offers its passengers the opportunity to form their diet from the proposed list of dishes for an additional fee. Typically, the list includes chicken dishes, meat dishes, pilaf and special nutrition (vegetarian nutrition and nutrition for children), there is also the option “Guaranteed nutrition”, which, depending on the duration of the flight, includes soft drinks; hot nutrition; Tea coffee. “Azur Air” Airlines in the standard package of services provides snacks during the flight or does not provide on-board nutrition at all. Nevertheless, there are several services with which you can receive ready-made culinary products for an additional fee. The airline cooperates with Fly Service LLC (St. Petersburg), which provides various catering services, including on board an airplane. The Restaurant on Board service is available only upon departure from Pulkovo Airport (St. Petersburg). The information on the international rating according to the Skytrax World Airline Awards of the world according to the criterion of “Airline Catering” is presented. Among Russian airlines, only Aeroflot in the Economy Class nomination is present in international ratings. The paper presents a menu with the calculation of nutritional value and calorie content.

The organization of passenger service for air transport consists not only in the transportation of passengers to their destination, but also in the provision of various types of food, which can include hot meals according to the free choice menu or complete rations on board the aircraft, desserts, drinks. The range of dishes depends on the budget of the airline, season, flight duration, class of service, departure time, principles of healthy eating, national characteristics, specific tastes and age of the passenger. In this paper, the menu of the company Aeroflot — Russian Airlines is considered. Food in Aeroflot airplanes is divided into two cycles. Depending on the direction and duration of the flight, a choice of two dishes is provided: cold or hot breakfast, hot or cold lunch, snacks and drinks. The menu of this airline is updated every six weeks. Economy class menu: depending on the direction, departure time and duration of the flight, it contains breakfast, lunch or snacks. A selection of hot and cold drinks is also provided depending on the duration and direction of the flight. Flights lasting up to 3 hours of flight offer passengers breakfast or lunch or dinner, soft and hot drinks. On flights lasting from 3 to 6 hours of flight, the menu includes appetizer, main course, dessert, soft and hot drinks. There is also the option of ordering special meals in the Economy class on flights over 3 hours. On flights over 12 hours of flight to Los Angeles, Miami, Havana, passengers will be offered an additional diet — a sandwich and fruits. The Comfort class menu offers passengers a welcome drink and a menu card is provided. During the flight in the Comfort class, two meals are provided for flights lasting more than 6 hours. The menu of this class is presented for 14 directions (from Moscow to Bangkok, Phuket, Beijing, Hong Kong, Dubai, Los Angeles, New York, Vladivostok, Khabarovsk, Petropavlovsk–Kamchatsky, Seoul, Shanghai, Tel Aviv, Yuzhno–Sakhalinsk and back). The paper presents a menu with the calculation of nutritional value and calorie content.

В исследовании участвовали 20 спортсменов-юниоров (мастера спорта и кандидаты в мастера спорта) в возрасте 17-18 лет и 10 добровольцев соответствующего возраста и интенсивности физической нагрузки. В результате исследований установлено, что суммарная калорийность потребленных за сутки продуктов в основном соответствовала энерготратам спортсменов обследованных групп. Соотношение белки/жиры/углеводы в суточном рационе спортсменов свидетельствует о недостаточной квоте углеводов в соответствии с формулой оптимального питания для юных спортсменов. При этом потребление добавленного сахара у спортсменов всех категорий превышало рекомендуемый уровень (10% от калорийности суточного рациона). The study involved 20 junior athletes (masters of sports and candidates for masters of sports) aged 17-18 and 10 volunteers of the corresponding age and intensity of physical activity. As a result of the research, it was found that the total calorie content of products consumed per day basically corresponded to the energy consumption of athletes in the surveyed groups. The ratio of protein / fat / carbohydrates in the daily diet of athletes indicates an insufficient carbohydrate quota in accordance with the optimal nutrition formula for young athletes. At the same time, the consumption of added sugar in athletes of all categories exceeded the recommended level (10% of the caloric content of the daily diet).

Abstract This review is focused on the utilization of insects as a new opportunity in food and feed products, including their commercialization both in traditional and new markets. It has been suggested that insects are considerably more sustainable when compared with other sources of animal protein, thus alleviating the pressure over the environment and the planet facing the necessity to feed the world population, constantly increasing. Many chefs have adhered to the trend of using insects in their culinary preparations, bringing insects to the plan of top gastronomy, highlighting their organoleptic qualities allied to a recognized high nutritional value. However, in some markets, insects or insect-based products are not readily accepted because of neophobia and disgust. Moreover, the insect markets, farming, and commercialization are experiencing a huge growth, in which the domain of animal feed is undoubtedly a very strong component. The future of insects as human food and animal feed seems promising in view of the recent trends and challenges.

Many small islands base their economy on tourism. This activity, based to a large extent on the movement of millions of people by air transport, depends on the use of fossil fuels and, therefore, generates a large amount of greenhouse gas (GHG) emissions. In this work, these emissions are evaluated by means of various carbon calculators, taking the Canary Islands as an example, which is one of the most highly developed tourist archipelagos in the world. The result is that more than 6.4 million tonnes (Mt) of CO2 are produced per year exclusively due to the massive transport of tourists over an average distance of more than 3000 km. The relative weight of these emissions is of such magnitude that they are equivalent to more than 50% of the total amount produced by the socioeconomic activity of the archipelago. Although, individually, it is travelers from Russia and Nordic countries who generate the highest carbon footprint due to their greater traveling distance, the British and German tourists account for the greatest weight in the total, with two-thirds of emissions.

The present article reviews the history of mushroom uses in culinary, food and medicinal values; current status and future aspect of mushroom research. Mushrooms contain biologically active polysaccharides, lipid and proteins in fruit bodies, each of them has a distinct role in health as either nutritional value or medicinal elements. Immunostimulating polysaccharides found in mushrooms, are most important for modern medicine. Several of the mushroom biomolecules have undergone phase I, II, and III clinical trials and are used extensively and successfully throughout the world for the treatment of various cancers and other diseases. Medicinal functions played by the mushrooms include antitumor, antibacterial, antioxidant, antiparasitic, antidiabetic, detoxification, cardiovascular, antihypercholesterolemia, antiviral, antifungal, hepatoprotective, immunomodulating and free radical scavenging. The present review draws attention to nutritional and medicinal importance of mushroom as well as the problems and opportunity in the future development of mushroom research.

For thousands of years, truffles have been used as essential foods in different cultures around the world because of their rich nutritional value and their pleasant and characteristic smell. We have studied the effect of truffles (Tirmania Nivea and Tirmania Pinoyi) extracts on the antioxidant stress properties issued from the Moroccan desert. Antioxidant and anti-free radical activities were studied using three analytical methods: trapping capacity of 1,1-diphenyl-2-picrylhydrazyl, phosphomolybdate, and reducing ferric antioxidant capacity; in addition, phenol and flavonoid levels were measured. The results of the FRAP, DPPH and PPM tests of T. Nivea were respectively 4.112±0.217, 0.142±0.006, 2.235±0.110 mg/mL for methanols and 3.424±0.034, 0.137±0.025, 0.858±0.010 mg/mL for ethyl acetate extracts. The results of the tests of T. pinoyi were respectively 3.670±0.572, 0.102±0.004, 0.907±0.014 mg/mL for methanols and 3.404±0.096, 0.080±0.003, 0.693±0.057 mg/mL for ethyl acetate extracts. For this work, we propose a valorization of the Moroccan truffle in the prevention of oxidative stress.

I have now reached the end of my task. The theme which I have sought throughout is that operating economics, in the broadest sense, are the essence of commercial Air Transport. The purpose of Air Transport is to improve communications—and to improve them economically. Although Air Transport the World over is losing money at present, through a combination of unfortunate circumstances, the facts of the present situation and of developments in train will, I am sure, confound the prophets of gloom. Air Transport, provided with adequate tools and run on the right methods, can be made to pay—furthermore, air travel can be provided economically at fares which the average man will be able to afford.

Recently, air pollution has worsened throughout the world, and as regulations on nitrogen oxides (NOx) are gradually tightened many researchers and industrialists are seeking technologies to cope with them. In order to meet the stringent regulations, research is being actively conducted worldwide to reduce NOx-causing pollution. However, different countries tend to have different research trends because of their regional and industrial environments. In this paper, the results of recent catalyst studies on NOx removal by selective catalytic reduction are reviewed with the sources and regulations applied according to the national characteristics of South Korea. Specifically, we emphasized the three major NOx emissions sources in South Korea such as plant, automobile, and ship industries and the catalyst technologies used.

By the death of Sir Dugald Clerk at the age of 79, the Royal Society has lost one of its greatest engineers. He was one of those rare individuals who combined scientific theory with direct practical experience and that in equal measure. Clerk was born in Glasgow a little before the invention of the internal combustion engine, to which he soon became deeply attached. During the whole of his career, Clerk devoted himself to this new development which he fostered with sympathy, understanding, and with a firm confidence in its future. The vast modern development of road and air transport made possible by the internal combustion engine, we owe directly or indirectly to Sir Dugald Clerk. He, beyond anyone else, is responsible for its development; directly by the work of his own hands and indirectly by his teaching to his innumerable disciples all the world over, all of whom derive the greater part of their knowledge and inspiration from his work.
