Abstract. Terong belanda is a sour-taste typical fruit, but it has a less attractive color. On the other hand, beetroot has an interesting color because it contains betalain pigment producing red and purple colors. The purpose of this study was to determine the effect of CMC concentration and the addition of terong belanda and beetroot on the organoleptic quality of sorbet. This study used a Completely Randomized Design (CRD) with the ratio of terong belanda and beetroot factor (P1 = 1:1, P2 = 2:1 and P3 = 3:1) and CMC concentration factor (C1 = 0%, C2 = 0.25 %, C3 = 0.50% and C4 = 75%) with two replicates creating a total of 24 experimental units. The results showed that the addition of terong belanda tended to increase the proportion of aroma and taste organoleptic values, while the increase in the concentration of CMC tended to improve the color, taste and texture organoleptic values. The best Sorbet was obtained using the ratio of terong belanda and beetroot (2:1) having the following hedonic characteristics: 4.53 (a bit like) color, 4.23 (neutral) aroma, 4.40 (rather like) flavor and 4.63 (a bit like) texture.

ABSTRACT   Cod liver oil as a source PUFA (Polyunsaturated Fatty Acid) has very diverse and complex benefits, including for heart health. This study aimed to improve the lipid profile of male local rabbit which was fed commercial supplementation of cod liver oil. The experimental design used was Completely Randomized Design (RAL) with four feed treatments, ie commercial feed without supplementation of cod liver oil (P0) as control, commercial feed supplemented by cod liver oil 1.5% (P1), commercial feed supplemented by oil liver of 3% cod (P2) and commercial feed supplementation of cod liver oil 4.5% (P3).Each treatment consists of eight rabbits. The variables observed were total cholesterol, triglyceride, LDL, and HDL levels. The data obtained were analyzed with ANOVA and if significantly different were tested further with DMRT. The results showed that supplementation of cod liver oil with different levels in commercial feed showed significantly different results (P <0.05) on total cholesterol, triglyceride, LDL, and HDL levels of local rabbit. It can be concluded that supplementation of cod liver oil in commercial feed to the extent 4.5% capable repair the lipid profile of male local rabbit because it can decreased  total cholesterol levels, decrease triglycerides levels, decreased LDL levels, and increased HDL levels.

Indonesia is the fourth largest sweet potato producing country in the world. However, the number of sweet potato utilization is still non optimal. One of the most popular sweet potato cultivars is Cilembu sweet potato. Velva is a frozen dessert which is made from mashed fruit (puree) with addition of water and sucrose. Fat content in velva is much lower than the ice cream, it is suitable to be consumed by vegetarian and those who are on low-fat diet. The velva making process may serve as an alternative of sweet potato utilization and will increase its economic value. One of the factors that affects the texture of velva is the type and amount of stabilizers used. This research aims to determine the optimal amount of Carboxy Methyl Cellulose(CMC) to yield Cilembu sweet potato velva with good characteristics and organoleptic properties of the panelists preferences. The method used is the experimental method with completely randomized design (CRD) consisted of 6 treatments of CMC addition (0.00%, 0.20%, 0.40%, 0.60%, 0.80%, and 1.00%) and replicated 4 times. The final results showed that the sweet potato velva with addition of 0.60% CMC was the best treatment. The velva has rate of melting 712.50 seconds, overrun 19.69 %, and the amount of total soluble solids 27obrix. This velva has qualified the standard of rate of melting, according to Arbuckle and Marshall (1996) the ice cream’s rate of melting  in 20oC  is 10-15 minutes. Keywords: velva; sweet potato; CMC; characteristics
