The purpose of this chapter was to study the influence of humic substances on the formation of the safety and quality of poultry meat. The high abilities of the natural and organic complex of humic acids “Reasil®HumicHealth” (produced in Russia, Saratov) to sorb and desorb five mycotoxins of compound feed (aflatoxin B1, ochratoxin, toxin T-2, zearalenone and fuminisin B1) were experimentally established. The hepatoprotective ability of humic acids was observed in experiments on broilers using rapeseed meal containing an increased amount of secondary plant metabolites that could cause liver damage. It was found out that the inclusion of humic acids in the amount of 1 and 1.5 g per 1 kg of feed to the main diet of broiler chickens has a more stable positive effect, both in terms of slaughter indicators (yield of semieviscerated carcasses and carcasses of complete evisceration), and in the production of the most valuable natural semi-finished products (breast, chicken legs) due to the intensive growth of muscle tissue. A clear improvement in the morpho-biochemical and immunological parameters of blood and micromorphometric characteristics of the organs of the immune system of poultry was noted with the use of different concentrations of humic acid salts. The use of the additive at the rate of 1 and 1.5 g per 1 kg of feed does not negatively affect the sensory indicators of finished culinary products.

This article presents the results of studying the impact of housing and feeding conditions on broiler chickens of Hubbard RedBro cross, as well as the quality of products obtained when using floor and cage content, in a farm. It established that when receiving a mixed feed of own production using feed raw materials grown on a farm without the use of pesticides, a statistically significant decrease in potentially dangerous substances for animal health is recorded. Compared with factory feed, it has reduced the content of pesticides by 14 times, and mercury and arsenic by 24 times, cadmium by five times, and lead by ten times. The results of the study of economic indicators of growing Hubbard RedBro cross broiler chickens, as well as the chemical composition and quality of carcasses, indicated that there was no significant difference between the floor and cell conditions of keeping. Still, the use of a diet based on eco-feeds contributed to a statistically significant decrease in the concentration of toxic metals in the muscles of the poultry of the experimental groups. As a result, it found that the use of the studied compound feed in the diets of broiler chickens increased the indicators of Biosafety and ensured the production of environmentally safe ("organic") poultry meat products.

The aim of the study was to review the results of scientific research on the effect of herbs and phytogenic feed additives used in poultry nutrition on animal welfare, breeding conditions, and the quality of meat. The article explains the importance of feed additives used in poultry nutrition. It discusses the role of herbs and phytogenic feed additives in nutrition in the context of the increasing demand for and consumption of poultry meat. The article also analyzes the influence of herbs and phytogenic feed additives on animal welfare, rearing conditions, and meat quality. The results of research on the effect of herbs and phytogenic feed additives used in poultry nutrition are not unequivocal. In view of the high demand for poultry meat, there is need for continued research on the optimal composition of herbal mixtures in nutrition to obtain good breeding conditions and high quality meat.

In order to increase the meat productivity of poultry scientists around the all world are working to improve the breeding traits and technologies of housing and feeding. However, the efficiency of poultry meat production on an industrial basis depends not only on the strengthening and inheritance of breed qualities, but also on a complete and balanced feeding, including the use of new feed additives. All this generally affects the duration of rearing, the average daily and absolute live weight gains, the biological value and nutritional value of poultry meat produced in industrial conditions. The purpose of the work was to study the effect of the amino acid complex and silicon dioxide on the productivity and quality of broiler chicken meat. The paper scientifi cally substantiates and experimentally proves the effectiveness of using a rational dose of ultrafine silicon dioxide (300 mg/kg of feed) and the complex of amino acids (arginine – 7 g/kg, lysine – 6 g/kg, methionine – 2 g/kg) in the rearing of broiler chickens. Data on the positive influence of the studied factor on the consumption, digestibility and use of feed nutrients, as well as meat productivity and quality of broiler chicken meat have been obtained. The dependence of meat productivity and quality of chicken meat on physiological and biochemical parameters has been proved. Analysis of the results of the production experiment has been shown that the livability of poultry in the experimental group was higher than the control group by 1,4 %. This made it possible to reduce feed consumption to 100 g/head, and feed consumption per 1 kg of chicken growth in the experimental group by 9,2 %. Activation of metabolic processes of the body of broiler chickens of the experimental group contributed to the increase in their live weight, which increased the weight of the gutted carcass, the yield of meat by 13,8 %, and meat with off al for sale by 18,0 %. The efficiency of the complex application of amino acids and silicon dioxide in the production of poultry meat is economically justified.

Water is a serious vector of transmission of pathogenic bacteria. The quality of drinking water supplied to the drinking system when raising broiler chickens is one of the main афсещкs for the efficient production of poultry meat. With intensive poultry management when a large number of livestock is concentrated in one territory, it is necessary to pay special attention to the microflora of indoor air. The main sources of pollution are the poultry itself, feed and litter. The purpose of the research was to develop technological modes of using drug Anolit ANK SUPER in the rearing of broiler chickens. The research has been carried out on broiler chickens of the cross «Ross 308». The conditions of housing and feeding with the exception of the studied factor were the same for all groups of poultry and corresponded to the recommendations of the Federal Scientific Center «All-Russian Scientific Research and Technological Institute of Poultry» of Russian Academy of Science. The series of five experiments on the use of the neutral anolyte Anolit ANK SUPER was carried out in the work. It has been proposed to determine the quality of the preparation of the system of drinking lines in poultry premises using the System SURE Plus device (luminometer) and the Ultra Snap test. Experiment 5 has been carried out to study the effect of aerosol air treatment of poultry premises in the presence of poultry with the neutral anolyte on the concentration of microorganisms in the air of the poultry house and the productivity of broilers. The expediency of using the Anolit ANK SUPER drug for the sanitation of the drinking system in poultry premises has been determined. Comparative tests of the effectiveness of the drugs Anolit ANK SUPER, CID 2000 and DUTRION have been conducted. The features of various technological modes of using the Anolit ANK SUPER product in the rearing of broiler chickens have been shown and the effectiveness of their use has been established.

The diamondback moth (DBM), Plutella xylostella (Lepidoptera: Plutellidae) is a very destructive crucifer-specialized pest that has resulted in significant crop losses worldwide. DBM is well attracted to glucosinolates (which act as fingerprints and essential for herbivores in host plant recognition) containing crucifers such as wintercress, Barbarea vulgaris (Brassicaceae) despite poor larval survival on it due to high-to-low concentration of saponins and generally to other plants in the genus Barbarea. B. vulgaris build up resistance against DBM and other herbivorous insects using glucosinulates which are used in plant defense. Aside glucosinolates, Barbarea genus also contains triterpenoid saponins, which are toxic to insects and act as feeding deterrents for plant specialist herbivores (such as DBM). Previous studies have found interesting relationship between the host plant and secondary metabolite contents, which indicate that attraction or resistance to specialist herbivore DBM, is due to higher concentrations of glucosinolates and saponins in younger leaves in contrast to the older leaves of Barbarea genus. As a response to this phenomenon, herbivores as DBM has developed a strategy of defense against these plant biochemicals. Because there is a lack of full knowledge in understanding bioactive molecules (such as saponins) role in plant defense against plant herbivores. Thus, in this review, we discuss the role of secondary plant metabolites in plant defense mechanisms against the specialist herbivores. In the future, trials by plant breeders could aim at transferring these bioactive molecules against herbivore to cash crops.

Mobile and potentially mobile forms of heavy metals are probably one of the most important toxic hazards in the environment. Besides pH, which is a factor influencing the mobility/availability of heavy metals to the greatest extent, the content and mainly the quality of soil organic matter play a very important role in the evaluation of heavy metal behaviour in the environment. The fraction of metals bound to organic compounds is exclusively associated with humic substances and particularly with humic acids (HA). A relationship between the parameters reflecting the actual structure of humic acids and mobile or potentially mobile fractions of heavy metals was studied in 12 soil localities representing different soil types. It can be stated on the basis of the acquired data that heavy metals tend to form complexes with soil organic matter that are different for each metal. The results suggest that copper is bound mainly in an unavailable form (significant correlations of fraction IV with HA parameters) and cadmium prefers exchangeable forms (significant correlations of fraction I with HA parameters) and is more available. It can be assumed on the basis Spearman’s correlations that mobile fractions of cadmium are predominantly bound to the aliphatic part of humic substances, and copper prefers strong bonds to humic acids with a high degree of humification.

This study was conducted to examine the effect of two humic substances (HS) supplemented in broilers’ diet on the breast meat quality of broiler chickens. In this experiment, 120 pieces of one-day-old COBB500 broiler chickens were used. Broilers were divided into three groups, each containing 40 birds with three replications (13, 13, and 14 per one pen). Fattening lasted 38 days. The first experimental diet was supplemented with 0.7% of HS (HS0.7) and the second was enriched with 0.7% of acidified HS (HSA0.7). The control group of broilers (C) was fed a basal diet without the addition of any supplements. HS0.7 samples had the highest total protein content and the lowest content of fat (p < 0.01). The effects of broiler diet and storage had a significant impact on the pH of breast samples, p < 0.001 and p < 0.05, respectively. Supplementation of HS in broiler diet positively affected the lipid oxidation of breast meat samples, as indicated by the lower malondialdehyde content (p < 0.05). HSA0.7 samples had significantly better juiciness after the storage period (p < 0.001). The quality of meat produced with supplementation of HS in broilers’ feed can be considered as valuable in human nutrition due to improved protein and fat content with decreased lipid oxidation.
