The experiment addressed the effects of two storage temperatures, namely 10 (T10) and 20 °C (T20), on main quality and functional traits of three cherry tomato cultivars (‘Eletta’, ‘Sugarland’ and ‘Ottymo’), after 0 (S0), 7 (S7) and 14 (S14) days of storage. At T10 both fruit weight and firmness were better retained during storage. At S14, T10 promoted fruit Chroma and overall fruit color deviation (ΔE*ab). Total polyphenols content (TPC) of fruits peaked at S7 (4660 mg GAE kg−1 DW) then declined at S14 (by 16%), with the highest values recorded at T10. Lycopene showed a similar trend, but with a higher average concentration recorded at T20 (488 mg kg−1 DW). β-carotene content peaked at S14, irrespective of the storage temperature. At S14, the concentrations of phytoene and phytofluene were higher at T20 (48.3 and 40.9 mg kg−1 DW, respectively), but the opposite was found at S7. ‘Sugarland’ and ‘Ottymo’ showed the highest ΔE*ab along storage, with the former cultivar proving the highest TPC and lycopene content, whereas ‘Eletta’ did so for phytoene and phytofluene. Our results suggest that unravelling the possible functional interactions among these three carotenoids would allow for a better orientation of breeding programs, targeting the phytochemical evolution of tomatoes during refrigerated storage.

To study ripening-related chilling injury in pepper (Capsicum annuum L.), chilling-tolerant ‘Buchon’ and chilling-sensitive ‘Nockgwang’ fruit were harvested at mature green (MG), breaker (BR), and red-ripe (RR) stages and stored at 1, 5, and 10 °C for 21 d. ‘Buchon’ did not show surface pitting (SP) regardless of ripeness stage and storage temperature, whereas ‘Nockgwang’ at MG and BR exhibited SP at 1 and 5 °C. After 14 days of storage at 1 °C, chilling-sensitive ‘Nockgwang’ did not show SP when fruit were at the RR stage. Compared with ‘Buchon’, ‘Nockgwang’ at MG and BR had more electrolyte leakage increase during storage at 1 and 5 °C. ‘Buchon’ at all ripeness stages showed significantly higher ethylene production during storage regardless of storage temperatures. Contents of β-carotene and lycopene increased in both cultivars as ripening progressed. The contents of β-carotene and lycopene were similar between the two cultivars regardless of storage temperatures and ripeness stages. Susceptibility of pepper fruit to chilling appeared to be related to superoxide dismutase (SOD) and catalase (CAT). Activities of SOD and CAT were much higher in ‘Buchon’ than ‘Nockgwang’, more apparently at MG and BR. The results suggest that chilling-tolerant ‘Buchon’ and fruit at RR could have been equipped with a more efficient antioxidizing system, even if it was not clear whether oxidative stress is a cause or an effect of the CI in pepper.

The research was aimmed at studying the effects of (1) single application AVGs,plastic wrappings, and storage temperatures, (2) interactions among AVGs andplastic wrappings, AVGs and storage temperatures, and plastic wrappings andstorage temperatures, and (3) interactions among AVGs, plastic wrappings, andstorage temperatures in extending fruit self-life and maintain qualities of‘Mutiara’guava fruits. The research was arranged in a completely randomized designin 2 x 2 x 2 factorial with three replications. The first factor was AVGs (with 1,25ppm and without AVG), the second factor was plastic wrappings (without and withone layer of plastic wrapping), and the third factor was storage temperature (a coldtemperature of 21, 53 ºC and a room temprature of 26,57 ºC). The result showed that(1) the application of AVG 1,25 ppm did not significantly affect fruit self-life, fruitfirmness, fruit weight loss, ºBrix, acid contens, and sweetness of ‘Mutiara’guava’fruits, (2) storage at cold temprature of 21, 53 ºC did not significantly affect fruit self-life, fruit firmness, fruit weight loss, ºBrix, acid contens, and sweetness of‘Mutiara’guava’ fruits, (3) the application of plastic wrapping was able to extend fruitself-life by 17 days longer than without plastic wrapping and supressed fruit weightloss of ‘Mutiara’guava, but accelerated softening and not able to maintain ºBrix, andalso did not significantly affect acid contens, and sweetness of ‘Mutiara’guava fruits,(4) there were no interaction effects among AVGs with plastic wrappings, AVGs withcold tempratures, and plastic wrappings with cold tempratures on self-life, fruitfirmness, fruit weight loss, ºBrix, acid contens, and sweetness of ‘Mutiara’guavafruits, and (5) there were no interaction effects among AVGs, plastic wrappings, andcold temperatures on fruit self-life, fruit firmness, fruit weight loss, ºBrix, acidcontens, and sweetness of ‘Mutiara’ guava fruits.

Tomato (Solanum lycopersicum L.) is one of the most extensively cultivated horticultural crops in the world. Factors such as yield, size, taste, and lycopene content are important criteria that may impact the selection of tomato cultivars for different production systems. The aim of the current study was to evaluate different slicer and cherry tomato cultivars for production under greenhouse and open field conditions. Three cultivars of slicer (BHN 964, Trust, and Geronimo) and cherry (BHN 268, Favorita, and Sakura) tomatoes were tested using randomized complete block design in 2019 and 2020. Results showed that the performance of tested cultivars differed under greenhouse verses open field conditions. Among cherry tomato cultivars in 2020, BHN 268 and Sakura produced significantly greater yield under open field conditions, while under greenhouse conditions yield of BHN 268 was the lowest. Similarly, cherry tomato fruit size from ‘BHN 268’ and ‘Sakura’ was also significantly greater than ‘Favorita’ under field conditions, whereas under greenhouse conditions, the fruit size of ‘Sakura’ was significantly greater than both ‘BHN 268’ and ‘Favorita’. Among slicer tomato cultivars, BHN 964 produced significantly greater yield and had a greater average fruit size than the other two cultivars under greenhouse conditions in 2020 while, Geronimo produced significantly similar or larger yield and had a similar average fruit size compared with BHN 964 under open field conditions. Tomatoes produced under open field conditions were rated significantly greater for taste compared with those produced under greenhouse conditions. Lycopene content in both slicer and cherry tomato cultivars was influenced by the interaction of production type, cultivars, and harvest time. Therefore, it can be concluded that BHN 964 and Geronimo were the highest in lycopene among slicer tomato cultivars for greenhouse and open field production, respectively. Among cherry tomato cultivars, BHN 268 was the highest in lycopene for open field production and Sakura for greenhouse production. Additionally, open field–produced tomatoes taste better than greenhouse-produced tomatoes, but lycopene content may be constrained for mid- and late-season fruits due to high temperature conditions under open field conditions.

Lycopene is the red pigment and a major carotenoid in tomato (Lycopersicon esculentum Mill.) fruit. It is a potent natural antioxidant, and the focus of many tomato genetics and breeding programs. Crop improvement for increased fruit lycopene content requires a rapid and accurate method of lycopene quantification. Among the various available techniques, high-performance liquid chromatography (HPLC) can be accurate, however, it is laborious and requires skilled labor and the use of highly toxic solvents. Similarly, spectrophotometric methods, although easier than HPLC, also require time-consuming extractions and may not be as accurate as HPLC, as they often overestimate fruit lycopene content. Colorimetric estimation of fruit lycopene using chromaticity values has been proposed as an alternative rapid method. Previous studies that examined the utility of this technique, however, were confined to the evaluation of only one or few cultivars and, therefore, lacked broad applicability. The purpose of the present study was to examine the utility of chromaticity values for estimating lycopene and β-carotene contents in tomato across diverse genetic backgrounds. Measurements of the chromaticity values (L*, a*, b*, C*, h*) were taken on whole fruit and purée of 24 tomato genotypes and were compared with HPLC measurements of fruit lycopene and β-carotene. Examination of different regression models indicated that a model based on the transformed value a*4 from purée measurements explained up to 94.5% of the total variation in fruit lycopene content as measured by HPLC. When this model was applied to a second set of fruit harvested at a later date from the same 24 genotypes, it explained more than 90% of the total variation in lycopene, suggesting its reliability. The best estimation for β-carotene content was obtained by using the b* chromaticity value from whole fruit measurements or the transformed a*2 value from purée measurements. Neither model, however, could explain more than 55% of the variation in β-carotene content, suggesting that chromaticity values may not be appropriate for estimating tomato β-carotene content. The overall results indicated that fruit lycopene content could be measured simply and rather accurately across a wide range of tomato genotypes using chromaticity values taken on fruit purée.

Tomato is one of the world's most consumed vegetables, and thus, various cultivars have been developed. Therefore, metabolic differences and nutrient contents of various tomatoes need to be discovered. To do so, we performed metabolite profiling along with evaluation of morphological and physicochemical properties of five representative tomato types. Common tomato cultivars, bigger and heavier than other tomatoes, contained higher levels of amino acids, organic acids, and lipids. On the contrary, cherry tomato cultivars contained a higher proportion of phenylpropanoids, lycopene, β-carotene, and α-carotene than the other tomatoes. Also, the highest antioxidant activity and total phenolic and flavonoid contents were observed in cherry tomato cultivars. Furthermore, to understand metabolic distributions in various tomato cultivars, we constructed a metabolic pathway map. The higher metabolic flux distribution of most primary metabolite synthetic pathways was observed in common tomatoes, while cherry tomato cultivars showed a significantly elevated flux in secondary metabolite synthetic pathways. Accordingly, these results provide valuable information of different characteristics in various tomatoes, which can be considered while purchasing and improving tomato cultivars.

Fourteen genotypes of tomato collected from different sources were evaluated inside naturally ventilated polyhouse at Polyhouse Complex, Department of Horticulture (Vegetable and floriculture), BAU, Sabour, Bhagalpur during 2018-2019. The experiment was laid out in RBD with three replications. Data from analysis of variance depicted that mean sum of squares of all genotypes were highly significant for all traits under study except titratable acidity and β-carotene which indicated the existence of ample genetic variability among the genotypes. Genotype NS 4266 had least days to first flowering, days fifty percent flowering, lowest number of locules, highest plant height at 60 DAT along with maximum β- carotene & lycopene content; TODINDVAR-8 had lowest number of nodes to first flower and maximum average fruit weight; Palam Tomato Hybrid-1 displayed maximum no. of flower per truss; Heemshikhar had lowest no. of days to first fruiting; TODINDVAR-5 had highest no. of fruit per truss; Arka Abha showed earliest days to first picking; San Marzano had maximum polar diameter and plant height at final stage of harvesting; TODINDVAR-6 show maximum equatorial diameter and lowest titratable acidity; Arka Samrat had maximum pericarp thickness; Hawaii 7998 was observed with maximum no. of fruit per plant; Arka Vikas had maximum TSS content. However, Pant Polyhouse Tomato-2 contained maximum ascorbic acid. Different types of fruit shapes viz. flat round, oval, round, heart shaped, cylindrical and fruit colour viz. red, pink, yellow-orange was exhibited by various genotypes. All the genotype displayed the absence of green shoulder on fruit except San Marzano. Three genotypes namely Palam Tomato Hybrid-1 (5.72 kg/plant), Heemshikhar (4.85 kg/plant) and NS 4266 (4.82 kg/plant) was identified for higher yield among all the genotypes.

Alterations in non-enzymatic antioxidants of tomato fruits of two cultivars (Kashi Vishesh: a local & Hisar Arun: a hybrid) during their storage were studied. Tomatoes, harvested at mature green, breaker, and mature red stages were treated with 1% and 4% solution of H2O2 and then kept at storage temperatures 5°C,10°C, and 15°C. Antioxidant activity, ascorbic acid, carotenoids, Lycopene and total phenol content were measured after every 7-day interval up to a total storage duration of 21 days. The recorded non-enzymatic characteristics shown an increase upto 14 days and then started declining irrespective of storage temperature and concentration of H2O2 treatment and maximum change was seen at15°C and 1% H2O2. On the other hand, lycopene content increased asymptotically at all maturity stages and at all storage temperatures which is suggestive of slowing ripening process. In conclusion, local cultivar, harvested at mature green stage, showed slowest increase rate in antioxidants activities when treated with 1% H2O2 and stored at 5°C.

Determination of β-carotene content in four types of leafy vegetables, water morning glory, kale, lettuce and Chinese cabbage by using a simple, rapid and low cost of UV-Visible method. This study was in the concentration range of 0.5 to 12 mg/L, and showed the linear regression equation y = 0.0764x - 0.0008, and an excellent linearity with correlation coefficient (R2) was 0.9999. The accuracy of the method analysis was reported by percentage recovery of about 80-106%. The precision was reported by percent of relative standard deviation and varies for intra-day 3.92% and inter-day 3.99%. The limits of detection and limit of quantification were 0.004 and 0.013 mg/L, respectively. Acetone is the most suitable for extraction, ratio of weight of samples to solvent, and extraction time was 1:3 g/mL and 10 min. Moreover, the most appropriate storage temperature for leafy vegetable samples is 4°C. Evaluation of β-carotene content under the suitable conditions in the kale, Chinese cabbage, lettuce and water morning glory was found to be 27.96 ± 2.99, 19.35 ± 1.92, 18.78 ± 0.88 and 18.48 ± 1.86 mg/100 g, respectively.
