Rowanberries have been traditionally used in various processed foods. Scientific research demonstrates the pharmacological effects of Sorbus L. fruits are determined by their unique composition of biologically active compounds. The aim of this study was to determine the composition of flavonoids, phenolic acids, anthocyanins, carotenoids, organic acids and sugars as well as the total antioxidant activity in fruit powders of 20 Sorbus cultivars. Chemical profiles of rowanberry fruit powders vary significantly. Cultivars ‘Burka’, ‘Likernaja’, ‘Dodong’, and ‘Fructo Lutea’ distinguish themselves with exclusive phytochemical composition and high antioxidant activity. Fruit powders from ‘Burka’, ‘Likernaja’ contain the highest contents of anthocyanins while fruit powder samples from ‘Fructo Lutea’ and ‘Dodong’ contain the highest levels of phenolic acids, ascorbic acid and the lowest levels of fructose. Fruit powder samples from ‘Dodong’ also contain the highest levels of β-carotene and sorbitol and the lowest levels of malic acid. Cultivars ‘Burka’, ‘Likernaja’, ‘Dodong’, and ‘Fructo Lutea’ could be selected as eligible raw materials for the preparation of rowanberry fruit powders.

The article presents the results of biotechnological studies of insects used in fish feed by antioxidant activity. The problem of raw materials of animal origin for feeding fish is an urgent problem of our time. It is aggravated by the shortage, high cost and unstable quality of substrates that are made on the basis of fish meal, meat and bone meal, blood meal, etc. Recently, there has been an increase in research around the world in the search for substitutes for animal feed when growing aquaculture. Orthopteran insects of the cricket species Acheta domesticus are of considerable practical interest as a source of protein and biologically active components necessary for the growth and development of valuable species of fish. Most of the issues related to the technology of growing crickets in artificial conditions and the production of high-quality fodder based on them, remain open today. We chose an optimal diet and identified the most favorable conditions for the breeding of insects in a mini-farm. Studied the qualitative composition of the substrate on the basis of crickets. In order to select the optimal technological regimes for the processing of raw materials on the basis of insects, the total antioxidant activity of aqueous extracts of dried crickets, Daphnia magna Straus crustaceans and Gammarus pulex was determined. For crickets, the activity was 6.288 g of rutin, for daphnia 4.219 g of rutin and for gamarus 6.519 g of rutin per 100 g of absolutely dry sample. It was established that all samples, upon drying dry samples to constant weight at 105 oС, lose the total antioxidant activity.

Introduction. The overwhelming number of publications contains only data on the content of individual antioxidants, but not on the overall antioxidant activity of the blood in patients with vibration disease.The aim of the study was to determine the total antioxidant activity of blood serum in patients with vibration disease.Materials and methods. Th e main group consisted of 30 people diagnosed with “Vibration disease” of 1 degree (n=21) and 2 degrees (n=9). Th e control group consisted of 30 clinically healthy men, comparable in age with the main group (p=0.66). Th e total activity of antioxidant systems of blood plasma was evaluated photometrically using the test system “Total antioxidant status-Novo” (“Vector-best”, Russia).Results. The indicator of the total antioxidant status (TAS) was 1,038±0.232 mmol/l in the examined main group, against 1,456±0.225 mmol/l in the examined control group (p<0.000001). Th e coefficient of variation (CV) in patients with vibration disease was 22.35%, 1.45 times higher than in the control group (15.45%). In the main group there was a positive correlation between age and TAS (R=0.525), in the control group there was no such relationship (R=0.095). Th e degree of decrease depended on the severity of vibration disease.Conclusions. 1. The development of vibration disease is accompanied by a decrease in the antioxidant status of blood serum. 2. Th e degree of decrease in the antioxidant status of blood serum correlates with the severity of vibration disease. 3. Reduction of TAS can serve as a pathogenetic justification of the need to include drugs and/or biologically active additives with antioxidant activity in therapy

The predominance of synthetic and genetically modified foods in the diet of a modern person often leads to disruption of natural metabolic processes and the accumulation of toxic free radicals in the body, which provokes the development of various diseases. Natural antioxidants from medicinal plants can help maintain health and stop the processes of peroxidation. In our opinion, Аstragalus onobrychis can become a promising source of natural antioxidants. The aim of this study was to establish the antioxidant activity in extracts from the herb Astragalus onobrychis. In order to obtain objective and reliable results during our research, we used two methods: the method of titrimetry and spectrophotometry of free radicals. The titrimetric method is based on the chemical interaction between an oxidizing agent (potassium permanganate) and natural antioxidants present in extracts from plant raw materials, since they exhibit the properties of reducing agents. The spectrophotometric method makes it possible to assess the value of antioxidant activity and the duration of the reaction by assessing the interaction of 2,2-diphenyl-1-picrylhydrazil with plant antioxidants. To establish the relationship between the antioxidant activity and the presence of phenolic compounds in the plant, the content of flavonoids and hydroxycinnamic acids in the herb Astragalus onobrychis was determined. As a result of the studies, the total antioxidant activity of extracts from the herb Astragalus onobrychis was established and it was revealed that its value depends on the type of extractant used, since this factor is associated with the content of various groups of natural antioxidants in the extraction. The data obtained indicate the prospects of using the herb Astragalus onobrychis as a source of natural antioxidants.

Подобраны оптимальные параметры для экстракции плодов и ягод черной смородины, малины, вишни, черноплодной рябины при ультразвуковом излучении 35 кГц с целью получения плодово-ягодных экстрактов с высокой антиоксидантной активностью. На основании экспериментальных данных выбраны технологические режимы процесса: экстрагирование сырья 75%-м этиловым спиртом при соотношении сырье : растворитель 1 : 10, температуре (40 ± 5)°C в течение 90 мин. Экстракты концентрируют под вакуумом до содержания сухих веществ 65%. Дана технологическая схема получения плодово-ягодных экстрактов. Полученные экстракты обладают высокой антиоксидантной активностью, содержат большое количество фенольных веществ, флавоноидов и антоцианов; по органолептическим, физико-химическим и микробиологическим показателям соответствуют нормативной документации. The optimal parameters for extraction of fruits and berries of fruits and berries of black currant, raspberry, cherry, chokeberry with ultrasonic radiation of 35 kHz in order to obtain fruit and berry extracts with high antioxidant activity are selected. Based on the experimental data, the technological modes of the process are selected: extraction of raw materials with 75% ethyl alcohol at a ratio of raw materials: solvent 1: 10, temperature (40 ± 5)°C for 90 min. The extracts are concentrated under vacuum to a dry matter content of 65%. Technological scheme of fruit and berry extracts is given. The obtained extracts have a high antioxidant activity, contain a large amount of phenolic substances, flavonoids and anthocyanins; organoleptic, physical and chemical and microbiological parameters correspond to the normative documentation.

The impacts of the urbanized environment of Donetsk region on the contents of biologically active substances and heavy metals in black elderberry (Sambucus nigra L.) flowers and on the total antioxidant activity of their preparations were evaluated. The contents of lead, cadmium and mercury in all samples studied were within the tolerable limits specified for herbal medicinal raw products. The accumulation coefficients of lead and cadmium were found to decrease with increasing soil levels of these toxicants, whereas the level of mercury did not depend on the degree of soil pollution. The contents of active substances in all samples collected in Donbas conform to the requirements of the State Pharmacopoeia of the Russian Federation. In fact, the contents of carotenoids, flavonoids and hydroxycinnamic acids are increased in S. nigra flowers collected in urbanized areas; however, the contents of other phenolic substances (anthocyanins and tannins) are decreased. The contents of ascorbic and free organic acids are highest under moderately urbanized conditions, so as the antioxidant activity of S. nigra flower preparations is. The results suggest that prospects for the pharmaceutical use of S. nigra flowers collected in urbanized areas of Donbas are promising.

The development of targeted beverages is a priority for healthy eating. Plant raw materials containing a wide variety of biologically active substances are used for their production. The presence of these ingredients helps to improve many physiological processes in the body, as well as to increase its immune status. The high efficiency of ultrasonic effects on various technological processes was confirmed by numerous studies. Ultrasonic extraction was carried out at t = 20 ? and an ultrasonic wave frequency of 22 kHz. As a result of the research, it was found that the equilibrium state is achieved within 15 minutes with ultrasound exposure. Natural raw materials, their chemical composition and the influence on the human body were studied in the work to develop new beverages recipes. The selected ingredients in a certain quantitative ratio made it possible to obtain beverages with improved bio-corrective properties, which allows satisfying the daily requirement of the human body for biologically active substances. Ultrasonic exposure has a positive effect on the organoleptic characteristics of the beverage and the aftertaste, as proved by the comparative organoleptic evaluation of the samples. The functional properties of the beverages developed were confirmed experimentally. The following was determined in the beverages: macronutrients content, antioxidant activity, vitamin C content, shelf life duration. The ultrasonic extraction method application in the technology of beverages manufacturing allows: to reduce the preparation time by half, to reduce the amount of raw materials by 15%, to increase the content of macronutrients by 45%, to increase the content of vitamin C by 35%, to increase the antioxidant activity by 45-50%, to increase storage stability by 50-60%, to improve organoleptic characteristics. The results obtained prove the intensifying effect of ultrasonic exposure in the production of functional beverages.

Confectionery - food products, usually with a high sugar content, characterized by high calorie content and digestibility. They are divided into groups: sugar, flour confectionery, chocolate, cocoa. The following types of products are used as the main raw materials for the preparation of confectionery products: flour (wheat, rye, corn, rice, oatmeal, etc.), sugar, honey, fruits and berries, milk and cream, fats, eggs, yeast, starch, cocoa, nuts, food acids, gelling agents, flavoring and aromatic additives, food dyes and baking powder. The high content of carbohydrates, proteins and fats, as well as polyunsaturatedfatty acids and some vitamins determines the significant value of confectionery products. The influence of shelf life on biscuit semi-finished products prepared according to the classical recipe using pomace powder and concentrated juice of black currant and blueberry berries is shown. Methods used in the experimental part: measurement of the total phenolic content using the Folin-Chekelau reagent, the total content of flavonoids and anthocyanins, the level of free radical capture DPPH (2,2-diphenyl-1-picrilhydrazyl), the total antioxidant activity by the FRAP method and the antioxidant activity in the linoleic acid system. It was found that the content of phenolic substances, flavonoids, anthocyanins and antioxidant activity is greatly influenced by high humidity and a constant light source. These indicators are significantly reduced, but when stored in a vacuum, this decrease in indicators can be slowed down.

Гибриды сахарной и сверхсахарной кукурузы являются хорошим сырьем для производства функциональных пищевых продуктов, в том числе диетического и детского питания. Важными показателями высокого качества этих продуктов являются повышенное содержание белка и ценного масла, незначительное количество плохо усвояемого кукурузного крахмала и высокое содержание антиоксидантов, а также отменные вкусовые качества. В работе представлены данные по оценке антиоксидантной активности большой группы новых перспективных гибридов сверхсахарной кукурузы среднеспелой группы, созданных с целью получения ценных источников сырья для консервной промышленности. Значения показателя общей антиоксидантной активности варьировали в широком интервале значений (от 31,8 % до 60,4 %, 568,4–1008 мкг/г семян), что указывает на перспективность использования этого важного биохимического параметра в селекции сверхсахарной кукурузы на качество. Hybrids of excess sugar maize are good raw material for the production of functional food products, including baby food and diet. Important indicators of high quality of these products are high protein content and a valuable oil, a small amount of poorly digestible maize starch and a high content of antioxidants, and also excellent taste qualities. The paper presents data on the evaluation of the antioxidant activity of a large group of promising new hybrids of excess sugar maize of mid-group created in order to obtain valuable raw materials for the canning industry. Index value of total antioxidant activity varied over a wide range (from 31,8 % to 60,4 %, 568,4–1,008 mg/g of seed), which indicates on promising use of this important parameter in the breeding of biochemical excess sugar maize on quality.

Summary Eight species of Eleutherococcus genus grown at Rogów Arboretum collection were compared in respect of biologically active compounds accumulation, i.e. eleutheroside B and E, phenolic acids and sterols. For the determination of content of these compounds in underground organs and stem bark high performance liquid chromatography was applied. The highest content of the sum of eleutherosides B and E was observed in underground organs and stem bark of E. leucorrhizus (322.0 and 300.8 mg × 100 g-1, respectively) and E. nodiflorus (218.9 and 363.5 mg × 100g-1, respectively). In the raw materials from E. senticosus, the content of these compounds was significantly lower (177.4 and 159.3 mg × 100 g-1, respectively). E divaricatus and E. setchuenensis were characterized by the lowest accumulation of these compounds in underground organs whereas E. divaricatus, E. sessiliflorus and E. giraldii - in stem bark. Four phenolic acids were identified in the investigated species, namely: chlorogenic, rosmarinic, ferulic and caffeic acids. The main phenolic acid in the analyzed species was chlorogenic acid. The content of this compound in underground organs varied from 102.1 (E. henryi) to 958.7 mg × 100 g-1 (E. leucorrhizus) and in stem bark from 26.7 (E. giraldii) to 542.5 mg × 100 g-1 (E. setchuenensis). The content of identified sterol compounds (sitosterol 3-O-β-D-glucoside /eleutheroside A / campesterol, stigmasterol) was relatively low, but higher in underground organs in comparison with stem bark.

AbstractPassion fruit (Passiflora edulis flavicarpa) is a seasonal, tropical, pulpy fruit, known for a rich source of Vitamin C, antioxidants, and delicate flavor. Presently, freezing technique has been used to preserve the pulp. This article reports alternate method of preservation by foam mat convective air drying of fruit pulp under moderate temperatures. The optimization of process parameters, particularly air temperature, was done with subsequent mathematical modeling of the process and assessment of quality parameters by retention of physicochemical properties and antioxidant capacity of the fruit powder. Sixty degree Celsius was found to be the optimum temperature, and Henderson and Pabis model showed best fit to the drying characteristics data (R2 = 0.99). Diffusivity characteristics of moisture during drying were also studied. As drying temperature was increased, total color difference and rehydration ratio decreased, whereas non-enzymatic browning index, total phenolic content, and total antioxidant activity showed increase that was attributed to inhibition of oxidative enzymes and biochemical changes. Dried passion fruit powder showed overall acceptability in terms of organoleptic properties and total antioxidant activity.
