The food chain is made up of the different stages that the product follows from its origin to its final destination: production, transformation, storage, distribution and consumption. Throughout the chain, the traceability of the food is key to alert of any potential danger, establishing comprehensive food safety, from the beginning to the end, “from farm to fork". The transformation that is taking place in society thanks to the most avant-garde information and communication technologies (ICTs), is also breaking into the food chain, constituting the food industry 4.0, which is available at the service of each link through intelligent systems that allow obtaining safer, higher quality products in less time. Each ICT will offer different development possibilities thanks to its particular characteristics, so that in each link the most appropriate technology will be selected to solve the specific problems posed. This work aims to carry out a review of all these avant-garde tools, describing how thanks to these disruptive technologies, the processes of the food chain are being transformed, increasing, at the same time, the safety and quality of the products obtained and evaluating the possible associated social repercussions.

According to a press release emitted by INEGI on December 2nd, 2020, 93.2% of the companies in Mexico reported problems caused by the current pandemic, and more than a million businesses closed their doors permanently. In this context, the need to create technological tools that promote the development of activities of micro, small and medium businesses emerged. In this project, the development and creation of an application for a car wash business that allows clients and workers to book and manage appointments and the payment of services are presented. The development of this project was carried out with the framework SCRUM, using different tools for collaborative development such as ASP.Net for web applications, Visual Studio as Integrated Development Environment (IDE), a relational database system, and Model-View-Controller (MVC) as an architectural pattern. This module can be adapted to any kind of business with the same needs in the same field or other fields.

The paper first addresses the educational policies dictated at the international and national levels to deal with the health emergency caused by COVID-19. The main objective of these policies has been not to stop the teaching-learning processes, moving from face-to-face and blended modalities to an online modality, trying not to neglect aspects such as educational quality. Afterwards, those dictated and implemented by the University Network of the University of Guadalajara (U. de G.) are analyzed. Then, the reality faced by the professors of the Centro Universitario del Norte (CUNorte) to continue their teaching work is described. Finally, the challenges in the short, medium and long term, related to the use of information and communication technologies (ICT), such as the lack of training in digital platforms and tools, computer equipment for work, obsolescence of the same and problems of Internet connectivity, among others.

This work reflects on the formative assessment in virtual teaching and learning environments (EVEA) Moodle, to improve the effectiveness and efficiency of students, allowing to assess through the student t test, if there is a significant difference between the measures of two independent samples. In order to verify if the result of the activities is more efficient through feedback in the formative evaluation processes, as well as to verify if the student's academic performance is increased through more efficient feedback. The research was quantitative and for the statistical analysis the student t test, using the questionnaire tool, having as a study the group of the Engineering in Information and Communication Technologies career of the eighth semester, in the field of Electronic Business I, from the Higher Technological Institute of Mulegé in Mexico. As a representative sample, 9 students participated and 6 modules were designed where different activities that the same participant would develop were placed. The results indicate that there is a significant difference before without a rubric and afterwards with a rubric in the training processes in the EVEA Moodle platform, where the student's academic performance is increased and improved over time, since the result of the application of Student's t test validates the hypothesis.

Various processes are carried out in the Soil and Fertilizer Department of the Ministry of Agriculture at Granma's province in Cuba, including information management for investment approval. It becomes difficult due to the fact that it is carried out manually and through printed models, leading to insufficiencies in the personnel in charge of recording the information, difficulty in preserving relevant information and delay in the response process. In response to these needs, in this investigation, an informatics system is developed that will enrich the management of the information for the approval of investments of Soils and Fertilizers in Granma. For the development of the system was utilized as methodology of development of software Extreme Programming (XP). PHP 7.3.3 and SQL as server-side, client-side programming languages HTML 5, CSS 3, JavaScript and JQuery 1.2.2. APACHE 2.4.38 web application server, MySQL 5.0.12 as Database manager, CodeIgniter 3.1.10 as Framework and DBDesigner 4 as an aid to database modeling. As a result of investigation, a system validated by means of proofs of software was obtained, which vouch for his correct functioning.

The use of 360 virtual tours has become a technology that allows viewing from different angles, places, or spaces that, due to various circumstances, it is not possible to visit physically. Due to different restrictions existing today; of a physical, economic or health type, virtual visits to museums, archaeological sites, parks, and facilities of various kinds have become an alternative to disseminate, promote, or bring users closer to places, that through 360 panoramic images, make them feel immersed in them. Currently, creating a 360 virtual tour is available to more people, as the software and hardware tools used are increasingly accessible. However, deciding on the most appropriate software platform to publish virtual tours on the web can be a trial-and-error process, delaying obtaining these virtual products.
