Pre-harvest sprouting (PHS) severely reduces rice grain yield, significantly affects grain quality, and leads to substantial economic loss. In this study, we aimed to characterize the physicochemical properties and processing quality of the Garumi 2 flour rice variety under PHS conditions and compare them with those of the Seolgaeng, Hangaru, Shingil, and Ilpum rice varieties and the Keumkang wheat variety. Analysis of the molecular structure of starch revealed uniform starch granules, increased proportions of short-chain amylopectin in DP 6–12 (51.0–55.3%), and enhanced crystallinity (30.7–35.7%) in rice varieties for flour compared with the Ilpum cooking rice variety. PHS significantly altered the starch structure and gelatinization properties of Garumi 2. It also caused surface pitting and roughness in Garumi 2 starch granules and decreased their crystallinity. Collectively, the findings of this study provide important novel insights into the effects of PHS on the physicochemical properties of Garumi 2 floury rice for flour.

Based on the experiment of two inbred aromatic rice varieties and one hybrid aromatic rice line treated under four different temperatures( daymean temperature 21°C, 23°C, 26°C and 30°C respectively) during grain filling stage in phytotrons, the shape and arrangement of endosperm starch granules in rice grain transection were observed by scanning electron microscope and the related characteristics of rice grain qualities of chalky percent and chalkiness were analyzed at the same time. The results showed that under the lower temperature( daymean temperature21°C and 23°C), many large compound starch granules with clear angulars packed together regularly without significant natural gaps bewteen starch granules in the tansectional endosperm. However, with the increase of temperature, starch granules in the transectional endosperm were changed from regularly shaped and closely and orderly arranged to various shaped and chaoticly arranged with obvious natural gaps between starch granules, which was closely consistent with the poorer appearance quality under the higher temperature, which indicated that the endosperm structure is closely related with appearance quality of aromatic rice.

Drought is the major problem in India and occurrence at the time of critical growth stages, reduce crop yield significantly. The National Rice Research Institute, Cuttak, Odisha has developed so many drought tolerance rice varieties to reduce the economic loss due to drought. Krishi Vigyan Kendra, Malkangiri introduced NRRI released two rice varieties i.e. Sahbhagi Dhan and Satyabhama at framers' field to evaluate the performance of these drought tolerant varieties in South Eastern Ghat Zone of Odisha. The highest plant height was observed with the rice variety Satyabhama (104.1 cm). But, overall performance of Sahbhagi Dhan was better as compare to Satyabhama and local check verity (Khandagiri). Sahbhagi Dhan gave highest yield of 36.5 q/ha, which was statistically differed from others. Correlations study for Sahbhagi Dhan was assessed and observed the positive correlation for grain yield with all studied characters except plant height. For economic point of view, Sahbhagi Dhan recorded highest net return of Rs.19, 925/- per ha along with B:C ratio of 1.6 as compared to the rest two varieties.

Organic rice production in Indonesia is increasing due to the tendency of consumers who start to consume healthy food and one of them is organic rice. Varieties cultivated by farmers in Lampung Province is mentik susu and sintanur based on high yields and climate suitability. The quality of organic rice can be known through nutritional approach. The purpose of this research is to analyze quality comparison of organic rice of mentik susu and sintanur varieties with nutritional approach. The research methodology used is laboratory research. Data analysis methods used to answer the objective of a proximate test to determine the nutrient content of organic rice in both varieties of mentik susu and sintanur. Nutritional content that is cultivated is carbohydrates, fats, proteins, water, fiber, and ash content. The result of the analysis shows that carbohydrate, protein, and nutrient content of organic rice of mentik susu variety was higher than sintanur varieties. While the fat content, water content, and ash content of organic rice varieties mentik susu is lower than the sintanur varieties. In general it can be concluded that the quality of organic rice varieties mentik susu better than sintanur varieties.

Rice is an important staple food for Afghans. Its production has been increased, and attention is needed to improve grain quality. Experiments were conducted to evaluate the growth, yield, physicochemical properties, antioxidant activity, and morphological structures of four exotic rice varieties widely grown in Afghanistan (Attai-1, Jalalabad-14, Shishambagh-14, and Zodrass). Antioxidant activities, including 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2′-azino-bis (3-ethylbenzthiazoline-6-sulphonic acid) (ABTS), of rice grain were determined. A scanning electron microscopic observation was conducted on the cross-cut section of dehulled rice grains. The results showed a wide variation among four rice varieties for growth, grain yield, physicochemical properties, antioxidant activities, and morphology. Tiller and panicle number per hill, 1000-grain weight, grain yield, and antioxidant activities were found to be highest in Jalalabad-14. Attai-1 showed lower amylose, protein, and lipid contents with a high number of perfect grains, consequently enhanced taste point (score of quality). Grain yield, protein, and amylose contents showed a negative correlation with antioxidant activities. Accumulated structures in Attai-1, Shishambagh-14, and Zodrass were normal; however, Jalalabad-14 increased protein bodies and its traces in the amyloplasts. Information on yield potential, grain quality, and nutritional value of these exotic rice varieties may useful for sustainable food provision and nutritional improvement of rice in Afghanistan.

The increased of consumer concern on the originality of rice  variety and the quality of rice leads to originality certification of rice by existing institutions. Technology helps human to perform evaluations of food grains using images of objects. This study developed a system used as a tool to identify rice varieties. Identification process was performed by analyzing rice images using image processing. The analyzed features for identification consisted of six color features, four morphological features, and two texture features. Classifier used LVQ neural network algorithm. Identification results using a combination of all features gave average accuracy of 70,3% with the highest classification accuracy level of 96,6% for Mentik Wangi and the lowest classification accuracy of 30%  for Cilosari.

 Indonesia has many food varieties, one of which is rice varieties. Each rice variety has physical characteristics that can be recognized through color, texture, and shape. Based on these physical characteristics, rice can be identified using the Neural Network. Research using 12 features has not optimal results. This study proposes the addition of geometry features with Learning Vector Quantization and Backpropagation algorithms that are used separately.The trial uses data from 9 rice varieties taken from several regions in Yogyakarta. The acquisition of rice was carried out using a camera Canon D700 with a kit lens and maximum magnification, 55 mm. Data sharing is carried out for training and testing, and the training data was sharing with the quality of the rice. Preprocessing of data was carried out before feature extraction with the trial and error thresholding process of segmentation. Evaluation is done by comparing the results of the addition of 6 geometry features and before adding geometry features.The test results show that the addition of 6 geometry features gives an increase in the value of accuracy. This is evidenced by the Backpropagation algorithm resulting in increased accuracy of 100% and 5.2% the result of the LVQ algorithm.

A newly released drought tolerant rice variety BRRI dhan66 suitable for rainfed lowland ecosystem of Bangladesh is an improvement over existing drought tolerant rice varieties. The variety has satisfactorily been passed in the proposed variety trial conducted in the farmers’ field. As a result, National Seed Board (NSB) approved this variety for commercial cultivation in the wet season (T. Aman) in 2014. It has modern plant type with 120 cm plant height and matures in 110-115 days. The important feature of this variety is higher drought tolerance during reproductive stage. It can produce 4.5-5.0 t/ha grain yield without irrigation during reproductive stage. It can produce satisfactory yield when soil moisture remains <20% and perch water table depth is more than 70-80 cm from the surface. The seed size of the variety is 24 g with intermediate long bold grain. It has long, wide and erect flag leaf with deep green colour. It is highly promising as a drought tolerant rice variety for cultivation in the drought prone area, which helps farmers’ to get rid of huge economic loss and is contributing in sustaining food security. Chalkiness is a major constraint on rice production because it is one of the key factors determining grain quality (appearance, processing, milling, storing, eating, and cooking quality) and price. In this study, we conducted grain chalkiness gene identification using co-dominant insertion/deletion (INDEL) markers and SSR marker combination on 50 different varieties. The application results in 7 InDel markers and SSR marker on chromosome 7 were recorded. Three primers, InDel 5, InDel 14 and RM21938, associated with grain chalkiness. For the InDel 5 primer, the amplification product was 100%. Use of primer InDel 5 in detection and evaluation of genotype to the chalkiness trait of rice grain on 50 rice varieties indicated the suitability level with phenotypic evaluation was 86% and the unsuitability level was 14%. For the InDel 14 primer, the amplification products were 100%. The suitability with phenotypic assessment was 84% and the unsuitability was 16%. For the RM21938 primer, the amplification product was 94%. The suitability with phenotypic assessment was 76% and the unsuitability was 24%. Thirteen of the selected varieties had grain chalkiness gene both InDel 5, InDel 14 and RM21938. Total 13 varieties were detected from InDel 5, InDel 14 and RM12938 primer combinations also showed high efficiency of the InDel technique in identifying chalkiness gene in rice grain. A cluster analysis was performed and a dendrogram was constructed which evinced the nature of phylogenetic classification among the genotypes of the varieties. These markers could be used for developing quality of rice in breeding program.

Abstract The present research was conducted to study the influence of organic and inorganic sources of nutrients as well as antioxidant on rice quality. The experiment was designed in split-split plots with four replications, where main plots were assigned to nitrogen (0, 55, 110 and 165 kg N ha−1) and sub plots were allocated to compost (0, 3.5 and 7 tons ha−1), while the sub-sub plots were assigned to ascobien (control, spraying with ascobien in two times at 15 and 30 days after transplanting (DAT), spraying with ascobien three times at 15, 30 and 45 DAT). The result indicated that grain quality traits were significantly influenced by the organic and inorganic fertilizers, and ascobien. The percentage of hulling, milling and amylose were positively and significantly influenced by nitrogen, organic and antioxidants application. Most of studied characters produced the highest values with the organic fertilize were combined with nitrogen and antioxidants. Application of 110 kg N ha−1, 7 t ha−1 compost and two or three spraying of ascobien, 110 kg N ha−1 or 3.5 t ha−1 compost and three times spraying and 55 kg N ha−1, 7 t ha−1 compost and two times spraying could be recommended for optimum grain quality of Sakha106 rice variety. It can be concluded that compost along with the foliar application of ascobien can be saved from 50 to110 kg N ha−1, without reducing grain quality. It can be the key to reduce the need for chemical fertilizers and decrease the cost of production with keeping healthy soil.
