Muscle foods and their products are a fundamental part of the human diet. The high protein content found in muscle foods, as well as the high content of essential amino acids, provides an appropriate composition to complete the nutritional requirements of humans. However, due to their special composition, they are susceptible to oxidative degradation. In this sense, proteins are highly susceptible to oxidative reactions. However, in contrast to lipid oxidation, which has been studied in depth for decades, protein oxidation of muscle foods has been investigated much less. Moreover, these reactions have an important influence on the quality of muscle foods, from physico-chemical, techno-functional, and nutritional perspectives. In this regard, the loss of essential nutrients, the impairment of texture, water-holding capacity, color and flavor, and the formation of toxic substances are some of the direct consequences of protein oxidation. The loss of quality for muscle foods results in consumer rejection and substantial levels of economic losses, and thus the control of oxidative processes is of vital importance for the food industry. Nonetheless, the complexity of the reactions involved in protein oxidation and the many different factors that influence these reactions make the mechanisms of protein oxidation difficult to fully understand. Therefore, the present manuscript reviews the fundamental mechanisms of protein oxidation, the most important oxidative reactions, the main factors that influence protein oxidation, and the currently available analytical methods to quantify compounds derived from protein oxidation reactions. Finally, the main effects of protein oxidation on the quality of muscle foods, both from physico-chemical and nutritional points of view, are also discussed.

Abstract Oxidative reactions can reduce the quality of meat products. Synthetic antioxidants can delay the formation of oxidation products but their use in muscle foods has been reconsidered among modern consumers willing to purchase clean label products. Rosemary is a relevant source of antioxidants that can be explored as natural additive in muscle foods. This review aims to provide an overview of the protective effect of rosemary active against the oxidative decay in meat products. The use of rosemary essential oil or extract can slow the progression of oxidative reactions and preserve redness, reduce the accumulation of primary and secondary lipid oxidation and protein oxidation products, and slow the increase of perceived rancidity in sensory analysis. These effects were reported during the storage of patties, burgers, meatballs, sausages, and nuggets. In this sense, rosemary extracts and essential oil can be explored as natural antioxidant in meat products.

Several levies have been made in the groundwater of Ain Djenane of the Tiaret region (Algeria) during the period of April to May 2016 at the level of several wells located in urban areas. These levies have been the subject of analysis according to the techniques of the quality of the water assessment and the recommendations of the World Health Organization. The physical characteristics show that the water is of good quality. Very high nitrate rate has revealed with the chemical analyzes. The physico-chemical analysis has shown that studied wells have toxic substances concentrations below the WHO and national standards. It was indicated a strong contamination with nitrates (98.19±2.46 mg/l), nitrogen (18.0±3.33mg/l), phosphates (0.487±0.06 mg/l), and the contents of suspensions (851.76±18.1 mg/l), respectively. These concentrations are bigger than the standards recommended by the WHO (2006) and the standards of Algeria. The presence very high nitrates content in these waters could constitute a significant health risk to human health.

In this work, we will focus on the assessment of the quality of the Casablanca EST coastline, including bacterial and toxic water pollution, before the realization of the SIDI BERNOUSSI pre-treatment station. For this purpose, a set of analyzes were carried out on the littoral waters to evaluate the quality of sea water. This companion of analyzes includes: Analyzes on the surface of the sea water: Physico-chemical parameters: pH, temperature, biological oxygen demand BOD 5. Undesirables substances: Nitrates (NO3-), Ammonium (NH4+), Phosphates (PO4-), Hydrocarbons. Bacteriological parameters: Faecal coliforms and faecal streptococci. Sediment Analysis: Arsenic (As), Barium (Ba), Cadmium (Cd), Total Chromium (CrT), Copper (Cu), Iron (Fe), Mercury (Hg), Lead (Pb), Selenium (Se), Zinc (Zn). Biodiversity analyzes: For algae: Arsenic (As), Cadmium (Cd), Mercury (Hg), Lead (Pb). For mussels: Cadmium (Cd), Mercury (Hg), Lead (Pb). The results showed that the waters of the east coast of Casablanca are contaminated with pollutants in this case pathogenic bacteria, toxic substances including heavy metals and other toxic substances; on the other hand, coastal biodiversity is also affected. This contamination is due to industrial activity in the area. but remains below, for most pollutants, normative limits. For bacteriological pollution, beaches AIN SEBAA and NAHLA recorded a coliform contamination and faecal streptococci exceeding the values of the Moroccan norm of bathing water.

The industrial production of ethanol by fermentation using molasses as main material that generates large quantity of wastewater. This wastewater contains high levels of colour and chemical oxygen demand (COD), that may causes serious environmental pollution. Most available treatment processes in Vietnam rely on biological methods, which often fail to treat waste water up to discharge standard. As always, it was reported that quality of treated wastewater could not meet Vietnameses discharge standard. So, it is necessary to improve the treatment efficiency of whole technological process and therefore, supplemental physico-chemical treatment step before biodegradation stage should be the appropriate choice. This study was carried out to assess the effect of coagulation process on decolourization and COD removal in molasses-based ethanol production wastewater using inorganic coaglutant under laboratory conditions. The experimental results showed that the reductions of COD and colour with the utilization of Al2(SO4)3 at pH 9.5 were 83% and 70%, respectively. Mixture FeSO4 – Al2(SO4)3 at pH 8.5 reduced 82% of colour and 70% of COD. With the addition of Polyacrylamide (PAM), the reduction efficiencies of colour, COD and turbidity by FeSO4 – Al2(SO4)3 were 87%, 73.1% and 94.1% correspondingly. It was indicated that PAM significantly reduced the turbidity of wastewater, however it virtually did not increase the efficiencies of colour and COD reduction. Furthermore, the coagulation processes using PAM usually produces a mount of sludge which is hard to be deposited.

In this paper, the linear regression model using ANN and the linear regression model using MS Excel were developed to estimate the physico-chemical concentrations in groundwater using pH, EC, TDS, TH, HCO3 as input parameters and Ca, Mg and K as output parameters. A comparison was made which indicated that ANN model had the better ability to estimate the physic-chemical concentrations in groundwater. An analytical survey along with simulation based tests for finding the climatic change and its effect on agriculture and water bodies in Angul-Talcher area is done. The various seasonal parameters such as pH, BOD, COD, TDS,TSS along with heavy elements like Pb, Cd, Zn, Cu, Fe, Mn concentration in water resources has been analyzed. For past 30 years rainfall data has been analyzed and water quality index values has been studied to find normal and abnormal quality of water resources and matlab based simulation has been done for performance analysis. All results has been analyzed and it is found that the condition is stable.

O Brasil apresenta grande disponibilidade de água doce em seus mananciais. Fazendo parte desse recurso encontra-se, o rio Paciência, localizado na Ilha do Maranhão destacado pela sua importância local, principalmente por contribuir com suas águas para recarga dos mananciais subterrâneos, fonte de abastecimento público de vários bairros de São Luís, capital do estado. No entanto, este rio vem sofrendo comprometimento da qualidade de suas águas, consequência do processo de uso e ocupação dos espaços em sua bacia. Destacando-se como um dos principais problemas relacionados a qualidade de ambientes fluviais,  a eutrofização, que consiste no processo em que o corpo d’água adquire elevados níveis de nutrientes (fosfatos e nitratos), é um indicador determinante da qualidade da água. Neste sentido, o objetivo deste trabalho foi caracterizar a qualidade da água e do estado trófico na bacia hidrográfica do rio Paciência atráves dos parâmetros fisico-químico evidenciando os trechos mais comprometidos conforme os valores alcançados nas análises. Os resultados das análises foram comparados com a CONAMA No. 357/05 que indicaram uma situação preocupante quanto à qualidade da água no local de estudo.Palavras-chave: Qualidade de água; Eutrofização; Ilha do Maranhão. ABSTRACTThe Brazil has great availability of fresh water in its springs. Within these contexts, the Paciência River, located on the Island of Maranhão stands out for its local importance, mainly for contributing its waters to the recharge of the underground springs, source of public supply of several districts of São Luís, capital of the state. However, this river has been compromising the quality of its waters, a consequence of the process of use and occupation of the spaces in its basin. Highlighting as one of the main problems related to the quality of fluvial environments, eutrophication, which consists of the process in which the body of water acquires high levels of nutrients (phosphates and nitrates), is a determinant indicator of water quality. In this sense, the objective of this work was to characterize the water quality and trophic status in the Paciência river basin through the physico-chemical parameters, showing the most compromised stretches according to the values reached in the analyzes. Background: Quality control and the standardization of herbal medicines involve steps like standard source and quality of raw materials, good manufacturing practices and adequate analytical screening. These practices play a vital role in guaranting the quality and stability of herbal preparations. Chandrashakaladi Vataka is an Ayurvedic herbal formulation mentioned to be beneficial in Kushtha. Till date no published data is available on its analytical profile. Aim: To develop the Pharmacognostical and Phyto-chemical profile of Chandrashakaladi Vataka. Material and Methods: Chandrashakaladi Vataka was prepared as per classical method and analytical findings were recorded. Samples were subjected to organoleptic analysis, physico-chemical analysis and HPTLC examination by optimizing the solvent systems. Results and Conclusions: Pharmacognostical profile of Chandrashakaladi Vataka was established. Loss on drying, Ash value, Acid insoluble extract, Methanol soluble extract, Chandrashakaladi Vataka was found within prescribed limits. HPTLC profile of Chandrashakaladi Vataka revealed 12 spots at 254 nm and 13 spots at 366 nm.
