ABSTRAKModifikasi bahan pembuatan minuman kombucha akan mempengaruhi hasil akhir atau organoleptik dan sifat fisikokimia dari produk minuman kombucha. Gula pada kombucha berpengaru dalam hasil fermentasikombucha. gula akan digunakan oleh khamir dalam proses metabolisme hingga menghasilkan alkohol dan CO2.Penelitian ini merupakan penelitian eksperimental yang bertujuan untuk mengetahui pengaruh lama fermentasi dan jenis kopi terhadap organoleptik dan pH minuman kopi aren kombucha. Penelitian ini menggunakan rancangan acak lengkap dengan 2 faktor yaitu lama fermentasi dan jenis bubuk kopi. Analisis yang dilakukan meliputi uji organoleptik dan pH. Berdasarkan data yang didapatkan menyatakan bahwa fermentasi berpengaruh terhadap perubahan pH dan kesukaan atau penerimaan panelis pada minuman kopi aren kombucha. Selain itu jenis kopi berpengaruh terhadap organoleptik minuman kopi aren kombucha.Kata kunci: kopi kombucha, lama fermentasi, kopi arenABSTRACTModification of the ingredients for making kombucha will affect organoleptic and physicochemical properties of kombucha beverage products. This study uses a completely randomized design with 2 factors, fermentation time and the type of coffee. The analysis carried out included organoleptic and pH tests. Based on the data obtained that fermentation affects the change in pH and preferences or acceptance of panelists in the Kombucha palm coffee beverage. Whey waste contains organic materials, particularly high complex proteins and amino acids in the form of suspended and dissolved solids, however the utilization of whey as a organic liquid fertilizer still has a less attention. Thus the Utilization of the whey waste through anaerobic process to be used as a organic liquid fertilizer is the purpose of the research. This research was conducted using factorial design with completely randomized design (CRD) which consists of two factors: the yeast concentration (without yeast; 0.25 and 0.50 g/500 ml of whey waste) and the fermentation time (0, 3, and 5 days). The variables measured were the content of organic C, C/N Ratio, and Total N, P2O5 and K2O contents. The results showed that the fermented whey waste on the different fermentation time and yeast concentration had increased the organic C and C/N ratio, but decreased P2O5 and K2O contents. The utilization of whey combined with solid or other liquid wastes gave a chance to produce a quality organic liquid fertilizer

This research aims to find out the effect of soybean fermentation time by Bacillus subtilis to produce sere kedele with the best characteristics. This research used completely randomized design (CRD) with one treatment factor of the fermentation time with 5 period of fermentation time (12, 18, 24, 30 and 36h). Each treatment was repeated 3 times, resulted 15 experimental units. The data were then analyzed with Analysis of Variance method and if the treatment had an effect on the variable, followed by the Duncan test. The result show that fermentation times had significant effect to moisture, ash, protein, fat, carbohydrate, crude fiber content, total acid, pH value, the number microbes, hedonic test for taste, scoring test for taste and overall acceptance of sere kedele. Fermented by B. subtilis for 12h resulted in the best characteristic under the following criteria : 58.05% moisture content, 2.39% ash content, 15.79% protein content, 14.39% fat contetnt, 9,38% carbohydrate content, 6.1 pH value, 0.11% total acid, 9.59log cfu/g the number microbes, color, flavour, texture liked, normal taste with sour taste and overall acceptance liked.   Keyword : soybean, sere kedele, Bacillus subtilis, fermentation, traditional food .

This research aims to determine the effectiveness of adding powder cassava waste in compost making. Versatile in making compost. This research uses a Completely Randomized Design consisting of 4 settings with 3 replications with different amounts. The parameters chosen were composting temperature, composting fermentation time period, composting humidity, acidity composting and continued with water spinach growth vegetative test. Data analysis using one-way ANOVA test and further tests with Duncan's Multi Range Test at 1% significance level. Research results for 30 days in making compost with cassava powder complement, like fertilizer after growth, Vegetative ground spinach (ipomoea reptans) did not show a significant effect or no effect

Yogurt was a functional drink that was high in nutritional value but had a relatively short shelf life. Roselle extract had a high content of bioactive compounds, namely anthocyanin, polypHenol, and vitamin C. The integration of yogurt with roselle extract was expected to improve product performance both from the properties of health and sensory. This study aimed to determine the effect of roselle extract addition and fermentation time on the characteristics of roselle-based yogurt products.  The research method used was an experimental method with a completely randomized design with Duncan's further test with treatments (1) the addition of rosella extract consisted of 3 levels, namely 0.5, 1.5, and 2.5 %. (2) Fermentation time: 8, 12, and 16 hours. The observed variables included chemical (pH, total titrated acid/TTA, anthocyanins), microbiology (lactic acid bacteria/LAB), and sensory.  The fermentation time affects the pH value and TAT.  The 12 hours of fermentation time gave pH and TTA values, respectively: 3.77 and 1.23%. The variation in the addition of roselle extract significantly affected the anthocyanin, TTA, and LAB values. The addition of the extract as much as 1.5% gave the anthocyanins, TTA, and LAB value respectively 0.871 mg/mL, 1.31%, 561.11x 107CFU/mL.  The best treatment was yogurt with a roselle extract concentration of 1.5% and 20 hours of fermentation.  This yogurt had characteristic as follows: pH 3.7, TAT 1.33%, anthocyanins 0.8751 mg/mL, LAB 560 x 107 CFU/mL, reddish-yellow (4), distinctive aroma (4), Sour taste (4), fine texture (4), and liking (4).

<p><span style="font-size: medium;">ABSTRAK </span></p><p>Blondo yang diperoleh sebagai hasil samping dari VCO mengandung bakteri Lactobacillus sp. sehingga dapat digunakan sebagai kultur starter dalam pembuatan yogurt. Penelitian bertujuan untuk memanfaatkan blondo dan starter lainnya sebagai starter dalam pembuatan yogurt.  Penelitian dilaksanakan pada bulan Februari sampai November 2013 di Laboratorium Balai Riset dan Standardisasi Industri Manado dan Laboratorium Mikrobiologi Fakultas Perikanan dan  Ilmu Kelautan Unsrat Manado. Penelitian dilakukan dalam beberapa tahap yaitu: fermentasi VCO, pemisahan blondo,  isolasi, identifikasi bakteri asam laktat (BAL), pembuatan kultur starter, pembuatan yogurt dan pengujian mutu yogurt.  Penelitian menggunakan Rancangan Acak Lengkap, perlakuan adalah jenis starter yaitu; starter langsung dari blondo,  isolat (homofermentatif dan heterofermentatif) hasil isolasi blondo, kultur murni (campuran  L. bulgaricus dan S.  thermophilus), dan kultur campuran kering yang mengandung L. bulgaricus, L. acidophilus dan S. thermophilus, dengan  ulangan tiga kali. Parameter yang diuji adalah mutu yogurt (total BAL, abu, protein, lemak, total asam laktat, padatan  susu non lemak, penampakan, bau, rasa,  konsistensi), dan organoleptik. Hasil penelitian menunjukkan bahwa isolat yang diperoleh dari blondo dengan waktu fermentasi 1 hari tidak teridentifikasi adanya BAL homofermentatif maupun  heterofermentatif, dan  isolat yang diperoleh dari blondo dengan waktu fermentasi 2 hari teridentifikasi adanya BAL homofermentatif, diduga adalah bakteri L. delbruecki  subsp. bulgaricus dan L. casei, sedangkan  isolat yang diperoleh dari blondo dengan waktu fermentasi 3 hari teridentifikasi adanya BAL heterofermentatif, diduga L. fermenti. The research aimed to utilize blondo and other starter as a starter of yoghurt processing. The research was conducted from February to November 2013 in the Laboratory of Research and Standardization Industry Manado and Laboratory of Microbiology Faculty of Fisheries and Marine Sciences at Sam Ratulangi University  Manado.  The study was conducted in several stages, which are: fermentation of VCO, blondo separation, isolation, identification of lactic acid bacteria (LAB), the starter sultures processing, producing and quality test of yoghurt. Research used completely randomized design, treatments based on starter types are; starter directly from blondo, isolates (homo-fermentative and heterofermentative) from blondo, pure culture (a mixture of L. bulgaricus and S. thermophilus), and dry mixed culture containing L. bulgaricus, L. acidophilus and S. thermophilus, three times repetition. The tested parameters were the quality of yoghurt (total LAB, ash, protein, fat, total lactic acid, non-fat milk solids, appearance, odor, flavor, consistency), and organoleptic. The results on isolates obtained from blondo showed that one day fermentation time did not show any homofermentative and heterofermentative lactid acid bacterias. Two days fermentation time showed homofermentative lactid acid bacterias assumed L. delbruecki subsp. bulgaricus and L. casei, while 3 days of fermentation  provided heterofermentative Lactic acid bacterias assumed L. fermenti. Actived starter made directly from blondo with  concentration 15, 20, and 25% can be used as a of yoghurt starter, producing yoghurt which complied the quality requirements of SNI 2981: 2009, and preferred by panelists.</p>Keywords: Coconut, blondo, starter, yoghurt.

Local duck had been widely cultivated not only as a producer of eggs processed as salted egg but also there are cultivated as broiler ducks. The efforts to improve the productivity of ducks can be seen from the effectiveness of the process of absorption of nutrients in the duodenum, so the use of energy in the metabolic process can be optimized for adding mass and volume of the cell.  This study aims to determine the duodenum profile of the histological structure  covered the lumen diameter, villous height and number of goblet cells of Magelang ducks, Tegal ducks and Pengging ducks .This study used a completely randomized design (CRD) with three treatments (Magelang ducks, Tegal ducks and Pengging ducks) and 6 replications. The measured variable was the long intestine tenue, lumen diameter, villous height and number of goblet cells. Data were analyzed using analysis of variance (ANOVA) with a differentiation factor was the type of duck. The realdifferences data were analyzed using advanced test of Duncan at the level of 95%. The results showed long intestine tenue, lumen diameter and height of the villi were not significantly different at each Magelang ducks, Tegal ducks, Pengging ducks. The number of goblet cells in Magelang ducks and Tegal ducks showed significantly different, but not on Pengging Ducks. The conclusion of the study was the length of the intestine tenue, lumen diameter and height of villous had no real effect on three types of ducks. Keywords: Local ducks, duodenum, histological

Banana peels not much optimally used as a substitute for grass. In 2014 the production of banana peels waste Riau province reaches 7.586 ton. More than a third of the banana that has not been in the strip is banana peels. The purpose of this study to determine the effect with different rice bran level and fermentation time of the fiber fraction silage that includes the content of neutral detergent fiber (NDF), acid detergent fiber (ADF), acid detergent lignin (ADL), hemicellulose, and cellulose. This research was conducted at the Laboratory of Nutrition Science and Chemistry, Faculty of Agriculture and Animal Science State Islamic University of Sultan Syarif Kasim Riau Pekanbaru. The research was conducted in April until September 2016. This study were an experimental study using a completely randomized design pattern Factorial consisting of rice bran level (0; 5; and 10%) and fermentation time (0; 14; and 28 days), each treatment was repeated 2 times. There were no significant differences (P>0,05) in NDF, ADF, ADL, hemicelluloses, and cellulose. It can be concluded that there is not interaction between rice bran level and fermentation time toward fiber fraction of banana peels silage.

This study aims to determine the optimal time of fermentation using Aspergillus niger on the pH value, dissolved protein and levels of ash content corn straw. The design used was a Completely Randomized Design (CRD) of unidirectional pattern consisting of 4 treatments repeated 3 times namely P0 : corn straw fermented with Aspergillus niger for 0 days, P1 : corn straw fermented with Aspergillus niger for 4 days, P2 : fermented corn straw with Aspergillus niger for 8 days, P3 : corn straw fermented with Aspergillus niger for 12 days. The parameters observed were pH value, dissolved protein and ash content. The results showed that corn straw fermented with Aspergillus niger had a very significant effect (P <0.01) on the pH value, dissolved protein content and ash content. Corn straw fermentation using Aspergillus niger for 0 - 12 days has a very significant effect on the pH value, dissolved protein content and ash content (P <0.01). The average pH value of the treatment  P0: 5,00, P1: 6,13, P2: 6,51, P3: 6,84 The average value of dissolved protein content in the treatment P0: 27,09%, P1: 33,31%, P2: 24,14%, P3: 25,51%. The average value of ash content in the P0: 8,91%, P1: 11,34%, P2: 10,06%, P3: 9,22%,  As well as the optimal time achieved in fermentation for 4 days for dissolved protein content and ash content.  Keywords: Corn straw, Aspergillus niger, Fermentation, pH value, Dissolved protein content, Ash content

Abstract Nira derived from palm sugar (Arenga pinnata Merr.) can be made into several processed products such as brown sugar, vinegar, and wine. Nata de arenga is one of the products that utilizing from nira of palm sugar as one of the basic materials. This study aims to determine the Effect of starter fermentation time and the difference in the volume of starters for making nata from nira of Arenga pinnata. There are two stages used in this study; the first is making the starter, and the second is making nata. In the making of a starter, there are three starter fermentation’s time, namely starter which fermentation for four days (F1), six days (F2), and eight days (F3). In making nata, given the three different variations volume of starter, i.e., 100 ml (Va), 200 ml (Vb), and 300 ml (Vc) combined with starter fermentation’s time. Each treatment combination is three repetitions to enhance the validity of the results. The research data were then analysed using a completely randomized design (CRD) with a factorial experiment. The results showed the highest average yield in the combination of starter treatment which fermented for eight days with a 300 ml volume of starter (F3Vc). In this combination, the microbes in the fermentation medium are in optimum physiological conditions for the fermentation process.

ABSTRACTThis study aimed to determine the effect of tape yeast fermentation on taro tubers on the physical properties of flour and the hedonic organoleptic assessment of nastar cookies and the nutritional content of nastar cookies. This study used a factorial Completely Randomized Design (CRD) which consisted of two factors, namely yeast concentration and fermentation time. The yeast concentration (R) consisted of three levels, namely 0% tape yeast (R1), 3% tape yeast (R2), and 5% tape yeast (R3) while the fermentation time (F) consisted of three levels, namely 12 hours (F1), 24 hours (F2), and 36 hours (F3). The observational variables in this study consisted of organoleptic tests with hedonic scales and nutritional content analysis. The best treatment based on the organoleptic test of nastar cookies was the R2F2 sample with scores of color, aroma, taste, texture, and overall reached 4.52 (very like), 4.51 (very like), 4.51 (very like), 4.58 (very like), and 4.48 (like), respectively. The nutritional value of selected nastar cookie products R1F2 had 4.71% water, 1.13% ash, 5.55% fat, 5.88% protein, and 82.73% carbohydrate. Meanwhile, the R2F2 sample had 4.78% water, 1.13% ash, 7.97% fat, 7.02% protein, and 79.1% carbohydrate. The protein and fat contents of this cookie product did not meet the national standard, while the content of other ingredients met the national standard.Keywords: Nastar Cookies, Fermentation, Yeast Tape and Taro Flour.ABSTRAKPenelitian ini bertujuan untuk menentukan pengaruh fermentasi ragi tape pada umbi talas terhadap sifat fisik tepung dan penilaian organoleptik hedonik cookies nastar serta kandungan gizi cookies nastar. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) faktorial yang terdiri dari 2 faktor yaitu faktor pertama konsentrasi ragi dan faktor kedua lama fermentasi, faktor pertama yaitu konsentrasi ragi (R) yang terdiri atas tiga taraf yaitu 0 % ragi tape (R1), 3 % ragi tape (R2) dan 5 % ragi tape (R3). Faktor kedua yaitu lama fermentasi (F) yang terdiri atas tiga taraf yaitu selama 12 jam (F1), 24 jam (F2), dan selama 36 jam (F3).Variabel pengamatan pada penelitian ini terdiri dari uji organoleptik dengan skala hedonik dan analisis kandungan gizi. Perlakuan terbaik berdasarkan uji organoleptik cookies nastar yaitu R2F2 dengan skor penilaian kesukaan terhadap warna sebesar 4,52 (sangat suka), aroma 4,51 (sangat suka), rasa 4,51 (sangat suka), tekstur 4,58 (sangat suka) dan over all 4,48 (suka). Nilai gizi produk cookies nastar terpilih R1F2 dan R2F2 yang meliputi kadar air (4,71 %) dan (4,78 %), kadar abu (1,13 %) dan (1,13 %), kadar lemak (5,55 %) dan (7,97 %), kadar protein (5,88 %) dan (7,02 %) dan kadar karbohidrat (82,73 %) dan (79,1 %). Kadar protein dan lemak produk cookies ini belum memenuhi standar SNI, sedangkan kandungan bahan lainnya telah memenuhi standar SNI.Kata Kunci : Cookies Nastar, Fermentasi, Ragi Tape dan Tepung Talas.
