Prebiotics are a group that improves the human intestinal microbiota. The relationship between prebiotics and human health has been an area of increasing interest in recent years. Fructo-oligosaccharides and galacto-oligosaccharides are the two important groups of prebiotics with beneficial effects on human health. Besides that, more and more carbohydrates have shown a good potential to be prebiotics has been studied. This study presents a review of the characteristics, properties, and analytical methods used for the determination of prebiotics in food products. Most of the methods found using chromatographic methods, especially HPAEC - PAD but also another method, such as spectrometric methods have been presented. A discussion was presented highlighting the drawbacks of current analytical methods and the need to develop these methods to analyze the complex food samples containing prebiotics.

Musty odor has occurred annually in Lake Biwa since 1969. Osaka municipal waterworks, which is located downstream of Lake Biwa, has made many efforts to treat musty-odor compounds produced in Lake Biwa from spring through autumn. With the development of analytical methods for the determination of musty-odor compounds, we have been able to confirm that planktonic blue-green algae are the major causes of the musty-odor occurrences. The relationship between the growth of blue-green algae and the water quality was not so apparent. However, through our data analysis focusing on the relationship between musty-odor occurrences due to Phormidium tenue or Oscillatoria tenuis and some nutrients in Lake Biwa, we found that the concentration of nitrate in water may be an important parameter for the estimation of growth of the algae and the musty-odor behavior.

Roselle (Hibiscus sabdariffa L.), as an edible flower, has long provided an array of positive effects on human health. This benefit is a result of phenolic compounds that are naturally present mainly in the calyx. Plentiful medicinal remedies and functional foods based on this flower are available worldwide, as supported by the studies of phenolic compounds in recent decades. This paper aims to provide a comprehensive review of the composition, biological activity, and beneficial effects on human health of phenolic compounds in roselle. This review was performed in accordance with the Preferred Reporting Items for Systematic reviews and Meta-Analyses (PRISMA) guidelines. A structured search in the published literature for phenolics compositions in roselle was required prior to the evaluation on the validity of the reported analytical methods. Reliable identification and quantification of phenolic compounds in roselle can be achieved by employing the proper extraction and separation methods. With ample alternative analytical methods discussed here, this review provided an aid for comprehending and selecting the most appropriate method for a particular study. The applications of the analytical methods highlighted indicated that phenolic acids, flavonoids, and their derivatives have been identified and quantified in roselle with a range of biological activities and beneficial effects on human health. It was also disclosed that the composition and concentration of phenolic compounds in roselle vary due to the growth factors, cultivars, and environmental influence. Finally, apart from the research progress carried out with roselle during the last ten years, this review also proposed relevant future works.

Heavy metals are vital and necessary in our daily lives. Moreover, if the amounts of heavy metals are more than the acceptable amounts (mentioned by WHO) in soil, water, and air, indeed, they cause a lot of diseases in human bodies. Therefore, monitoring and measuring the amounts of heavy metals that are arduous and difficult are so important. In this review paper, a lot of studies that have been carried out on the determination and quantification of heavy metals in human bodies, soil, and water are considered. Moreover, the effect of toxicity of each heavy metal on human health is assessed. According to WHO, EPA, NIOSH, ACGIH, and clinical chemistry, the determination of heavy metals such as Cd, Pb, Zn, Hg, Cu, Mn is very important in the human body and Environmental matrixes.

Purpose Human health is strongly affected by diet. By the increased use of food industries products, public knowledge about health factors and side effects of chemical additives, the concepts of human health founded an important aspect during past years, and application of natural-based ingredients such as coloring, flavoring, texturizing and anti-oxidative agents was increased. Design/methodology/approach The aim of the present paper is to review the published scientific research studies about lycopene health benefits in different human disease or disorders and bold the necessity of study the health effects of lycopene after its formulation in food industrial products. About 190 papers were searched in Google Scholar, PubMed, Web of Science databases and 72 relevant papers were used. It was found that in medical studies, the lycopene oleoresin or powder is used directly to the subjects. However, it is necessary to study the effectiveness of lycopene in diet food products. Findings According to the literature, it has beneficial effects on cancers, glands, reproductive system, bone, gastric system, liver and fat reduction in the body. Also, it was concluded from the literature that lycopene oxidative cleavages make also its chemo protective effects which is a lost key element to study different food processing on lycopene products or its isomers in final food products and on human health. Originality/value Many ingredients in food formulations are substituted by natural products. Lycopene is a colorant but also, according to the literature, has a strong antioxidative and anti-inflammatory effect to reduce the risk of most important human disease and disorders. Future research in food science can emphasize the effect of different unit operations or formulations on lycopene effects on human health.

Inverse photopyroelectric (IPPE) spectroscopy, a novel variant among the photothermal spectroscopies, has been used for direct determination of ( Kρc)½ in a variety of food samples. The method appears capable of thermal characterization, and when combined with more mature techniques may prove useful in food products industry and storage.

Due to the increasing globalization of food markets, there are evolving new challenges for maintaing food safety. The current problem is the development of analytical methods for 3-monochloropropanediol ester and glycidol ester, which are food contaminants of concern for the scientific community. The levels of 3-monochloropropanediol ester and glycidol ester in certain food products are controlled by the European legislation. However, the maximum allowed concentrations and uptake limits for various food products are permanently revised. Therefore, we aimed to determine 3-monochloropropanediol ester and glycidol ester in various food products, which may contain vegetable oils. We analyzed food samples obtained from local food shops, predominantly low-priced products, which are more likely to contain vegetable oils, and adulterated milk fat. The levels of 3-monochloropropanediol ester and glycidol ester were determined indirectly by analyzing free 3-monochloropropanediol and glycidol ester obtained by hydrolysis and derivatized with phenylboronic acid. Samples were analyzed by GC-MS/MS on a triple-quad mass spectrometer.

The waste of trace metals are led the pollutions of water, soil and air. That’s why the accurate and sensitive identification of amount of trace metals in food samples and environment are gained importance in analytical chemistry because of their toxicity to human health. Besides, the direct determination of trace metals, presented at very low concentration especially in real samples, is difficult. In this content, before determination of trace metals by instrumental methods can be achieved successfully using separation/preconcentration procedures. The different synthesized chelating polymer resin adsorbents are successfully used for the SPE of trace metals. The trace metals, such as Cu, Cr, Co, Mn, Zn and Fe, are necessary for human health, when it has been taken at certain limits. But, the trace metals, such as Hg, Cd, Pb, Ni and As are toxic metals for the human body. About this, there are studies on the determination of trace elements and mineral in food samples and environment. In this study, new methods in the synthesis of (meth)acrylamides and use as a sorbent in the trace metals extraction was identified.

Polycyclic Aromatic Hydrocarbons (PAHs) are one of the major categories of pollutants entering the marine environment and finally accumulating in the sediments. Their occurrence raises major concerns for human health, especially during coastal activities (bathing waters, aquaculture, etc), having combined adverse effects still largely unknown when they are present as mixtures. Moreover, during their remobilization (e.g. dredging activities), their bioavailability can increase resulting in a risk for marine environment. Several of them are known to be potential human carcinogens including benzo[a]anthracene, chrysene, benzo[b]fluoranthene, benzo[a]pyrene and benzo[ghi]perylene. Therefore they have been included in the priority list of the Water Framework Directive 2000/60/EC and also sixteen of them have been regulated by the US EPA as priority pollutants, and their distributions in the environment and potential human health risks have become the focus of much attention. The determination of PAHs in environmental matrices has been subject of great scientific attention during the latest years, as the accuracy and sensitivity of analytical methods need to be improved in order to be able to detect the compounds of interest in a complex matrix such as sediments. Therefore, significant research is being devoted to the optimization of analytical methodologies. A great number of studies have been performed on PAHs analysis in marine sediments. Various analytical procedures based on gas chromatographic analyses are reviewed and comparatively discussed in this paper.

Foods are a mixture of substances capable of supplying the human body with nutrients, which, once metabolized, are used mainly for the production of energy, heat, replenishment, and growth material for organs and tissues, ensuring the normal performance of vital functions necessary for growth of the human body. Therefore, the study of the chemical composition of foods and the properties of their constituents helps to define their nutritional and commodity values. Furthermore, it allows for evaluation of the chemical modifications that the constituents of the food undergo following the treatments (Food Technology) to which they are subjected. Analytical chemistry is the branch of chemistry based on the qualitative and quantitative determination of compounds present in a sample under examination. Therefore, through its application, it is possible to determine the quality of a product and/or its nutritional value, reveal adulterations, identify the presence of xenobiotic substances potentially harmful to human health (heavy metals, IPA, pharmaceuticals, etc.). Furthermore, some foods, in particular those of plant origin, contain numerous substances, secondary metabolites, with huge beneficial effects for human health. These functional components can be taken both through a correct diet, but also obtained from different food matrices by technological or biotechnological processes for the formulation of both functional foods and/or nutraceutical products. This Special Issue brings together 10 original studies and two comprehensive reviews on the above topics, in particular: (i) processes of extraction, identification, and characterization of biologically active compounds from different food matrices, (ii) overview of the main techniques applied for the determination of food colors, (iii) newer and greener solid-liquid extraction techniques.
