Abstrak. Diantara permasalahan yang dihadapi oleh sektor usaha perikanan ialah  belum efisiennya teknis pengelolaan  dan tidak stabilnya kontinuitas produksi. Hal ini disebabkan oleh kurangnya sarana prasarana untuk mengolah ikan serta sistem pemasaran ikan segar yang masih konvensional, sehingga cepat membusuk apabila tidak diolah lebih lanjut. Penanganan dan pengolahan yang cepat dan tepat diperlukan untuk mengurangi resiko pembusukan dan dapat meningkatkan nilai jual hingga sampai kepada konsumen. Salah satu teknologi untuk meningkatkan masa simpan ikan ialah dengan cara proses pengeringan. Sebuah alat pengering ikan Green-House Effect (GHE) telah dikembangkan. Pengujian dan analisis alat pengering untuk ikan tersebut disajikan dalam makalah ini. Pengering surya ini menambahkan ventilator berupa exhaust fan guna memaksimalkan proses sirkulasi udara di dalam ruang pengeringan. Parameter yang diukur dalam pengujian ini adalah distribusi suhu, kelembaban relatif, iradiasi dan pengukuran kecepatan udara. Hasil penelitian menunjukan bahwa temperatur di dalam ruang pengering terlihat lebih tinggi yaitu 67°C dibandingkan dengan temperatur di lingkungan karena sifat absorber yang mampu menyerap panas. Sementara itu kelembaban relatif di dalam ruang pengering lebih rendah jika dibandingkan dengan kelembaban di lingkungan yaitu sebesar 30,1%. Nilai iradiasi surya yang diperoleh sangat berfluktuasi dengan nilai tertinggi adalah sebesar 180,6 W/m2. Kecepatan udara di dalam ruang pengering surya lebih stabil dibandingkan dengan kecepatan udara lingkungan karena adanya penambahan ventilator berupa exhaust fan. Hal inilah yang menyebabkan proses pengeringan menjadi lebih cepat.Performance of Green House Effect (GHE) Vent Dryer for Fish DryingAbstract. The problems that occur in the fishery business sector are inefficient and unstable continuity of production. The reasons for this include the lack of infrastructure for processing fish and also the very limited marketing of fresh fish due to its fast-rotting nature if not further processed. Fast and precise handling and processing are needed to reduce the risk of spoilage. One of the technologies to increase the shelf life of fish is the drying process. A greenhouse effect vent dryer type fish dryer has been developed. The testing and analysis of the dryer for these fish are presented in this paper. This solar dryer adds a ventilator in the form of an exhaust fan to maximize air circulation in the drying chamber. The parameters measured in this test are temperature distribution, relative humidity distribution, solar irradiation, and air velocity measurement. The results show that the temperature in the drying chamber is 67 ⸰C higher than the temperature in the environment due to the nature of the absorber which can absorb heat. Meanwhile, the relative humidity in the drying chamber was lower than the humidity in the environment, which was 30.1%. The value of solar irradiation obtained fluctuates where the highest irradiation is 180.6 W / m2. The air velocity in the solar dryer is more stable than the ambient airspeed due to the addition of a ventilator in the form of an exhaust fan. This causes the drying process to take place faster.

Abstrak.Mutu cabai kering perlu ditingkatkan sehingga masyarakat  mau menggunakan cabai kering sebagai pengganti cabai segar. Penelitian ini bertujuan untuk mengkaji mutu cabai merah kering yang diberi perlakuan blanching dengan variasi konsentrasi larutan natrium metabisulfit sebelum proses pengeringannya. Variasi konsentrasi yang diuji adalah 0%, 0,2% dan 0,3%. Pengeringan cabai merah dilakukan dengan menggunakan alat pengering terowongan surya tipe Hohenheim termodifikasi. Proses pengeringan berlangsung selama 3 hari dengan rentang waktu yang berbeda yang diakibatkan oleh tahapan perlakuan pra pengeringan yaitu blanching dan kondisi hujan, dimana total waktu pengeringan adalah 10 jam. Hasil penelitian menunjukkan bahwa selama proses pengeringan terjadi fluktuasi iradiasi surya dimana rata-rata iradiasi surya tertinggi diperoleh pada hari ketiga yaitu sebasar  383,73 W/m². Pengeringan menggunakan alat pengering tipe Hohenheim berlangsung dengan rentang temperatur pengeringan 42-62 ºC, RH 26-78%, dan kecepatan udara yang sangat rendah. Peningkatan konsentrasi larutan natrium metabisulfit mempercepat penurunan kadar air sehingga mempercepat proses pengeringan.Vitamin C cabai kering menurun setelah pengeringan sebagai akibat terpaparnya cabai kering terhadap temperatur pengeringan. Rendemen cabai kering menurun dengan peningkatan konsentrasi larutan natrium metabisulfit. Berdasarkan analisis warna, warna tercerah diperoleh pada cabai merah kering perlakuan blanching dalam larutan natrium metabisulfit dengan konsentrasi 0,2%.Increasing quality of dried red chili Pepper by Blanching treatment in solutionof natrium metabisulfiteAbstract.The quality of dried red chili pepper have to improve so that the people will use dried red chili pepper as alternative to fresh red chili pepper. The study aimed to evaluate the quality of dried red chili pepper after blanching in solution of sodium metabisulfite at different concentration i.e. 0, 0.2, and 0.3%. The drying process was done by using modified solar tunnel Hohenheim type dryer.The complete drying process needed 3 days at different durration and the total time used was about 10 hours due to the preparation of blanching treatment and rainy day. Results showed that during the drying process there was high fluctuation of solar irradiation, where the highest average of solar irradiation occurred on the third day, 383.73 W/m². The drying temperature ranged from 42 to 62  ºC and the relative humidity ranged from 26 to 78%. However the air velocity in the drying chamber was very low. The increase of concentration of sodium metabusulfite solution caused the higher water loss therefore shortern the drying process. The vitamin C of dried red chili decreased at all concentration treated due to the high temperature during drying process. The yield of dried red chili decreased as the increase of concentration of sodium metabusulfite solution. The bright colour of dred red chili was gained by using  concentration of sodium metabusulfite solutionat 0.2%.

Abstrak. Manfaat dari proses pengeringan pala yaitu untuk tujuan pengawetan. Tujuan penelitian ini adalah untuk mengkaji proses pengeringan biji pala menggunakan alat pengering hybrid dengan sumber energi matahari dan biomassa serbuk kayu. Total biji pala yang dikeringkan adalah 15 kg. Pembakaran serbuk kayu dilakukan selama pengeringan di malam hari dengan laju 3kg/jam. Parameter penelitian meliputi iradiasi surya, temperatur, kelembaban relatif, kadar air, dan uji organoleptik terhadap warna dan aroma. Hasil penelitian menunjukkan bahwa iradiasi rata-rata yang diperoleh adalah 131,61 W/m2 pada hari pertama dan dihari kedua 131,08  W/m2. Temperatur dalam ruang pengering (44°C) lebih tinggi dibandingkan dengan temperatur lingkungan (33,5°C). Kelembaban relatif rata-rata ruang pengering (27,7%) lebih rendah dari kelembaban relatif rata-rata di lingkungan (42,7%). Untuk mencapai kadar air biji pala 10% dibutuhkan waktu 32 jam secara kontinu dengan alat pengering  dan 39 jam selama 4 hari secara intermitten dengan metode penjemuran. Kapasitas alat pengering 2x lebih besar dari kapasitas penjemuran, dan biji pala kering menggunakan alat pengering lebih disukai oleh panelis dari segi warna dan aromanya.Drying Characteristics of Nutmeg Seed (Myristica Fragranshoutt) by Using a Hybrid Dryer Used Heat Sources from Solar and Sawdust EnergyAbstract. The benefit of drying process of nutmeg seed is to prolong its life. The objective of the study was to observe the drying method of nutmeg seed by using a hybrid dryer used the heat sources from solar and biomass (sawdust) energy. The total nutmeg seed used in this study was approximately 15 kg. The combustion rate of biomass during the night was 3kg/h. The parameters investigated were solar irradiation, temperature, relative humidity, moisture content and organoleptic test on color and flavor. The results showed that the average solar irradiation was 131.61 W/m2 on the first and second day drying. The average temperature in the drying chamber (44°C) was higher than the average ambient temperature (33.5°C). The average relative humidity in the drying chamber (27.7%) was lower than the average ambient relative humidity (42.7%). Crop drying is essential for preservation in agricultural applications. It is performed either using fossil fuels in an artificial mechanical drying process or by placing the crop under the open sun. The first method is costly and has a negative impact on the environment, while the second method is totally dependent on the weather. The drying process requires a lot of energy in relation to the amount of water that must be evaporated from the product. It is estimated that 12% of the total energy used by the food industries and agriculture absorbed in this process. Due to the limitation of energy resources, it is important to keep researching and developing of diversification and optimization of energy This study aims to assess the use of energy for cocoa drying using solar energy dryer and bin-type dryer, as well as to determine the drying efficiency of each type of dryer. The results showed that the efficiency of the solar dryer drying system ranges between 36% to 46%, while the tub-type dryers between 21.7% to 33.1%. The specific energy of solar dryer ranged from 6.17-7.87 MJ / kg, while the tub-type dryers 8.58-13.63 MJ / kg. Dryer efficiency is influenced by the level of solar irradiation and the amount of drying load, the higher the irradiation received and more cocoa beans are dried, the drying efficiency is also higher and the specific energy further down.Proses pengeringan memerlukan banyak energi sehubungan dengan banyaknya air yang harus diuapkan dari bahan yang dikeringkan. Pengeringan dapat dilakukan dengan menggunakan pengering mekanis berbahan bakar fosil atau dengan menempatkan produk di bawah matahari terbuka. Metode pertama adalah mahal dan memiliki dampak negatif pada lingkungan, sedangkan metode kedua sangat tergantung pada cuaca. Diperkirakan bahwa 12% dari total energi yang dipergunakan oleh industri pangan dan pertanian diserap untuk proses ini. Mengingat semakin terbatasnya sumber energi bahan bakar minyak maka usaha diversifikasi dan optimasi energi untuk pengeringan perlu terus diteliti dan dikembangkan. Salah satunya adalah pemanfaatan energi surya sebagai sumber energi terbarukan. Penelitian ini bertujuan untuk mengkaji penggunaan energi untuk pengeringan kakao dengan memakai pengering energi surya dan pengering tipe bak, serta untuk mengetahui efisiensi pengeringan dari masing-masing tipe pengering. Hasil kajian menunjukkan bahwa efisiensi total sistem pengeringan alat pengering surya berkisar antara 36% dan 46%, sedangkan pengering tipe bak antara 21.7% dan 33.1%. Kebutuhan energi spesifik alat pengering surya berkisar antara 6.17-7.87 MJ/kg, sedangkan alat pengering tipe bak 8.58-13.63 MJ/kg. Efisiensi alat pengering dipengaruhi oleh tingkat iradiasi surya dan jumlah beban pengeringan, semakin tinggi iradiasi yang diterima pengering serta semakin banyak biji kakao yang dikeringkan, maka efisiensi pengeringan juga semakin tinggi dan kebutuhan energi spesifik semakin turun.Keywords: energy, efficiency, cocoa, solar dryer, bin-type dryer.

Experiment on catfish drying employing ‘Teko Bersayap’ solar dryer was conducted. The result of the experiment indicated that the dryer was able to increase ambient temperature up to 44% and decrease ambient relative humidity up to 103%. Fish drying process followed equations : KAu = 74,94 e-0,03t for unsplitted fish and KAb = 79,25 e-0,09t for splitted fish, where KAu = moisture content of unsplitted fish (%), KAb = moisture content of splitted fish (%), t = drying time. Drying of unsplitted fish finished in 43.995 hours while drying of split fish completed in 15.29 hours. Splitting the fish increased 2,877 times drying rate.

Abstrak. Jagung merupakan tanaman penghasil karbohidrat terpenting. Pengeringan jagung pipil menggunakan alat pengering merupakan proses untuk menghasilkan jagung pipil yang siap diolah untuk pembuatan tepung jagung dengan batas kadar air tertentu sehingga menghaslkan jagung pipil dengan kualitas yang baik. Tujuan penelitian ini adalah untuk mengkaji karakteristik pengeringan biji jagung menggunakan alat pengering surya Termodifikasi. Metode penelitian  menggunakan 3,15 kilogram jagung pipil dengan kadar air awal 22% untuk proses pengeringan. Parameter yang dianalisis terkait alat pengering kolektor surya yaitu temperatur, kelembaban relatif, kecepatan udara dan iradiasi surya, sedangkan parameter yang dianalisis terkait bahan yaitu kadar air, lama waktu pengeringan, laju pengeringan dan organoleptik. Prosedur penelitian terdiri dari pengujian kosong dan pengujian dengan menggunakan jagung pipil. Hasil penelitian menunjukkan bahwa temperatur rata-rata dalam rak pengering sebelum dilakukan modifikasi yaitu 44,4oC, temperatur rata-rata setelah dilakukan modifikasi yaitu 55,5oC dan temperatur rata-rata rak pengering pada pengeringan menggunakan jagung pipil yaitu 46,96oC. Kelembaban relatif rata-rata dalam rak pengering sebelum dilakukan modifikasi yaitu 40,1%, kelembaban relatif rata-rata dalam rak pengering setelah modifikasi yaitu 35,1% dan kelembaban relatif rata-rata pengeringan menggunakan jagung pipil yaitu 44,45%. Dari hasil pengukuran tersebut menunjukkan bahwa nilai temperatur dan kelembaban pada alat setelah modifikasi lebih baik dibandingkan sebelum alat dimodifikasi. Pengukuran temperatur dan kelembaban relatif terdiri dari 4 titik pengukuran yaitu rak 1A,1B dan rak 2A, 2B. Kecepatan udara rata-rata yang diukur konstan yaitu 0,7 m/s pada ruang pengering, sedangkan lingkungan 1,1 m/s. Total iradiasi surya selama pengeringan yaitu 1848,84 W/m2. Kadar air jagung pipil masing-masing rak yaitu rak 1A 14,29%, rak 1B 14,47%, rak 2A 13,91% dan rak 2B 14,1%. Hasil dari pengujian organoleptik, panelis agak menyukai jagung pipil yang dikeringkan menggunakan alat pengering tersebut.Characteristics of Seed Drying (Zea mays L.) Using a Modified Adriyarkara Solar DryerAbstract. Corn is the most important carbohydrate plant. Drying corn using a drying tool is a process to produce corn that are ready to be processed for making corn flour with a certain water content limit so as to produce corn with good quality. The purpose of this study was to examine the characteristics of drying of corn kernels using a modified solar dryer. The research method used 3,15 kilogram of corn milled with the initial moisture content of 22% for drying process. The parameters analyzed in relation to solar collector dryers are temperature, relative humidity, air velocity and solar irradiation, while the parameters analyzed are materials such as moisture content, drying time, drying rate and organoleptic. The research procedure consists of unloaded testing and testing using corn. The results showed that the average temperature in the dryer tray before modification was 44,4°C, the average temperature after modification was 55,5°C and the average temperature of the dryer tray on drying using corn was 46,96oC. The average relative humidity in the dryer tray before modification is 40,1%, the average relative humidity in the dryer tray after modification is 35,1% and the average relative humidity of drying using corn is 44,45%. From the measurement results show that the value of temperature and humidity in the tool after modification is better than before. Measurement of temperature and relative humidity consist of 4 point of measurement that is tray 1A, 1B and tray 2A, 2B. Average mean air velocity measured is 0,7 m/s at the dryer room, while the environment is 1,1 m/s. Total solar irradiation during drying is 1848,84 W/m2. Moisture level of corn each shelves tray 1A is 14,29%, tray 1B is 14.47%, tray 2A is 13,91% and tray 2B is 14,1%. As a result of organoleptic testing, panelists rather like dried corn using the dryer.

A new hybrid solar dryer was designed and constructed in this study, which consisted of a flat-plate solar collector with dual-function (DF-FPSC), drying chamber with glass, fan etc. The DF-FPSC was firstly applied in drying agricultural products. The innovative application of hybrid solar dryer can control the drying chamber air temperature within a suitable range by different operation strategies. Drying experiments for lemon slices in the hybrid solar dryer were conducted by comparing open sun drying (OSD). Eight mathematical models of drying characteristics were employed to select the most suitable model for describing the drying curves of lemon slices. Furthermore, energy, exergy economic and environment (4E) analysis were also adopted to analyze the drying process of lemon slices. The results show that under the same experimental condition, the drying capability of the hybrid solar dryer was stronger than that of OSD. Meanwhile, it was found that the Two term and Wang and Singh models were the most suitable for fitting the lemon slices’ drying characteristics inside the hybrid solar dryer. The drying chamber air temperature can be controlled under about 60 °C during the process of lemon slices’ drying. The experimental results show the feasibility and validity of the proposed hybrid solar dryer.

The aim of this study was to determine the effect of differentiated air relative humidity during the drying process on selected quality features of TSG (traditional specialties guaranteed) pork and poultry-pork kabanosy. After heat treatment and 24-hour cooling at 4–6°C, the products were placed in three chambers at 15°C with differentiated air relative humidity: 60, 70, and 80%, respectively. The drying process was carried out until all variants of kabanosy achieved the required final yield of the product (<68%). Color components, water activity and shear force, water, protein, fat, and salt content, and the TBARS indicator values were determined. The drying process might be shortened (~50%) by a reduction of humidity in the drying chamber from 80 to 60%. The changes in the content of chemical components in pork kabanosy compared to poultry-pork ones demonstrated the different dynamics of the drying of the two types of kabanosy and the need for the selection of optimum drying conditions relative to raw material composition.

This study aimed to examine the energy and exergy indices of the rosemary drying process in a hybrid-solar dryer (HSD) and the effects of air-drying parameters on these thermodynamic indices. Drying experiments were carried out at four levels of air temperature (40, 50, 60, and 70 ∘C) and three levels of air velocity (1, 1.5, and 2 m/s). Energy and exergy were calculated by application of the first and second laws of thermodynamics. Based on the principal laws, energy efficiency, exergy losses, and exergetic improvement potential rate, were evaluated. The results showed that the energy utilization ratio (EUR) ranged from 0.246 to 0.502, and energy utilization (EU) ranged from 0.017 to 0.060 (kJ/s). Exergy loss and efficiency varied from 0.009 to 0.028 (kJ/s) and from 35.08% to 78.5%, respectively, and increased with increased temperature and air velocity. It was found that the exergy loss rate was affected by temperature and air velocity because the overall heat transfer coefficient was different under these conditions. By comparison, with increasing temperature and air velocity, the exergy efficiency increased. Because most energy is used to evaporate moisture, this behavior may be explained by improved energy utilization. The drying chamber sustainability index ranged from 0.0129 to 0.0293. This study provides insights into the optimization process of drying operations and operational parameters in solar hybrid dryers that reduce energy losses and consumption.

An experimental investigation was conducted to study the performance of a novel indirect type free convection solar dryer. The novel and a conventional indirect passive solar dryer were built. Solar irradiation and temperature of different locations were recorded. The air at the drying chamber entrance, lower space, and upper space temperatures besides the thermal efficiency of the novel dryer were 68, 39, 49 and 85%, respectively, higher than the conventional one.

The drying process is very intensive in energy consumption. Mexico is a major producer of food, especially of varieties of chilies, with quality culinary and medicinal properties. The 65% of the national market as a dry product, which gives a benefit. In the drying process, the convective technology was used, using a horizontal tunnel with direct solar heating air. The kinetics of the solar dryer with direct heating is possible, with an average drying time of 16 hours of solar irradiance. The tests were performed in Temixco, Morelos, Mexico, located at 18 º 51 'of LN and 99º 14' of LO, with average values of 850 W/m2 irradiance maximum. The chamber temperatures were in a range between 31 and 45 °C. The air velocity range was set between 1.3 and 2.4 m/s. Final moisture contents of the dried chili were obtained in a range between 8% and 6% h.b. with an average drying velocity of 4.7 humidity degree/h. The solar direct drying is a technology that allows recovering and trying different agricultural surpluses and could promote the establishment of agro-industries.
