The aim of the work was study of the variability of fruit chemical composition of O. palustris (2 samples) and O. macrocarpus (6 samples) cultivars and forms introduced in CSBG depending on the conditions of the year. Biochemical research of the content of dry substance, ascorbic acid, sugars, titratable acidity, anthocyanins, pectins, protopectins and catechins in berries of these samples were conducted. The chemical composition was analyzed by conventional methods. O. palustris surpasses O. macrocarpus in the content of ascorbic acid and titratable acidity, but is inferior to it in the accumulation of anthocyanins, pectins and protopectins. In comparison with the studied samples of both species, the native O. palustris accumulates the greatest amount of ascorbic acid and the least amount of sugars. The early cultivars of O. macrocarpus exceeds the mid-season cultivars and are close to late-maturing ones in terms of ascorbic acid content. The difference in the accumulation of other ingredients in the fruits of both O. palustris and O. macrocarpus is not statistically significant. According to the chemical composition of berries, O. palustris and O. macrocarpus are promising for introduction in the South of Western Siberia.

Abstract The work is devoted to determining the optimal level of fat in concentrate-senage diets for high-yield cows and studying the effect of various levels of fat in the dry matter of the diet on milk productivity and chemical composition of milk. Studies have shown the insufficiency of household diets of highly productive cows with a dry diet content of 3.2% raw fat. This deterred the potential for dairy productivity. Addition of fat in cow diets by equivalent energy and protein replacement of a portion of the compound feed with a rapeseed cake up to a level of 4.2% of the dry substance provides an increase in milk productivity in relation to the control group receiving 3.2% fat. Optimization of the fat level in the dry substance of the diet up to 4.2% in the nutrition system of cows increases the functional activity of the breast in their body, which is expressed in the growth of breast productivity by 6.78%, improvement of the chemical composition and technological properties of milk. A further increase in dietary fat to 5.2% has a less pronounced effect on the change in milk productivity.

Abstract In this study the standardization method for T2* maps acquisition on various MR scanners (3T and 1.5T) is proposed. The reproducibility of the obtained T2* values is realized through the MR-compatible phantom containing paramagnetic complex iron oxide nanoparticles. The repeatability of measurements results has shown that the created phantom retains all the required characteristics (homogeneity, stability of concentrations and manifested paramagnetic properties) over a long period of time. The application of standardized T2* values allows to use previously received T2*, [ms] to iron concentrations in the dry substance of the liver (LIC), [mg/ml] conversion formulas for accurate, fast and non-invasive MRI diagnostics of liver iron overload.

The presence of dextran originating from frost-damaged or degraded beet is highly detrimental during beet sugar manufacture, because they cause difficulties in filtering the carbonatation juice. In this paper the impact of exopolysaccharides on the viscosity of low sucrose content juices including: raw juice, juice after the 1st filtration and thin juice were analyzed. Studies have shown that high molecular mass exopolysaccharides have a stronger effect on the juice viscosity than low molecular mass exopolysaccharides. However, the dynamic viscosity of technical sugar solutions (raw juice or thin juice) with exopolysaccharides at a content of up to 0.5 g/kg, is lower than the viscosity of pure sugar solutions having the same refractometric dry substance content (RDS).

Vegetable processing pomace contains valuable substances such as natural colors that can be reused as functional ingredients. Due to a large amount of water, they are an unstable material. The aim of our research was to assess how the pretreatment method (thermal or nonthermal) affects the properties of powders obtained from beet juice and pomace after the freeze-drying process. The raw material was steamed or sonicated for 10 or 15 min, and then squeezed into juice and pomace. Both squeezed products were freeze-dried. The content of dry substance; L*, a*, and b* color parameters; and the content of betalain pigments were analyzed. Pretreatments increased the proportion of red and yellow in the juices. Steam and ultrasound caused a significant reduction in parameter b* in the dried pomace. A significant increase in betanin in lyophilizates was observed after pretreatment with ultrasound and steam for 15 min. As a result of all experiments, dried juices and pomaces can also be used as a colorant source. However, there is higher potential with pomaces due to their additional internal substances as well as better storage properties. After a few hours, juice was sticky and not ready to use.

A food value of carrot roots is determined by a content of such chemical composition components as dry substance, ascorbic acid, carotene and other. The carrot value is also determined by its ability to be stored for a long time. The research aim was to study a food value change of different carrot sorts at storage open in boxes. The research gives an ability to search a carrot sort, suitable for long storage, and also to search arrangements for better preservation of carrot nutritiousness at storage. It has been established, that the dynamics and intensity of losses of the roots’ food value depends on sort peculiarities. Thus, during 7.5 months of storage sorts Daryna, Shantane KL and Nant Kharkiv lost from 0.92 to 4.12 % of dry substance. The content of total sugar decreased by 0.16 and 0.77 % of its initial content in sorts Daryna and Nant Kharkiv, whereas Shantane demonstrated the content increase at the end of storage by 0.29 %. The same tendency was observed also by changes of the content of monosaccharides and saccharose. The content of ascorbic acid and carotene during storage varied from increase to decrease. At the end of storage losses of ascorbic acid and carotene were 1.43–1.93 and 3.42–4.26 mg/100 g respectively. The content of nitrates at the end of storage in Daryna roots remained at the initial level – 202 mg/kg of the humid mass, in Shantane and Nant Kharkiv it decreased by 18 and 26 % respectively. At that it must be noted, that the processes of nutritiousness changes were more intensive in Daryna and Nant Kharkiv roots. In Shantane the carrot roots content changes of chemical composition components were slower.

The pedo-climatic conditions specific to sandy soils in southwest Oltenia determine differences in performing different phenophases of growth and development of plants, both between varieties and in the physiological behavior of the same variety under different yield conditions. Therefore, at the Dăbuleni Research and Development Station for Plant Culture on Sands, research was carried out on some physiological, biochemical and production processes at five varieties of bell peppers cultivated in the open fields and solar. Determinations of photosynthesis, foliar transpiration, the biochemical composition of fruits, quantity, and quality of bell pepper production were performed. The physiological and biochemical processes studied were influenced by the environmental conditions specific to each cultivation method, but also by the studied variables. Of the 5 varieties studied, the best results on the biochemical composition of the fruits were recorded at the Artim variety (8.83% total dry substance, 4.60% soluble dry substance, 0.19% acidity, 3.80% carbohydrate and 36.96% vitamin C). The production was between 15,387 t / ha for open-field plants and 108,574 t / ha for plants grown in the solar, the differences between the two cultivation methods being statistically assured as distinctly significant.
