Proteomics profiling disclosed the molecular mechanism underlying beef poor meat quality. This study aimed to identify protein markers indicating the quality of beef during postmortem storage at 4°C. Beef longissimus dorsi samples were stored at 4°C. The meat water holding capacity (WHC), pH value and moisture content were determined at different time points during the storage period. The iTRAQ MS/MS approach was used to determine the proteomics profiling at 0, 3.5 and 7 d during storage at 4°C. Bioinformatics analysis was performed to investigate the potential correlated proteins associated with meat quality. Storage at 4°C gradually decreased the pH value, WHC, and hence the moisture content. The iTRAQ proteomic analysis revealed that a cluster of glycolytic enzymes including malate dehydrogenase, cytoplasmic, L-lactate dehydrogenase, phosphoglycerate mutase and pyruvate kinase, and another cluster of proteins involved in oxygen transport and binding (myoglobin) and hemoglobin complex (including Globin A1 and hemoglobin subunit alpha) were decreased during the postmortem storage. These results suggest that the decreased glycolysis, oxygen, and heme-binding activities might be associated with the beef muscle low quality and the decline of tenderness during postmortem storage at 4°C.

For determination of poultry quality shortly after slaughtering, physical criteria (pH-value, conductivity, colour, juice retention) are of importance. However, they are affected by breeding, transport, cooling and the storage period. PH-values of breast meat (genetically structured material) were recorded shortly after slaughtering (15 min p.m.) and differences between breeding line and gender were found (n=5109). The pH1-values ranged from 5.50 to 6.79. Male broilers showed significantly lower pH1-values than female ones (6.02:6.10). There were also significant differences concerning breeding line and gender. Meat quality (PSE, DFD) of broilers can be recorded quickly and accurately determining the pH1-value of breast meat. Threshold ranges to be considered are ? 5.8 (PSE), 5.9-6.2 (standard meat properties) and ? 6.3 (DFD). This classification is not to be compared to the deviation of pork.

Seeds of native forest species for food and seedling production have a growing demand that impacts the need for studies involving seed storage in order to maintain good levels of germination quality. Thus, scientific analyzes that explore the physiological potential of the seeds of these species are necessary, especially for the pink pepper (Schinus terebinthifolia Raddi.), a species used as an alternative source of income for traditional communities and which has been arousing interest due to the consumption of its fruits as a condiment in the national and international market. This work aimed to assess the physiological quality of pink pepper seeds according to the storage period and seed size. The seeds came from a rural settlement, a pioneer in the extraction of pink pepper, in the state of Rio de Janeiro, Brazil. The seeds were evaluated for moisture content, germination, first count, length and dry weight of the germinated seedlings, during the period of time that they remained stored and the size of the seeds. The results allowed to conclude that: i) the germinative percentage of the stored pink pepper seeds decreased over the months; ii) the moisture content of the seeds decreased over the months evaluated iii) the different sizes of seeds did not show differences in germination and storage time and iv) values of length and dry weight of the seedlings did not differ according to the period of storage.

ABSTRAK   Usaha penyamakan kulit ikan Pari umumnya dilakukan oleh usaha kecil menengah dan hanya menggunakan metode aldehid dengan bahan samak formalin, Selain itu juga belum diketahui kualitas kulit ikan Pari Mondol tersamak yang menggunakan bahan samak krom. Penelitian ini bertujuan untuk mengetahui pengaruh perbedaan penggunaan jenis bahan penyamak terhadap kualitas fisik dan kimiawi kulit ikan Pari Mondol tersamak. Materi penelitian berupa kulit ikan Pari Mondol (Himantura gerrardi) dan bahan samak. Penelitian dilakukan dengan metode eksperimental laboratoris. Rancangan percobaan yang digunakan adalah Rancangan Acak Kelompok dengan perlakuan bahan samak yang berbeda, yaitu formalin, krom, dan kombinasi. Masing-masing perlakuan diulang tiga kali. Variabel mutu yang diamati adalah kekuatan tarik, kemuluran, kekuatan sobek, ketebalan, suhu kerut, ketahanan bengkuk (bengkok), pH dan kadar air. Data dianalisis menggunakan ANOVA dan perbedaan diantara perlakuan diuji dengan Uji Tukey. Hasil penelitian menunjukkan bahwa perbedaan bahan penyamak menyebabkan pengaruh nyata terhadap nilai kekuatan tarik, kekuatan sobek dan ketebalan tetapi tidak memberikan pengaruh nyata terhadap nilai pH, kadar air dan ketahanan bengkuk. Produk yang terbaik yaitu kulit ikan Pari Mondol yang disamak dengan bahan samak kombinasi antara krom dan mimosa, yang sebagian persyaratan mutunya sudah memenuhi persyaratan mutu kulit ikan Pari tersamak menurut SNI 06-6121-1999.   Kata kunci: Kualitas, kulit Ikan Pari, penyamak     ABSTRACT  Meanwhile the quality of Stingray tanned leather which using chrome tannin materials was not yet known. This research aims to determine the effect of different types used tannin materials towards physical and chemical quality of Stingray leather quality. The materials used in this research isStingray (Himantura gerrardi) skin and tannin materials. The study was conducted with laboratory experimental method. The experiments was designed according to the Randomized Block Design with different tanning materials (formalin, chrome, and chrome-combination). Each treatment was done with in triplicate. The quality variables that measured were tensile strength, elongation, tear strength, thickness, shrinkage temperature, bent resistance, pH and moisture content. Data were analyzed using Analysis of Variance. To find the difference between treatments, the data were tested with Honestly Significant Difference Test . The results showed that various of tannin materials gave significant effects to the values of tensile strength, tear strength and thickness however there was not any significant effect on bent resistance, moisture content and pH value. The best product were Stingray tanned leather with chrome-combination tannin material, which partially quality requirements has been comply with Stingray tanned leather quality requirements according to SNI. Keywords: Quality, stingray skin, tanning

Abstract This study investigated the effects of encapsulated citral (CIT) and cinnamaldehyde (CIN) on growth performance, intestinal morphology and meat quality in broilers. A total of 320 0-day-age male broilers (Cobb 500) were allocated 32 pens with 8 pens per treatment. The treatments included: 1) Corn-wheat-SBM basal diet (negative control); 2) basal diet with 30 ppm avilamycin premix (positive control); 3) basal diet with 50 ppm encapsulated CIT and CIN (CCL); 4) basal diet with 100 ppm encapsulated CIT and CIN (CCH). There were no significant differences between treatments in growth performance (P > 0.05) at each feeding stage. Additionally, birds had similar relative organ weights of heart, liver, spleen and bursa (P > 0.05). The higher ratios of villus height to crypt depth (VCR; P ≤ 0.05) were detected in broilers fed either CCL or CCH, with an average being 14.67 and 15.13 in the duodenum, and 15.13 and 13.58 in the jejunum, respectively. Regarding meat quality, a higher pH value (pH = 6.21) in the breast was observed in 24-h post mortem chickens fed CCL (P ≤ 0.05). No significant differences of pH were detected in the breast in 96-h post mortem birds. The breast color (redness, yellowness, and lightness) in either 24-h or 96-h post mortem chickens was not significantly different among treatments (P > 0.05). No change in purge loss (%) was observed in the breast after 48 h. The severity of white striping (WS) or woody meat (WB) was higher in the positive control (WS = 0.58; WB = 0.15) than in other treatments (P ≤ 0.05). In conclusion, dietary treatment with encapsulated CIT and CIN improved gut morphology and meat quality of broilers by increasing VCR in the small intestine and reducing the severity of WS/WB in the breast, respectively, without affecting growth performance.

Dried smoked skipjack or better known as Katsuo-bushi is a popular type of smoked fish in Japan. It has a distinctive flavor and widely used in traditional Japanese cuisine. The weakness of commercial Katsuo-bushi nowadays is the high content of Polycyclic Aromatic Hydrocarbon (PAH) (may exceed 10 ppb).  Recent study examined the low PAH Katsuo-bushi product made with liquid smoke. However, the sensory acceptance of this product has not been determined yet.  The purpose of this study was to determine the effect of liquid smoke concentration (1%, 2% and 3%) and soaking time (10, 20 and 30 min) on the sensory quality of Katsuo-bushi. Duo-trio method was used for sensory evaluation. Additional chemical analysis such as moisture content and pH were performed. Significant differences were found among liquid smoke Katsuo-bushi product compare to traditional Katsuo-bushi (P<0.1). Also, it is suggested that the longer the soaking time, the higher the moisture content and pH value. Keyword: Katsuo-bushi, liquid smoke, Duo trio method.   Ikan kayu atau lebih dikenal dengan Katsuo-bushi adalah sejenis ikan asap yang telah lama dikenal dan memiliki flavor yang khas yang biasanya digunakan pada masakan tradisional di Jepang.  Kelemahan ikan kayu yang ada di dunia dewasa ini adalah tingginya kandungan Polycyclic Aromatic Hydrocarbon (PAH) yang melebihi 10 ppb. Penelitian terkini (Berhimpon, dkk 2016) meneliti ikan kayu asap cair yang rendah PAH, tetapi belum diteliti tingkat kesukaan secara organoleptik. Penelitian ini adalah untuk mendapatkan ikan kayu asap cair yang rendah PAH tetapi disukai oleh konsumen. Tujuan penelitian ini ialah untuk mengetahui pengaruh konsentrasi asap cair dan lama perendaman terhadap mutu organoleptik ikan kayu asap cair yang dibuat dengan berbagai konsentrasi dan lama perendaman, dan dibandingkan dengan ikan kayu konvensional. Parameter pengamatan ialah analisa organoleptik dengan metode duo trio (Berhimpon, dkk. 2005), analisa kadar air dan pH (AOAC, 2005). Hasil penelitian ini menunjukkan bahwa ikan kayu yang direndam dalam asap cair dengan konsentrasi 2% dan 3% masing-masing selama 30 dan 10 menit berbeda sangat nyata (P<0,1) dengan ikan kayu konvensional. Sedangkan perlakuan yang lain sama dengan ikan kayu konvensional. Untuk analisa kadar air dan pH menunjukkan bahwa lama perendaman memberikan pengaruh yang nyata terhadap nilai kadar air dan pH dari ikan kayu asap cair, dimana semakin lama waktu perendaman dalam larutan asap cair maka semakin tinggi kadar air dan pH dari ikan kayu tersebut. Maize is known to be an important crop for food security in developing countries; and farmers have continued to experience post-harvest losses which lead to reduction in the quality or quantity of maize grains. The main causes of post-harvest losses are the storage insect, pests, improper drying and poor storage systems. Poor storage accounts for 5-10% loss and 5% loss is attributed to insect attacks. This research modified a one tonne metallic silo with the aim of studying the effects on moisture content and hectolitre weight of the maize grains. The moisture content was determined using moisture meter while the hectolitre weight was determined using extruded brass material. The study lasted for six months and analyses were carried out on the data collected using Duncan multiple range tests at 95% level of confidence. The moisture content was observed to reduce from 13.5% to 11.4% w.b while hectoliter weight which is the main determinant of the market value of the grain was observed to increase from 276 kg/ml to 288 kg/ml, this implies that there was increase in the cost value of the grain after six month of storage. The results showed that variations in moisture content along storage period were significant at (p ≤ 0.05).

Instant spices is a mixture of several spices that are young to be found in the market at an affordable price, and are usually used immediately as a cooking spice for certain foods. This study aims to determine the quality of the "Base Genep" instant spices sold in the East Denpasar Market. This research is a descriptive study using survey and experimental methods in the laboratory. The number of samples to be studied was 44 samples from 81 populations. The variables in the study were moisture content, pH, Escherichia coli, Total Plate Count (TPC) and mold. The results showed that from 44 samples of "Basa Genep" instant seasoning water content test results obtained were 21.62% - 23.707%, while the pH value of 44 samples of "Basa Genep" instant spice was obtained between 2.2-2.5 so that it meets the requirements.

The effect of storage materials on the quality of tomato powder was studied. Fresh, firm and matured red tomatoes were washed, sorted and sliced to a uniform thickness of 5mm. The sliced tomatoes were pre-treated by dipping in 1% calcium chloride (CaCl2) and 0.2% potassium metabislphite (KMS) solution for 10 minutes at room temperature. 200g each of the sample was dried at temperatures of 600C until equilibrium moisture content was attained. The dried tomatoes were ground into powder and stored in Black polyethylene [BPE], White polyethylene [WPE], and Laminated Aluminium Foil [LAF] pouches for 6 weeks. The moisture content, crude protein, crude fibre, fat, total ash, and vitamin C of the tomato powder were determined using the method prescribed by AOAC. The carotene contents were determined by HPLC. The proximate analysis was repeated after 2 weeks, 4 weeks and 6weeks of storage.  There was an increase in moisture content and ash content after 6 weeks of storage while a decrease in value of protein, fat and vitamin C content occurred after the storage period. All the parameters measured were best retained by the laminated aluminium foil (LAF) compared to black polyethylene (BPE) and white polyethylene (WPE) packaging material for the entire period of the study.

The purpose of this research is to determine the quality of the smoked mackerel tuna (Euthynnus affinis) processed with liquid smoke from nutmeg shell at various concentration (6, 8 or 10%) by drying for 6 hours or 8 hours. The tested parameters tested were moisture content, pH, organoleptic and texture. The lowest water content (36.25) and pH value (5.5) was obtained from a smoked fish that was dried for 8 hours using 10% liquid smoke. The organoleptic results of taste and smell indicated that the panelists preferred smoked fish which was made with 6% concentration of liquid smoke and dried for 6 hours. Keyword: Mackerel tuna, liquid smoke, nutmeg shell.   Ikan tonggkol (Euthynnus affinis) adalah salah satu jenis ikan yang banyak terdapat di perairan Indonesia terlebih khusus di daerah Sulawesi Utara. Pengolahan ikan menggunakan asap cair memiliki beberapa kelebihan antara lain, mudah diterapkan dan praktis penggunaannya polusi ke lingkungan dapat diperkecil dan yang paling penting senyawa karsinogen yang terbentuk dapat dieliminasi. Asap cair cangkang Pala dapat dijadikan solusi. Tujuan dari penelitian ini yaitu mengetahui penggunaan asap cair cangkang Pala dengan konsentrasi 6, 8, 10% terhadap mutu ikan tongkol (Euthynnus affinis) asap. Manfaat yang di peroleh dari penelitian ini ialah mengetahui penggunaan asap cair dari cangkang pala yang direndam pada ikan tongkol dengan konsentrasi berbeda-beda, dengan perlakuan perendaman pada konsentrasi 6, 8, 10% dengan pengeringan selama 6 jam dan pengeringan selama 8 jam. Dengan parameter uji Kadar air, pH, Organoleptik dan Tekstur. Hasil yang diperoleh dari ikan tongkol asap cair cangkang pala konsentrasi 6, 8, 10%. Kadar air dengan pengeringan selama 6 jam memiliki kadar air tertinggi kosentrasi 6%, 44,75%. 8%, 38,75%. 10%, 36,25%. Dan pengeringan selama 8 jam memiliki kadar air terendah. Hasil pH dari ikan tongkol asap cair cangkang Pala dengan konsentrasi 6%, 8%, 10%. Dengan pengeringan selama 6 jam memiliki nilai tertinggi yaitu konsentrasi 6%, 5,76. 8%, 5,65. 10%, 5,61. dan pengeringan selama 8 jam memiliki nilai terendah. Organoleptik kenampakan setelah dari uji direngking diperoleh konsentrasi 10% yang dikeringkan 6 jam memiliki nilai tertinggi yaitu 66,5 Untuk organoleptik bau setelah di uji rengking konsentrasi 6% dikeringkan selama 6 jam memiliki nilai tertinggi yaitu 59,5. Organoleptik rasa setelah dari uji rengking dengan konsentrasi 6% dengan lama pengeringan 6 jam memiliki nilai tertinggi 75,5. Dan untuk tekstur dimana konsentrasi 10 % dengan pengeringan 8 jam memiliki nilai terendah 0,28 dari konsentrasi lainnya. Kata Kunci: Ikan tongkol, asap cair, cangkang pala.

The objective of this study was to investigate the changes in physicochemical, microbiological, and sensory properties of sun-dried Mystus vittatus during storage at ambient temperature. The fish was dried under sun exposure on bamboo mats for 5–6 days until the moisture content reduced to approximately 10–15%. The dried fish was then packed into airtight polyethylene bags and stored at ambient temperature (24 to 29 °C) for 90 days. The physical and sensory properties revealed that the dried fish was acceptable for human consumption for up to 60 days. The pH value slightly decreased from 6.42 to 5.95 during the storage period. The moisture content increased significantly (p < 0.05), while no significant difference was observed for the protein, lipid, and ash contents (on a dry matter basis) with the increase in the storage time. The peroxide value, acid value, and conjugated dienes of the lipids increased significantly during the storage period. The microbial load also increased with the increase in the storage period. The results of this study suggest that the product was slightly oxidized during the storage period and could be stored for up to two months.
