Introduction. Durum wheat is vital for high-quality pasta production. The present research tested the high technological potential of durum wheat varieties developed in the Saratov region. The research objective was to study the effect of the quality of durum wheat on the quality of pasta. Study objects and methods. The study featured durum wheat of the following varieties: Saratovskaya Zolotistaya, Valentina, Nik, Krasnokutka 13, Luch 25, Pamyati Vasilchuka, Bezenchukskaya 182 and Annushka. The experiment involved an original PSL-13 press for standard spaghetti with a diameter of 1.8 mm. The content of protein, raw gluten, and their quality were determined by standard methods. The cooking properties of the pasta were evaluated according to the method developed in the South-Eastern Federal Agricultural Research Center. Results and discussion. The indicators of raw gluten and protein are known to correlate. The samples of Saratovskaya Zolotistaya and Luch 25 had a high protein content of 15.3 and 15.6%, respectively, as well as a high content of raw gluten (33.2 and 35.1%, respectively). The raw gluten of Saratov varieties proved to be much better than in the control samples. The indicator of microSDs sedimentation was 30–36 mm. The strength of spaghetti followed the increase in crude gluten (33–35%) and protein (15.3–15.6%), which is typical of this type of pasta. The strength, coefficient of determination (R2 = 0.98), and sharing force (R2 = 0.92) depended on the protein content. Conclusion. The study established the following optimal selection criteria for durum wheat varieties to be used in strong spaghetti production: virtuosity – 80%, raw gluten – 33–35%, protein content – 5–7% higher than normal, raw gluten – 72–80 units.

Over the past few years, the rapid development of virtual reality has led to the technology finding its way into the professional sector in addition to the gaming market. It plays a particularly important role in medical applications by providing a virtual environment to enable therapy, rehabilitation, and serving as an educational platform. The chapter provides an overview of the applications of virtual reality in medicine about some of the most important areas. Both scenario development and application validation methods are presented, as well as their impact on the end user. Finally, the technological potential and future development of VR applications used for improving medical service delivery are summarized and briefly discussed.

In the modern economics of industrial production the fundamental trend is the technological potential connected with the period of transition to innovative high technology industrial production. It is an important factor influencing the perspective indicators of development of economics and the entire industrial complex. Management of industrial enterprises requires establishing new approaches to the use of technological potential and its management. For this purpose, the works of scientists in the subject area of the technological potential of industrial enterprises have been studied. The authors consider theoretical approaches to studying technological potential and sustainable development of industrial enterprises. They systematized methodological approaches to studying the concept of ‘technological potential’ and structured the factors influencing it. The fundamental factors include social, international factors, state of economy, economic policy, market factors, factors of governmental influence and institutional factors. To assess the technological potential of an enterprise, a system of KPI is used, which allows taking into account the limitations and desirable levels for a whole range of particular parameters of indicators, indicators, both quantitative and qualitative.

Pumpkin fruits ( Cucurbita spp.) have a number of advantages and high technological potential, thanks to almost universal cultivation in a wide range of agro-climatic conditions, the ability to long-term storage, the content of dietary fibers, pectin and other polysaccharides, carotenoids, polyphenolic substances, vitamins, which cause a wide range of physiological orientation. In the process of researching the composition of local cultivars of pumpkin and the world experience of using Cucurbita spp. in the composition of food products, the need to use this ingredient in beverage recipes has been substantiated. The content of dry substances in the pumpkin samples is from 8.18 % ("Gribovskaya") to 11.6 % ("Orange bush"). The maximum sugar content is distinguished by the varieties "Winter Sweet" (6.87 %) and "Orange Bush" (7.40 %). The content of BAS-antioxidants is (without visible difference depending on the growing region): carotenoids from 1.3 mg/100 g in "Gribovskaya" to 2.0 mg/100 g - "Orange bush"; ascorbic acid - 8.7 mg/100 g in "Rossiyanka" to 14.2 mg/100 g - "Orange bush". Today all parts of the pumpkin fruit are used: the bark is a raw material for the production of feed flour and a substrate for the cultivation of lactobacilli, the seeds are traditionally used to produce pumpkin oil and flour, the pulp of the fruit is a raw material for juice-containing products, purees, carotenoid-containing and polysaccharide extracts, pectin, concentrates of first and second dishes, snack products, pasta, bakery, confectionery and meat products, etc.

World and regional economics are nonstationary, and due to this it becomes a strategically important task to ensure social and economic development of the regions which considers the existing tendencies and the arising opportunities. The task can be fulfilled by means of uncovering the accumulated scientific-technical and industrial-production potentials of the industries. The Far Eastern Federal district possesses such a strategic opportunity, and gas industry can become such a driver. Therefore, the purpose of the study is performing strategic diagnostics of the Far Eastern gas industry in order to determine the position of the object of strategizing within the global and regional economic system, to form the information basis for further strategic analysis and to define the type of the potential industrial strategy. To this end the authors carried out analysis and presented the main results of strategic diagnostics of the Far Eastern gas industry as the object of strategizing including the key historical aspects and the dynamics of development of the gas industry of the Far East, assessment of the resource base and human resources potential, technological potential of the industry, analysis of the major industrial indicators and structure, assessment of the export potential and market positioning, analysis of the regulatory environment for operation and development of the gas industry in the Far East. For each direction of strategic diagnostics the authors have detected the specificity, features and factors which influence or are able to influence the Far Eastern gas industry in a long-term perspective. The results of the analysis revealed high concentration of national, public, regional, industrial, commercial interests, high level of technological potential of gas industry of the Far East, its deep integration into international economic relations and favorable regulatory environment encouraging effective operation and development. The study made it possible to conclude that the strategy of the gas industry of the Far East ought to be that of the innovative type and ought to be aimed at realization of all groups of interests and at involvement and efficient employment of all existing regional resources and competitive advantages.

The article considers the problems management of efficiency of use of production and technological potential of rolling stock of rail transport. It is investigated that to improve the efficiency of functioning requires a comprehensive solution of many problems, with the rational use of labor, material and labor resources. A set of many tasks aimed at improving and ensuring the level of efficiency of rail transport facilities and systems is considered. It is investigated that in order to achieve the required level of efficiency of rolling stock operation it is necessary to improve the management process by system model of the set of problems of efficiency of use of production and technological potential of work of rail transport.As a result of solving the problema mathematical model of the set of problems was proposed, which became the basis for building a system model of the set of problems. The decomposition method and AllFusion Process Modeler software were used to build the system model. The paper considers the task of ensuring the required level of efficiency in the use of production and technological potential of rolling stock and the proposed ways to solve it. There is also a comprehensive review of objects, systems and processes, which involves their identification, providing a formalized description. On the basis of which a model and method of diagnosis were proposed, which inopen the possibility of interaction between the management of the subsystem of diagnostics and planning of work of objects and systems of rolling stock on the basis of the actual technical condition. The solution in this way will increase the indicators of the main aspects of production and technological potential, which is the purpose of this work.

The scenographic architectural space of St. Peter’s represents an authoritative framework for the exhibition of the Vatican’s intellectual and technological potential. The creation and maintenance of St. Peter’s spurred inventions in construction practices and building technology, including the development of ad hoc scaffolding systems that could be assembled in prohibitive conditions. As demonstrated in this article, St. Peter’s Fabbrica and the Church fostered a reassuring place of experience, where rigour and tradition encouraged the realization of striking accomplishments. Notable among others were the scaffoldings designed by the master carpenter Nicola Zabaglia, to whose work the 1743 Castelli e ponti was dedicated. The 1824 reprint of this volume enjoyed a critical fortune in Europe, disseminating the place-specific knowledge of the Vatican Fabbrica.

This research aimed to evaluate the technological potential of genipap flour (Genipa americana L.) in freeze drying and oven drying processes. The ripened genipap fruits were harvested and submitted to pulp extraction, which after dehydration in an oven and freeze drying, were crushed to obtain the flours. When analyzed by X-ray diffraction, the flours were amorphous, with indicative of starch. In addition, the presence of water, aromatics and primary alcohols was observed by infrared spectra (FTIR). In micrograph (SEM) FPJDE was less porous and starches were identified. For thermogravimetry (TGA) similar thermal events occurred, it was important to verify the thermal behavior, humidity and ash present in the food. In the mineral composition, potassium, magnesium, manganese, iron, phosphorus, copper, and calcium were present, the flours as a source of manganese and with a high content of iron, potassium, copper and magnesium. It was concluded that the flours present a quantity of nutrients and favorable technological characteristics such as: thermal stability, humidity below that established by law for the manufacture and production of food.
