Antioxidants are important to human health, as they are responsible for reduced risk of diseases such as cancer, hence motivating researchers to examine crop plants for available antioxidant compounds. There is also increasing interest in the use of antioxidants from plants instead of synthetic products. In order to evaluate variability of antioxidant activity (AOA) in cowpea, 697 cowpea accessions from the U.S. Cowpea Core Collection obtained from the Regional Plant Introduction Station, Griffin, Ga., were analyzed for AOA expressed as μg trolox equivalents/gdw. Two grams of dry seed from each accession were ground, extracted in methanol and analyzed for AOA using the free radical, 2,2-Diphenyl-1-picrylhydrazyl (DPPH), method. A large variation in AOA within the core collection, ranging from 1859 μg·g–1 dw (PI 180355, pigmented seed coat) to 42.6 μg·g–1 dw (PI 583100, cream seed coat), was observed. A least significant difference of 131.5 (p =0.05) was obtained. Higher AOA was manifested by accessions with pigmented seed coats. Accessions that were speckled, striped or had a pigmented eye were moderate in AOA, while the cream types were generally low. Variability in AOA observed among cowpea accessions suggests that breeding for high AOA can be successfully conducted. Accessions with high AOA could also be used to extract antioxidants for industrial purposes. Some accessions were a mixture of various colors and patterns, making it difficult to classify them into a particular category. Therefore, there is need to ensure purity of these accessions by ascertaining whether the mixtures are physical, i.e., combination of different varieties, or are composed of segregating material.

We determined how the antioxidant activity and total phenolic content of honey changed after being subjected to a high temperature. Antioxidant activity was determined using two methods – FRAP (ferric reducing antioxidant power) and DPPH (1,1-diphenyl-2-picrylhydrazyl) assays. Total phenolic content was determined by modified Folin-Ciocalteu method. The research was conducted on 31 samples of acacia honey and 8 samples of chestnut honey. All measurements were done at two temperatures – at 23°C (room temperature) and after 5 min of heating at 95°C. The obtained results show uneven changes of antioxidant activity and total phenolic content among individual samples, i.e. in some samples antioxidant activity decreased after heating, while in others it increased. The same applies to the total phenolic content. Statistical analysis of the results (t-test) showed no statistically significant differences between the results measured at two different temperatures (P > 0.05) in all three methods used, and in both types of honey. The only statistically significant difference (P < 0.05) was observed when using DPPH method in acacia honey.

The purpose of this study was to compare the composition and contents of phenolic acids and condensed tannin in the seed coats of white and coloured varieties of pea and to examine the antioxidant properties of methanol and acetone extracts containing these phenolic compounds. The contents of phenolic acids were quantified by the HPLC analysis. The sum of free phenolic acids, those liberated from soluble esters and those liberated from soluble glycosides, was higher for coloured seed coat (78.53 g per g dry matter) than for the white seed coat (17.17 g/g dry matter). Protocatechuic, gentisic and vanillic acids were found dominant in the coloured seed coat, while ferulic and coumaric acids in the white seed coat. The content of condensed tannins was 1560 mg of catechin equivalent/100 g of coloured seed coat as determined by a vanillin assay. No condensed tannins were detected in the white seed coat. The antioxidant activity of extracts was measured by the oxidation of phosphatidylcholine to hydroxyperoxidephosphatidyl choline in the liposome system. Strong antioxidant properties were observed in a crude tannin extract from the coloured seed coat. These properties were slightly changed after the seed coat was cooked in water for 30, 60 and 90 min.

Mulberry (Morus spp. L., Moraceae) fruits, leaves, bark and branch have been used in traditional medicine as diuretic, hypoglycemic and hypotensive. The mechanism of their effects is correlated with the content of active components. Objective of this work was to evaluate and compare antioxidant properties of different extracts of two Morus species growing in Serbia: Morus alba L. (white mulberry) and Morus nigra L. (black mulberry). Potential antioxidant activity, content of antioxidant compounds (phenolics and flavonoids) and radical scavenging capacity, tested by DPPH method, were evaluated. The phenolic and flavonoid composition of different Morus extracts was determined by the HPLC method. The extracts prepared from fruits, leaves and roots of M. alba and M. nigra exhibited different characteristics. The highest extraction yield was achieved by M. alba leaves extraction (23.40%). M. nigra roots extract shown the highest total phenolics (186.30 mg CAE/g), while highest total flavonoids content (67.37 mg RE/g) was determined for M. nigra leaves extracts. In addition, black mulberry leaves extracts with the highest antioxidant activity had the highest phenolic acids contents. The dominant phenolic components in the samples were rutin and chlorogenic acid. All investigated mulberry dry extracts shown high content of phenolic compounds and significant antioxidant activity. This work contributes to knowledge of the antioxidant properties of Morus species. The obtained results may be useful in the evaluation of new dietary supplements and food products.
