The use of quinoa could be a strategy for the nutritional improvement of bakery products. The inclusion of this pseudocereal, with its suitable balance of carbohydrates, proteins, lipids and minerals, could contribute to attaining the adequate intake values proposed by the FAO (Food and Agriculture Organization) and/or EFSA (European Food Safety Authority) for suitable maintenance and improvement of the population’s health. Bakery products made with white, red or black royal quinoa significantly improved the contribution to an adequate intake of polyunsaturated fatty acids (linoleic and linolenic acids) and dietary fibre, which produced an improvement in the soluble/insoluble fibre ratio. There was also an increase in the contribution to the average requirement of Fe and Zn, although the increase in the phytate/mineral ratio would make absorption of them more difficult. Inclusion of flour obtained from the three quinoas studied slightly improved the protein quality of the products that were prepared and positively affected the reduction in their glycaemic index.

The explosion of technology allows more manufacture food and variety in the market. However, the massive quantity of food is not essential measure of economic progress because the quality of food is more important when producing food. In realizing food quality along with food quantities, various legal issues related to food security have been arisen. Thus, this paper will be examine the legal issues related to food security from the Islamic perspective worldview. Using a study of documents released by the Food and Agriculture Organization (FAO) and content analysis, there are several legislative issues that have been found regarding food security. Such issues include aspects of food production, exploitation of natural resources, trade, and rights to the food. The apparent impact of these issues has undermined food security and food access, thus prompting food security in various parts of the world. Through an analysis of Islamic worldview, this paper presents the preservation of habluminallah and habluminannas relationships as a basis for addressing the issues discussed. Ledakan teknologi membolehkan bahan makanan dihasilkan dengan lebih banyak dan pelbagai di pasaran. Namun demikian, kuantiti makanan yang banyak bukan ukuran kemajuan ekonomi yang hakiki kerana kualiti makanan lebih utama untuk diambil kira dalam menghasilkan makanan. Dalam merealisasikan kualiti seiring dengan kuantiti makanan, pelbagai isu perundangan berkaitan sekuriti makanan telah timbul. Menyedari perkara berkenaan, makalah ini akan meneliti isu perundangan yang berkaitan sekuriti makanan daripada perspektif tasawur Islam. Dengan menggunakan kajian ke atas dokumen yang dikeluarkan oleh Organisasi Makanan dan Pertanian (Food and Agriculture Organization) (FAO) dan analisis kandungan, terdapat beberapa isu perundangan berkaitan sekuriti makanan yang ditemui. Isu tersebut merangkumi aspek pengeluaran makanan, eksploitasi sumber alam, perdagangan, serta hak terhadap makanan. Kesan ketara isu-isu tersebut telah menjejaskan jaminan keselamatan makanan dan akses makanan sekali gus menggugah sekuriti makanan di pelbagai bahagian dunia. Melalui analisis daripada tasawur Islam, makalah ini mengemukakan pemeliharaan hubungan habluminallah dan habluminannas sebagai asas mengatasi isu-isu yang dibincangkan.

We aimed to determine the usual intake of total fat, fatty acids (FAs), and their main food sources in a representative cohort of the Spanish pediatric population aged 1 to <10 years (n = 707) who consumed all types of milk and an age-matched cohort who consumed adapted milk over the last year (including follow-on formula, toddler’s milk, growing-up milk, and fortified and enriched milks) (n = 741) who were participants in the EsNuPI study (in English, Nutritional Study in the Spanish Pediatric Population). Dietary intake, measured through two 24 h dietary recalls, was compared to the European Food Safety Authority (EFSA) and the Food and Agriculture Organization of the United Nations (UN-FAO) recommendations. Both cohorts showed a high intake of saturated fatty acids (SFAs), according to FAO recommendations, as there are no numerical recommendations for SFAs at EFSA. Also, low intake of essential fatty acids (EFAs; linoleic acid (LA) and α-linolenic acid (ALA)) and long-chain polyunsaturated fatty acids (LC-PUFA) of the n-3 series, mainly docosahexaenoic acid (DHA) were observed according to EFSA and FAO recommendations. The three main sources of total fat and different FAs were milk and dairy products, oils and fats, and meat and meat products. The consumption of adapted milk was one of the main factors associated with better adherence to the nutritional recommendations of total fat, SFAs, EFAs, PUFAs; and resulted as the main factor associated with better adherence to n-3 fatty acids intake recommendations. Knowledge of the dietary intake and food sources of total fat and FAs in children could help in designing and promoting effective and practical age-targeted guidelines to promote the consumption of EFA- and n-3 PUFA-rich foods in this stage of life.

Cultivation of Moina sp is still constrained by its quality, productivity, and sustainability. The alternative solution is the use of cultivation media materials that have high nutritional content and easily available in large quantities to support the quality and productivity of Moina sp. and meet the needs of live feed. The objective of the study was to evaluate the effect of various culture medium on the productivity and nutritional quality of Moina sp.. Five culture media were tested in laboratory scale, i.e. organic ingredient (BO), Chlorella sp. (Ch), Chlorella sp. + organic ingredients (ChBO), biofloc (BF) and biofloc + organic ingredients (BFBO). While in mass scale, four culture media were tested, i.e. Chlorella sp. (Ch), Chlorella sp. + Organic Ingredients (ChBO), Biofloc (BF) and Biofloc + Organic Ingredients (BFBO). The peaks of Moina sp. density in different treatments were achieved in different days. ChBO treatments significantly had higher productivity (P<0.05). The highest protein content was found in Moina sp. cultured with ChBO media, even higher than artemia. Moina sp. cultured with Chlorella sp. (Ch) showed the highest PUFA (Poly Unsaturated Fatty Acids) contents, while the highest MUFA (mono unsaturated fatty acids) contents was obtained from Moina sp. cultured with BFBO media lower than artemia. The study results indicates that different culture media produces different productivity and nutrient quality of Moina sp. The organic material combination of Chlorella sp. + organic material (ChBO) was the best media to improve the productivity and protein quality of Moina sp.    Keywords : Biofloc, Chlorella sp., Moina sp., organic matter, productivity, quality   ABSTRAK   Budidaya Moina sp. masih terkendala pada kualitas, produktivitas dan kestabilan dalam ketersediaannya. Untuk itu diperlukan penggunaan bahan media budidaya yang memiliki kandungan nutrisi tinggi dan mudah didapat dalam jumlah banyak untuk mendukung kualitas dan produktivitas Moina sp. demi memenuhi kebutuhan pakan hidup. Tujuan penelitian yaitu mengevaluasi pengaruh berbagai media budidaya terhadap produktivitas dan kualitas nutrisi Moina sp. Lima media kultur yang diuji dalam penelitian laboratorium yaitu Bahan Organik (BO), Chlorella sp. (Ch), Chlorella sp. + Bahan Organik (ChBO), Bioflok (BF) dan Bioflok + Bahan Organik (BFBO). Sedangkan pada penelitian skala massal diuji empat media kultur yaitu Chlorella sp. (Ch), Chlorella sp. + Bahan Organik (ChBO), Bioflok (BF) dan Bioflok + Bahan Organik (BFBO). Puncak kepadatan Moina sp. pada tiap perlakuan dicapai pada hari yang berbeda. Perlakuan ChBO memiliki produktivitas yang lebih tinggi (P<0,05). Kandungan protein Moina sp. tertinggi ditemukan pada media ChBO dan bahkan lebih tinggi dari pada artemia. Moina sp. yang dibudidayakan dengan Chlorella sp. (Ch), menunjukkan kandungan PUFA tertinggi, sedangkan kandungan MUFA yang tertinggi terdapat pada Moina sp. yang dibudidayakan dengan bahan media BFBO namun masih lebih rendah jika dibandingkan dengan kandungan pada artemia. Hasil penelitian menunjukkan media kultur yang berbeda menghasilkan produktivitas dan kualitas nutrisi moina yang berbeda. Kombinasi bahan organik Chlorella + bahan organik (ChBO) merupakan media terbaik dibandingkan dengan perlakuan lainnya untuk meningkatkan produktivitas dan kualitas nutrisi terutama protein Moina sp.   Kata kunci : Bioflok, Chlorella sp., Moina sp., bahan organik, produktivitas, kualitas

Abstract Objectives The objectives of this research were to determine the protein digestibility corrected amino acid score (PDCAAS) and the digestible indispensable amino acid score (DIAAS) for raw and roasted American pistachio nuts in growing pigs, and to assess the effect of roasting on these measures of protein quality. Methods Twelve ileal cannulated barrows (body weight: 60.9 ± 3.2 kg) were randomly allotted to a 2-period switch-back design with 3 diets and 4 replicate pigs per period. Roasted pistachio nuts and raw pistachio nuts (American cultivated pistachio nuts) were each added to a single diet as the only protein source, and the third diet was a nitrogen-free diet that was used to measure basal endogenous losses of AA. Experimental periods were 9 d with the initial 5 d for adaptation to the diets. On d 6 and 7, fecal samples were collected, and on d 8 and 9, ileal digesta samples were collected for 9 h each day. The PDCAAS and DIAAS were calculated according to the Food and Agriculture Organization. Results The standardized ileal digestibility (SID) of all indispensable AA, except Arg and Phe, was less (P &lt; 0.05) in roasted than in raw pistachio nuts. Raw pistachio nuts had a PDCAAS of 73 and roasted pistachio nuts had a PDCAAS of 81, calculated for children 2 to 5 yr, and the first limiting AA when compared to human requirements was Thr for both pistachio nuts. The DIAAS calculated for children older than 3 years, adolescents, and adults was 86 and 83 for raw and roasted pistachio nuts, respectively. The limiting AA in both raw and roasted pistachio nuts that determined the DIAAS for this age group was Lys. Conclusions Results of this research illustrate that raw and roasted pistachio nuts can be considered a good quality protein source with DIAAS greater than 75, however, heating conditions associated with roasting may decrease the digestibility of AA in pistachio nuts. Food and Agriculture Organization of United Nation (FAO) 2017 data shows that Indonesia is the fourth largest coffee producing country. In this research, there is a focus on how coffee development and marketing strategies in East Java when viewed from the aspect of farmers cultural transformation and agricultural governance. The research methodology used in this research is observation, in-depth interview discussions with resource persons who are active and representative to be key informants. They were the speakers besides being industry players, farmers and exporters who were members of national and international coffee associations. From the results of the interview with the interviewees, we produce a finding and we do an analysis. The results are as follows: 1) In developing coffee business and marketing it is necessary to do an alternative and strategy that encourages the development of a national coffee business, especially in East Java, by doing; a) Revitalization of plantations; b) Support issues; c) Value added coffee (value added), d) Increased productivity and quality and quality of human resources. 2) The other efforts undertaken in this study are the importance of a transformation value for coffee farming, the transformation which originally adhered to traditionalist culture, namely stagnating to only produce coffee fruit harvest, it needs to be transformed into a modern farmer that is industrial-based agriculture.

This research aimed to evaluated and assessed the effect of the molasses level on organoleptic quality of multinutrient block (MnB). The materials used were corn forage, bentonite, urea, salt, molasses, water, blood clamshell and egg shells. The experimental designed used was a Completely Randomized Design with  4 treatments (T0 = MnB Formulation T0 + 0% of molasses, T1 = MnB Formulation T1 + 20% of molasses, T2 = MnB Formulation T2 + 35% of molases, and T3 = MnB Formulation T3 + 50% of molasses) and 4 replications. The variables observed were moisture content, texture, colored and aroma of MnB. The results showed that the addition of molasses had significantly (P <0.05) improved of MnB organoleptic quality. The conclusion for the study, that the multinutrient block formulation with 50% molasses resulted the best organoleptic quality. The purpose of this study was to evaluate the presence of health-related lipid components, in particular trans fatty acids and sterol oxidation products, in four bakery products. Both types of components are known for their adverse biological effects, especially the increase of atherogenic risk, and therefore it is advisable to monitor their presence in food products. Trans fatty acids were determined by silver-ion thin-layer chromatography–gas chromatography, whereas sterol oxidation was assessed by gas chromatography and gas chromatography–mass spectrometry determination of 7-keto derivatives (tracers of sterol oxidation). The amount of trans fatty acids (0.02 to 3.13 g/100 g of product), sterols (34.9 to 128.3 mg/100 g of product), and 7-keto derivatives of sterols (1.88 to 3.14 mg/kg of product) varied considerably among samples. The supply of phytosterols (22.5 to 64.0 mg/100 g of product) was not significant, and the extent of oxidation of most phytosterols to its corresponding 7-keto derivative was low (0.29 to 0.84%), except for that of brassicasterol (2.01 to 3.11%). The quality of ingredients and raw materials seems to have greatly influenced the fatty acid profile, stability, safety, and quality of the final product; these ingredients should be chosen with extreme care to decrease their potential negative health effects and to increase safety of these products.

Background: An optimal dietary Amino Acid (AA) intake is necessary for the growth of body proteins. A new method for protein quality evaluation called Digestible Indispensable AA Score (DIAAS) was established. Despite that the information about dietary AA requirements are available for different stages of life, in practical conditions, most people deal only with the dietary proteins, if ever. Objective: The aim of this mini-review was to analyze the protein quality of protein sources by DIAAS and to find AA and protein dietary requirements in human nutrition. Methods: A literature research was performed using the keyword “amino acid”, “diet”, “nutrition”, “human”, “muscle” and “requirement” individually or all together, in Scopus, Web of Science and Pubmed. Results: The optimum amount of dietary AA is necessary for AA utilization in the body and is limited by AA which is present in the lowest amount; the surplus of other AA is not utilized in the body. Food and Agriculture Organization reported requirements for dietary protein and AA intake for infants, children, however for adults (over 18) for maintenance. Most of the studies which are dealing with the dietary AA requirements in sports nutrition are aimed at the blends of AA and for branched-chain AA. Concerning the protein quality, at this time, there is little information about the protein quality evaluated by DIAAS method. Conclusion: Dietary intake of high-quality protein or a blend of different proteins will provide all AA to the body. However, studies on protein quality evaluation by DIAAS method are necessary to perform.

In countries with less developed national statistical systems (NSS), agricultural censuses (ACs) and sample surveys are not conducted regularly. This means that both structural data (sourced from censuses) and current statistics (sourced from sample surveys) are not readily available or up-to-date for informed decision-making on agricultural and rural development. In such countries, because of the sheer needs, when a census of agriculture is planned, stakeholders exert pressure on the census agency to collect both structural and non-structural data (atypical for a census), overburdening the census questionnaire and ultimately jeopardizing the quality of the census operation. An increasing number of countries are making efforts towards better integrating statistical activities. The Food and Agriculture Organization (FAO) of the United Nations leads the World Programme for the Census of Agriculture 2020 (WCA 2020) which advocates the development of an integrated multiyear programme of statistical operations involving AC, current surveys and other data collection operations. By integrating these operations, the AC can focus on collecting essential structural items (i.e. aspects of agriculture that change relatively slowly over time), while regular agricultural sample surveys and administrative registers can focus on collecting non-structural data needed more frequently.

AbstractConsumption of animal proteins is increasingly contested by those who choose a vegetarian diet, but for athletes, protein quality is a key component in optimizing athletic performance. The purpose of this article is to provide a nutritional guide for the vegetarian athlete who does not have to give up nutritional preferences to achieve performance in sports, and well-informed counseling by respecting principles of biochemistry can overcome the already known deficiencies of vegetal proteins in certain amino acids. The second aim of this paper is to recommend methods to assess protein quality by consulting the recommendations of the world’s most important regulatory agency in the field of nutrition and food quality: the World Health Organization (WHO) and the Food and Agriculture Organization (FAO). In conclusion, even though vegetal proteins have a lower anabolic effect due to their low digestibility and a limited quantity of essential amino acids (especially leucine) and that amino acids of vegetal origin are more likely directed towards oxidative metabolism than towards anabolic processes, recent studies present strategies (consuming higher amounts of vegetal proteins, dietary supplements with amino acids) through which a well-planned vegetarian diet can have similar benefits to omnivorous diet regarding stimulating endogenous protein synthesis.
