Saccharides are the basic dry matter components of all fruits and vegetables. The dominant tomatoes saccharides are fructose and glucose, minor ones are sucrose but also arabinose, xylose, and galactose. The objective of this paper is to analyze carbohydrates such as glucose, fructose and sucrose in the selected tomatoes varieties intended for the direct consumption and industrial processing. We used 14 varieties and 3 newly selected tomatoes varieties. The glucose content in the studied varieties was in the range of 4.87 – 15.9 g.kg-1, the fructose content was 11.1 – 22.27 g.kg-1 and sucrose content was 0.07 – 1.73 g.kg-1. The highest fructose and sucrose content was detected in the Tomanova variety, the highest sucrose content was found out in the Bovita variety. When comparing the glucose content it was found out that the higher content on average was achieved in the varieties intended for the industrial processing (10.10 g.kg-1) than in the varieties for the direct consumption (7.96 g.kg-1). The varieties intended for industrial processing were generally characterized by higher glucose and fructose content than the varieties intended for the direct consumption. When comparing the fructose content, we found a higher average content in the varieties intended for industrial processing (15.70 g.kg-1) than in the varieties for the direct consumption (14.40 g.kg-1). In most of the studied varieties sucrose was present in low content (<1.0 g.kg-1), only in the Tomanova variety sucrose content represented more than 1 g.kg-1.

The dry-matter content of about 260 samples of potatoes was determined. The samples were collected over three seasons and from many types of soil.The average dry-matter content of a variety varied from season to season, but it always bore an approximately constant relationship to the average value of other varieties.Wet seasons led to potatoes low in dry matter.The variation in the content of dry matter of potatoes in different seasons and from different soil types is not a direct effect of the water balance of the tubers.The average content of dry matter of potatoes depends on the soil in which they were grown; fen and blackland gave potatoes with the lowest dry matter, followed by skirt, silt and warp, then loam and medium loam, then clay, and the highest dry matter occurred in stocks grown in sands, gravels or light loams.The difference between the soils is discussed, and it is tentatively concluded that the factor responsible for the variation in content of dry matter of the potatoes is the available water content of the soils.

Relatively little is known about the physiological basis for variation in sucrose content among sugarcane clones despite substantial research at the molecular and biochemical levels. We used irrigation and continuous monitoring of photosynthesis and plant extension rate to modify dry matter partitioning in four clones differing widely in sucrose content. Three pot experiments were conducted on two low sucrose content clones, KQ97-2599 and KQ97-2835, and two high sucrose content clones, Q117 and KQ97-5080, in a temperature-controlled glasshouse. As expected, sucrose content on a dry mass basis of whole stalks was greater in high (55% maximum) than in low sucrose clones (40% maximum), but sucrose content in the two clones selected for low sucrose reached 55% in some internodes. Differences between clones in whole-plant net photosynthesis and aerial biomass accumulation were small. However, biomass was distributed over fewer stalks in the high sucrose clones (4–7 stalks per pot) than in the low sucrose clones (9–11 stalks per pot). The high sucrose clones also allocated a considerably greater proportion of dry matter to the stalk (70% maximum) than the low sucrose clones (60% maximum). It is suggested that the relatively large amount of new leaf tissue produced by the high tillering, low sucrose clones placed an additional demand for structural photo-assimilate in these clones and delayed the accumulation of sucrose in the stalk. The results indicated that there is little direct genetic control on the maximum amount of sucrose that can accumulate in stalk tissue and that genetic contrasts in sucrose content reside more in the morphology of the plant and responses to ripening stimuli such as mild water stress, and how these traits influence supply and demand for photo-assimilate.

<p>Cincalok, a traditional fermented shrimp product, is prepared with mix small and fresh shrimp, salt, and sugar in a certain ratio incubated for 3-7 days. Different recipes of each the commercial cincalok products obtain different of quality and safety level. The aim of this study is to assess the quality and safety of the commercial cincalok products of West Kalimantan based on their physicochemical and microbiological properties. Seven commercial cincalok products collected from the traditional market of West Kalimantan were analyzed physicochemical (moisture content, pH, free amino nitrogen (FAN), titratable acidity, salt content, glucose content, sucrose content, ethanol content) and microbiological (total number of mesophilic aerobic bacteria (TMABs), total halotolerant bacteria (THBs), endospores bacteria, lactic acid bacteria (LABs), fungi, Enterobacteriaceae, <em>Bacillus cereus, Clostridium perfringen</em>s, and <em>Staphylococcus aureus</em>)<br />properties. The mean of moisture content, pH, free amino nitrogen (FAN), titratable acidity, salt content, glucose content, sucrose content, ethanol content for 7 samples was 67.59%, 5.16, 0.60 mM/g, 1.75%, 10.56%,<br />1.30%, 0.49% and 0.59%, respectively. The mean of TMABs, THBs, endospores bacteria, LABs, fungi, and Enterobacteriaceae for 7 samples was 1.19-5.18 log CFU/g and 1.76 log CFU/g, respectively, while <em>B. cereus,</em><br /><em>C. perfringens,</em> and<em> S. aureus</em> were not detected for all of the samples. The results showed high variation of physicochemical and microbiological properties of the products. Some of the products are safe to ate without<br />cooked but the other still contain pathogenic bacteria such as some of the enterobacteriaceae strains.</p>

The effects of different fertilization practices on the glucose, fructose, sucrose, taste and texture of carrot cv. Nantes Duke Notabene 370 Sv were studied in field experiments carried out in southern Finland in 1985 and 1986. The effects of unirrigated and irrigated placement and broadcast fertilization, NPK fertirrigations without basic fertilization, NPK fertirrigations with NPK basic fertilization, and PK placement with N fertirrigations were compared. Further, the effects of single application were compared with those of split applications. Sugar analyses were made by high performance liquid chromatography, and sensory evaluations were performed for taste and texture. The results were analysed by contrast analysis. In 1985, fertilization and fertilization practices had no effects on sugar contents. In 1986, the unfertilized treatments had a tendency to yield higher glucose and fructose, and thus also total sugar contents than did the fertilized treatments on the average. Placement fertilization had a tendency to increase the glucose content as compared to NPK fertirrigations. No significant differences or tendencies were found in sucrose content. The glucose and fructose contents were higher in 1985 than in 1986. The sucrose content was mainly opposite, being higher in 1986.Weather conditions were more favourable for photosynthesis in 1986 than in 1985. The mean total sugar content in fresh weight was 7.8 % in 1985 and 6.7 % in 1986. Indicative results of taste and texture are presented. The sugar content in organically cultivated carrots did not differ from that of conventionally grown carrots, but the taste was worse.

The main purpose of the article is to describe the theoretical features of competitiveness and efficiency of production of agricultural sector of the Republic of Kazakhstan. When writing the work, economic and statistical methods, methods of comparison and analysis, synthesis and generalization were used.The article deals with the main indicators of the industry: domestic production and consumption; foreign trade and market size in the Republic of Kazakhstan. The main conclusions of the article are to determine the factors that state the competitive position of the fruit and vegetable industry in the Republic of Kazakhstan, as the agro-industrial complex needs to be improved, which would be based on scientifically based mechanisms and directed to the development of agricultural enterprises. In Kazakhstan, it is strategically beneficial to engage in the industrial processing of fruits and vegetables, which is due to the favorable climate, access to labor resources, growing demand from the population, and an increase in export potential. In general, the country meets the need for potatoes, fresh vegetables and melons. However, high prices, a narrow range of products, lack of proper presentation associated with the high cost of packaging and packaging, high transport costs, and a decrease in consumer demand for domestic fruits and vegetables in the domestic and foreign markets have led to their lack of competitiveness.

Kojic acid is a metabolite from some common microbe, it is a natural preservative. The kojic acid has broad prospects in the storage and preservation of fruits and vegetables. In this study, using different concentrations of kojic acid sprayed the surface of rape and stored at room temperature, observed phenotypic changes. Then the CAT and POD activity, chlorophyll content and weight loss rate were determined in rape treated by kojic acid. From the overall trend, compared with the water, spraying 0.5% and 1% kojic acid to a certain extent reduce chlorophyll loss of rape, water evaporation and dry matter decrease was slowing down, and maintains the appropriate activity of CAT and POD. It means that the kojic acid has obviously effect on rape preservation.

Agro-industrial residues are low-cost carbon sources (C-sources) for microbial growth and production of value-added bioproducts. Among the agro-industrial residues available, those rich in pectin are generated in high amounts worldwide from the sugar industry or the industrial processing of fruits and vegetables. Sugar beet pulp (SBP) hydrolysates contain predominantly the neutral sugars d-glucose, l-arabinose and d-galactose, and the acidic sugar d-galacturonic acid. Acetic acid is also present at significant concentrations since the d-galacturonic acid residues are acetylated. In this study, we have examined and optimized the performance of a Rhodotorula mucilaginosa strain, isolated from SBP and identified at the molecular level during this work. This study was extended to another oleaginous red yeast species, R. toruloides, envisaging the full utilization of the C-sources from SBP hydrolysate (at pH 5.0). The dual role of acetic acid as a carbon and energy source and as a growth and metabolism inhibitor was examined. Acetic acid prevented the catabolism of d-galacturonic acid and l-arabinose after the complete use of the other C-sources. However, d-glucose and acetic acid were simultaneously and efficiently metabolized, followed by d-galactose. SBP hydrolysate supplementation with amino acids was crucial to allow d-galacturonic acid and l-arabinose catabolism. SBP valorization through the production of lipids and carotenoids by Rhodotorula strains, supported by complete catabolism of the major C-sources present, looks promising for industrial implementation.


The potato chip industry has critical requirements regarding tuber physical and chemical aspects and these requirements are the characteristics targeted by chip potato breeding programs. This study aimed to evaluate 33 chip potato cultivars for the tuber yield and some physical and chemical characteristics of the tuber and potato chips at harvest and during cold storage period. Field experiments were conducted during the 2017 and 2018 growing seasons under sprinkler irrigation. Twenty-one cultivars were evaluated in 2017 and 22 cultivars were evaluated in 2018 using a randomized complete block design with four replications. The target traits under this study were tuber yield, tuber size, internal and external defects, sucrose and glucose content of the tuber and the chip color at harvest and during storage time. Fresh potato tuber yield varied with cultivar and ranged from 44.7 to 72.1 t/ha, averaging 58.5t/ha in 2017 and 60.8 t/ha in 2018. In 2017, cultivar NDTX081648CB-13W obtained the highest tuber yield and TX09396-1W obtained the lowest, while in 2018, Lamoka obtained the highest tuber yield and MSW044-1obtained the lowest. Cultivars NDTX081648CB-13W, MSW485-2, Atlantic, ACO1144-1W, and WANETA were the highest yielding cultivars in 2017, and Lamoka, HODAG, NICOLET, DAKOTA PEARL, and AF5429-3 were the highest yielding cultivars in 2018. Potato tuber size class of 4.7-8.75 cm was the most dominant and accounted for 93% in 2017 and 89% in 2018, respectively. Potato tuber specific gravity varied from 1.08-1.11 during both growing seasons and the dry matter content of the tubers ranged from 17.2 to 22.2% W9968-5 and MSV030-4 showed the highest internal defects of 47.2% and 33.7%, respectively, at harvest. W9968-5 still showed the highest external defects during the storage period. CO07070-13W, NDA081453CAB-2C and NY157 showed some internal defects during storage time in 2017. In 2018, NDA081453CAB-2C presented very high undesirable chip color (71.1%) followed by ND7519-1 (33.1%). In 2018, NDTX081648CB-13W, NY152 Niagara, and MSV313-2 showed relatively high internal defects (>15%) while Atlantic, MSV313-2, MSV358-3 and W9968-5 showed the highest external defects. During eight months of cold storage, NY162 showed 44.5% of external defects followed by MSV358-3 (24.6%), MSV313-2 (24%) and W9968-5 (20%). NY162 showed the highest total defects of 44.5% followed by MSV358-3, MSV313-2 and W9968-5 with total defects greater than 20%. Overall, there was a decrease in sucrose contents in the tubers after six months of cold storage except for the cultivars AF5040-8 and NDA081453CAB-2C. It increased thereafter during eight months in cold storage. However, sucrose content of the tubers at the end of the storage period was lower than the sucrose content at harvest except for B2727-2, NDA081453CAB-2C, NDTX081648CB-13W, and CO07070-13W. Significantly 100% increase in sucrose content in tubers of AF5040-8, DAKOTA PEARL, MSW485-2 Huron, MSX540-4 Mackinaw, NDA081453CAB-2C, and NDTX081648CB-13W was observed during the storage period. Glucose content of tubers changed during the storage period and was more noticeable in AF5040-8, AF5040-8, DAKOTA PEARL, MSW485-2 Huron, MSX540-4 Mackinaw, ND7519-1, NDA081453CAB-2C, and NDTX081648CB-13W. There was considerable increase in glucose content in ACO1144-1W, NDA081453CAB-2C, NDTX081648CB-13W, CO07070-13W, and W9968-5 tubers. At nine-month storage period, only Lamoka, ACO1144-1W, AF5040-8, MSX540-4, and CO02321-4W, HODAG, MSV030-4, MSW044-1, NY152 Niagara, NY162, and WANETA HODAG showed nice chip color. NDA081453CAB-2C, NDTX081648CB-13W, ND7519-1, and NDA081453CAB-2C presented the least desirable chip color with score “5”. Cultivars with consistent scores of “1” constitute promising lines for chip potato producers across the dry and hot environment of the southwest region of the United States.

With the increasing demand for convenient and ready-to-eat foods, the use of antioxidants and preservative additives in foodstuff formulation is essential. In addition to their technological functions in food, bio-based additives confer beneficial properties for human health for having antioxidant capacity and acting as antimicrobial, antitumor, and anti-inflammatory agents, among others. The replacement of preservatives and other additives from synthetic origin, usually related to adverse effects on human health, faces some challenges such as availability and cost. An opportunity to obtain these compounds lies in the food industry itself, as a great variety of food waste has been identified as an excellent source of high value-added compounds. Large amounts of seeds, fibrous strands, peel, bagasse, among other parts of fruits and vegetables are lost or wasted during industrial processing, despite being rich sources of bioactive compounds. From a circular economy perspective, this work reviewed the main advances on the recovery of value-added compounds from food industry bioresidues for food application. Bioactive compounds, mainly phenolic compounds, have been largely obtained, mostly from seeds and peels, and have been successfully incorporated into foods. Additionally, alternative and eco-friendly extraction techniques, as ultrasound and microwave, have showed advantages in extracting antioxidant and preservatives compounds.

В результате оценки в Среднем Приамурье сортимента картофеля по биохимическим показателям клубней установлено, что повышенной клубневой продуктивностью и высокой адаптационной способностью к условиям произрастания обладали сорта: Пушкинец, Бородянский розовый, Свитанок киевский, Бронницкий, Явар, Калинка, Рождественский, Росинка, Фреско, Камчатка и другие, пригодные к промышленной переработке. Установлены сорта с высокими вкусовыми качествами клубней, повышенным содержанием сухого вещества и крахмала, белка и витамина С.The results of the evaluation of the being studied assortment of potato on the biochemical indicators of tubers showed, that the varieties with high tuber productivity and high adaptive capacity to the growing conditions were: Pushkinets, Borodyanskiy rozovyj, Svitanok kievskiy, Bronnitskiy, Yavar, Kalinka, Rozhdestvenskiy, Rosinka, Fresko, Kamchatka and others, suitable for industrial processing. The selection varieties with high taste qualities of tubers, high content of dry matter and starch, protein and vitamin C have been determined.
