Abstract. This study was conducted to determine antioxidant properties and phytochemicals of brown algae Scytosiphon lomentaria (Lyngbye) Link, Cystoseira barbata (Stackhouse) C. Agardh, and Padina pavonica (Linnaeus) Thivy, collected from the Dardanelles (Çanakkale) Strait, Turkey, in February 2018. The antioxidant activity, total carotenoids, condensed tannins, and total content of phenolics and flavonoids in ethanol extracts were quantified. P. pavonica showed the highest antioxidant potential as well as the maximum content of phenolics and carotenoids. The total flavonoid contents changed from 1375.43±2.37 µg/g Ext. (C. barbata) to 2250.92±46.60 µg/g Ext. (S. lomentaria). The highest condensed tannins were found in C. barbata. According to results obtained, C. barbata, S. lomentaria and P. pavonica possess antioxidant activity and could be used in the food and feed industries.

Большое влияние на здоровье человека оказывают вещества, проявляющие антиоксидантный эффект, в значительной степени содержащиеся в ягодах малины и отходах сокового производства от данной ягоды, а именно свежезамороженной ягоде, свежевыжатом соке, водной вытяжке, сырых и высушенных выжимках и концентрированном соке. Целью работы стало изучение химического состава и антиоксидантной активности ягод малины и отходов сокового производства, наблюдение за изменением показателей исследуемых характеристик при механической и тепловой обработке ягод малины и выбор оптимального варианта. При проведении исследований были использованы следующие методы: определение общего содержания антоцианов; определение общего содержания фенольных соединений; определение общего содержания флавоноидов; определение антирадикальной активности; определение восстанавливающей силы; исследование антиоксидантных свойств с использованием модельной системы линолевой кислоты. Все методы по определению содержания антиоксидантов проводились на этанольных экстрактах. Установлено, что использование экстракции для ягод и отходов сокового производства позволяет более точно определить содержание исследуемых показателей. Выявлено, что наибольшая антиоксидантная активность 94,5-98,4 % отмечена в малине и водной вытяжке из нее. A great influence on human health is exerted by substances exhibiting an antioxidant effect, largely contained in raspberries and their juice waste products, specifically in fresh-frozen berries, fresh squeezed juice, water extract, raw and dried pomace and concentrated juice. The aim of the work was to study chemical composition and antioxidant activity of raspberries and their juice waste products, monitor changes in the parameters of the studied characteristics during mechanical and thermal processing of raspberries and select the optimal option. The following methods were used during the research: determination of the total content of anthocyanins; determination of the total content of phenolic compounds; determination of the total content of flavonoids; determination of antiradical activity; determination of regenerating power; study of antioxidant properties using a model system of linoleic acid. All methods for determining the content of antioxidants were carried out on ethanol extracts. It was established that using of extraction for berries and juice waste products made it possible to determine more precisely the content of the studied indicators. It was also revealed that the highest antioxidant activity of 94.5% - 98.4% was observed in raspberries and their water extract.

The present investigation was undertaken to analyze the antioxidant potential of sixteen different potato genotypes. Eleven yellow fleshed potato genotypes namely Forza, Courage, Laura, Rosa Gold, Lady Rosetta, Cumbica, Asterix, Coronada, Granola, Cardinal and Diamant and five purple fleshed potato genotypes namely Jam Alu, KAC 10063, KAC 10064, KAC 10069, KAC 10097 were used as experimental materials. Total carotenoids, anthocyanin, phenolics, flavonoids, ascorbic acid and antioxidant activity in the above mentioned genotypes were determined to compare the antioxidant potentials of the genotypes. Analysis of above mentioned parameters resulted significant variation in their contents in both yellow and purple fleshed genotypes. The results indicate the purple fleshed genotypes showed significantly higher carotenoids, anthocyanin, flavonoids and total antioxidant activity than those of yellow fleshed genotypes. The findings also suggested the antioxidant activity of the genotypes positively correlates to the total content of carotenoids, anthocyanin and flavonoids. Since, purple fleshed genotypes showed higher antioxidant properties, the results of this study claim that the purple fleshed genotypes would be suitable for direct consumption as vegetables which might increase the health and food security of human beings.Bangladesh J. Introduction. Honey, propolis and pollen belong to bee products that have beneficial biological properties. These products exhibit e.g. antibacterial, antifungal and antioxidant properties. Due to biological activity and natural origin, bee products are used, e.g. in the food industry, cosmetology and pharmacy. Aim. The aim of the study was to compare the antioxidant and antibacterial activity of honey, propolis and pollen from an apiary located in Wielkopolska Province. Material and methods. Honey, propolis and pollen used in this study came from the same apiary located in Wielkopolska Province. The antioxidant potential of bee products was evaluated applying DPPH· free radical scavenging activity assay. The antimicrobial activity of the tested bee products was determined by the point-diffusion method against 13 strains of pathogenic and potentially pathogenic bacteria. In addition, the total content of phenolic compounds in honey, propolis and pollen was determined by the colorimetric method. Results. Propolis exhibited higher antioxidant activity, in comparison to honey and pollen. The antiradical activity of propolis was equal to 80% approx. activity of Trolox, the standard antioxidant. Among tested bee products, propolis was characterized by the highest total phenols content. In addition, honey, propolis and pollen showed antagonistic activity against tested bacterial strains. Conclusions. The obtained results indicate that among the tested bee products of native origin, i.e. honey, propolis and pollen, propolis characterized by the highest antioxidant activity and the total content of phenolic compounds. In addition, all bee products showed bactericidal activity against the tested bacterial strains.

Plant natural products have a long history of being a rich source of neuroactive drugs.The total phenolic and flavonoid content, and antioxidant activity of ethanol, chloroform and aqueous extracts of AlgerianMedicagoSativaL, leaves were measured to discover new potential sources of Algerian natural antioxidants and neuroactives. All extracts were non-neurotoxic up to 1 mg/ ml for 24 h exposure. The total phenolcontent of M.Sativa extracts ranged between 38 and 69 mg GAE per g extracts. All of the extracts displayed antioxidant capacityassessed by two methods, but at different levels depending on the concentration and the extraction solvent used. The overall antioxidant potency was in the order water > chloroform> ethanol extracts, and the phenolic content exhibited a positive correlation with the antioxidant activity of M. Sativa extracts.Despite a weaker antioxidant activity, the ethanol extract elicited a calcium spike and suppressed the KCl-induced depolarisation response in neurons, indicating effect on ligand-and/or voltage gated calcium channels. In contrast, the chloroform and water extractsdisplayed no apparent direct functional effects. In conclusion, the antioxidant and functional properties related to phenolic content of Algerian Medicago Sativa L. in water and ethanol extracts, respectively.

AbstractThere is a growing public interest in fruits labeled as „superfood” (functional food). A “superfood” should have a high content of bioactive substances with a positive impact on human health. Seven different cultivars of goji berry fruits (Lycium chinense Mill.) grown in north-western Poland were evaluated for its physicochemical parameters, antidiabetic and antioxidant activity, and polyphenol content. The length of 1-year-old shoots ranged from 36 cm (‘Big Lifeberry’) to 82 cm (‘Korean Big’). Cultivars from the group of Big were characterized by the biggest fruits (17.3-24.2 mm) with the greatest weight of 100 fruits (96.7­122.1 g). ‘Big Lifeberry’ contained high amounts of L-ascorbic acid (408 mg 1000/g) and provitamin A (190 mg 1000/g) and showed high antidiabetic (α-amylase IC50=33.4 mg/mL; α-glucosidase IC50=9.9 mg/mL) and antioxidant activity (ABTS·+ 6.21 and FRAP 5.58 mmol T/100 g). ‘Big Lifeberry’ was also characterized by a high total content of polyphenols (43.64 mg 100/g). Furthermore, the nitrite content in all the cultivars tested was at a relatively low level. Among the examined cultivars, the most attractive one concerning the consumers’ point of view of the size, weight and high content of health-promoting compounds is ‘Big Lifeberry’.

The biological activity of chocolates gains more and more attention of consumers. Its antioxidant properties depend, among other factors, mainly on the origin of cocoa and the characteristics that this origin gives to the final product. Therefore, the aim of the study was to measure and compare the total content of polyphenols, antioxidant activity, and key odorants of commercial chocolates made from blend cocoa with single-origin ones. The highest content of polyphenols was found in 90% blend cocoa chocolate and single-origin samples, while the lowest content was exhibited by 100% chocolate from blend cocoa mass. The highest antioxidant activity measured by 2,2′-Azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS) and ferric reducing antioxidant power (FRAP) assays was observed in the sample of chocolate with 90% cocoa solids from blend mass, followed by single-origin chocolates. A high positive correlation between ABTS assay and the total polyphenol and phenolic acids’ content, as well as among the total content of polyphenols, flavonoids, and phenolic acids was found. Mineral composition analysis showed that dark chocolate is a valuable source of some elements, especially Mg, Fe, and Zn. Potentially toxic elements were not detected or below permitted limits. Moreover, it was noticed that the main volatile compound in all tested samples was acetic acid, but pyrazines were considered the most important group of chocolate odorants.

The demand for organic production is increasing worldwide. The willowherb, grown in an organic way, contributes greatly to the idea of a healthier society and clean land. Willowherb is widespread in the world and has high polyphenols, carotenoids, and antioxidant properties. The purpose of this work was to investigate the influence of solid-phase fermentation (SPF) under different conditions on the variation of polyphenols and carotenoids in the organic leaves of willowherb. The leaves were fermented for different periods of time: 24, 48, and 72 h; and in aerobic and anaerobic conditions. The evaluation of polyphenols and carotenoids was completed using high-performance liquid chromatography (HPLC), and antioxidant activity was measured with spectrophotometric method. Hierarchical cluster analysis was used to describe differences in biologically active compounds between willowherb samples. The experiment showed that the highest quantities of total phenolic acids and flavonoids were determined after 24 h under aerobic SPF, but the amountof total carotenoids was higher after 72 h anaerobic SPF, compared to control. Not-fermented willowherb leaves had a lower antioxidant activity. compared to fermented leaves. In conclusion, SPF can be used to change polyphenol and carotenoid quantities in organic leaves of willowherb.

New data on the chemical composition and antioxidant properties of aqueous leaf extracts of Bergenia crassifolia (L.) Fitsch of different periods of vegetation growing in the Republic of Buryatia were obtained. It is shown that this is one of the few plants whose leaves contain a significant amount of phenolic compounds. The maximum content of tannins was noted in the extract of red leaves of the incense – 2.42%. Depending on the phase of the collection of raw materials, the content of flavonoids in the water extracts of the leaves of the frangipani varied from 3.88 to 5.42%. A higher accumulation of flavonoids was observed in the extract of black leaves of badan, which is apparently associated with leaf fermentation, in which the cellular structure is destroyed, enzymes and polyphenols are released. The leader in determining the total content of anthocyanins, as well as for flavonoids, was the extract of black leaves of frankincense. The largest amount of arbutin was contained in the extract of green leaves of frankincense – 1.22%. The studied extracts had a high ability to absorb free radicals, however, the extract of green leaves of badan had the highest antiradical activity, had a minimum EC50 of 4 mg/cm3. The iron-chelating ability of the tested aqueous extracts of frankincense leaves of different periods of in vitro vegetation showed that the leaf extracts had weak iron-chelating activity.

Objectives. The present analysis was to investigate the content of caffeic acid derivatives, antioxidant activity, and the presence of caffeic acid in alcoholic extracts obtained from 16 simple teas from the following medicinal plants: Vaccinium mуrtilluѕ, Camеllia ѕinеnѕiѕ, Coffea arabica, Mеlіssa οffіcіnalіs, Οcіmum basіlіcum, Rοsmarіnus οffіcіnalіs, Salvіa οffіcіnalіs, Ηyssοрus οffіcіnalіs, Αrtеmіsіa absіntһіum, Cynara scοlymus, Calendula officinalis, Cοrіandrum satіvum, Fοеnіculum vulgarе, Carum carvі, Rοsa canіna, Crataеgus mοnοgyna. Materials and methods. The presence of caffeic acid was evaluated using the thin layer chromatography method (TLC). The total content of phenylpropanoids from the medicinal herbs alcoholic extracts was determined using a spectrophotometric method. Outcomes. Results were in the range of 0.046-2.426% caffeic acid derivatives (CAE%). The antioxidant properties were measured using the DPPH radical scavenging mechanism. The results were found to be in the range of 63.93% and 0.38% inhibition level (I%). The greatest antioxidant activity was measured for Camellia sinensis (I = 45.54%), followed by Vaccinium myrtillus (I = 50.289%). Conclusions. In this paper it was shown that these medicinal plants are rich in caffeic acid derivatives with antioxidant action capitalized in the prevention of serious diseases.

The purpose of this study was to compare the composition and contents of phenolic acids and condensed tannin in the seed coats of white and coloured varieties of pea and to examine the antioxidant properties of methanol and acetone extracts containing these phenolic compounds. The contents of phenolic acids were quantified by the HPLC analysis. The sum of free phenolic acids, those liberated from soluble esters and those liberated from soluble glycosides, was higher for coloured seed coat (78.53 g per g dry matter) than for the white seed coat (17.17 g/g dry matter). Protocatechuic, gentisic and vanillic acids were found dominant in the coloured seed coat, while ferulic and coumaric acids in the white seed coat. The content of condensed tannins was 1560 mg of catechin equivalent/100 g of coloured seed coat as determined by a vanillin assay. No condensed tannins were detected in the white seed coat. The antioxidant activity of extracts was measured by the oxidation of phosphatidylcholine to hydroxyperoxidephosphatidyl choline in the liposome system. Strong antioxidant properties were observed in a crude tannin extract from the coloured seed coat. These properties were slightly changed after the seed coat was cooked in water for 30, 60 and 90 min.
