Introduction: Vitamin C is one of the nutrition acted as a antioxidants and effective addres free radicals can be destructive cells or tissue. Fruits are a source of vitamins C, which is a dragon red. Part of the dragon red during this rarely used is the skin. The dragon fruit is very useful to health, but in fact only thought of as waste farming has yet to be used as a good. This study aims to determine comparison levels of vitamin C on the flesh and the dragon red (Hylocereus polyrhizus) with a method spectrophotometry UV-Visible. Method: This type of research using the method of true experimental reseach stage includes preparation of samples, qualitative test,quantitative test, making the solution of the parent raw materials, determination of wavelength of vitamin C and manufacture of the calibration curve. The sample of this study is the flesh and the dragon red (Hylocereus polyrhizus). Results: Based on the results revealed that the fles and the dragon red (Hylocereus polyrhizus) contain vitamin C. Discussion: Levels of vitamin C on the flesh the dragon red of 0.05888 mg/mL and The levels of vitamin C on the skin the dragon red of 0.02533 mg/mL .

Background: Vitamin C is a vitamin that is water soluble qnd one vitamin that are needed by the body. To meet the intake of vitamin C needed source of vitamin a derived from fruits, one of which is banana. Part of the banana , which is still rarely used is its skin. Banana peel is very beneficial for health however the situation is only considered as waste that has not been utilized well. This study aims to determine the levels of vitamin C on the skin of the banana (Musa paradisiaca) by the method of spectrofotometry uv-visible wavelength 224,5 nm. Method: This research use experimental with purely research stage comprise sample preparation, qualitative test, making the solution of the parent raw, quantitative test, determination of wavelength of maximum vitamin and creation of calibration surve. Result: Based on the research that has been done obtained the result of the qualitative test to prove the presence of high content of vitamin C contained in banana peels, with the highest level obtained in the skin of the plantain by 0,0253 mg/ml and the levels of the lowest on a banana peel the wax by 0,0172 ng/ml. Discussion: Levels of vitamin C on the skin of the banana  barangan of 0, 0219 mg/ml, sample a banana skin banten by 0, 0173 mg/ml, sample a banana peel wax by 0, 0172 mg/ml and sample the skin of plantain by 0, 0253 mg/ml.

Research has been done to investigate the levels of flavanoid, tannin, and vitamin C of  methanol extract of Stone banana (Musa brachycarpa),  Ketip banana (Musa paradisiaca forma typiaca ), and   Kepok banana (Musa acuminata). Jukut Ares is a Balinese traditional cuisine frequently served in any events of celebrations.  The use of young stems of such banana varieties as the main raw materials in the process of making jukut ares has not been scientifically elucidated. Antioxidants are compounds with ability to inhibit oxidation-related reactions due to free radicals that cause disturbance of saturated fatty acids of cell membrane, blood vessels, DNA, as well as adipose tissues which lead to occurrence of various diseases.  Plants components will have antioxidant activities if they contain compounds (phenol and flavanoid) with ability to scavenge free radicals.  Tannin is a water based phenolic compound and vitamin C is also a water based vitamin that play important roles in preventing us from various diseases. Extraction was conducted by applying maceration method and to investigate the levels of flavanoid, spectrophotometric UV vis with aluminum chloride (AlCl3) was applied.  The level of vitamin C of the materials was conducted by Iodine titration method, while the level of tannin was determind by applying spectrophotometri. The results showed that methanol extract of Ketip banana stem contained the highest level of flavanoid with a quantity of 53.13 mg/100gr QE, and this was followed by  stone banana  (36.28) and kepok banana (32.07) The highest vitamin C level was indicated in the extract of ketip banana (418.32 mg/100gr), which is followed by kapok banana and stone banana. In the calculation of tannin content, pisang ketip showed the highest level, while pisang batu contained the lowest level of tannin.

Food intake need ingredient containing vitamin C so that the body remains healthy as in the strawberry and Dragon fruit. One of the efforts to extend the power save and maintain the content of its nutrition value of processed products made with jam. The purpose of this research is to analyze the content of vitamin C in processed jam strawberries (Fragaria sp.) and Dragon fruit (Hylocereus costaricensis) in comparison with a concentration of fruit and Dragon fruit strawberries of differen; 1:1, 1:2, 1:3. The method used is the method of experiment with the design research in the form of a complete Random Design (CRD). Analysis of vitamin C using test qualitative and quantitative test methods for iodimetri. The research results obtained difference  between treatmen, and treatment of 1:3 resulted  2.,96 mg/100 g.The qualitative and quantitative test on vitamin C shows the result of the more strawberries are used then the higher levels of vitamin C.Keywords: mixed berries, iodometricABSTRAKAsupan makanan memerlukan bahan yang mengandung vitamin C agar tubuh tetap sehat seperti pada stroberi dan buah naga. Salah satu usaha untuk memperpanjang daya simpan dan mempertahankan kandungan gizinya dengan dijadikan produk olahan selai. Tujuan dari penelitian ini adalah untuk menganalisa kandungan vitamin C pada hasil olahan selai stroberi (Fragaria sp.) dan buah naga (Hylocereus costaricensis) dengan konsentrasi perbandingan buah naga dan buah stroberi yang berbeda yaitu 1:1, 1:2, 1:3. Metode yang digunakan adalah metode eksperimen dengan rancangan penelitian berupa Rancangan Acak Lengkap (RAL). Analisa vitamin C menggunakan uji kualitatif dan metode iodimetri untuk uji kuantitatif. Hasil penelitian didapat beda sangat nyata antar perlakuan, dengan nilai perlakuan 1:3 tertinggi yaitu 24,96 mg/100 gram. Uji kualitatif dan kuantitatif pada vitamin C menunjukkan semakin banyak stroberi yang digunakan maka semakin tinggi kadar vitamin C-nya.Kata kunci: Campuran buah, Iodometri

Tamoenju (Hibiscus surattensis L.) leaves are included in the malvaceae family which grows in the plateau and are known to have the antidiabetic activity that the standardization of the extract is needed to be conducted. The research aimed to discover the total level of secondary metabolites from ethanol extract. The extraction of Tamoenju leaves through maceration method with 96% ethanol was done to obtain the filtrate. The filtrate obtained was concentrated by using rotary evaporator at 40°C until the concentrated extract was obtained. The extract gained was then tested in a qualitative way with Alkaloid, Flavonoid, Saponin, and Tannin tests by using the suitable reagent for the test parameters. While in the quantitative test the method used was Gravimetric analysis on alkaloid and Saponin compounds, Permanganometry on Tannin compound, and UV-Visible Spectrophotometry on Flavonoid. The qualitative test results reveal that Tamoenju is positive for containing Alkaloid which was characterized by the presence of orange sediment, Flavonoid was characterized by the orange formation, Tannin was characterized by the dark blue and Saponin was characterized by the stable foam. The quantitative test results are Alkaloid by 305.181 g/g, Saponin by 371.112 g/g, Tannin by 55.417 g/g and Flavonoid by 14.999 mg/100 g.Keywords: Hibiscus surattensis L. , secondary metabolites, standardization

South Konawe District at Southeast Sulawesi Province is a producer of agriculture such as Papaya fruit ranging from 1168 quintals each year. Papaya fruit contains β-carotene which plays an important role in the formation of vitamin A in the body. This research was conducted to determine the β-carotene content of papaya fruit by using variables planting method, fruitage, and fruit condition. The mashed fruit was extracted using n-hexane: acetone: ethanol (2: 1: 1) v/v, then separated from polar and non-polar solutions. Qualitative analysis was carried out using the Carr-Price method and quantitative analysis or determination of β-carotene levels using the UV-Visible spectrophotometric method λ = 452.0 nm. The qualitative test results showed that the papaya fruit in the papaya fruit obtained by cultivation and growing wild with each variable half-ripe, ripe, and not fresh papaya identified the presence of β-carotene. The results of quantitative analysis of β-carotene levels in cultivated papaya fruit were 1.76 μL, half-ripe 1.32 μL, and cultivated young papaya 1.22 μL. In wild ripe papaya 1.75 μL, wild half-ripe papaya 1.3 μL and wild young papaya 1.21 μL. There is an effect of each test parameter starting from the parameters of planting method, fruitage, and fruit condition on β-carotene content in papaya fruit.

Common cold or non-specific upper respiratory infection (ISPA) or "common cold" is an infectious disease caused by a virus and attacks the upper respiratory tract (nose). This disease is commonly experienced by children to adults. Viruses that cause Common Cold such as coronavirus and rhinovirus. Common cold can be overcome by pharmacological and non-pharmacological therapy. One of the non-pharmacological therapies to overcome the initial symptoms of common cold by consuming processed red dragon fruit skin, jelly candy. The purpose of this study was to know the effect of the composition of the making of Hylocereus Polyrhizus leather jelly in organoleptic and acceleration of healing of common cold symptoms in toddlers. The design of this study was Quasi experiment with one-group pretest-posttest design. The sample in this study were children aged 1-5 years who experienced a common cold, which was as many as 10 children. Organoleptic test results for jelly candies based on a test of color, taste and texture preferences found in jelly candies treatments 3 and 4 (T3 & T4). The content of Vitamin C in T4 (10% dragon fruit skin composition) is greater than T3 (Composition of dragon fruit skin 15%) which is 1.57> 1.24 mg / 100g and there is an effect of accelerating the recovery of common cold symptoms in infants. ABSTRAK Common cold atau Infeksi saluran pernapasan atas (ISPA) non spesifik atau “flu biasa” merupakan penyakit infeksi yang disebabkan oleh virus dan menyerang saluran pernapasan atas (hidung). Penyakit ini umumnya dialami oleh anak-anak hingga orang dewasa. Virus yang menyebabkan Common Cold seperti coronavirus dan rhinovirus. Common cold dapat diatasi dengan terapi farmakologi dan nonfarmakologi. Salah satu terapi non-farmakologi untuk mengatasi gejala awal common cold dengan mengkonsumsi olahan kulit buah naga merah yaitu permen jelly.Tujuan penelitian ini adalah untuk mengetahui pengaruh komposisi pembuatan permen jelly kulit bua Hylocereus Polyrhizus  terhadap organoleptik dan percepatan kesembuhan gejalan common cold pada Balita. Desain penelitian ini adalah Quasi eksperiment dengan rancangan one-group pretest-posttest. Sampel dalam penelitian ini adalah anak usia 1-5 tahun yang mengalami common cold yaitu sebanyak 10 anak. Hasil Uji organoleptik terhadap permen jelly berdasarkan uji kesukaan warna, rasa dan tekstur terdapat pada permen jelly treatment 3 dan 4 (T3 & T4). Kandungan Vitamin C pada T4 (komposisi kulit buah naga 10%) lebih besar dibandingkan T3 (Komposisi kulit buah naga 15%) yaitu 1,57 > 1,24 mg/100g  dan terdapat pengaruh percepatan kesembuhan gejala common cold pada balita. Kata Kunci : Kulit Buah Naga Merah (Hylocereus Polyrhizus), Gejala Common Cold, Balita.

The aim of this research was to know the effect of adding red dragon fruit juice (RDFJ) for the characteristics of yoghurt mixed milk and red bean. Research design used a randomized complete design (RAL) with the concentration 0 %, 5 %, 10 %, 15 %, 20 %, and 25 % of RDFJ. Each treatment repeated three times to obtain 18 units of sample. The data was analyzed by ANOVA and if it had effect on variabel then continued by Duncan Test. Sensory was analyzed by hedonic and scoring test for color, flavor, taste, texture and overall acceptance of the resulting product using 15 trained panelists. The result showed that adding RDFJ had very significant effects (P < 0,01) for total acid, Vitamin C, antioxidant activity, total lactic acid bacteria (BAL) and had significant effect (P < 0,05) for pH. The best treatment was on 15 % of RDFJ with value 1.22 % of total lactic acid, 4.41 of pH, 1.11 mg/100g of Vitamin C, 48.40 % of antioxidant activity, 1.87 x 108 CFU/ml of total lactic acid bacteria (BAL), color (red and liked), flavor (pleasant and liked), taste (sour and liked), texture (aqueous) and overall acceptance (liked).

AbstractAn improved procedure for determination of the residual DPPH (1,1-diphenyl-2-picrylhydrazyl) free radical concentration was proposed taking into account the absorbance of both DPPH free radicals and DPPH nonradical (1,1-diphenyl-2-picrylhydrazine) stable form. The calculated residual DPPH free radical concentrations were compared with those obtained from a calibration curve and variation coefficients below 10 % were found.

Vitamin C is an antioxidant that can be used to inactivate oxidation reactions and prevent the formation of free radicals. Sources of vitamin C are fruits, such as papaya fruit. The purpose of this study was to determine the effect of the indicator volume of 1% starch and 2 N sulfuric acid on the determination of vitamin C in papaya fruit samples. This study used the iodimetri method with a standard iodine solution, starch indicator and the addition of sulfuric acid. The variations of starch indicator volume include: 0.25; 0.5, 1, 2 and 3 mL and the variations of sulfuric acid volume include: 0, 2, 4, 6, and 8 mL. The results showed that the optimum 1% starch indicator volume was 1 mL and the optimum volume of 2 N sulfuric acid was 2 mL.

Objective: We aimed to evaluate the characterization of thinned immature Citrus unshiu fruits with regard to their phytochemical profile and antioxidant capacity.Methods: Determination of total phenolic, flavonoid, and carotenoid and ascorbic acid contents was done by UV-Visible spectrophotometry, whereas UPLC-mass detection was used for the analysis of individual flavanone (naringin, hesperidin, hesperetin, neohesperedine and narirutin) and flavonol (rutin). In addition, free radicals (DPPH, O2-, H2O2 and NO) scavenging assays were used to determine the antioxidant capacity.Results: Naringin, hesperidine, neohesperedine and narirutin were the main flavanones in all thinned immature Citrus unshiu fruits. The contents of total phenolic, flavonoid and carotenoid were more prevalent in immature fruits than the level found in mature fruits. All thinned immature Citrus unshiu fruits possess an evident antioxidant capacity. The immature Citrus extract concentrations providing 50% inhibition (IC50) for free radicals; 1.2-1.49 mg/ml for DPPH, 1.03-1.46 mg/ml for superoxide, 1.95-3.43 mg/ml for hydrogen peroxide and 1.64-3.45 mg/ml for nitric oxide was lower than those of mature Citrus extracts.Conclusion: Thinned immature Citrus unshiu fruits could be an economic and readily accessible source of natural antioxidants and as a possible food and pharmaceutical supplement.
