Background: Food fortification is an effective strategy that has been recommended for improving population calcium inadequate intakes. Increasing calcium concentration of water has been proposed as a possible strategy to improve calcium intake. The objective of this study was to determine the sensory threshold of different calcium salts added to drinking water using survival analysis. Methods: We performed the triangle test methodology for samples of water with added calcium using three different calcium salts: calcium chloride, calcium gluconate and calcium lactate. For each salt, a panel of 54 consumers tested seven batches of three water samples. Data were adjusted for chance and sensory threshold was estimated using the survival methodology and a discrimination of 50%. Results: The threshold value estimation for calcium gluconate was 587 ± 131 mg/L of water, corresponding to 25% discrimination, for calcium lactate was 676 ± 186 mg/L, corresponding to 50% discrimination, and for calcium chloride was 291 ± 73 mg/L, corresponding to 50% discrimination. Conclusions: These results show that water with calcium added in different salts and up to a concentration of 500 mg of calcium/L of water is feasible. The calcium salt allowing the highest calcium concentration with the lowest perceived changes in taste was calcium gluconate. Future studies need to explore stability and acceptability over longer periods of time.

Nowadays, the use of marine by-products as precursor materials has gained great interest in the extraction and production of chemical compounds with suitable properties and possible pharmaceutical applications. The present paper presents the development of a new immediate release tablet containing calcium lactate obtained from Black Sea mussel shells. Compared with other calcium salts, calcium lactate has good solubility and bioavailability. In the pharmaceutical preparations, calcium lactate was extensively utilized as a calcium source for preventing and treating calcium deficiencies. The physical and chemical characteristics of synthesized calcium lactate were evaluated using Fourier Transform Infrared Spectroscopy, X-ray diffraction analysis and thermal analysis. Further, the various pharmacotechnical properties of the calcium lactate obtained from mussel shells were determined in comparison with an industrial used direct compressible Calcium lactate DC (PURACAL®). The obtained results suggest that mussel shell by-products are suitable for the development of chemical compounds with potential applications in the pharmaceutical domain.

This study examines the impact of bacterial concrete on strength and self-healing. Bacterial concrete has better compressive strength, permeability, corrosion resistance, chemical precursors, alkalinity resistance, and mechanical stress. Bacillus subtilis calcium lactate and spore powder effects are explored in this study, and the influence of this bacterial form on strength and self-healing capacity to crack repair. The Bacillus subtilis concentration 105 cells/mL is used in concrete with calcium lactate 0.3% of cement. In another trial, calcium lactates 0.3% and spore powder 0.5% of cement with Bacillus subtilis concentration of 105 cells/mL and lightweight expandable clay aggregate (LECA) is 30% replaced to the coarse aggregate used in concrete respectively. The conventional concrete and bacterial concrete cubes were molded with dimensions of 150 mm x 150 mm x 150 mm, cylinders with dimensions of 100 mm x 200 mm, and a beam with dimensions of 100 mm x 100 mm x 500 mm. These specimens were evaluated after 7 and 28 days of cure. The compressive, split tensile, and flexural strength of bacterial concrete was raised by 23%, 8%, and 7%, respectively when compared to conventional concrete. Thus, the experimental findings reveal that Bacillus subtilis at 105 cells/ml cells with 0.3% calcium lactate has a substantial impact on the strength and self-healing of bacterial concrete.

The submitted work is oriented on the study of two aspects of the sulphate-reducing bacteria metabolism: the metals bioprecipitation and the concrete biodeterioration. The bioprecipitation of metals with the bacterially produced hydrogen sulphide by sulphate-reducing bacteria (SRB) represents the positive effect of the SRB existence in the environment. It allows the industrial exploitation in the area of the removal metals from industrial wastewaters. Referred method involves principal stages such as: hydrogen sulphide bacterial production, metals precipitation by biologically produced hydrogen sulphide, metal sulphides separation, setting pH of the filtrate from previous steps by 1M NaOH and metal hydroxides separation. The basis of the first stage i.e. the hydrogen sulphide bacterial production is the cultivation of SRB. In the laboratory conditions the sodium lactate is the energetic substrate for the growth of bacteria. Its price is not economic for the application in the practice and is needed investigate the alternative substitutes. Therefore was studied the cultivation of sulphate-reducing bacteria to using the selected energetic substrates such as: calcium lactate, glycerol and whey. Experimental studies confirm that all chosen substrates are suitable alternative substrates of sodium lactate for the bacterial sulphate-reduction. In the regard to the efficiency of bacterial sulphate reduction the calcium lactate is the best. The biodeterioration of the concrete presents the negative effect of the SRB existence in the environment. The research was oriented on the simulation of the biodeterioration of concrete samples under the simultaneous influence of the sulphur-oxidising bacteria genera Acidithiobacillus thiooxidans and sulphatereducing bacteria genera Desulfovibrio in the environs of the waste water, the acid mine drainage, the nutrient medium and the distilled water. The observation of the surface structure changes of concrete samples confirms the highest biodeterioration influences in the case of the acid mine drainage application.


The presence of micro pores in concrete makes the concrete weak and less durable, in this study an ecofriendly attempt has been made to minimize these micro pores by calcite precipitating bacteria i.e. Escherichia Coli, bacillus subtilisand pseudomonas aeruginosa which produce calcium carbonate when they blend with calcium lactate in presence of water and air thus filling up the micro pores, thus comparing their effects on compressive strength of concrete.Various proportions of E. coli, B.subtilisand P. aeruginosa bacterial media were impregnated in concrete viz. 10%,20% and 30% replacing the proportion of mixing water, small proportion of fine aggregate was also replaced by calcium lactate and silica gel. It was observed that concrete with 10% replacement of P. aeruginosa culture media with mixing water showed maximum compressive strength with 79.6% increase in the compressive strength of concrete where as concrete with B.subtilisbacterial media showed 61.1% increase in the compressive strength of concrete and concrete with E.coli bacterial media showed 23.5% increase in the compressive strength of the concrete, keeping 10-6 cells/ml the cell concentration for all bacterial concretes.

Crack growth is a major cause of failure in structures that are made using cement and concrete. Healing of these cracks can increase the life span of structures. In the present study micro-organism based self-healing of structures is studied. A commonly occurring micro-organism bacterium called Bacillus Subtilis, is used in the manufacturing of cement mortar blocks as a self-healing agent for cement mortar blocks, with the use of Calcium Lactate as feed for bacteria. In the first step, colonies of Bacillus Subtilis were grown and added with calcium lactate to produce a solution. The solution was then kept for one week to observe the metabolic product of Bacillus Subtilis. It was found that the bacterial product was composed of CaCO3 and thus the bacteria is suitable to be used as self-healing agent. Self-healing cement mortar blocks were made by adding Bacteria and Calcium Lactate with usual ingredients of cement mortar, i.e. cement, sand and water. It was found that the bacteria were also effective in converting Calcium Lactate to Calcium Carbonate, when mixed in cement mortar blocks. It was observed that the pores of cement mortar blocks were filled by Calcium Carbonate and that cracks get healed by the deposition of Calcium Carbonate in the cracks. Cement mortar blocks, with and without healing agent, were made to compare the effect of curing time. The samples were tested after seven, fourteen and twenty-eight days to compare the effect of healing agent. All the samples with the healing agent showed a higher compressive strength in comparison with the samples that were made without healing agent. Different percentages of Calcium Lactate, ranging from 1-7% were also used to find the best composition for future use. It was found that the compressive strength was increasing up to 5% while above 5% the increase was marginal thus it is proposed that Calcium Lactate should be used in between 5-7 % to reduce the cost of self-healing cement in construction industry.

Jellyfish, marketed and consumed as food in The Far East, are traditionally processed using salt and alum mixtures. In recent years, the interest of Western consumers in jellyfish (JF) as a food source is increasing. In Europe [European Union (EU)], JF-derived food products are regulated by a novel food law, but methods for JF treatment and processing have not been developed yet. In this study, a protocol for the stabilization and processing of JF into semi-finished food products without the use of alum is proposed for the first time. Safety and quality parameters, together with a series of technological and nutritional traits, were used to monitor the proposed process and for the characterization of the JF-derived products. Calcium lactate (E327), calcium citrate (E333), and calcium acetate (E263), which are food thickening/stabilizing agents allowed by EU regulations, were used in order to control the presence of possible microbial pathogens and spoilage species. The use of calcium lactate and citrate led to an increase in texture values (~1.7–1.8-fold higher than in starting raw materials) and in several nutritional traits such as antioxidant activity, and protein and fatty acid content. In particular, the combination of JF treatments with calcium salts and phenolic compounds resulted in an antioxidant activity increase of up to 8-fold, protein concentration increase of up to 2.6-fold, fatty acid composition maintenance, and a ω6/ω3 ratio lower than 1. For the first time, the application of phenolic compounds to improve JF technological and nutritional features was verified. This study proposes a new procedure for JF treatment and stabilization useful for future potential food applications in Western countries.

This study investigated the optimization of the bioconcrete engineering properties and durability as a response of the calcium lactate (CL) content (0.22–2.18 g/L) and curing duration (7–28 days) using the response surface methodology (RSM). Scanning electronic microscopy (SEM) was conducted to evaluate the microstructure of calcium precipitated inside the bioconcrete. The results indicated that the optimal conditions for the engineering properties of concrete and durability were determined at 2.18 g/L of CL content after 23.4 days. The actual and predicted values of the compressive strength, splitting tensile strength, flexural strength, and water absorption were 43.51 vs. 43.43, 3.19 vs. 3.19, 6.93 vs. 5.50, and 7.55 vs. 7.55, respectively, with a level of confidence exceeding 95%. The scanning electron microscope (SEM) images and energy-dispersive X-ray spectroscopy (EDX) proved that the amount of calcium increased with the increase in CL content up to 2.81 g/L at 23.4 days, reducing the pores inside the concrete and making it a great potential option for healing of concrete structures.
