Food status enhancement product and improving human reproductive function

Охрана репродуктивного здоровья предполагает множество направлений деятельности, в том числе мероприятия, направленные на коррекцию пищевого статуса мужчин и женщин репродуктивного возраста, особенно беременных и кормящих женщин. Объектом исследований являлся паштет печеночный профилактической и лечебной направленности с включением пищевой системы на основе альбумина пищевого, жмыха зародышей пшеницы и фасоли. Исследованы органолептические, функционально-технологические, реологические показатели качества и безопасности, микроструктура паштета, обоснованы параметры и режимы подготовки пищевой системы и готового изделия с ее применением. Установлено, что массовая доля таких нутриентов, как Fe, Zn, Na, P и водорастворимых витаминов (В и В), находилась на уровне 20 % и более от суточной потребности. Отмечено увеличение содержания в диапазоне от 20 до 50 % суточной потребности фолиевой кислоты, витаминов В, В, С и D, что позволяет отнести разработанный паштет к функциональному продукту. При этом содержание некоторых компонентов (Mn, Cu, витаминов В, В) превысило уровень 50 % суточной потребности, благодаря чему паштет также можно отнести к витаминизированным продуктам. Выявлено улучшение сбалансированности состава полиненасыщенных жирных кислот, в разработанном продукте соотношение омега-6 к омега-3 кислот соответствовало рекомендациям НИИ питания РАМН (5-10:1) и составляло соответственно (омега-6 : омега-3) 7:1. Биологическая ценность спроектированного паштета находится на высоком уровне и достигает значения 69,8 %, показатель КРАС 30,2 %, что свидетельствует о незначительном количестве избыточных аминокислот в белковой фракции продукта. The protection of reproductive health involves many areas of activity, including measures aimed at correcting the nutritional status of men and women of reproductive age, especially pregnant and lactating women. The object of research was liver pate of preventive and therapeutic orientation with the inclusion of a food system based on food albumin, wheat germ cake and beans. Organoleptic, functional-technological, rheological, quality and safety indicators, the microstructure of the pate are studied, the parameters and modes of preparation of the food system and the finished product with its use are justified. It was found that the mass fraction of nutrients such as iron, zinc, H, P and water-soluble vitamins (B and B) was at the level of 20 % or more of the daily requirement. There was an increase in the content of folic acid, vitamins B, B, C and D in the range from 20 to 50% of the daily requirement, which allows us to attribute the developed pate to a functional product. At the same time, the content of some components (manganese, copper, vitamins B, B) exceeded the level of 50 % of the daily requirement, so that the pate can also be attributed to fortified products. An improvement in the balance of the composition of polyunsaturated fatty acids was revealed, the ratio of omega-6 to omega-3 acids in the developed product corresponded to the recommendations of the Research Institute of Nutrition of the Russian Academy of Medical Sciences (5-10:1) and was respectively (omega-6 : omega-3) 7:1. The biological value of the designed pate is at a high level and reaches a value of 69.8 %, the RED indicator (30.2 %), which indicates an insignificant amount of excess amino acids in the protein fraction of the product.

Bisphenol A (BPA) is an industrial compound with pervasive distribution in the environments of industrialized countries. The U.S. Centers for Disease Control recently found that greater than 90% of Americans carry detectable levels of BPA, raising concern over the direct influences of this compound on human physiology. Epidemiologic evidence links elevated BPA serum concentrations to human reproductive dysfunction, although controlled studies on the acute effect of BPA exposure on reproductive function are limited, particularly in primates. We evaluated the effect of direct BPA exposure on female primate hypothalamic peptide release. Specifically, using a microdialysis method, we examined the effects of BPA (0.1, 1, and 10nM) directly infused to the stalk-median eminence on the release of GnRH and kisspeptin (KP) in mid to late pubertal ovarian intact female rhesus monkeys. We found that the highest level of BPA exposure (10nM) suppressed both GnRH and KP release, whereas BPA at lower concentrations (0.1 and 1nM) had no apparent effects. In addition, we measured BPA in plasma and hypothalamic dialysates after an iv bolus injection of BPA (100 μg/kg). We found a relatively stable distribution of BPA between the blood and brain (plasma:brain ≅ 5:1) persists across a wide range of blood BPA concentrations (1–620 ng/mL). Findings of this study suggest that persistent, high-level exposures to BPA could impair female reproductive function by directly influencing hypothalamic neuroendocrine function.

The purpose of the present study was to characterize lipid fraction extracted from five self-prepared and seven commercial cat foods using gas chromatography (GC) and pressurized differential scanning calorimetry (PDSC) techniques. Self-prepared food recipes were composed using BARFny kalkulator, software dedicated for balancing cat diets, and prepared on the basis of fresh raw meat and offal. Extracted fat fractions were compared qualitatively and quantitatively with literature data for the fat of whole prey items to check the main assumptions of the software used. The fatty acid (FA) composition and distribution were determined using GC. The PDSC method was used for the determination of the oxidative stability of extracted fats. The obtained results indicate that self-prepared cat foods contained a high level of essential fatty acids (EFA) but low oxidative stability, especially for those with significant amounts of polyunsaturated FA. The FA profile and oxidative stability were examined for four dry and three wet commercial cat foods. It was found that their omega-6 to omega-3 ratio was beneficial reaching 5.3:1 to 10.1:1, despite the low amount of EFA. The longer induction time was determined for fats extracted from commercial cat foods than for self-prepared ones, which indicate their higher oxidative stability.

Creating dietary margarines using biologically valuable substances is the purpose of the work. According to the results of the experiments, it was found that the use of soybean oil, edible vegetable phospholipids and a Jerusalem artichoke extract in the margarine, allowed reducing the amount of fat and enriching the margarine with omega-3 and omega-6 fatty acids, dietary fibre, inulin and other water-soluble substances. Based on these studies prepared margarine enriched inulin and essential fatty acids, which provide not only a preventive property of the finished product, but also high flavor indicators, as well as, original and attractive appearance.

Recently, the market of sport nutrition has been expanding due to high popularity of sports in human everyday life as well as popularity of healthy lifestyle principles. This article offers to consider and validates main stages to produce functional sport products based on oat grains. The production technology includes the following stages: Acceptance and quality evaluation of the raw stock; interim storage and preparation of raw stock for production stage; oat grain grinding; protein extraction from the raw stock; ultrafiltration; protein sedimentation; addition of vitamin and mineral mixture and cocoa powder; mixing; packing, labeling and storage of the end product. It is found that the greatest volume protein is extracted when the aqueous solution of 1 M sodium hydroxide is used (protein volume totaled to 93.65 ± 5.62%) at the similar technical parameters of acidic and alkali extraction. Ultrafiltration used to concentrate proteins with UPM-100 membrane contributes to the maximum degree of protein concentration (3.50 ± 0.21%). The protein is sedimented by the 10% aqueous solution of amber acid at the rate of active acidity of 4.4 units that allows an increase in the extent of protein sedimentation to 86.9 ± 5.21%. The end product obtained as per the scheme submitted has been studied for its organoleptic, physical and chemical and microbiological properties, including its blend composition. It’s been identified that the food product has pure taste and flavor appropriate of this product, with no foreign flavor and aroma. High content of protein, Omega-3 and Omega-6 fatty acids, as well as all essential amino acids are reported. The daily portion of the developed functional product contains 46.0% of vitamins and mineral substances against the rate of physiological need in them.

Um fator diferencial na produção de bovinos é a compreensão da contribuição individual dos ácidos graxos e do papel dos lipídeos nos ruminantes, tanto na forma de análise (ácido graxo ou extrato etéreo), conceitos relacionados às características de ômega 3, ômega 6 e ácido linoleico conjugado na bio-hidrogenação, no metabolismo pós-absorção, bem como no conteúdo e composição dos ácidos graxos em relação à matéria seca dos alimentos. Sabe-se que diversos fatores podem afetar o teor, digestibilidade e degradabilidade das fibras presente na forragem, e o mesmo ocorre com os lipídeos. As diferenças entre os valores dos compostos presentes nos lipídeos podem ocorrer dependendo do ambiente, região do país ou fase de colheita e por isso, torna-se importante obter a análise da composição de ácidos graxos dos alimentos lipídicos, para que dessa maneira seja possível otimizar a utilização deste nutriente na dieta de animais ruminantes. Sendo assim, a proposta dessa revisão será trazer a discussão sobre o tema e abordar um entendimento sobre o conteúdo e composição de ácidos graxos dos ingredientes que compõem a dieta dos animais ruminantes, com ênfase na influência exercida no desempenho produtivo, imunonutrição, e no produto final (carne ou leite).

Eccado adalah produk olahan yang dibuat dari daging atau udang yang dicincang dengan penambahan tepung dan bumbu-bumbu. Pada umumnya Eccado diolah dari daging ayam, untuk menggantikan eccado ayam maka dicari sumber alternatif baru salah satunya digunakan ikan Gabus karena memiliki daging yang banyak, tebal dan putih. Potensi eccado ikan Gabus ini sangat tinggi baik aspek ekonomi juga kandungan gizinya karena mengandung omega 3 dan omega 6. Ikan Gabus bisa dimanfaatkan dengan cara langsung mengolahnya menjadi beberapa jenis makanan atau mengawetkannya melalui proses penggaraman dan pengeringan. Masih belum banyaknya diversifikasi bentuk pengolahan ikan hasil usaha budidaya khususnya ikan Gabus menjadi makanan olahan lain juga disebabkan karena masih minimnya informasi tentang teknologi pengolahan hasil perikanan. Permasalahan yang dihadapi mitra adalah : 1) Selama ini mitra belum mengetahui variasi tentang Teknologi Hasil Perikanan karena terbatasnya pengetahuan dan informasi yang diterima serta keterampilan yang dimiliki. 2) Mitra juga belum pernah mendapatkan pelatihan dan demonstrasi tentang pembuatan eccado dari ikan air tawar dalam hal ini ikan jenis ikan family Channidae Menurut SNI 7756 : 2013 dapat didefinisikan Eccado ikan merupakan produk olahan hasil perikanan dengan menggunakan lumatan daging ikan/udang dan atau surimi minimum 30%, tepung dan bahan-bahan lainnya, dibentuk dan dibungkus dengan kulit pangsit. Sedangkan Eccado merupakan salah satu jenis olahan fish jelly produk dengan menggunakan kulit kembang tahu yang berfungsi memberikan rasa yang khas.Tujuan kegiatan pengabdian kepada masyarakat ini untuk membantu mengatasi permasalahan yang dihadapi oleh masyarakat Pahandut Seberang l) Pendampingan teknologi diversifikasi pengolahan daging ikan menjadi eccado. 2) Promosi kegiatan Pahandut seberang sebagai lokasi wisata kuliner dengan kegiatan-kegiatan yang dapat meningkatkan kualitas kuliner dari ikan dan ekonomi masyarakat di sekitarnya.

Genital endometriosis is a disease of women of reproductive age, accompanied by infertility in 50% [1]. Adenomyosis can be considered as an endometriosis of the uterus. Histologically, this process is represented by ectopic, non-tumor endometrial glands, and stroma surrounded by hypertrophic and hyperplastic myometrium [2]. Adenomyosis is accompanied by pelvic pain of varying intensity as well as menstrual disorders [1]. The disease is accompanied by significant violations of reproductive function (infertility, unsuccessful attempts at pregnancy and miscarriage, abnormal uterine bleeding). Adenomyosis can be accompanied by a violation of the function of adjacent organs (such as the bladder, rectum). Often, one of the clinical manifestations of adenomyosis is the development of sideropenic syndrome, which is also caused by the development of chronic post-hemorrhagic iron deficiency anemia. This is accompanied by a deterioration in the general condition of patients, a decrease in their ability to work. Despite a large number of publications in Russian and foreign scientific sources devoted to this problem, reproductive doctors and obstetricians-gynecologists often underestimate the role of adenomyosis in pregnancy planning using assisted reproductive technologies. Without interpreting the anamnesis data obtained through an active survey, doctors do not prescribe additional methods for diagnosing this pathology, which is not complex and expensive. To confirm the diagnosis, a transvaginal ultrasound examination of the pelvic organs during the premenstrual period is sufficient. In cases that are difficult to diagnose, the MRI method of the corresponding anatomical area can be used. Underestimation of the clinical picture and under-examination of the patient did not allow prescribing timely correction of the pathology and led to unsuccessful attempts to implement the generative function using assisted reproductive technologies. The conducted examination with clarification of the cause of IVF failures and the prescribed reasonable treatment made it possible to achieve regression of endometriosis foci in this clinical situation, followed by the patient's ability to realize generative function.

The objective was to get beef that contain unsaturated fatty acids (especially omega 3 and 6), so as to improve intelligence, physical health for those who consume. The study design using CRD with 3 treatments, each treatment used 4 Bali cattle aged approximately 1.5 years. Observations were made 8 weeks. Pasta mixed with ginger provided konsentrat. P1 (control); P2 (6% saponification lemuru fish oil, olive oil 1%; rice bran: 37.30%; corn: 62.70%; KLK: 7%, ginger paste: 100 g); P3 (lemuru fish oil saponification 8%, 2% olive oil; rice bran; 37.30; corn: 62.70%; KLK: 7%, ginger paste: 200 g). Konsentrat given in the morning as much as 1% of the weight of the cattle based on dry matter, while the grass given a minimum of 10% of the weight of livestock observation variables include: fatty acid composition of meat. Data the analyzies qualitative. The results of the study showed that the composition of saturated fatty acids in meat decreased and an increase in unsaturated fatty acids, namely linoleic acid (omega 6) and linolenic acid (omega 3), and deikosapenta deikosaheksa acid.Keywords :
