Cookies, which form the largest category of bakery snacks, are considered a good vehicle to introduce nutrients into the diet. In this study, to increase the nutritional value of traditional commercial cookies, wheat flour was substituted with defatted flours made from flax, sesame, chia, and poppy, which are byproducts of the oil extraction industry. The differences in the technological properties, nutritional composition, and consumer acceptance of the reformulated cookies were evaluated. The results show that the wheat cookies used as the control showed a more elastic behavior than the cookies elaborated with defatted seed flours, which showed a greater tendency to crumble. The use of defatted seed flours yielded cookies with a higher content of protein and fiber, and a lower content in carbohydrates than the wheat cookies. Consumer evaluations for the sesame and flax cookies were similar to those for the traditional wheat cookies, with positive assessments on all of the parameters evaluated. On the other hand, the cookies elaborated using chia and poppy flours received the least positive evaluations from consumers. Thus, the use of some defatted seed flours, mainly flax and sesame, is proposed as an interesting alternative to produce health-promoting cookies in order to cover the current demand for gluten-free products.

Abstract Active gene transcription is known to promote genetic change in neighboring DNA. We reasoned that the change would be readily heritable if transcription was occurring in germ cells or early embryonic cells before the germ cells are set aside. The H-2K region of the major histocompatibility complex (MHC) provides a good vehicle for testing this hypothesis because it is replete with such genes. We have compared the amount of polymorphism in 240 kb of DNA contiguous with H-2K and 150 kb of DNA flanking a homologous duplicated region in t-haplotypes and inbred strains. Using 90 probes and three restriction enzymes, we find a staggering difference in the amount of polymorphism in the H-2K region vs. the duplicated region (26% vs. 0%) of t-haplotypes. The disparity in the rate of divergence between the two regions indicates that the spatial distribution of genes and their expression pattern might be important factors in sequence evolution. Since t-haplotypes normally show extremely limited variability among themselves due to their recent divergence from a single ancestor, these results imply that the mutation rate in the H-2K region is unusually high. This is in apparent contradiction to the current view that the MHC loci have evolved at the same rate as other loci. The implications for the evolution of the H-2K gene are discussed.

Previous reports have shown that lupin protein extracts (LE) contain a polypeptide named deflamin with a potent matrix metalloproteinase (MMP)-9 inhibitory activity. The aim of our study was to develop an efficient delivery method for incorporating deflamin into cookies using different alternative flours. A lupin protein concentrate (10 g protein/100 g cookie dough) was added to gluten and gluten-free flours to produce savoury cookies, and its impacts on the physical properties of doughs and cookies, as well on the maintenance of deflamin’s anti-MMP-9 activity, were analysed. The results showed that the biochemical compositions of all cookies with LE presented higher protein and ash contents when compared to the control cookies. Rice, buckwheat and oat doughs were firmer than the others, whereas the addition of LE to kamut and buckwheat flours made cookies significantly firmer than the controls. Additionally, strong interactions between LE and several flours were observed, yielding different impacts on the MMP-9 bioactivity. Overall, the only flour that did not interfere with the desired nutraceutical activities was buckwheat, with 60% MMP-9 inhibitory activity and a concomitant reduction of colon cancer migration; hence, buckwheat flour was revealed to be a good vehicle to deliver bioactive deflamin, showing strong potential as a functional food to be used in preventive or curative approaches to gastrointestinal diseases.

This paper presents a mathematical model for multi-axle steering vehicles operating on level ground. For transporting heavy loads vehicles with multiple axles are required. Apart from added complexity steering of multiple axle for turning is a big challenge. Due to type of load being carried a single unit vehicle is sometimes preferred. The mathematical model of a six axle vehicle with 4-axle steering system is developed. Simulations at various track radii, vehicle speeds and steering ratios (ratio between the first, second, fifth and sixth steering axle) are performed. Axle steering angles and wheel slip angles are evaluated. The steering ratio requirements vary with vehicle speed and turn radius. A configuration is selected for better performance for a wider range. The resulting steering ratios show good vehicle maneuverability, stability and steering efficiency.

This paper presents the design of μ-synthesis control for four-wheel steering (4WS) vehicle and an experimental study using a hardware-in-the-loop (Hil) setup. First, the robust controller is designed and the selection of weighting functions is discussed in the framework of μ-synthesis control scheme, considering the varying parameters induced by running vehicle condition. Second, in order to investigate the feasibility of the four-wheel steering control system, the 4WS vehicle control system is built using dSPACE DS1005 platform. The experimental tests are performed using the Hil setup which has been constructed using the devised rear steering actuating system. The dynamics performance is evaluated by experiment using the Hil setup under the condition of parameter variations. Finally, experimental results show that the μ-synthesis controller can enhance good vehicle lateral maneuverability.

This paper presents the design of integrated control for four-wheel steering (4WS) vehicle. A vehicle nonlinear dynamics model is built based on a lateral dynamics simplified linear model. A more accurate sideslip and yaw rate controller is used for lateral dynamics model of 4WS vehicle. Then a vehicle model based on the individual channel and partial decoupling design paradigm is identified from the vehicle dynamics. The sideslip and yaw rate controller is based on a linear multivariable combined with lateral dynamics model and the front and rear steering angles. The results of a stability analysis and simulations are presented to show that the 4WS integrated control system can markedly enhance good vehicle lateral maneuverability.

Cheeses have been proposed as a good alternative to other fermented milk products for the delivery of probiotic bacteria to the consumer. The objective of this study was to assess the survival of twoLactobacillus salivariusstrains (CECT5713 and PS2) isolated from human milk during production and storage of fresh cheese for 28 days at 4°C. The effect of such strains on the volatile compounds profile, texture, and other sensorial properties, including an overall consumer acceptance, was also investigated. BothL. salivariusstrains remained viable in the cheeses throughout the storage period and a significant reduction in their viable counts was only observed after 21 days. Globally, the addition of theL. salivariusstrains did not change significantly neither the chemical composition of the cheese nor texture parameters after the storage period, although cheeses manufactured withL. salivariusCECT5713 presented significantly higher values of hardness. A total of 59 volatile compounds were identified in the headspace of experimental cheeses, and someL. salivarius-associated differences could be identified. All cheeses presented good results of acceptance after the sensory evaluation. Consequently, our results indicated that fresh cheese can be a good vehicle for the twoL. salivariusstrains analyzed in this study.

The enhanced demands made to safety and comfort for vehicle occupants have, in recent years, resulted in a steady increase of the vehicle weight. The achievement of a good vehicle performance has been accompanied by the development of more effective combustion motors. However, all this entailed the increased out-put of detrimental exhaust fumes. More restrictive environmental requirements demand the future reduction of the vehicle weight. In order to follow those requirements, different lightweight concepts are currently being followed. The application of higher-strength steel materials allows the reduction of the vehicle weight with, at the same time, increase of the part strength. A further possibility is composite construction which, depending on local demands on the material, means the application of the proper material at the proper position in the vehicle. The highest importance is attached to the combination of steel and aluminium. The development of modern, digitally controlled arc processes has rendered the process-reliable reproducible joining of steel to aluminium possible. Within the framework of a publicly sponsored project, the joining of vehicle-relevant materials with different short-arc processes using low-melting zinc-based brazing solders is currently investigated.
