The most common problem among ready-made foods is the adulteration of butter, which is replaced by margarine or vegetable spreads. Milk and other dairy products made from raw milk are not left out. The production and sale of low-quality, counterfeit products poses a direct threat to human health and affects the competitive environment among producers. As a result of research, it should be noted that the raw milk market is not fully saturated, so improving the quality of cream production and processing of milk products, namely butter, competition for suppliers, microbiological improvements, as well as improvements to plants and systems – remains relevant. During the analysis, some physicochemical parameters of butter were studied, namely: acidity of the fat phase, mass fraction of moisture and fat. The acidity index was within the norm, although it differed in all samples: the lowest was found in sample № 1 (1.1 °K), and the highest was in sample № 2 (1.6 °K). As for such an indicator as the content of table salt and the content of fat and pH of plasma, the oils Sweet cream “Selyanske”, 72,6 % TM “Svoya Liniya”, Sweet cream, 73.0 % LLC “Eney”, “Poltavske”, 62.5 % LLC “Techmolprom” do not meet the requirements of DSTU 4399:2005. The mass fraction of fat in butter brands PJSC “Dubnomoloko” and “Pryvat-Fud” – was lower than indicated on the package, by 1.4 % and 2.6 %, respectively, and brands “Svoya Liniya”, LLC “Eney” and Techmolprom LLC on the contrary – by 18.0 %, 18.4 % and 12.5 % more. According to the results of microbiological studies, it was found that the number of mesophilic aerobic and facultatively anaerobic microorganisms, yeasts, fungi and bacteria of the Escherichia coli group in the studied samples of butter of all brands does not exceed the permissible norms. This fact testifies to the relative “purity” of the raw material from which the butter was made, as well as to the observance of veterinary and sanitary and hygienic norms during the production and storage of butter. Summing up the research, it should be noted that, despite the identified physical and chemical shortcomings of all samples of butter, preference should be given to sour cream butter “Selyanske”, 73.0 % of PJSC “Dubnomoloko” and “Selyanske” sweet cream, 73.0 % “Privat- Fud”, as none of them exceeded such indicators as fat content and plasma pH of oil, which may indicate the absence of impurities in vegetable fats in this product.

The article presents the research results of studying the influence of various groups of microorganisms — coliform bacteria, lactic acid microorganisms, yeast, and spore bacteria — on the quality and storage capacity of cream used as a raw material for buttermaking. The objects of study were the following: cream as a raw material before and after pasteurization, as well as pasteurized cream seeded with testing cultures of various types of spoilage microorganisms. The samples were stored at temperature conditions of 30 ± 1 °C, 10 ± 1 °C, and 4 ± 2 °C. To evaluate the quality and storage capacity of cream used as a raw material, its microbiological and physicochemical indicators were determined by standardized methods: bacterial number, titratable acidity, indicators of oxidative spoilage of the fat phase. Organoleptic characteristics were evaluated in terms of taste, consistency and appearance. Research results have shown that the greatest microbiological risks during storage of cream used as a raw material are associated with lactococci, coliform bacteria and yeast. Microbiological risks caused by seeding of cream with thermophilic streptococcus, spore bacteria of the genus Bacillus and spore anaerobic microorganisms of the genus Clostridium are less significant, which is associated with the lack of development and metabolism of these groups of microorganisms at storage temperatures of 10 ± 1 °C and 4 ± 2 °C. At the same time, the reason for the rejection of cream contaminated with these testing cultures, at a storage temperature of 4 ± 2 °C, is primarily a decrease in organoleptic indicators, and at a temperature of 10 ± 1 °C — an excess in bacterial number.

Milk is a part of many food products. In the expert assessment of the quality of raw materials, primary attention should be paid to its microbiological safety, since poisoning with dairy products is a common cause of diseases of the gastrointestinal tract. The experiment has been carried out on the base in the Teaching and Production Livestock Farm in the Federal State Budgetary Educational Institution of Higher Education “Russian State Agrarian University – Moscow Agricultural Academy named after K. A. Timiryazev” (Moscow). The purpose of the research was to improve the quality indicators of raw milk and yogurt. The method of processing raw milk, which reduces the number of potentially dangerous microorganisms in the products produced from it, has been studied. During the experiment the influence of electromagnetic radiation on organoleptic and physic and chemical parameters has been observed; the quantitative and qualitative composition of milk and yogurt microorganisms has been evaluated. The samples of raw materials had a uniform consistency without sediment and flakes, the color was milky white, and the smell was characteristic of natural cow’s milk. Electromagnetic treatment did not affect the main elements of the chemical composition of milk: the mass fraction of dry substances, fat, protein and lactose. In the experimental samples of raw milk after electromagnetic pulses treatment, the decrease in the growth rate of microorganisms including Quantity of Mesophilic Aerobic and Facultative Anaerobic Microorganisms (QMAFAnM), yeast and mold, has been noted. No bacteria of the Staphylococcus aureus and Escherichia coligroups have been found in the milk samples. The electromagnetic field had the negligible effect on the amount of lactic acid microorganisms in the raw material. During the experiment, there was no negative influence of electromagnetic radiation on the organoleptic, physic and chemical and sanitary-hygienic parameters of yogurt. The issues of ensuring the microbiological safety of raw milk have been described and the method for optimizing the sanitary and hygienic parameters of yogurt in accordance with the current requirements of regulatory documents has been suggest in the article.

Experiments were conducted to determine if vacuum cooling has an effect on the physical and chemical quality characteristics of mushroom after cooling and storage. Pressure, temperature and mass variations of mushroom were obtained during vacuum cooling. The pressure was decreased from 10000 Pa to 600 Pa within 4 min and then maintained it until the end of vacuum cooling process. Accordingly the temperature of mushroom dropped from initial 25.1 °C to 2.4 °C within 25 min, and the mass loss was 5.3%. Subsequently, vacuum cooled mushroom were stored at 1±0.5°C. and 85-95% of relative humidity for 2 weeks. The effects of vacuum cooling on the color, firmness, polyphenol oxidase and membrane permeability of mushroom after cooling and storage were determined. The results showed that vacuum cooling significantly reduced the polyphenol oxidase and membrane permeability.

The Quality Control Committee laboratory is a unique organization which was started approximately 32 years ago by Dr. Harold Macy of the University of Minnesota. The dairy industry operates a laboratory which does most of the official testing for the health agencies in the Minneapolis-St. Paul market. With higher costs of operations many health agencies are trying to find ways of saving money, and still have a satisfactory laboratory program to protect the public's health. Some health agencies are using industry laboratories, and the cost is passed on to the customer rather than the taxpayer. The laboratory functions are to evaluate the quality of the raw milk supply from 4238 Grade A producers, and the finished products from 17 processing plants. The laboratory also does the official butterfat testing for the Federal Milk Market Administrator for Order 68. This organization is supervised by a Steering Committee of nine individuals who represent the University of Minnesota; the producer cooperatives, who supply the raw milk; and the Grade A fluid milk processors from the Minneapolis-St. Paul market. All of the routine results from the laboratory are provided to the health agencies. The health agencies and laboratory manager have a close working relationship to coordinate the program. In order for an organization like this to work, it takes cooperation from all parties involved.

The article presents the results of studies obtained in the study of the quality of milk processed with the use of high-frequency acoustic cavitation and dairy products produced with its use. The research was carried out with the use of General scientific and special research methods in the laboratory of the Department of technology of storage and processing of animal products of the K. A. Timiryazev and in the accredited laboratory of technochemical control of the all-Russian research Institute of dairy industry. It is shown that the treatment of cow's milk-raw materials high-frequency ultrasonic vibrations (above 45 kHz), the generated electric ultrasonic device immersion type pulse impact ouzo "Activator-150", the number of bacteria of group of intestinal sticks (coliforms) decreased by almost 40%, which allows to make a conclusion about the appropriateness of the selected method of exposure for the destruction of microorganisms E. coli and coliform bacteria. Processed, using high-frequency acoustic cavitation, cow's milk was used for the production of brine cheese-cheese. It is shown that cheese cheese had a high nutritional value, which is due to the preservation of essential substances in the raw material (in particular, calcium, which in the production of cheese cheese precipitates if pasteurized milk is used), elastic consistency, safety of consumer characteristics - microbiological and physico-chemical.

This study aim was to determine the effect of washing and raw materials on frozen storage on the quality of surimi and kamaboko from raw material of tilapia (Oreochromis sp). There were three types of raw materials used, namely minced fish, surimi, and surimi with addition of sorbitol, with three washing treatments and four weeks frozen storage period observed every week. The method used consisted of measurements of pH, water content, bite test, and folding test. Then the results obtained for the best kamaboko tilapia (Oreochromis sp) were obtained from fillet raw materials compared to the raw material of Minced fish and raw materials of Minced Fish + Sorbitol, with a frequency of washing once and frozen storage for 3 weeks.

<p>Earthworms meal (Lumbricus sp.) is very prospective as milkfish feed raw materials to substitute fish meal. Type of raw material and the exact composition will generate artificial feed quality with high levels of water stability, desirable, and safe for the fish. The purpose of this study to evaluate the quality of milkfish feed at different levels of fish meal substitution with earthworms (Lumbricus sp.) based on organoleptic, physical, and chemical tests. The treatments tested levels of substitution of fish meal with earthworms meal in artificial feed milkfish, namely: feed A (0%); feed B (34,62%); feed C (65,38%) and feed D (100%). The organoleptic and physical test showed that all the feed has a smooth texture, pungent aroma, and brown in color, with good water stability (rupture velocity ranged from 91,25±1,47 up to 92,87±1,67 minutes and dispersion of solids 11,14±1,55 up to 11,87±1,3%), hardness 84±0,18 up to 84,71±1,24%, sinking velocity 5,07±0,68 up to 5,64±0,17 cm/sec, the level of homogeneity of 81,34±0,17 up to 85,68±1,85%, the allure of 0,62±0,58 up to 0,65±0,12 cm/sec and delicious power of 0,059±0,024 up to 0,067±0,032 g/fish weight/day. The quality of feed is chemically with moisture content ranging from 8,4–9,1%, 16,7–19,46% ash, 31,07–32,37%, protein, 6,67–7,58% fat, crude fiber 7,45–7,87%, NFE (nitrogen free extracts) 35,35–35,48%. Results show that different levels of substitution of fish meal with earthworms meal (Lumbricus sp.) produces the same feed quality and contains nutrients in a range requirement milkfish. Accordingly, earthworms meal (Lumbricus sp.) can be substituted for fish meal in fish milk feed artificial up to 100%.</p><p>Keywords: substitution, fish meal, earthworms meal (Lumbricus sp.), artificial feed, milkfish</p>

The public of our country makes ever-increasing demands on milk in terms of safety and nutritional values. In accordance with the requirements of the Interstate Standard GOST 31449-2013 “Raw milk of cow. Specifications” the number of mesophilic aerobic and facultative anaerobic microorganisms should not exceed 1.0×105 CFU/cm3, the number of somatic cells - 4.0×105 in 1 cm3 in milk. The dairy industry places high demands on milk quality, namely, on bacterial contamination. Dairy products of high quality can only be obtained from good raw materials. High bacterial contamination worsens the quality of raw milk and its processed products and creates a certain risk factor for human health. In the Chuvash Republic, studies were carried out on the use of modern domestic iodine-containing preparations and lactic acid-based preparations for the treatment of the udder of cows. At the same time, the sanitary-hygienic condition of the udder’s nipples was improved, the microbiological seeding and the number of somatic cells decreased, and the grade of milk of cows was increased. When treatment the udder of cows before milking by Violet and after milking by Lactovit, the number of mesophilic aerobic and facultative anaerobic microorganisms in milk decreased by 22.9 times, the number of somatic cells - by 2.0 times. When using Monklavit-1, the number of mesophilic aerobic and facultative anaerobic microorganisms decreased by 25.0 and the number of somatic cells decreased 2.5 times. It was found that the efficiency of Monclavit-1 using is higher 1.1 times according to the number of mesophilic aerobic and facultative anaerobic microorganisms and 1.5 times according to the number of somatic cells, than treatment of the udder of cows by Violet and Lactovite. The use of modern udder treatment means allowed to improve milk quality from the second to the highest grade.

На качество фруктовых дистиллятов оказывают существенное влияние различные физико-химические процессы, проходящие в дистилляционной установке под действием высокой температуры. В зависимости от особенностей биохимического состава для каждого вида сырья необходимо подбирать конкретные режимы дистилляции, обеспечивающие получение дистиллята с высокими органолептическими и физико-химическими характеристиками. В связи с этим цель работы состояла в исследовании влияния режимных параметров фракционированной дистилляции сброженной кизиловой мезги на распределение летучих компонентов по фракциям. В качестве объектов исследования в работе использовали фракции, полученные в процессе дистилляции сброженной кизиловой мезги на установке прямой сгонки «Kothe Distillationstechnik» (Германия). Экспериментально установлено, что повышение скорости при дистилляции сброженной кизиловой мезги приводит к увеличению объема отбираемой головной фракции, при одновременном снижении ее крепости. Показано, что изменение скорости дистилляции приводит к изменению характера перехода основных летучих компонентов в дистиллят и распределения их по фракциям. Изучена динамика перехода летучих компонентов в дистиллят при различных режимах работы дистилляционной установки - без задержки флегмы (обычный режим) и с задержкой флегмы на нижней тарелке укрепляющей колонны. Проведенные исследования показали, что при условии медленной дистилляции со скоростью не более 5,5 см3/мин в средние фракции переходит 82-85% компонентов энантового эфира, а содержание ацетальдегида снижается на 10-12% по сравнению с быстрой дистилляцией. Показано, что применение задержки флегмы на нижней тарелке укрепляющей колонны дистилляционной установки также способствует снижению перехода в кизиловый дистиллят ацетальдегида и этилацетата, и к сокращению потерь компонентов энантового эфира с головной и хвостовой фракциями. The quality of fruit distillates is significantly affected by various physical and chemical processes that take place in the distillation unit under the influence of high temperature. Depending on the characteristics of the biochemical composition for each type of raw material, it is necessary to select specific distillation modes that ensure the production of distillate with high organoleptic and physico-chemical characteristics. In this regard, the aim of the work was to study the influence of the regime parameters of fractionated distillation of fermented Cornel pulp on the distribution of volatile components by fractions. The fractions obtained during the distillation of fermented Cornel pulp at the direct distillation unit «Kothe Distillationstechnik» (Germany), were used as the objects of research. It is experimentally established that an increase in the speed during distillation of fermented Cornel pulp leads to an increase in the volume of the selected head fraction, while reducing its strength. It is shown that a change in the distillation rate leads to a change in the nature of the transition of the main volatile components to the distillate and their distribution by fractions. The dynamics of the transition of volatile components to distillate under different operating modes of the distillation unit - without phlegm delay (normal mode) and with phlegm delay on the lower plate of the reinforcing column is studied. Studies have shown that under the condition of slow distillation at a speed of no more than 5.5 cm3/min, 82-85% of the enantium ether components pass into the medium fractions, and the content of acetaldehyde decreases by 10-12% compared to fast distillation. It is shown that the use of phlegm delay on the lower plate of the strengthening column of the distillation unit also helps to reduce the transition to the Cornel distillate of acetaldehyde and ethyl acetate, and to reduce the loss of the components of the enantium ether with the head and tail fractions.
