Pseudocereals are important as gluten-free crops that could be utilized as functional foods. They contain proteins with high biological value and also bioactive compounds such as phenolic compounds, flavonoids, vitamins, and minerals that can possess positive health effects on the body. Three types of pseudocereals (amaranth, buckwheat, and quinoa) were evaluated for polyphenols and antioxidant activity. Spectrophotometric methods were used for the determination of free phenols amount with Folin-Ciocalteu reagent, and total antioxidant capacity (TAC) with DPPH and ABTS reagents. Free phenols, the predominant part of polyphenols, were in pseudocereals in the range from 12.4 to 678.1 mg GAE.100g-1. The highest content of FP was found in buckwheat products (146.8 ”“ 678.1 mg GAE.100g-1); quinoa and amaranth products reached much lower values (up to 226.1 mg GAE.100g-1). Antioxidant activity was in an agreement with the FP amounts order, the highest TAC values were again for buckwheat products (167.3 ”“ 473.9 and 876.9 ”“ 3524.8 mg TE.100g-1), followed by quinoa (78.2 ”“ 100.6 and 738.9 ”“ 984.5 mg TE.100g-1) and amaranth ones (25.0 ”“ 69.7 and 118.2 ”“ 431.4 mg TE.100g-1). A high positive correlation between FP amount and TAC values was evaluated for analyzed pseudocereals. The highest content of free phenols and the best antioxidant potential showed buckwheat wholemeal flour, so buckwheat could be characterized as a great source of free phenols with high antioxidant activity.

Oxidative stress has been studied by scientists because it is a factor increasing diseases, such as cancer, diabetes... through the production of harmful free radicals to the body. Ganoderma lucidum (Curtis) P. Karst is always considered an important drug in the prevention and treatment of diseases by the action of polysaccharide and triterpenoid. In addition, Stevia rebaudiana Bertoni has recently been shown to have antioxidant and anti-inflammatory properties. Mint (Mentha avensis L.) is a common medicinal herb. The mixture consisting of the aqueous extract of Ganoderma lucidum (Curtis) P. Karst, mint and stevia powder had a high antioxidant activity, in free radical scavenging method (DPPH), reaching 85.7% at concentration 1000 μg/mL and valuable IC50 was 559.7 μg/mL. For in vivo study on the model of cyclophosphamide-induced liver damage in white mice, the concentrations of malondialdehyde and glutathione in liver showed that the mixture had antioxidant activity in the direction of hepatoprotective effect

The quantification of a plant, which is vital in medication bearing antioxidant activity of the North West area of the province Balochistan Ebenus Stellata family Fabaceae is explained in this paper. The plant composition was determined chemically through well-known four analytical tests and sensitive EMR operating techniques. The crude extract was obtained from the plant by using methanol, and the antioxidant activity of that extract was measured. Additionally, with the help of spectrophotometer, antioxidant potentials were determined through the DPPH (2, 2-Diphenyl-1-Picrylhydrazyl) assay, Ferric ion (Fe+3) reducing antioxidant power assay, Ferric (Fe+3) reducing antioxidant potential (FRAP) assay, and total antioxidant capacity (TAC) of the phosphomolybdenum assay. The potency of the DPPH assay ofEbenus Stellatawas 179 mg/g ofascorbic acid concentration. Moreover, the FRAP and TAC values were 9.2mg and 35 mg of ascorbic acid/g ofEbenus stellate extract, respectively. Furthermore, RP denotes 2.6 mg/g of ascorbic acid concentration. The concerned plant showed high antioxidant activity.

The predominance of synthetic and genetically modified foods in the diet of a modern person often leads to disruption of natural metabolic processes and the accumulation of toxic free radicals in the body, which provokes the development of various diseases. Natural antioxidants from medicinal plants can help maintain health and stop the processes of peroxidation. In our opinion, Аstragalus onobrychis can become a promising source of natural antioxidants. The aim of this study was to establish the antioxidant activity in extracts from the herb Astragalus onobrychis. In order to obtain objective and reliable results during our research, we used two methods: the method of titrimetry and spectrophotometry of free radicals. The titrimetric method is based on the chemical interaction between an oxidizing agent (potassium permanganate) and natural antioxidants present in extracts from plant raw materials, since they exhibit the properties of reducing agents. The spectrophotometric method makes it possible to assess the value of antioxidant activity and the duration of the reaction by assessing the interaction of 2,2-diphenyl-1-picrylhydrazil with plant antioxidants. To establish the relationship between the antioxidant activity and the presence of phenolic compounds in the plant, the content of flavonoids and hydroxycinnamic acids in the herb Astragalus onobrychis was determined. As a result of the studies, the total antioxidant activity of extracts from the herb Astragalus onobrychis was established and it was revealed that its value depends on the type of extractant used, since this factor is associated with the content of various groups of natural antioxidants in the extraction. The data obtained indicate the prospects of using the herb Astragalus onobrychis as a source of natural antioxidants.

In this work, chemical parameters such as sugar (glucose and fructose) content, organic acid (total acids, malic and tartaric acids), total phenolic content and the antioxidant activity of 12 white wines (chardonnay, pinot blanc and pinot gris) from various wine regions in Slovakia were studied in order to identify differences among the varieties and wine-growing regions. The wine samples were examined by Fourier-transform infrared spectroscopy (FTIR) and UV-VIS spectrophotometry (for determination of total polyphenolic content (TPC) and total antioxidant activity (TAA)) methods. Content of alcohol ranged between 11.50% and 13.80% with the mean value 12.52%. Mean content of total acids varied between 4.63 ± 0.09 and 6.63 ± 0.05 g.L−1, tartaric acid varied between 1.62 ± 0.09 and 2.93 ± 0.03 g L−1, malic acid was found in the concentrations ranged from 0.07 ± 0.05 and 2.50 ± 0.08 g L−1 and lactic acid was present between 1.53 and 0.01 g L−1. The content of fructose was, in general, higher in the samples from the Južnoslovenská and Nitrianska wine regions and glucose was higher in the Malokarpatská wine region. Chardonnay wines showed the highest content of total polyphenols and the antioxidant activity in the samples ranged from 51.06 ± 027 to 72.53 ± 0.35% inhibition of DPPH. The PCA analysis based on chemical descriptors distinguished the Nitrianska and Stredoslovenská wine regions. According to similarities among the wine samples, four main classes were formed by cluster analysis.

The influence of fattening conditions on the digestive and metabolic processes in animals is actively studied to increase the production of animal food. The aim of the study was to estimate the total amount of water-soluble antioxidants in the blood serum of Duroc boars depending on the duration of fattening. Experiments were conducted on 102 animals to confirm the results of laboratory studies, as well as determination of the total antioxidant activity of pig blood serum by amperometric method. For the first time, a significant difference in antioxidant activity was found in blood samples of Duroc boars with the duration of their fattening from 81 to 101 days.

Guava (Psidium guajava L., Myrtaceae) leaves have been used as a folk herbal tea to treat diabetes for a long time in Asia and North America. In this study, we isolated polysaccharides from guava leaves (GLP), and evaluated its antioxidant activity in vitro and anti-diabetic effects on diabetic mice induced by streptozotocin combined with high-fat diet. The results indicated that GLP exhibited good DPPH, OH, and ABTS free-radical scavenging abilities, and significantly lowered fasting blood sugar, total cholesterol, total triglycerides, glycated serum protein, creatinine, and malonaldehyde. Meanwhile, it significantly increased the total antioxidant activity and superoxide dismutase (SOD) enzyme activity in diabetic mice, as well as ameliorated the damage of liver, kidney, and pancreas. Thus, polysaccharides from guava leaves could be explored as a potential antioxidant or anti-diabetic agents for functional foods or complementary medicine.

In this work, we report the phytochemical composition and antioxidant activity of methanol extracts of leaves and fruits (acorns) ofQuercus coccifera(kermes oak). Forty-one compounds were characterized using high-performance liquid chromatography with electrospray multistage mass spectrometry (HPLC-ESI-MSn) with an ion trap mass spectrometer. A high percentage of the detected compounds were gallic acid derivatives, although some saccharides and flavonoids were also present. This phytochemical pattern is typical inQuercusspecies, which are rich in gallotannins. These compounds are partially responsible for the cardioprotective effects observed in different food samples containing them. We evaluated the antioxidant activity by ABTS and DPPH assays. In both cases, high antioxidant activity was observed, being higher in acorns than in leaves. The high antioxidant potential of the extracts, which is related to the high total phenolic content, indicates the potential benefit of the use of this species as a source of bioactive compounds.

Objective: The purpose of this research was to determine antioxidant activity of green tea leaf extract, the value of sun protection factor (SPF),physical properties, and stability of green tea cream.Methods: Green tea leaf extract was obtained by maceration using 96% ethanol. Cream was prepared in three formulas with various concentrationof the green tea leaves extract. The physical evaluations included organoleptic, pH, viscosity, adhesion, spreadability, and stability tests weredone. The determination of the SPF value is calculated using the Mansur equation. Extract of green tea leaf has strong antioxidant activity(IC50 2.19 μg/ml).Results: The green tea leaf extract showed high antioxidant activity (2.19 μg/m). All formulas are organoleptically creamy brownish-green to brown,with a distinctive green tea odor and homogeneous. All formulas met the requirements of physical properties of cream. The creams showed significantchange while they were stored at 4°C and at 40±2°C, but showed no difference when they were stored ad 26°C. SPF values of cream are 0.54; 2.03,and 2.41, respectively.Conclusions: It is clearly indicated that the sunscreen cream of green tea leaf extract is potential to be further developed as cosmetic preparations.
