Agaricus spp. mushrooms are edible fungi of commercial and medicinal importance. Mushrooms convert nutritionally valueless substances into proteinous food with a very efficient bioconversion. Consumption of mushrooms, has increased substantially due to their delicacy, flavour, nutritional and medicinal value, being considered an excellent source of protein, which can contribute to the formulation of a balanced diet. Three species of Agaricus spp. mushrooms were used in this study: Agaricus campestris (L. ex Fr.), Agaricus bisporus (J.E. Lange) and Agaricus blazei (Murrill). This study aims to examine the effects of blanching, soaking and manufacturing processes (sun drying, oven drying and canning) on some chemical constituents of mushrooms (soluble dry matter, protein and total sugars). The analyses were performed initially at conservation and they were repeated after 6, 12 and 18 months of preservation. Since all treatments caused reduction of the dry matter content, it can be concluded that the smallest decrease during the storage period was recorded by soaked and sun dried A. blazei (1.6 g 100 g-1 FM). The maximum soluble dry matter loss was recorded at blanched and canned A. bisporus (2.8 g 100 g-1 FM). Blanching treatment of preheated (sun dried and oven dried) samples, after storage period, led the protein content to slightly decrease, between 0.4 g 100 g-1 DM and 0.8 g 100 g-1 DM. The smallest decrease of total sugars during the storage period was registered by canned, untreated A. campestris with 1.2 g 100 g-1 DM and the largest decrease was registered by blanched oven dried A. blazei with 2.9 g 100 g-1 DM.

The experiment was conducted to examine the effect of freezing and defrosting methods on the quality of beef. Two types of beef samples named as fresh and cured beef samples were taken. Both types were divided into three sub divisions namely air, water and microwave oven. These samples were stored at -20°C temperature in the freezer for 90 days and analyzed on 10th, 45th and 90th day. The dry matter, crude protein, ether extract and ash percentages and standard plate count (SPC) were differed significantly (p<0.01) among the air, water and microwave defrosted samples. Up to 90th days of freezing at -200C dry matter content increased with the increase of storage time almost in all samples except microwave fresh samples. The protein content decreased with the increase of storage time from 10 to 45 days but increased from 45 to 90 days. The ash content decreased with the increase of storage time in case of fresh frozen samples but increased with the increase of storage time in case of cured frozen samples except microwave oven cured sample. Ether extract value gradually increased with the increasing of storage period in case of air fresh, water fresh, air cured and water cured frozen samples but decreased with the increasing of storage period in case of microwave oven fresh and microwave oven cured samples. The SPC value increased with the increase of storage time in case of all samples and differed significantly (p<0.01) among the parameters. Background. Representatives of the genus Allium L. are valuable food and medicinal plants that have long been used for nutrition and human health. Modern research has proved their high biological activity. Earlier, we investigated the aboveground organs of a number of wild onion species in the consumer ripeness phase. Higher content of secondary metabolites has been observed in the hemiephemeroid species A. aflatunense B. Fedtsch., A. microdictyon Prokh., and A. rosenbachianum Regel. The aim of this work was to determine the content of bioactive compounds in the green biomass of Allium species during flowering.Materials and methods. We studied the freshly harvested raw materials – leaves and flower scapes. Dry matter content was measured by drying 1 g of raw material at 100–105°C to constant weight. The amounts of phenolic compounds, pectic substances, total sugars and carotenoids were assessed spectrophotometrically using the SF-56 (Russia) and SF Agilent 8453 (USA) instruments, and ascorbic acid was measured by the titrimetric method. The result was taken as an average of three measurements for each indicator calculated on absolute dry weight of raw material (except ascorbic acid).Results and conclusions. The green biomass of Allium species was found to contain 8,2–16,2% of dry matter; 4,5–12,0% of phenolics (catechins, flavonols and tannins); 6,9–32,4% of total sugars; 9,5–12,6% of pectic compounds (pectins and protopectins); 20,8–102,5 mg% of carotenoids, and 38,0–197,7 mg% of ascorbic acid (wet weight). A significant range of variation in the content of secondary metabolites was due to the species’ characteristics and weather conditions of the growing season. A. microdictyon had a higher content of dry matter, flavonols and tannins, whereas A. aflatunense and A. rosenbachianum were rich in ascorbic acid and sugars. The findings testify to the prospects of using Allium spp. as a source of bioactive compounds.

Non-meat ingredients are used to impart flavor, slow bacterial growth, and increase the yield of the sausage production. To study the quality of chicken sausage incorporated with non-meat ingredients namely, soy protein powder, non-fat milk powder and potato starch at the rate of 2% (w/w) concentration. Sausage samples were analyzed for physical, nutritional, and sensory properties during refrigerated storage at -4 ℃. The nutritional, physical and sensory characteristics were analyzed, at day 1, week 1, week 2 and week 3 of storage. Moisture, ash, dry matter, fat, pH, texture, and color were significantly difference (p<0.05) among the treatments at day one. During storage the ash, pH content and dry matter content were significantly (p<0.05) increased, and fat content and moisture content was significantly (p<0.05) decreased storage period. At week one, the higher hardness value showed in soy protein powder incorporated chicken sausage and least value showed in without added non-meat ingredient (control) sausage. As results of organoleptic characteristics revealed that, 2% of potato starch incorporated chicken sausage had the highest mean score of overall quality of all sensorial properties namely, color, taste, texture, flavor, and overall acceptability.

AbstractOptimal feeding of field-grown plants is thought to be a key factor modifying their growth and development. Natural biostimulants, foliar fertilizers and plant growth regulators have been applied in horticultural production; however, their effect varies depending on the plant species treated, and those have been mainly cucumber, tomato, pepper, potato, and melon. The aim of the study was to evaluate the effect of preparations produced through nanotechnology on the yield and fruit quality of sweet pepper grown under cover. The experiment comprised plants grown in three different combinations: combination I (plants treated with 2 kg ha−1Nano Active); combination II (plants treated with 1% Nano Active Forte + 4 kg ha−1Nano Active Forte + 2 kg ha−1Nano Active, a single treatment carried out at the initial stage of fruit formation); and combination III (the control, where all plants were sprayed with water).The obtained results showed that Nano Active Forte foliar treatment of sweet pepper plants significantly increased fruit yield in protected cultivation. Supplementation with foliar fertilizers modified the fruit chemical composition. Application of the Nano Active Forte preparation led to an increase in dry matter content as well as in the concentrations of total sugars, vitamin C and carotenoids. Applications of Nano Active Forte and Nano Active enhanced the potassium and phosphorus contents, while the concentrations of nitrates and calcium remained at the same level regardless of the preparations used.

&nbsp;In this four-year study, fruits of Golden Delicious cv. randomly sampled from four different orchards on M 9 were kept at 1 or 2<sup>o</sup>C in air storage, and in the course of storing individually assessed for weight, skin colour, skin blush, skin waxiness, flesh firmness, vitamin C content, total acid content, pH value, total sugars, dry matter and calcium content. Changes in some of these fruit quality characteristics during storage are presented and compared with their course during storage both in the cellar and ULO. The maximum storage life of the fruits in the air storage was estimated at 150 days on average. From individual fruit data, correlations between all the observed characteristics at different stages of the storage period were calculated. Fruit weight was positively correlated with dry matter, vitamin C, sugar and acid content, but negatively correlated with flesh firmness and calcium content. Fruits with more skin blush were correlated with higher vitamin C. Flesh firmness was mostly correlated with dry matter content, but negatively correlated with calcium content and pH values. Vitamin C content was positively correlated with total acids, but negatively correlated with pH values, sugar:acid ratio and calcium content. Total acids were negatively correlated with pH values and sugar:acid ratio. At the end of the storage period, the total acid content was also correlated with dry matter content. Total sugars were closely correlated with dry matter content and negatively correlated with calcium content.&nbsp; Calcium content was very closely negatively correlated with dry matter content, and also negatively correlated with the sugar:acid ratio. &nbsp; &nbsp; &nbsp;

Skim milk powder reconstituted to 8.44% TS, 9.65% TS and 10.84% TS respectively was used for investigation. Untreated milk and milk heat treated at 85?C/20 min and 90?C/10 min, respectively, were used for the investigation. Milk was inoculated with 2.5% of yogurt culture (containing Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus in the ratio 1:1) at 43?C. Samples were incubated until pH 4.6 was reached. Samples were immediately cooled to 4?C and held at that temperature during 14 days. Acid casein gel was stirred after 1, 7 and 14 days of storage. Measurements were done at 30 rpm during 2 min, at 20?C. According to the investigation, it could be concluded that both applied heat treatment and dry matter content influence viscosity of stirred yogurt. Viscosity increases when dry matter content increases. The smallest viscosity had yogurt produced from untreated milk with 8.44% TS, while samples produced from milk with 10.84% TS had the highest viscosity. Applied heat treatments had significant influence on viscosity of yogurt gained by stirring of acid casein gels after 7 and 14 days of storage. Stirred yogurt produced from milk heat treated at 90?C/10 min had a higher viscosity than samples produced from milk heat treated at 85?C/20 min. Storage period influenced average viscosity of stirred yogurt. Samples of stirred yogurt produced from milk with 8.44% TS showed a decrease of average viscosity during storage regardless of the applied heat treatment of milk. The highest average viscosity had samples produced from milk with 10.84% TS.

Variability refers to a process by which differences occur among individuals of the same plant species. However, some characteristics change very little while others, especially quantative ones, change rather quickly and readily even when environmental conditions change slightly. This fact has prompted an investigation aimed to establish the variability of pomological characteristics of the Sumatovka cv. apple tree, a rather old and autochthonous cultivar grown widely throughout Eastern Serbia. Its special characteristic is an ability to grow and bear fruit without any particular care and cultivation, and in conditions of especially severe water deficiency and drought. Sumatovka cv. fruits are small- or medium-sized on the average, the length Measuring 51.3 ? 6.62 mm (CV 12.9%), width 55.5 ? 6.35 mm (CV 11.4%), pedicel lenght 19.5 ? 3.2 mm (CV 16.4%) and fruit mass 66.0 ?20.6 g (CV 31.3%). Total soluble dry matter content of the mesocarp varies between 15.6 and 1.92% (CV 12.31%), total sugars 14.3 ? 4.7% (CV 32.8%) and total sour substances 0.95 ? 0.11% (CV 18.6%). Especially examined were the large-sized Sumatovka fruits measuring 72.0 mm in lenght and width, and 169.4 g in mass.

The aim of this paper is to present the characteristics of new vari­eties of the onion (Zenički and Konjički), created in the Federal Institute for Agriculture Sarajevo and their suitability for cultivation in Bosnia and Herzegovina. The tests were carried out in two years (2012 and 2013) at the site Butmir (Sarajevo). The experiments were conducted in a ran­domized block system in five repetitions. The examination included the following productive traits of the onion: yield and length of the growing season. Within the qualitative characteristics, the contents of dry matters, sugars and proteins were determined in the bulb. The variety Stuttgarter was used as a standard. The new varieties are distinguished by the length of the growing period of 114-115 days. The variety Zenički has achieved a higher yield of bulbs for 17%, while Konjički for 31%, comparing to Stuttgarter. The yields of bulbs in 2013 were higher by 15% comparing to 2012. These varieties are characterized by high quality, because the dry matter content is from 13.8 to 15.88%, total sugars from 8.20 to 10.98%, and proteins from 1.50 to 1.70%, with slightly spicy taste and well wra­pped bulb.

“Vesuviano” or “piennolo” tomato is among the most famous Italian small tomato landraces and is cultivated on the slopes of Vesuvio volcano (Southern Italy). The “piennolo” tomato is an interesting case with regard to its potential sustainability, as it is traditionally grown in water-deficit conditions with a low fertilizer input. Fruits with a high firmness and a thick skin can be stored for 3–4 months at room temperature (“long shelf-life” or LSL tomato) without postharvest fungicide applications. The aim of this research was to study the retention, changes in quality, and nutritional traits of “Vesuviano” tomatoes over 120 days of “natural” storage. The dry matter, soluble sugar, organic acids, volatile compounds, and carotenoid contents were evaluated at harvesting and in fruits stored for 40, 80, and 120 days. Slight decreases in dry matter content, soluble sugars, and sweetness index were found, while the organic acids levels remained relatively stable. Moreover, interesting increases in the concentrations of certain flavor volatiles, alcohols, aldehydes, and terpenes were detected. Regarding carotenoids, the total lycopene levels exhibited a 1.5-fold increase from harvest to 120 days. The unchanged lycopene cis-isomer levels and the β-carotene/total lycopene ratio is characteristic of relatively stable isomerization activity and indicated an optimal ripening pattern up until the end of the “natural” storage period. These results, which demonstrate good overall quality retention of this LSL tomato, represent a well-grounded reason to enhance the cultivation and marketing of this genetic resource, the fruits of which can be appreciated by consumers during the winter–early spring, when high-quality fresh tomatoes are not available on the markets.
