Abstract Twenty first century has witnessed a significant rise in the awareness regarding healthy lifestyle among the consumers and food being the important step towards a healthy life, numerous health promoting food products have gained prominent place in the food market. One such food component which is proven to have impressive health benefit is the probiotic bacteria. Probiotics are known to human kind since ages as they are important component in fermented milk products, however the use of probiotics in non-dairy product is a novel method for the delivery of probiotics. Awareness regarding health benefits of dairy products is long known to consumers but non dairy products too have good amount of micro and macronutrients and antioxidants as well which are a boon to human body. Delivery of probiotics through non-dairy products will be beneficial for consumers who are lactose intolerant who are deprived of benefits of probiotics by dairy products. This studies aim at developing novel vegetable juices containing probiotic bacteria. Three different strains of bacteria will be used i.e. Lactobacillus plantarum, Lactobacillus acidophilus, Lactobacillus delbrueckii in carrot, beetroot and tomato juice. The viability of the bacteria will be checked after a specific duration of time of fermentation by Koch’s plate count method. The vegetable used for juices (carrot, beetroot, tomato) consist of high amount of antioxidants like carotenoids in carrot, betaxanthins and betacyanins in beetroot, lycopene in tomato. These antioxidant provide numerous health benefits to human body. The antioxidant activity in the juices will be checked before and after fermentation by HPLC and spectroscopic methods. This product will be especially useful for the people who are lactose intolerant who cannot intake probiotics via milk and milk products. Vegetable juices also have almost zero fat content and high in fiber so the people who are on a fat free diet can consume this product.

SUMMARYIn July 2011, a cluster ofYersinia enterocoliticainfections was detected in southwestern Pennsylvania, USA. We investigated the outbreak's source and scope in order to prevent further transmission. Twenty-two persons were diagnosed with yersiniosis; 16 of whom reported consuming pasteurized dairy products from dairy A. Pasteurized milk and food samples were collected from this dairy.Y. enterocoliticawas isolated from two products. Isolates from both food samples and available clinical isolates from nine dairy A consumers were indistinguishable by pulsed-field gel electrophoresis. Environmental and microbiological investigations were performed at dairy A and pasteurization deficiencies were noted. Because consumption of pasteurized milk is common and outbreaks have the potential to become large, public health interventions such as consumer advisories or closure of the dairy must be implemented quickly to prevent additional cases if epidemiological or laboratory evidence implicates pasteurized milk as the outbreak source.

Applying instruments for rapid evaluation on dairy products quality are always the research focus of dairy products properties. Five brands of UHT sterilized milk and two brands of pasteurized milk were analyzed for the evaluation of quality properties by the electronic tongue. Principal Component Analysis(PCA) was used for data processing, the experiment showed that electronic tongue could discriminate not only between UHT sterilized milk and pasteurized milk, but also different brands of UHT sterilized milk or pasteurized milk. The application of electronic tongue in pasteurized milk products showed the similar results, too. As a kind of modern intelligent sensory instrument, the electronic tongue shows great potential in the evaluation of quality for dairy products.

Staphylococcal infections and salmonellosis are important food-borne diseases affecting both humans and animals, and the spread of antibiotic resistant bacteria to humans through the consumption of animal food products remains a challenge. To determine the occurrence and antimicrobial susceptibility pattern of Staphylococcus aureus and Salmonella in fresh milk and milk products sold in Zaria and environs, Kaduna State, Nigeria, ninety samples were purchased comprising of 49 pasteurized milk, 20 ghee (Clarified butter) and 21 fresh milk samples in Zaria. The Samples were pre-enriched before plating on a suitable selective media. Biochemical and Sugar fermentation tests were used to detect S. aureus and Salmonella isolates; also, antimicrobial susceptibility test was carried out on positive isolates. The overall prevalence of S. aureus and Salmonella spp. in fresh milk and milk products (pasteurized milk and ghee) were 31.1% (28/90) and 6.7% (6/90), respectively. Higher prevalence of S. aureus was found in fresh milk (38.1%) than in ghee (35%) and pasteurized milk (26.5%). Also, a higher prevalence of Salmonella organism was found in fresh milk (9.5%) than in pasteurized milk (6.1%) and ghee (5%). Positive isolates of S. aureus showed the highest percentage of antibiotic resistance to oxacillin (100%), then tetracycline (64%) and vancomycin (57.1%), while positive isolates of Salmonella showed oxacillin (100%) and vancomycin (100%), followed by tetracycline (33.3%). Most of the isolates displayed resistance to more than three (3) different classes of antimicrobials, indicating multi-drug resistance. Therefore, there is a need for education and public awareness regarding hygienic processing, handling and storage of fresh milk and milk products; thus, the abuse and indiscriminate use of antibiotics in animals should be discouraged.

Introduction: Listeria monocytogenes is of major significance in human and veterinary medicine. Most human Listeria infections are foodborne and the association of contaminated milk and dairy produce consumption with human listeriosis is noteworthy. In Ethiopia, there is limited data regarding the prevalence of L. monocytogenes in raw bovine milk and dairy products. The aim of this study was, therefore, to determine the prevalence of L. monocytogenes in raw bovine milk and dairy produce. Methodology: A total of 443 milk and milk product samples were microbiologically analyzed following methods recommended by the U.S. Food and Drug Administration Bacteriological Analytical Manual to isolate Listeria spp. Results: The overall prevalence of Listeria spp. was 28.4% and specifically that of L. monocytogenes was 5.6%. Taking the prevalence of Listeria spp. into consideration, cheese was found to be highly contaminated at 60%, followed by pasteurized milk samples (40%), raw milk (18.9%) and yoghurt (5%). Considering the prevalence of Listeria monocytogenes only, raw milk had the lowest contamination while cheese had the highest, followed by pasteurized milk and yoghurt. Conclusions: Raw milk and milk products produced in urban and peri-urban areas of central Ethiopia were contaminated with pathogenic bacteria, L. monocytogenes. The detection of this pathogen in raw milk and milk products warrants an urgent regulatory mechanism to be put in place and also the potential role of milk processing plants in the contamination of dairy products should be investigated.

This article assembles examples of an unusual vessel found in domestic contexts of the Early Bronze Age around the Aegean and in the Eastern Mediterranean. Identified as a “barrel vessel” by the excavators of Troy, Lesbos (Thermi), Lemnos (Poliochni), and various sites in the Chalkidike, the shape finds its best parallels in containers identified as churns in the Chalcolithic Levant, and related vessels from the Eneolithic Balkans. Levantine parallels also exist in miniature form, as in the Aegean at Troy, Thermi, and Poliochni, and appear as part of votive figures in the Near East. My interpretation of their use and development will consider how they compare to similar shapes in the archaeological record, especially in Aegean prehistory, and what possible transregional relationships they may express along with their specific function as household processing vessels for dairy products during the third millennium BC.

A new coronavirus-strain from a zoonotic reservoir (probably bat)—termed as severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2)—has recently claimed more than two million deaths worldwide. Consequently, a burst of scientific reports on epidemiology, symptoms, and diagnosis came out. However, a comprehensive understanding of eco-environmental aspects that may contribute to coronavirus disease 2019 (COVID-19) spread is still missing, and we therefore aim to focus here on these aspects. In addition to human–human direct SARS-CoV-2 transmission, eco-environmental sources, such as air aerosols, different public use objects, hospital wastes, livestock/pet animals, municipal wastes, ventilation facilities, soil and groundwater potentially contribute to SARS-CoV-2 transmission. Further, high temperature and humidity were found to limit the spread of COVID-19. Although the COVID-19 pandemic led to decrease air and noise pollution during the period of lockdown, increased use of masks and gloves is threatening the environment by water and soil pollutions. COVID-19 badly impacted all the socio-economic groups in different capacities, where women, slum dwellers, and the people lacking social protections are the most vulnerable. Finally, sustainable strategies, waste management, biodiversity reclaim, eco-friendly lifestyle, improved health infrastructure and public awareness, were proposed to minimize the COVID-19 impact on our society and environment. These strategies will seemingly be equally effective against any future outbreak.
