In order to popularise organically produced vegetables, two vegetable crops most commonly grown in organic systems in Serbia were studied. This research aimed at investigating differences in phytonutrient content between organically and conventionally produced beet and carrot, in fresh roots, juices pasteurised at different temperatures (70 and 90oC) and dried products. Multivariate analysis (principal component analysis) was used in order to determine the main components accounting for the highest variance, from both systems of production, according to the average content of phytonutrients in beet and carrot. The samples were divided into two clusters, one for carrot and one for beet, each containing two subgroups. The subclusters for beet were: I - BDO, BDC, BJ90C, and BJ90O - dried samples and juices pasteurised at 90oC, from both systems of production; and II - BFC, BFO, BJ70O and BJ70C - fresh beet and pasteurisation at low temperatures. The two sub-clusters for carrot were: I - CDO and CDC - dried samples; and II - pasteurised juices and fresh carrots from both systems of production. In this research, carrot was more stable for processing than beet, as determined for samples from the study area, from both systems of production and for the phytonutrients covered by this research.

The study compared the content of eight phenolic acids and four flavonoids and the antioxidant activity of six Polish varietal honeys. An attempt was also made to determine the correlations between the antioxidant parameters of the honeys and their polyphenol profile using principal component analysis. Total phenolic content (TPC), total flavonoid content (TFC), antioxidant activity (ABTS) and reduction capacity (FRAP) were determined spectrophotometrically, and the phenolic compounds were determined using high-performance liquid chromatography (HPLC). The buckwheat honeys showed the strongest antioxidant activity, most likely because they had the highest concentrations of total phenols, total flavonoids, p-hydroxybenzoic acid, caffeic acid, p-coumaric acid, vanillic acid and chrysin. The principal component analysis (PCA) of the data showed significant relationships between the botanic origin of the honey, the total content of phenolic compounds and flavonoids and the antioxidant activity of the six Polish varietal honeys. The strongest, significant correlations were shown for parameters of antioxidant activity and TPC, TFC, p-hydroxybenzoic acid, caffeic acid and p-coumaric acid. Analysis of four principal components (explaining 86.9% of the total variance), as a classification tool, confirmed the distinctiveness of the Polish honeys in terms of their antioxidant activity and content of phenolic compounds.

The influence of nano-emulsified curcumin (NEC) added to the hair sheep milk, prior to cheese-making, on the chemical composition, lipolysis, and proteolysis of manchego-style cheeses were evaluated throughout 80 days of ripening. The addition of NEC to the milk resulted in cheeses with the same moisture content (42.23%), total protein (23.16%), and water activity (0.969) (p > 0.05). However, it increased the fat and ash levels from 26.82% and 3.64% in B 10 ppm to 30.08% and 3.85% in C 10 ppm, respectively, at the end of the ripening (p < 0.05). The total phenolic content and antioxidant activity of experimental cheeses increased during ripening, and the fatty acid groups showed significant changes occurred to a greater extent in the first days of ripening (p < 0.05). The lipolysis increased consistently in all cheeses until day 40 of ripening, to decrease at the end, while proteolysis increased during all ripening time in all samples (p < 0.05); the addition of NEC did not alter the primary proteolysis of manchego-style cheeses, but it modified secondary proteolysis and lipolysis (p < 0.05). Principal component analysis was useful for discriminating cheeses according to their chemical composition and classified into four groups according to their ripening time. This research highlights the potential of CNE to fortify dairy foods to enhance their functionality.

ABSTRACT Mangaba (Hancornia speciosa Gomes) is a fruit species native to Brazil, belonging to the Apocynaceae family. Its cultivation is predominantly extractivist and its antioxidant properties have been recently reported. The objective of this study was to evaluate the bioactive compounds and antioxidant activity in fruits of accession from the Active Germplasm Bank of Embrapa Coastal Tablelands (BI, CA, LG, PR, PT and TC). The extracts were analyzed by high-performance liquid chromatography (HPLC), which identified chlorogenic acid (93.71 - 131.66 mg.100g-1), ferulic acid (0.85 - 2.27 mg.100g-1) and rutin (238.59 -442.94 mg.100g-1). The accessions CA and PR showed the highest values of total phenols (1179.39 and 1167.05 mg GAE.100g-1, respectively). The accessions CA and TC had the highest concentration of the major compound rutin (436.78 and 442.94 mg.100g-1, respectively). Antioxidant activity values ranged from 125.95 to 158.67 g.g-1 DPPH. Principal component analysis grouped the accessions into four groups, due to the genetic variability verified in previous studies. The results will be useful to guide actions of selection and future breeding program of the species.

The study of the dynamics of plant growth and yield of vegetable crops (carrot variety Absheron winter (Daucus carota subsp. sativus (Hoffm.) Schьbl.) and radish variety Virovsky white (Raphanus sativus var.radicula Pers.)) was conducted in the field conditions after presowing exposure to different temperatures: I option – sowing of seeds exposed to low temperatures (for 15 days the swollen for 24 hours seeds were kept at a temperature of 0±1°С); Option II - sowing of seeds exposed to variable temperatures (for 5 days, the swollen for 24 hours seeds were exposed to variable temperatures of + 20°C (8 hours) and 0±1°C (16 hours) and then 10 days at a temperature of 0±1°C; K1 – sowing dry seeds; K2 – sowing soaked seeds. The impact on the seeds of low and variable temperatures caused an increase in growth processes, both in radish and carrot. Both studied crops showed a tendency to increase the yield to a greater extent when exposed to swollen seeds with variable temperatures. Thus, the average weight of radish crops exceeded the control variant by 47.1% and carrots by 27.6%. The yield of root crops per m2increased by 36.4% for radish and 30.0% for carrot. To increase the productivity of vegetable crops, we recommend using the studied methods of pre-sowing seed treatment in practice.

The colored corns are used as food as well as for feed in Asian countries; however, the active component of antioxidant activity in Korean colored corns has not been investigated. Thus, we measured the total content of carotenoids, phenols, flavonoids, and anthocyanins from 40 Korean colored corn genotypes for correlation analysis between antioxidant activity and these phytochemicals. The ferric reducing ability power (FRAP) and 2,2'-azinobis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS) activity were measured in order to study this correlation. As a result, there was large variation in total anthocyanin (coefficient of variation, CV 85.0%) and total carotenoid contents (CV 87.8%), while CVs of total phenol, total flavonoid contents, ABTS and FRAP was relatively low (CV 15.0%, 22.8%, 15.5%, and 16.3% respectively). There were meaningful correlations between ABTS and anthocyanins, phenols, and flavonoids, as well as correlations between FRAP and phenols as well as FRAP and flavonoids. We also obtained a more informative and easily visualized result by using principal component analysis (PCA). Anthocyanins and carotenoids showed a large variation as compared to other compounds. Anthocyanins are a good target to increase antioxidant activity in colored corns.

A retinal image has blood vessels, optic disc, fovea, and so forth as the main components of an image. Segmentation of these components has been investigated extensively. Principal component analysis (PCA) is one of the techniques that have been applied to segment the optic disc, but only a limited work has been reported. To our knowledge, fovea segmentation problem has not been reported in the literature using PCA. In this paper, we are presenting the segmentation of optic disc and fovea using PCA. The PCA was trained on optic discs and foveae using ten retinal images and then applied on seventy retinal images with a success rate of 97% in case of optic discs and 94.3% in case of fovea. Conventional algorithms feed one patch at a time from a test retinal image, and the next patch separated by one pixel part is fed. This process is continued till the full image area is covered. This is time consuming. We are suggesting techniques to cut down the processing time with the help of binary vessel tree of a given test image. Results are presented to validate our idea.
