The analysis of the Club of Rome global forecasting mode was carried out. A critical analysis of the Club of Rome activity was given. The purpose of the work is to establish the tasks of the food industry in solving the global problems of mankind. It is noted that the global crises (energy, ecology and food) are most clearly manifested in the food industry. To achieve this goal, a scientific and technical idea has been proposed that to solve the global problems the innovative technologies must be involved, which were not considered at all in the Club of Rome projects. The human development paradigm was formulated, considering the modern advances in science, technology, and nanotechnology. It was substantiated that the nanotechnology use in the food industry is attractive because the food raw materials are nano-sized structures created by nature. Local energy impact on nano-sized elements of the food raw materials can shorten the process time by the orders of magnitude. Such impacts are referred to as "nanoenergy technologies". The most significant result of the work was that the possibility was shown to control the development of the worst global crises by transferring the food industry onto the rails of the "nanoenergy technologies" and thus postpone the crises for another 10-40 years. The scientific significance of the obtained results was that such new effects as "barodiffusion" and "mechanodiffusion" were used in the work. The practical significance of the work was that a technological line for deep processing of food waste was proposed

The study discusses one of the global problems of mankind—ensuring food security for the population. The historical context of the food problem, the formation of the concept of food security, the approaches of the world community and individual countries to its provision and evaluation are considered. The case of Russia reveals the role of food security in ensuring economic, social, and political security and sovereignty of a state. Special attention is paid to the state of agriculture in Russia as a source of raw materials for ensuring food security, problems of its development, and ways to solve them. The place of Russia in ensuring the food security of the world is shown.

The article is devoted to the assessment of the impact of the food industry of the Trans-Baikal territory on the food security of the region. A study based on the actual state of the industry showed that its development is impossible without improving the situation in agriculture. The presence of a large volume of products imported into the Trans-Baikal Territory indicates a strong dependence of its economy on external supplies. A partial solution of the problem is possible on condition of creation of agro-holdings in the region covering the full cycle production of food products from cultivation of raw materials to reception of final product.

Acrylamide is formed during baking in some frequently consumed food products. It is proven to be carcinogenic in rodents and a probable human carcinogen. Thus, the food industry is working to find solutions to minimize its formation during processing. To better understand the sources of its formation, the present study is aimed at investigating how acrylamide concentration may be influenced by bakery-making parameters within a parallel strategy of mycotoxin mitigation (focusing specifically on deoxynivalenol—DON) related to wholegrain and cocoa biscuit production. Among Fusarium toxins, DON is considered the most important contaminant in wheat and related bakery products, such as biscuits, due to its widespread occurrence. Exploiting the power of a Design of Experiments (DoE), several conditions were varied as mycotoxin contamination levels of the raw materials, recipe formulation, pH value of dough, and baking time/temperature; each selected treatment was varied within a defined range according to the technological requirements to obtain an appreciable product for consumers. Experiments were performed in a pilot-plant scale in order to simulate an industrial production and samples were extracted and analysed by HPLC-MS/MS system. Applying a baking temperature of 200 °C at the highest sugar dose, acrylamide increased its concentration, and in particular, levels ranged from 306 ± 16 µg/Kg d.m. and 400 ± 27 µg/Kg d.m. in biscuits made without and with the addition of cocoa, respectively. Conversely, using a baking temperature of 180 °C in the same conditions (pH, baking time, and sugar concentrations), acrylamide values remained below 125 ± 14 µg/Kg d.m. and 156 ± 15 µg/Kg d.m. in the two final products. The developed predictive model suggested how some parameters can concretely contribute to limit acrylamide formation in the final product, highlighting a significant role of pH value (correlated also to sodium bicarbonate raising agent), followed by baking time/temperature parameters. In particular, the increasing range of baking conditions influenced in a limited way the final acrylamide content within the parallel effective range of DON reduction. The study represents a concrete example of how the control and optimization of selected operative parameters may lead to multiple mitigation of specific natural/process contaminants in the final food products, though still remaining in the sensorial satisfactory range.

This paper analyses the starting conditions and significant factors for this transition. The state of the technical equipment of enterprises and the conditions of readiness for digital modernization deserve special attention. The relevance of the work is associated with an understanding of the importance of technical mobility demonstrated by workers, awareness of a change in their attitude to the digital paradigm, which paved the way for digital transformation from new worldview positions. The paper examines the readiness of the transition from digital literacy of workers to digital transformation in enterprise personnel management. The purpose of the work is to identify the attitude towards the digital transition in personnel management of the enterprise, changes in working conditions, considering the new challenges of our time. The practical significance of the research is related to the study of the relationship between the phases of industrialization and the development of digitalization. The role of the inevitable digital transformation as a new development paradigm in enterprise personnel management has been substantiated.

At the present development stage of fish culinary production special significance has range expanding and technology improving for the following purposes: the available fish resources use; the organoleptic characteristics improvement and the nutritional value and competitiveness increase of products manufactured at the enterprises of the food industry. This study concerns the technology and the consumer properties formation improvement of cold appetizers from silver carp in the form of a roll. Unlike traditional the developed products consist of fillet of a bighead silver carp on a skin and an original stuff from egg, vegetables and mushrooms. The researchers conducted study using conventional and special methods. They recommended to introduce gelatin in a dry powdered at the stage of roll forming form in a recipe of the developed fish rolls. A man tested fish gelatin as anew consistency regulator of the developed products. The traditional and fish gelatin use allows to increase the yield of fish cold appetizers in the form of a roll by 8.0 %. When adding gelatin, there was an improvement in consistency and sensory perception of the product as a whole. The analysis results of biological value showed that the developed dishes, being an important additional source of protein and essential amino acids such as threonine, lysine, valine, may well improve the ration balance. The fatty acids ratio in fish rolls prepared according to new recipes is close to the ideal fat in the ratio of saturated, monounsaturated and polyunsaturated fatty acids (35:45:20) and is determined mainly by the composition of fatty acids in silver carp fat. The developed production will allow to expand the range of the food industry enterprises by cold fish appetizers of high quality and food value from available fish raw materials.

The article examines the problems of private medicine in the health care system of the country. The aim of the article is to determine the structural components of the mechanism of activation of the private medical sector as a reserve for the provision of quality and affordable medical services and a driver for the development of the medical industry. The descriptive-analytical method, methods of analysis and synthesis, comparison, statistical, analysis and scientific generalization were used in the paper. The study substantiates the strengthening of the role of the private medical sector in the health care management system. The key problems of the domestic private medical sector and the restraining factors of its development are identified. It is concluded that it is necessary to develop a mechanism to promote the development of private medicine through a policy of active change in the health care system. The directions of activation of the private medical sector as a target reference point in the process of determining the structural elements of the organizational and economic mechanism are outlined. The structural detail of the mechanism of activation of the private medical sector for optimization of the health care system is offered. The practical significance of the obtained results is that the results of the research presented in the article are a practical basis for the development and improvement of mechanisms of public administration in the field of health care.

The role of non-profit organizations is leveled, which can become a serious help in solving economic problems, in particular, the problems of recycling and processing of secondary raw materials, the placement of industrial waste and household garbage, and landscaping of large megacities. The main financial burden in the field of “green economy” falls on States and large enterprises. Meanwhile, we cannot ignore the important role of non-profit organizations that can not only draw attention to environmental problems to the public, but also offer their own measures to solve environmental problems. In this regard, it becomes relevant to consider the participation of non-profit organizations in the implementation of environmental projects by attracting “green Finance”.

The present paper attempts to analyze the process of sustainable livelihood through skill development and its conceptual and theoretical understanding in India with reference to rural youth. In India skill development is demanded for economic growth and inclusive development, hence rural population cannot be overlooked. It also tries to highlight that employable skills alone have not been able to sufficiently generate employment among rural youth despite it wont address/promote the well-being process and sustainable livelihood. It is also based on the assumption that various frameworks associated with skill development leave scope for reforms as the gaps prevails that weaken implementation addressed by various policy shift in rural development paradigm and government/non-government organizations. The paper also aspires to look into the process of skill development towards rural youth through establishments of institutions, launch of policy/programmes and their linkages with micro-finance. It also look into the distinctive nature/features of micro-finance against the dominant forces of societal structure, social relationships, social interactions leading towards collective interests and norms that shape the quality and quantity of lives of individuals. Lastly analysis and conclusion have been made on the basis of discussion.
