Consumption of unprocessed meat products in the conditions of increasing and subsequent preservation of achieved meat production volumes in the Russian Federation is continue to increase. At present, semi-finished products occupied first in the overall structure of production and consumption meat products, having overtaken in aggregate all types of processed products. In the background of increasing competition between domestic producers, the requirements for the packaging of the main types of unprocessed products – cuts and lumpy semi-finished products – will be continue to increase as an important driver of sales. Research studies play an important role in the development of packaging solutions for industry. This review focuses on the main areas of scientists studying from different countries. Modern scientific achievement in the field of vacuum packaging for chilled meat and semi-finished products including heat-shrinkable materials and skin packaging are presented. Special attention was paid to the forming safety and quality indexes of meat products, as well as functionality and “barrier” of packaging materials. Basic aspects of modified atmosphere packaging with different gas mixture including monoxide carbon and high oxygen using to maintain the desirable bright red color meat are considered.The further directions for development of technology sous-vide are discussed, as well as active and intelligent packaging. The search for new ideas in the field of active and smart packaging will help for better controlling shelf life, regulating freshness and maintaining stable quality of meat products.

This article presents the results of studying the impact of housing and feeding conditions on broiler chickens of Hubbard RedBro cross, as well as the quality of products obtained when using floor and cage content, in a farm. It established that when receiving a mixed feed of own production using feed raw materials grown on a farm without the use of pesticides, a statistically significant decrease in potentially dangerous substances for animal health is recorded. Compared with factory feed, it has reduced the content of pesticides by 14 times, and mercury and arsenic by 24 times, cadmium by five times, and lead by ten times. The results of the study of economic indicators of growing Hubbard RedBro cross broiler chickens, as well as the chemical composition and quality of carcasses, indicated that there was no significant difference between the floor and cell conditions of keeping. Still, the use of a diet based on eco-feeds contributed to a statistically significant decrease in the concentration of toxic metals in the muscles of the poultry of the experimental groups. As a result, it found that the use of the studied compound feed in the diets of broiler chickens increased the indicators of Biosafety and ensured the production of environmentally safe ("organic") poultry meat products.

Meat production and consumption have been claimed to have negative impacts on the environment, and even on the consumer’s health. In this sense, alternative sources of protein, mainly meat substitutes and cultured meat, have emerged due to those perceived negative effects. Our paper carries out a choice experiment to analyze the preferences of 444 Spanish consumers and their willingness to pay for plant-based and cultured meats, as compared to conventional meat. Spain was considered of interest for this study due to its significant gastronomic culture, with high-quality meat products that make a great contribution to the economy, meaning that this could be a suitable and also challenging market in which to test alternative sources of protein. The findings show that consumers’ motivations and their interactions with these products are complex. Additionally, a cluster analysis allowed us to identify three types of consumers in terms of preference for these products: price-sensitive millennials, conscious/concerned consumers, and indifferent consumers. Only one group showed some level of acceptance of these alternative products meats.

The effect of raw material characteristics (longissimus dorsi and biceps femoris) on dry-cured loin and ham quality from three different Iberian · Duroc genotypes was studied: GEN1: ♂ Iberian · ♀ Duroc1, GEN2: ♂ Duroc1 · ♀ Iberian; GEN3: ♂ Duroc2 · ♀ Iberian. GEN1 and GEN2 are reciprocal crosses, while the difference between GEN2 and GEN3 is the Duroc sire line. The line Duroc1 (DU1) was selected for the manufacture of dry-cured meat products, whereas the line Duroc2 (DU2) was selected for meat production with low carcass fat. Raw material and dry-cured meat products did not differ between reciprocal crosses (GEN1 vs. GEN2). However, the genotype of the Duroc sire line affected the quality of meat and dry-cured meat products. GEN1 and GEN2 had higher adipogenic nature and higher postmortem pH than GEN3, and as a result, these dry-cured meat products had better instrumental and sensory quality than those from GEN3. By contrast, meat from GEN3 had lower pH, fat content, and oxidative stability which decreased the quality of dry-cured meat products. Therefore, there was a close connection between raw material and dry-cured meat products quality as it was affected by characteristics related to the genotype such as the adipogenic character and meat quality traits associated with pH.

This chapter aimed to discuss population, meat production, and quality characteristics of camels. Camels are considered environmentally friendly and well adapted to the desert's harsh arid and semiarid environment due to their high movability, adequate fodder demand, and water regulation. Camels are most populous in the East Africa and Middle East. Although approximately 250,000 camels are annually slaughtered in many countries and camels as a producer of meat is becoming much more significant, camel meat market has not yet developed. In 2019, the global camel meat production in Africa was leading with 419,933 tonnes production, followed by Asia (210,000 tonnes) and Europe (179 Tonnes). An important feature that characterizes camelid meat products is the low level of intramuscular and subcutaneous fat compared to red meat sources. Pre- and post-mortem factors should be carefully considered to improve camel meat quality characteristics. According to the health aspects and quality of camel meat, it can be successfully marketed alongside cattle, dear, sheep, and goat.

One of the most effective ways of removing HM salts that have entered the digestive tract of fattened animals is the technological method of including adsorbent preparations in their diets, which, binding various toxins, excrete them from the body. The study purpose is to develop a method to increase the meat productivity and quality of meat of young cattle for fattening in a technogenic zone by inclusion of ToxySorb adsorbent in their diets with a high content of heavy metal salts in the amount of 1.25 kg/t of compound feed and lecithin in the amount of 10 g/100 kg of live weight. According to study results, it was shown that when these drugs were fed together in the indicated quantities, it contributed to better detoxification of xenobiotics. The calf bulls of experimental group 3 had the best slaughter indicators, as well as the best consumer, sanitary and hygienic properties of meat products.

The paper presents the results of the development wheat bread using a new ingredient – a water-ethanol extract of the sea green alga Ulva lactuca, which contains biologically active substances, minerals, trace elements, and has a proven positive effect on the human body. Rational dosages of the extract have been selected, eliminating the technological risks of its use in the recipe for bakery products. The safety and quality of a new food ingredient and bakery products with its addition is shown in accordance with the requirements of the regulatory documents of the Russian Federation and the EAEU. В Доктрине продовольственной безопасности России на период до 2030 года одной из приоритетных задач является повышение обеспеченности народонаселения молочно-мясной продукцией отечественного производства. Для успешного решения этой задачи потребуется интенсификация кормопроизводства не только на мегафермах, но и на традиционных сельхозпредприятиях, в крестьянских фермерских и личных подсобных хозяйствах. В статье на примере Нечернозёмной зоны дана оценка современного состояния кормопроизводства и перспектив его развития до 2030 года с использованием статистических данных, научно обоснованных рекомендуемых технологий и систем повышения продуктивности кормовой базы на основе сочетания полевого и лугового кормопроизводства, а также с учётом предложений, сформулированных ведущими учёными-экономистами по модернизации управления аграрными и нерегулируемыми рыночными отношениями. На основе анализа современного состояния полевого и лугового кормопроизводства и имеющегося научно-производственного опыта дано обоснование многовариантным направлениям модернизации этой отрасли сельского хозяйства для решения задач, поставленных в Доктрине по развитию животноводства. Соотношение полевого и лугового кормопроизводства в каждом регионе и даже каждом хозяйстве зависит не только от природно-экономических условий и современного состояния сельскохозяйственных угодий, но и от экономических показателей технологий их интенсификации, себестоимости корма и животноводческой продукции, её количества, а также здоровья и продуктивного долголетия животных. Для достижения цели, поставленной в Доктрине, необходимо научным сообществом и макроэкономическим руководством разработать критерии выполнения программы, экономические стимулы её поддержки и методологию, которая послужит основой для разработки программы по федеральным округам и областям, а также основой методики для различных типов хозяйств. According to the Food Security Doctrine of the Russian Federation one of the priority tasks is the increase in domestic milk and meat products by 2030. To achieve this goal advanced forage production technology is required. This paper reports on the current state of the forage production sphere in the Non-Chernozem region as well as potential approaches to improve it by 2030. The review deals with statistical data, validated technologies and methods combining field and grassland forage production, expert evaluation of agricultural and free market relations. Promising ways to improve this sphere are based on theoretical and practical investigations of the current state of field and grassland forage production. Proportions of field and grassland forage in the particular region depend on environmental conditions, economy, quality of agricultural lands, economic efficiency of a modernization approach, prime costs of feed and animal products as well as health and productivity of livestock. To meet the Doctrine goal researchers and leading economists have to introduce criteria to implement modernization, provide financial support and methodology as a basis of such modernization suitable for particular regions and farms.

The study aimed at an evaluation of fattening and slaughter performance as well as meat quality of the native Złotnicka Spotted (ZS) pigs and its crosses with Duroc pigs. The experimental material comprised 60 fatteners, divided into three genetic groups of 20 animals (100% ZS, 75% ZS and 50% ZS). The specific character of conservative breeding results in low values of fattening and slaughter performance traits observed in ZS breed. Among the analysed groups, animals with 100% share of ZS genes in their genotype were characterised by low daily weight gains (0.59 kg), considerable backfat thickness (34.96 mm), slight muscle thickness (48.05 mm), and low leanness (41.83%). These parameters were higher in both groups of crosses. Differences between the 100% ZS group and the 50% ZS group were significant for backfat thickness and highly significant for leanness. Acidity and colour parameters analysis showed that meat from all the genetic groups analysed was characterised by a good quality. The highest pH<sub>45 </sub>values were in the 75% ZS group, and meat from this group had the darkest colour (L* = 49.73) and the highest red colour share (a*&nbsp;=&nbsp;5.11). Statistical analyses showed that ZS breed retained its original traits through the years of breeding. It was confirmed that meat of Złotnicka Spotted breed is characterised by excellent quality. The results indicate that ZS and Duroc breeds crossing improves fattening and slaughter performance, while maintaining good meat quality in their crosses. Results of this study may also be used by breeders. They indicate that crosses of both the breeds kept in extensive breeding may be successfully used in high quality meat production. Pork from such animals may be a raw material for market niche production, such as regional products. The use of meat from crosses in meat processing may improve both quality of the processed products and efficiency of production based on the native Złotnicka Spotted breed. &nbsp;
