The research was conducted to compare bulls and castrates in relation to the morphological composition of carcasses, the yield of beef suitable for the production of baby food products, and the quality and safety of raw meat. The research was based on the results of monitoring the safety of the environment, feed, and meat raw materials during the growing and fattening of steers with a meat productivity direction. The pre-slaughter weight and the yield of lean beef of 16-month-old Hereford bull-calves are higher in comparison with castrated animals of the same age, by 6.4 and 1 %, respectively. The muscle tissue of castrates contained 11.5 % of fat, and bulls 9.7 %. The protein content in the longest muscle of bulls was 19.8 %, and in castrates-17.0. The amount of fat beef that is not suitable for baby food is higher in castrate carcasses by 4.7 % compared to bull calves. A high protein quality index of the longest muscle of bulls (6.5) indicates a higher biological value of beef compared to meat from castrates (4.1). In terms of the content of residual amounts of pesticides, toxic elements, and antibiotics, the meat of castrates and bulls of the Hereford breed had no significant differences.

The research was carried out on the farms of the raw material zone of the Branch "Tikhoretsky Canned Meat Plant" of DANON RUSSIA JSC in two districts of the Krasnodar Territory. Experimental data on the productivity of bull-calves of dairy-meat black-and-white breed and its cross-breed with bulls of Kalmyk beef breed. In the "Rubin" farm of the Goryacheklyuchevsky district, the productivity of beef cattle of the Charolais breed was studied. In the study of raw meat for baby food, a comparative assessment of the quality and food safety of beef from black-and-white bulls; cross between black-and-white and Kalmyk breeds; Charolais breed was carried out. In terms of protein quality indicator (6.5), beef from Charolais bulls exceeded the rest (6.16 and 5.8). The Charolais breed has the best protein composition (19.8 g / kg of lysine, the limiting amino acid for the child's body). In terms of safety indicators, taking into account the maximum permissible levels of residual amounts of pesticides, toxic elements, antibiotics, meat raw materials from black-and-white bulls and a cross with the Kalmyk breed met the requirements of the interstate standard for raw materials for baby food.

As a result of the researchers found a positive effect of new feed additive on the growth rate, the qualitative indicators of meat fattening. It was found that the effect of feed additives on the productivity increased with increasing doses of feed additives from 100 to 300 g per head. Thus, at the age of 18 months, the bulls of the first experimental group surpassed the control analogues by 3.86, the second – by 5.53 and the third – by 6.42% and the average daily increase by 7.50, 11.63 and 12.45%, respectively. On the basis of the control of the slaughter was revealed that the weight of the paired carcasses in calves from the experimental group was higher than that of peers, not consuming the Supplement, of 5.82-of 9.91%, and their output is up 0.09 to 0.86 percent. At the output of the pulp of the bulls of the experimental groups exceeded the control analogues by 0.72-1.05%. The meat index of their carcasses was, respectively, higher by 0.25-0.36. In average the sample of the flesh of the carcasses of young animals who consumed the study Supplement contained more protein compared with the control 0,28-0,57% fat, respectively 0,68-1,19%. The influence of feed additive and on the content of amino acids in meat was revealed. Thus, essential amino acid tryptophan in the longest muscle of the back of the bulls of the experimental groups was higher by 1.58 – 2.87% and protein quality index-higher by 0.37-0.63. The flesh of the carcasses of calves of the experimental groups had higher technological properties. The moisture-retaining ability of their longest back muscle was higher than that of analogues of the control, by 2,05-2,22%, the fading – lower by 2,04-2,41%. In the body of young cattle, consuming feed additive, protein was postponed more than in control, by 8,67-14,85% and fat – respectively by 11,96-21,44%. The conversion rate of protein they were higher by 0.78-0.86%, energy - respectively 0.67-1.06%. The level of profitability of beef production in the experimental groups was higher than in control at 4, 18-of 1.29%.

In connection with the increasing requirements for the quality of beef, the need for further technological solutions improvement for the cultivation and fattening of beef calves, aimed at improving meat productivity, ensuring not only the quality, but also the safety of meat, has acquired particular relevance. Data on the production of environmentally friendly raw meat obtained in the foothill zone of Karachay-Cherkessia from the bulls of the Aberdeen-Angus breed in modern conditions of the development of the meat industry are presented in the article. During the growth and development of animals, significant qualitative and quantitative changes occur, associated with an increase in weight and a change in the morphological composition of the carcass. The morphological composition of carcasses, meat yield and its chemical composition in the final period of fattening were studied. When calves reached the slaughter live weight, slaughter was carried out and the meat qualities were studied. Carcass weight was 320.2 kg (carcass yield - 57.2%); boneless beef - 266.7 kg (84.9% of chilled carcass). 58.7% (156.6 kg) of the meat was lean; 30.6% attributed to fatty beef. The moisture content of the combined minced meat was 70.9%; protein - 20.4%; fat - 7.7%; ash - 1.0%. Meat safety was determined from the average sample of minced meat. In terms of chemical composition and safety, beef meets the requirements of the interstate standard GOST 32855-2014 for raw meat. Thus, the maintenance and feeding of young cattle on the foothill pastures of the North Caucasus, used later for meat, provides moderate-intensive and extensive feeding with an insignificant inclusion of concentrates in the diet.

The quality of raw materials and goods of animal origin depends first of all on the safety of feed, their balance in terms of the main nutrients and digestibility by the body. As a rule, the lower the quality and safety of feed, the lower the productivity of all types of animals and poultry. The quality of feed is influenced by all stages of their production: growing conditions, harvesting and storage, processing technologies, canning and preparation for feeding. Where high-quality feed is used in diets, maximum productivity and high realization of the genetic potential of animals are obtained. During the storage and processing of plant and animal raw materials its physic and mechanical, biochemical, sanitary and microbiological properties change. This can be avoided only by observing the sanitary and hygienic requirements for bagging, harvesting, and storing feed. The quality of feed is confirmed by its physical, chemical, organoleptic, microbiological and other indicators, which determines the variety of feed control methods at all stages of their turnover. In this connection, the development and strengthening of control over the quality and safety of feed and feed additives is one of the important tasks of modern animal feeding science. The purpose of the work was to carried out a comparative assessment of four samples of the starting compound feed SK-3 for piglets of different producers. The experimental part of the work has been carried out in the laboratory of veterinary expertise at the compound feed plant LLC “Athens-Volga”. For the study of compound feed an average sample was taken from each sample, separating from the combined sample using a hand scoop according to Federal standard 13496.0-2016. Methods of sampling. Quality and safety control was carried out according to organoleptic, physic and chemical, microbiological indicators and the content of mycotoxins in compound feed. Monitoring of compound feed of the compared samples of the starting compound feed for piglets SK-3 according to the studied indicators has shown that all samples meet the sanitary and hygienic requirements of Federal standard of our country.

In order to achieve a certain level of food production, it is necessary to manage its quality and safety. Currently, the quality management system based on the principles of HACCP is widely recognized and is the only method for ensuring food security in all developed countries. The ultimate goal of this system is to eliminate or reduce any food safety risks by preventing them. During the research, the main, auxiliary raw materials and the finished product were identified; flowcharts for the production of an enriched whey drink were developed. On the basis of the developed block diagrams, an analysis of microbiological, chemical, physical and qualitative hazards was carried out, it was determined which of the hazardous factors are the most critical, can harm health and must be eliminated or reduced to acceptable levels. Based on the analysis of significant hazards using the Decision Tree algorithm, two critical control points (pasteurization and cooling) were established. Measures for the management of critical control points are established in the HACCP plan, which reflects all CCPs of the production process of the research object and actions for monitoring and managing them. The introduction of elements of a food safety management system into practice contributes to the production of safe products of appropriate quality in compliance with applicable requirements and standards.

Спроектированы рецептуры пюреобразных консервов функционального назначения для детского питания. Проектирование рецептур поликомпонентных пюре проводили на основе принципов пищевой комбинаторики с учетом суточной потребности детского организма в функциональных ингредиентах: инулине, пищевых волокнах, витаминах С и Р, β-каротине, железе и калии. Выбрано овощное сырье – клубни топинамбура, содержащие инулин, обладающий гипогликемическими свойствами, морковь и тыква, содержащие антиоксиданты и антитоксические ингредиенты, а также фруктовое сырье – яблоки, содержащие комплекс антиоксидантов. Эталоном служил продукт, содержащий функциональные ингредиенты в количестве 10–50% суточной нормы, что отвечает требованиям, предъявляемым ГОСТ Р 52349–2005. Наиболее высокие дегустационные оценки получили образцы, содержащие, %: пюре из топинамбура 20–50, пюре из яблок 20–65, пюре из тыквы (смесь 1) или моркови (смесь 2) 10–35. Соотношение компонентов в смеси 3 определяли, приняв количество пюре топинамбура в продукте постоянным и равным 45%, а остальные компоненты варьировали в пределах 0–55% от массы смеси. Исследован химический состав предназначенного для детского питания овощного и фруктового сырья как источник биологически активных веществ. После оптимизации рецептурных компонентов методом компьютерного моделирования изготовлены опытные образцы и проведена органолептическая оценка разработанных рецептур. Установлено, что разработанные рецептуры обеспечивают получение продуктов, сбалансированных по содержанию физиологически функциональных ингредиентов и обладающих высокими органолептическими свойствами. Have been designed formulations of puree canned food of functional use for baby food. Development of compoundings of multicomponent purees was carried out on the basis of the principles of food combination theory taking into account the daily need of a children's organism for functional ingredients: inulin, food fibers, vitamins C and P, β-carotene, iron and potassium. Vegetable raw materials are chosen – Jerusalem artichoke tubers containing inulin, which has hypoglycemic properties, carrots and pumpkin, containing antioxidants and antitoxic ingredients, as well as fruit raw materials – apples, containing a complex of antioxidants. The product containing functional ingredients in number of 10–50% of standard daily rate that meets requirements of GOST P 52349–2005 served as a standard. The highest tasting estimates have received the samples containing, %: Jerusalem artichoke puree 20–50, puree apples 20–65, puree pumpkin (mix 1) or puree carrots (mix 2) 10–35. The ratio of the components in the mixture 3 was determined as follows: the amount of Jerusalem artichoke puree in a product was accepted to constant and equal 45%, and other components – within the limits 0–55% of the mass of mix. The chemical composition of the vegetable and fruit raw materials as a source of biologically active agents for products of baby food is investigated. After optimization of prescription components the method of computer modeling has made prototypes and organoleptic assessment of the developed compoundings is carried out. It is established that the developed compounds provide the products balanced on the content of physiologically functional ingredients and having high organoleptic properties.

The quality and safety of food products, including those intended for children’s nutrition, are a priority for the World Health Organization. At present, in order to ensure the quality and safety of food products for child nutrition, there are numerous regulatory and legal acts in Russia. The article provides the systematization of the regulatory and legal framework, taking into account the requirements for food products intended for child nutrition (for the raw materials used, prepared food, its nutritional value, enrichment with vitamins and micronutrients, the use of appropriate packaging and marking) and for the processes that make up its circulation (manufacturing, storage, transportation, sale, advertising and product information). Information on marking of food products for children’s nutrition in accordance with Technical Regulations of the Customs Union 022/2011 was given. The information on the main consumer characteristics of food products specified in the legislation of the Russian Federation was considered. When comparing this information, its inconsistency was established, which can make it difficult for the consumer to choose the right food products for children’s nutrition and its further use. With regard to food products intended for child nutrition, marking serves as the way of communicating information to the consumer. As a result of comparing the information on marking of packaged food products with information on the main consumer characteristics of food products, their inconsistency was also revealed, which may complicate the observance of the consumer’s rights for safety of product and information about the product. It was noted that marking of food products for child nutrition is a relevant source of information for a doctor. The authors proposed ways to optimize the regulatory framework governing the quality and safety of food products intended for child nutrition. In the article there is considered the substantiation of raise demands to the chemical composition of children’s food and indices of their safety, with taking into account the immaturity of metabolic and physiological processes and limitations of “depot” of nutrients in babies. Based on research results of leading experts in the field of children’s nutritiology and according to the recommendations of the Codex Alimentarius of the Commission of FAO/WHO, ESPGHAN Committee on Nutrition, the EFSA recommendations and EUDirectives there were specified requirements for the ingredient composition, content of essential components and indices of the nutritional value of substitutes for human milk and functional products for the nutrition of infants of the first year of life. There are shown stages of the development of the Russian system of hygienic requirements for baby food, and the direction of its harmonization with international and European standards, particularly for substitutes for human milk and products of dietary therapeutic and dietary preventive nutrition for babies. There are considered aspects of the introduction ofproducts and weaning food dishes into the food ration of infants. There is presented the classification ofproducts of children’s food and the assortment of each group of weaning foods. There is provided the modern legislative framework in the field of the quality and safety for infant nutrition. There was shown the difference between domestic legislation and regulatory framework of the EurAsEC Customs Union of the European countries in the field offood products safety for children older three years. There are presented proposals on the creation of the single regulatory base within the framework of the EurAsEC Customs Union for control the quality and safety of all the baby foods
