Grapefruit is source of anticancer and antioxidant reagents. Extracts of grapefruit peel (Gf-P) and seeds (Gf-S) were screened for their antioxidant capabilities at room temperature to stabilize soybean and sunflower oil for a storage period of 45 days. b-carotene linoleic acid system, FRAP assay, ABTS method were performed for the measurement of antioxidant potential of Gf-P and Gf-S. Oil samples containing extracts of Gf-P and Gf-S at 400 ppm, 800 ppm, 1200 ppm concentrations as well as synthetic antioxidants (BHT and BHA) at 200 ppm concentration were prepared. Free fatty acid (%) and peroxide (meq/Kg) values of all these prepared samples were evaluated. Results were statistically analyzed and it was observed that Gf-P has better antioxidant potential than Gf-S.

Sorbaria tomentosa,, commonly known as “Berre” is native to Himalaya and Hindukush range in Pakistan. Qualitative phytochemical screening as well as quantitative antioxidant potential of its ethanolic extract was evaluated. Antioxidant potential of the extract was determined using standard methods like DPPH, FRAP, total phenolics, total flavonoids, ABTS radical cation scavenging assay and β-carotene linoleic acid emulsion system. Cu(II) and Zn(II) chelates of ,,Sorbaria tomentosa,, were also prepared and their antioxidant potential was compared with the extract as well as with synthetic antioxidants (BHT and BHA). It was observed that ,,Sorbaria tomentosa,, is a good source of natural antioxidant that worked efficiently compared to respective chelates. Keeping in view less efficiency of chelated extracts, stabilization studies of sunflower oil were conducted with ethanolic extract (250, 500, 1000 ppm) of ,,Sorbaria tomentosa,,. Various parameters like PV, FFA and IV were estimated to evaluate stabilization of oil. ,,Sorbaria tomentosa,, extract (1000 ppm) showed almost same role during stabilization like BHA at ambient condition during a storage period of 45 days. Abstract: Shrimp waste, as an important source of natural carotenoids, is produced in large quantities in seafood processing industry. One of the important characteristics of carotenoids is their ability to act as antioxidants, thus protecting cells and tissues from damaging effects of free radicals and singlet oxygen. The aim of this study was to find effective method for carotenoid extraction [Enzymatic and alkaline treatment] from shrimp waste and compare their antioxidant potential with synthetic antioxidants butylated hydroxyanisole [BHA] and butylated hydroxytoluene [BHT] using sunflower oil. The sunflower oil was exposed to three concentration of extracted carotenoid [470, 235 and 118 mg/kg] and synthetic antioxidants. The inhibition of lipid peroxidation was evaluated for Malondialdehyde and peroxide value. The mean values of carotenoid extract were 243 and 170 mg/kg for enzymatic and alkaline treatment, respectively. So the highest efficacy of carotenoid extraction was obtained from enzymatic extraction. The oil samples containing 470 ppm carotenoid, which extracted by alcalase as the default treatment, exhibited the less peroxide value and higher antioxidant potential than the oil samples containing synthetic antioxidants. According to the results, the synthetic antioxidants can be replaced by extracted carotenoids from shrimp waste as a natural antioxidant to inhibit oxidation.

The effect of storage time on the composition of the olive and sunflower oils has been investigated. It were studied parameters like free fatty acids (FFA), anisidine value (AV), iodine value (IV), saponification number (SN) and identification of the molecular structure through FT-IR method. During storage (48 months) an increasing in the values of parameters FFA and AV took place that measures the oxidative degradation of oils. The oxidative stability of olive oil stored at room temperature was less than of sunflower oil. Also, significant differences were found among the olive oil and sunflower oil during storage period.

Background: Natural preservatives are compounds produced by natural ingredients that can suppress bacterial growth and development. Natural preservatives are carried out because most of the preservatives circulating are chemicals and unsafe for the body. One of the natural preservatives is by using garlic extract (Allium sativum L).  Objective: This study is aimed to determine the effectiveness of the antibacterial garlic (Allium sativum L) as a natural preservative in fresh African catfish (Clarias gariepinus).  Method: This research used the Pour Plate iroculation method. African catfish (Clarias gariepinus) which is soaked with garlic (Allium sativum L) with a concentration of 7%, 14% and 21% for 30 minutes, then the fish will be kept at room temperature with a storage period of 24 hours and 48 hours and calculated growth in bacterial numbers with the Colony counter.  Result: Based on the research result, it was found that garlic extract (Allium sativum L) can obstruct the effectiveness of antibacterial in African catfish (Clarias gariepinus) at a concentration of 14%.

Studies carried out to develop a technique for the preservation of cow's milk in raw condition using hydrogen peroxide (H2O2) as a preservative. Fresh cow’s milk was collected and experiments were conducted by four treatments in order to achieve the optimum condition of storage. The treatments were with various concentration of H2O2 starting from 0.05 %, 0.1 %, 0.2 %, 0.3 %, 0.4 %, & 0.5 %. Treated milk with 0.05 % concentration of H2O2 had storage period of 20 days compared to that of the control one (5 days only) in refrigerated temperature (±8°C). On the other hand hydrogen peroxide treated milk (0.05 %) had a storage period of 8 hours at room temperature (±28°C). Results also showed that the higher concentration of H2O2 had no effect on storage period than that of control. Milk products like kheer and halawa prepared by treated milk and stored for 20 days showed almost nil growth of total coliform and E. coli which means that food products prepared from hydrogen peroxide treated milk is safe for human consumption. Objectives:  Medicinal plants, either as an extract, pure compound or as a derivative, offer limitless opportunities for the discovery of new drugs. Sudan is a very rich source of medicinal plants which are used in the treatment of a wide range of diseases. Aloe sinkatana, has great potential to be developed as drug by pharmaceutical industries. The present study is undertaken to investigate the antioxidant potential of Aloe sinkatana by DPPH radical scavenging activity. In addition, the study also performed to explore the possibility of using HPLC-MS technique for the determination and analysis of Aloe sinkatana. Methods:  The extracts of Aloe sinkatana were analyzed for antioxidant activity by using DPPH free radical scavenging activity. The results indicated that the extracts showed a high effective free radical scavenging in the DPPH assay, also these extracts exhibited a noticeable antioxidant effect at low concentrations. Results:  During in vitro evaluation the antioxidant potential of methanolic extract was the highest, followed by aqueous extract  in DPPH radical scavenging activity. So the methanolic extract of the plant, exhibited a great antioxidant effect at 50 μg/ml which may be attributed to high phenolic content. Therefore, methanolic extract to be a more active radical scavenger than aqueous extract. The HPLC-MS analysis had shown the methanolic extract of Aloe sinkatana to be rich in the major anthraquinones and their glucosides, which revealed 9 compounds, and also UV spectroscopy detected the presence of two flavonoids. Conclusion:  The results indicated that the extracts of Aloe sinkatana  is a potential source of natural antioxidants or nutraceuticals with potential application to reduce oxidative stress with consequent health benefits. Due to stronger antioxidant potential and phytochemical composition, Aloe sinkatana could be proved as a valuable prospect in pharmaceutical formulations by taking part in the antioxidant defense system against generation of free radicals. Vegetable oils can be adjusted by different methods to enhance their commercial applications and to increase their pure quality nutrition. One of the most leisurely ways of creating new innovative products with desirable textured and oxidative properties is the mixing of vegetable fats/oils of various properties. Pure sunflower (SFO) blended with pure moringa (MOO) and sesame (SEO) oils in the ratio of 95:5 and 90:10 w/w. The outcomes showed that the highest acid value was observed at SFO + SEO 10% (0.782). Sunflower oil stabilized when blended with MOO and the levels of conjugated dienes (CD) and trienes (CT) were depressed compared to control. The TPC value was higher when the sunflower blended with moringa oil. The highest scavenging activity percentage was observed in SFO + MOO 5% and SFO + SEO 10% respectively. Meanwhile, the highest induction period at 100 °C was 11.45 hours in the treatment of SFO + MOO 5%. The master fatty acids in the sunflower and moringa oils are combined (SFO:MOO, 90:10), oleic, and palmitic acids. It seems from the current findings that suitable mixing of high linoleic oils with MOO will result in oil mixtures that can satisfy nutritional wants with expanded balance for home cooking and deep-frying.

To evaluate the antioxidant potential of less valued green leafy vegetables of Bangladesh, the methanolic extracts of Alternanthera sessilis, A. philoxeroides, A. paronychioides, Glinus oppositifolius and Portulaca oleracea were subjected to assay for total phenolic content, total flavonoid content and DPPH free radicle scavenging activity. Among the studied materials, A. sessilis showed the highest phenolic and flavonoid content. However, G. oppositifolius presented the lowest phenolic content (14.53 ± 0.48 mg of GAE/g of sample) and P. oleracea exhibited minimum (7.005 ± 0.25 mg of RUE/g of sample) flavonoid content. DPPH radical scavenging activity was found to increase with increase in the concentration of each individual material. A. philoxiroides (IC50 = 6.07 ± 0.27 μg/ml) was found as the most active in DPPH radical percentage inhibition, which was followed by A. sessilis (IC50 = 7.17 ± 0.67 μg/ml). Interestingly, A. paronychioides, in spite of having good amount of total phenolic and flavonoid content, showed less DPPH scavenging activity. No linear relationship was found to exist in case of the total phenolic, flavonoid content and DPPH scavenging activity among G. oppositifolius, P. oleracea and A. paronychioides. The results from different methods may differ substantially because each complex chemical reaction generates unique values. However, all the five plants exhibited creditable antioxidant activity and thus consumption of these vegetables may play important role in combating oxidative stresses and thereby help in retaining good health.

The aim of the study was to evaluate the possibility of reducing changes in the quality of consumer hen eggs by storing them in various package type and under various temperature conditions (room and refrigeration). The material consisted of 960 chicken eggs packed in cardboard or plastic boxes, 10 pcs in each. Half of the packages were stored at room temperature (21 °C), the rest in the refrigerator (5 °C). The eggs were stored for 28 days qualitatively evaluated at 14-day intervals. The characteristics of whole egg (weight, specific weight, proportion of morphological elements, air cell depth) as well as of shell (weight, color, crushing strength, thickness, density, water conductivity), albumen (height, Haugh units, weight, pH) and yolk (weight, color, pH) were analyzed. The fatty acids profile of yolks was also evaluated as a freshness indicator. Packaging types available on the market, apart from its marketing and eggs protection function, can also influence the quality and stability of the product during storage. The use of plastic boxes can help to maintain higher eggs quality during the storage period, even after a significant extension of the storage time. Eggs stored in plastic boxes at room temperature had very similar results to those stored under refrigeration using conventional cardboard boxes. This effect is probably related to the lower permeability of plastic boxes in comparison to cardboard ones, but detailed research work in this direction is necessary to verify this relation.
