Совершенствование процессов модификации масел и жиров при получении жировых полуфабрикатов с оптимальными свойствами кристаллообразования является актуальным для масложирового и кондитерского производств. Существует ограниченное количество природных растительных масел с оптимальным жирнокислотным и триглицеридным составом для применения в качестве основы жировых смесей при производстве кондитерских жировых начинок. Богатые насыщенными жирными кислотами какао-масло и масло ши являются дорогостоящими жировыми компонентами со специфическими свойствами для использования в кондитерских изделиях. Между тем пальмовое масло имеет хороший баланс между насыщенными и ненасыщенными жирными кислотами. С целью снижения себестоимости жировых полуфабрикатов за счет повторной переработки образующихся промежуточных олеиновых фракций пальмового масла и получения жировых полуфабрикатов, имеющих аналогичные средней фракции пальмового масла физико-химические и структурно-механические свойства, проведено комплексное исследование физико-химических свойств и основных показателей плавления и застывания разработанных жировых композиций: температура застывания не более 23,4°C; твердость при 20°C от 43,7 до 44,7%; массовая доля триглицерида POP от 41,4 до 42,7%. Физико-химические характеристики исходных компонентов жировых полуфабрикатов, %, твердость при 20°C: промежуточной олеиновой фракции 32,5; первой стеариновой фракции 74,3; средней фракции пальмового масла 45,6. Температура плавления промежуточной олеиновой фракции 32,8°C. Получены образцы жировых полуфабрикатов для производства кондитерских жировых начинок (индекс кристаллизации от 1,9 до 2,0). Результаты исследования показали возможность создания жировых полуфабрикатов – аналогов средней фракции пальмового масла, имеющих в составе 10% промежуточной олеиновой фракции. Improvement of the processes of modification of oils and fats when obtaining fatty semi-finished products with optimal crystal formation properties is relevant for production fat and oil products and confectionery. There is a limited amount of natural vegetable oils with an optimal fatty acid and triglyceride composition for use as the basis of fatty mixtures in the production of confectionery fat fillings. Rich in saturated fatty acids, cocoa butter and shea butter are expensive fatty components with specific properties for use in confectionery. Meanwhile, palm oil has a good balance between saturated and unsaturated fatty acids. In order to reduce the cost of semi-finished fat products by re-processing the formed intermediate oleic fractions of palm oil and obtaining fat semi-finished products having physicochemical and structural-mechanical properties similar to the middle fraction of palm oil, a comprehensive study of the physicochemical properties and the main indicators of melting and solidification developed fatty compositions: pour point no more than 23,4°C; hardness at 20°Cfrom 43,7 to 44,7%; mass fraction of POP triglyceride from 41,4 to 42,7%. Physical and chemical characteristics of the initial components of fatty semi-finished products, %, hardness at 20°C: intermediate oleic fraction 32,5; first stearic fraction 74,3; middle palm oil fraction 45,6. The melting point of the intermediate oleic fraction is 32,8°C. Samples of fatty semi-finished products for the production of confectionery fatty fillings (crystallization index from 1,9 to 2,0) were obtained. The results of the study showed the possibility of creating fatty semi-finished products – analogues of the mid-fraction of palm oil, which contain 10% of the intermediate oleic fraction.

In order to confirm the substitutability of palm oil for lard, the fatty acid composition and their distribution at the Sn-2 position of triglycerides in three kinds of palm oil products and five kinds of lard products were investigated. The results obtained were as follows. Palm oil has similar saturated fatty acids composition (C16:0, C18:0, C18:1, C18:2) with lard, and has slightly lower unsaturated fatty acids content than lard. The Sn-2 position of palm oil is mainly distributed with unsaturated fatty acids (C18:1, C18:2), while the Sn-2 position of lard is mainly distributed with saturated fatty acids (C16:0, C18:0), which is maybe the cause why palm oil is easier to be digested and absorbed than lard.

AbstrakRasio kolesterol total/ HDL merupakan variabel lipoprotein terbaik dalam memprediksi risiko penyakit kardiovaskular. Peningkatan risiko penyakit kardiovaskular dapat disebabkan oleh tingginya kadar kolesterol serum. Minyak sawit mengandung 50% asam lemak jenuh dan 50% asam lemak tidak jenuh. Tujuan penelitian ini adalah mengetahui perbedaan rasio kolesterol total/ HDL antara kelompok kontrol dengan kelompok diet tinggi minyak sawit pada tikus. Penelitian ini adalah eksperimental dengan pendekatan post test only control group design. Sampel penelitian terdiri dari 10 ekor tikus Wistar jantan yang dibagi menjadi kelompok kontrol (K) dan kelompok perlakuan (P). Diet tinggi minyak sawit (minyak sawit 42.5%, 3ml/hari) diberikan pada kelompok P selama empat minggu. Analisis data menggunakan uji t independent. Hasil penelitian menunjukkan terdapat perbedaan peningkatan yang tidak bermakna antara kelompok P dan kelompok K pada rerata kolesterol, yaitu 63.66±9.9(P) 57.39±3.28(K) (p>0.05), rerata HDL 19.44±3.99(P) 17.64±2.00(K) (p>0.05), dan rerata rasio kolesterol total/ HDL 3.26±0.24 (P) 3.31±0.32 (K) (p>0.05). Kesimpulan penelitian ini adalah kadar kolesterol total, HDL, dan rasio kolesterol total/ HDL pada kelompok kontrol dan kelompok diet tinggi minyak sawit tidak berbeda.Kata kunci: diet tinggi minyak sawit, kolesterol, HDL, rasio kolesterol/ HDLAbstractThe ratio of total cholesterol/ HDL is the lipoprotein variables best predict the risk of cardiovascular disease . The increased risk of cardiovascular disease can be caused by high levels of cholesterol exciting. Palm oil contains 50% saturated fatty acids and 50% unsaturated fatty acids. The purpose of this study was to know the differences ratio of total cholesterol/ HDL between the control group and high palm oil diet group in rats. This research was experimental with post-test only control group. The study sample consisted of 10 male Wistar rats were divided into control group (K) and treated group (P). High-palm oil diet (50% palm oil, 3ml/day) was given to the group P for four weeks. Analysis of data using independent t test. The results showed there were no significant differences in improvement between groups P and groups K in mean cholesterol, 63.66 ± 9.9 (P) 57.39 ± 3.28 (K) in (p> 0.05), mean HDL 19.44 ± 3.99 (P) 17.64 ± 2.00 (K) in (p> 0.05), and the mean ratio of total cholesterol/ HDL 3.26 ± 0.24 (P) 3.31 ± 0.32 (K) in (p>0.05). The conclusion of this study is total cholesterol, HDL, and the ratio of total cholesterol/ HDL in the control group and the high palm oil diet group did not differ.Keywords: high palm oil diet, cholesterol, HDL, ratio of cholesterol/HDL

This study was conducted to determine the effect of liquid smoke as a fat protector on unsaturated fatty acids (UFAs) and its effect on rumen fermentation characteristics and microbial activity. Crude palm oil (CPO) was mixed with Prosteo skim milk (1:2), then divided into three treatments i.e., crude palm oil without protection by liquid smoke as a control (P0), crude palm oil protected by 2.5% of liquid smoke (P1), and crude falm oil protected by 5.0% of liquid smoke (P2). For in vitro testing, 300 mg of the feed substrate (elephant grass and bran with the ratio of 60:40) was added with 5% of each crude palm oil preparation of P0, P1, and P2 and put in a fermentor syringe. Then, 30 mL of the mixture of rumen fluid and buffer-minerals solution (1:2) was added into each syringe fermentor and flushed with CO2. The fermentor syringes were incubated in a water bath at 39ᵒC for 48 hours. Variables measured were fatty acid composition, fermentation characteristics, and rumen microbial activity. The data were analyzed by the analysis of variance with a completely randomized design. The results showed that the protection of CPO with liquid smoke in P1 and P2 groups decreased saturated fatty acids (SFAs), but increased (p<0.01) monounsaturated fatty acids (MUFAs), polyunsaturated fatty acids (PUFAs), and CMCase activity. Protection of CPO with 2.5% of liquid smoke (P1) significantly increased (p<0.01) fermentation characteristics (NH3 content and pH). It can be concluded that the use of 2.5% of liquid smoke has a better effect on feed fats protection, because it can reduce hydrogenation, increase UFAs, and has no negative effects on fermentation characteristics and microbial activity.

Background: Sheep milk production is becoming an important alternative in the agricultural sector. It is used principally to produce fine cheeses, yogurts, and ice creams, and these produced from sheep’s milk are beneficial to human health. Previous study with palm oil shows increase in fat levels in sheep’s milk. Our hypothesis for increased fat in milk is that palm oil increases lipid metabolism as well as tissue reserves. Sheep consuming this palm oil will have a change in the fatty acid profile of milk, increasing levels of unsaturated fatty acids. Therefore, the aim of this study was to determine the levels of cholesterol and triglycerides, as well as fatty acid profile of milk these ewes fed of palm oil.Materials, Methods & Results: Thirty-six lactating sheep were divided in four groups (n = 9), with each group receiving various concentrations of palm oil in diet (0%, 2%, 4%, and 6% which corresponds to T 0, 2, 4 and 6, respectively). The diets in each treatment were isoproteic and isoenergetic. The experiment lasted 120 days, and blood and milk samples were collected on days 60 and 12 of the experiment. Blood was collected for seric analysis of lipid metabolism. Was collected milk samples and analyzed the content of saturated fatty acids (SFAs), monounsaturated fatty acids (MUFA), and polyunsaturated fatty acids (PUFA). An increase (P < 0.05) in triglyceride and coleterol levels in the serum of the animals that received the highest concentrations of palm oil in the diet (T4 and T6). The centesimal composition of fat, lactose, and protein in milk was not different at days 60 and 120 (P > 0.05) between groups, but numerically the animals in T4 and T6 had higher percentage of fat in milk. A decrease in milk SFA levels was observed on day 120 at T6. There was a significant reduction in caproic acid, caprylic acid, hendecanoic acid, lauric acid, and pentadecyl acid. The levels of palmitic acid (C16:0) increased when compared with the control group. Also at 150 days, it was observed a reduction in the percentage of area capric acid and myristic acid in animals that had higher doses of calcium salts in the diet, different from stearic acid, which increased. A variability in MUFA levels was observed during the evaluated periods, i.e. heptadecenoic acid decreased on days 60 and 120 for animals of T6; an increased content of elaidic acid was observed on day 60, and levels of vaccenic acid decreased on day 120 at 6% palm oil. A decrease in PUFA levels was observed on day 60 at T6, specifically a significant reduction in alpha-linolenic and arachidonic acid, as well as levels of conjugated linoleic acid 1 decreased on day 120 for animals supplemented with 6% of palm oil.Discussion: The addition of plama oil in the diet of dairy sheep increased seric levels of triglycerides and cholesterol, as well as positively altered the composition of fatty acids in milk, making a product healthier to the consumer. This study showed that the addition of 2% and 4% palm oil in the feed of dairy sheep promoted a decrease in several SFAs associated with coronoary heart disease after 60 days of treatment. On the other hand, the addition of 6% palm oil promoted an increase of total SFA levels after 60 days of treatment, while decreaseing total PUFA levels. This can be considered harmful to consumers, since several SFA are associated with coronary heart diseases, and several PUFA are linked with reductions in inflammation, stroke, oxidative stress and hepatic disorders. In summary, the consumption of sheep milk who received the diets with 2% and 4% of palm oil can exert beneficial effects for consumers, and may be an option for farmers to increase the milk yield of sheep, and to reduce the profile of saturated fatty acids in milk.

Abstract Background In ruminants, dietary C18:3n-3 can be lost through biohydrogenation in the rumen; and C18:3n-3 that by-passes the rumen still can be lost through oxidation in muscle, theoretically reducing the deposition of C18:3n-3, the substrate for synthesis of poly-unsaturated fatty acids (n-3 LCPUFA) in muscle. In vitro studies have shown that rumen hydrogenation of C18:3n-3 is reduced by supplementation with palm oil (rich in cis-9 C18:1). In addition, in hepatocytes, studies with neonatal rats have shown that cis-9 C18:1 inhibits the oxidation of C18:3n-3. It therefore seems likely that palm oil could reduce both rumen biohydrogenation of C18:3n-3 and muscle oxidation of C18:3n-3. The present experiment tested whether the addition of palm oil to a linseed oil supplement for goat kids would prevent the losses of C18:3n-3 and thus improve the FA composition in two muscles, Longissimus dorsi and Biceps femoris. To investigate the processes involved, we studied the rumen bacterial communities and measured the mRNA expression of genes related to lipid metabolism in Longissimus dorsi. Sixty 4-month-old castrated male Albas white cashmere kids were randomly allocated among three dietary treatments. All three diets contained the same ingredients in the same proportions, but differed in their fat additives: palm oil (PMO), linseed oil (LSO) or mixed oil (MIX; 2 parts linseed oil plus 1 part palm oil on a weight basis). Results Compared with the LSO diet, the MIX diet decreased the relative abuandance of Pseudobutyrivibrio, a bacterial species that is positively related to the proportional loss rate of dietary C18:3n-3 and that has been reported to generate the ATP required for biohydrogenation (reflecting a decrease in the abundance of rumen bacteria that hydrogenate C18:3n-3 in MIX kids). In muscle, the MIX diet increased concentrations of C18:3n-3, C20:5n-3, C22:6n-3, and n-3 LCPUFA, and thus decreased the n-6/n-3 ratio; decreased the mRNA expression of CPT1β (a gene associated with fatty acid oxidation) and increased the mRNA expression of FADS1 and FADS2 (genes associated with n-3 LCPUFA synthesis), compared with the LSO diet. Interestingly, compared to Longissimus dorsi, Biceps femoris had greater concentrations of PUFA, greater ratios of unsaturated fatty acids/saturated fatty acids (U/S), and poly-unsaturated fatty acids/saturated fatty acids (P/S), but a lesser concentration of saturated fatty acids (SFA). Conclusions In cashmere goat kids, a combination of linseed and palm oils in the diet increases the muscle concentration of n-3 LCPUFA, apparently by decreasing the relative abundance of rumen bacteria that are positively related to the proportional loss rate of dietary C18:3n-3, by inhibiting mRNA expression of genes related to C18:3n-3 oxidation in muscle, and by up-regulating mRNA expression of genes related to n-3 LCPUFA synthesis in muscle, especially in Longissimus dorsi.

Crude palm oil (CPO) was extracted from fresh fruit bunches of RYL7 oil palm cultivated in Hainan by using a self-made single stage screw press. The physicochemical characteristics and Fatty acid composition of the CPO was investigated. The experimental results included melting point (33.10 °C), density (0.91 g/cm3 at 20 °C), acid value (8.35 mg KOH/g), iodine value (62.72 mg iodine/g), saponifiable value (198.02 mg KOH/g), moisture and volatile matter (0.16% of total lipids), insoluble impurities (0.04% of total lipids), unsaponifiable matter (0.40% of total lipids). Oleic acid (40.90% of total fatty acids), palmitic acid (37.88% of total fatty acids), linoleic (14.29% of total fatty acids), followed by stearic acid (5.11% of total fatty acids) were found to be the predominant fatty acids in the oil. The unsaturated oleic acid was the most predominant fatty acid in CPO of Hainan while saturated palmitic acid was the most principal fatty acid in palm oil from Malaysia. The contents of linolenic, unsaturated fatty acids, and polyunsaturated fatty acids in this CPO were 4.09%, 5.09%, 4.09% higher than that of Malaysia, respectively. In addition, the percentages of palmitic acid and saturated fatty acids of this oil were 5.62%, 6.01% lower than that of Malaysia, respectively.

One hundred crossbred pigs were used in two experiments to study the effects of period and level of copper supplementation of swine diets on the physical and chemical characteristics of porcine depot fat. In the first experiment the presence of 250 ppm supplemental copper in the diet significantly (P < 0.01) increased the phospholipid content, decreased the melting point, increased the weight percent of unsaturated fatty acids, and decreased the weight percent of saturated fatty acids present in the backfat of pigs at 23, 46, 69, or 92 kg. Removal of supplemental copper from the diet at 23, 46, or 69 kg resulted in a backfat at 92 kg whose physical and chemical characteristics were similar to those observed in the control animals. In the second experiment all levels of supplemental copper tested significantly (P < 0.01) decreased the melting point, increased the weight percent of unsaturated fatty acids, and decreased the weight percent of saturated fatty acids in the depot fat at market weight. These changes were consistent and unrelated to level of supplemental copper in the diet: 125, 150, 175, 200, 225, or 250 ppm. The data are discussed in relation to changes in the proportions of individual fatty acids.

AbstrakMasyarakat akhir-akhir ini cenderung memilih minyak sawit sebagai bahan penggoreng, hal ini mungkin karena harganya lebih murah dan mudah didapat dibandingkan minyak lain. Pemakain MS oleh masyarakat biasanya untuk bahan penggoreng bahan makanan. Minyak sawit mengandung asam lemak jenuh dan asam lemak tidak jenuh yang hampir seimbang, asam lemak jenuh meningkatkan lemak darah dan asam lemak tidak jenuh dikatakan dapat menurunkan lemak darah. Asam lemak tidak jenuh disisi lain mudah dioksidasi dengan pemanasan. Penelitian ini bertujuan melihat perbedaan pengaruh diet tinggi minyak sawit segar dan jelantah minyak sawit terhadap lemak darah dan TNF-α.Sudah dilakukan pemberian diet tinggi minyak sawit (50%) pada tikus Wistar selama 8 minggu secara adlibitum. Pengukuran kadar kolesterol total, HDL-kol dan trigliserida melalui serum darah dengan alat spectrophotometer dan pemeriksaan TNF-α darah dengan cara ELISA.Hasil penelitian menunjukkan terdapat peninggian kadar lemak (trigliserida dan kolesterol total) dan TNF-α darah bermakna (p<0,05) pada tikus diet tinggi minyak sawit segar ataupun minyak jelantah bila dibandingkan dengan kontrol namun peninggian lemak dan TNF-α oleh minyak jelantah lebih tinggi bermakna bila dibandingkan dengan minyak sawit segar. Kadar kolesterol darah tikus DMS lebih rendah dari kelompok kontrol positif.Kesimpulan; diet tinggi minyak sawit segar dan minyak jelantah pada tikus dapat meningkatkan kadar kolesterol total, trigliserida dan TNF-α secara bermakna dibandingkan kontrol, sedangkan peningkatan oleh minyak jelantah lebih tinggi bermakna dari minyak sawit segar.Kata kunci : diet tinggi minyak sawit, lemak darah, TNF-αAbstractSociety these days tend to prefer palm oil as raw roaster, this is probably because the price is cheap and easily available than other oils. The results showed there were elevated levels of fats (triglycerides and total cholesterol) and blood TNF-α significantly (p <0.05) in mice a diet high in fresh palm oil or used cooking oil when compared with controls but the elevation of fat and TNF-α by used cooking oil significantly higher when compared with fresh palm oil. DMS rat blood cholesterol levels lower than the positive control group. Conclusion: a diet high in fresh palm oil and used cooking oil in rats can increase total cholesterol, triglycerides and TNF-α significantly compared to controls, whereas the used cooking oil increased by significantly higher than fresh palm oil.Key words : high diet palm oil, blood lipid, TNF-α

ABSTRAKMinyak sawit merupakan minyak yang paling banyak diproduksi di Indonesia. Minyak sawit mempunyai dua jenis produk yaitu fraksi padat (Stearin) dan fraksi cair (Olein). Asam lemak pada minyak sawit dibedakan menjadi dua golongan yaitu asam lemak jenuh dan asam lemak tak jenuh. Penelitian ini  bertujuan untuk memisahkan Tripalmitin dari fraksi padat minyak sawit melalui metode fraksinasi dengan pelarut organik. Variabel dalam penelitian ini menggunakan variasi rasio bahan baku / pelarut organik 1:10 (w/v) dan 1:12 (w/v) dengan suhu 2oC, 10oC, 20oC, 30oC, 40oC dan kecepatan pengadukan 300 rpm dan 500 rpm. Setelah itu sampel dianalisa dengan GC-MS untuk mengetahui kandungan asam palmitatnya dan didapatkan kandungan asam palmitat paling tinggi jika dimasukkan dalam rumus regresi sebagai berikut y = -0,0333x2 + 1,4518x + 67,617 dengan R² = 0,8431 dengan kandungan asam palmitat 84,91%. Kata kunci: Asam Palmitat, Fraksinasi, Pelarut Organik, Stearin ABSTRACTPalm oil is the most oil in Indonesia. The variables in this study used variation of organic / organic solvent ratio 1:10 (w / v) and 1:12 (w / v) with temperature 2oC, 10oC, 20oC, 30oC, 40oC and stirring speed 300 rpm and 500 rpm. Chocolate is a well-known dessert all over the world. The original chocolate is made from cocoa products: cocoa bean and cocoa butter. Research and Development on low-fat chocolate process were conducted for value addition of coconut oil and Thai fruit. This chocolate processing study composed of (1) coconut oil fractionation, (2) chocolate formulation and (3) shelf-life storage determination.  Accordingly, fatty acids composition of the blend of coconut fat and palm oil shortening were determined. It was found that the said product composed of Caproic acid 0.47±0.12%, Caprylic acid 5.65±0.31%, Capric acid 5.14±0.14%, Lauric acid 42.56±0.28%, Myristic acid 16.31±0.18%, Stearic acid 14.55±0.13%, Oleic acid 9.26±0.17%, and Linoleic acid 2.16±0.35%. The saturated fatty acids and unsaturated fatty acids found in this product were 88.57±0.14% and with 11.42±0.81%, respectively. The range of melting point is 260C-330C and oxidative stability is 14.2 to 16.7 hours. The chocolate formula of pale and dark chocolate 1kg composed of coconut fat, palm oil shortening, and lecithin as emulsifier in same amounts such as 250g, 100g, and 0.5g. However, icing sugar and defatted cocoa powder are in different amounts; the icing sugar in pale chocolate and dark chocolate is 350g and 450g while the defatted cocoa powder in pale chocolate and dark chocolate is 200g and 300 g, respectively.  These chocolate products have physical properties similar to the chocolate products produced from cocoa butter. The shelf life of these products is 3 months.
