Food spoilage during storage occurs physically, chemically and biologically which is related to the activity of bacteria. One of the natural preservation that is currently developing is the application of edible coating on perishable food, such as fishball. Addition of antibacterial agent is important to improve edible coating. Virgin coconut oil contains medium chain fatty acids which have antimicrobial properties, particularly monoglycerides and free fatty acids that produced by hydrolyzing partially triglycerides at the Sn-1 and Sn-3 position using Lipozyme. The aim of this research was to test the effect of edible coating carrageenan enriched with virgin coconut oil hydrolysis (HVCO) (concentrations 1%,3%,5%) on fishball quality.The method was an experimental with factorial completely randomized design.The samples were analyzed for sensorial assessments, Total plate Count, Total Volatile Base-Nitrogen, Water content, and pH for 5 days at room temperature. The study demonstrated that fish meatball coated with carrageenan based-edible coating fortified with HVCO showed the best result compared to controls (Uncoated fishball, coated without HVCO). Sensory attributes were still accepted by panelists until 3 days. Meanwhile, the same pattern depicted by TPC and TVB-N parameters. HVCO5% had inhibited microbial growth and retarded the increase of TVB-N number on fishball, the results were Log 5,08cfu/gr, 29,69 mg/100 gr respectively.

The anti- microbial activity tests of the seed oil, NaOH and ash soaps of the seed oil, of C.albidum were carried out to determine their effectiveness against gram+, gram– bacteria and some fungi strains. The proximate analysis of C.albidum seeds was performed to determine its nutritional benefits to mankind. Agar diffusion tests using Disc diffusion for the pure oils and soaps while the cup plate test method for dilutions was used in the determination of in-vitro activities. Standard methods as described by AOAC, (1990); AOAC, (1984) and Kjeldahl method described by Chang (2003) were used for proximate determinations. The results show the activity of the oil against Klebsiella pneumonia at a concentration as low as 10 mg/ml. The ash-soap of the leaves shows the highest antimicrobial activities because its MIC is the closest to the standard, Streptomycin. It possesses activity against Escherichia coli and Klebsiella pneumonia at a concentration as low as 5mg/ml. The % proximate analysis composition shows Moisture content, Ash content, Crude Fibre, fat/Oil, Protein, Carbohydrates as follows (14.98, 1.90, 2.09, 2.38, 12.14 and 67.65)%. The study concluded by unleashing the great potential of Chrysophyllum albidum seeds as a useful raw material in food, cosmetics and pharmaceutical industries rather than being regarded as waste in the environment

Many people choose alternative medicines for Diabetes Mellitus (DM) disorders, such as herbal plants to suppress the occurrence of the disease widely. In general, DM occurs when the pancreas doesn't produce enough insulin, or when the body can't effectively use the insulin which it produces. The use of medicinal plants to treat various diseases has shown minimal side effects. Indonesia is one of the countries that has used plants as traditional medicine since ancient times. In Indonesia, thousands of species of medicinal plants have been studied to address health problems. Among the medicinal plants that have been studied is the Neem plant (Azadirachta indica A. Juss) which has been shown to cure various diseases. This review article describes the potential of the Neem plant as an antidiabetic. The results of this literature review, in the form of Neem herbal extracts, have quite good potential as an antidiabetic because they contain several compounds such as meliacinolin, azachdirichtin, gliserid oil, acetyl oxyturanoe acid and other compounds that can also act as antidiabetic.

Artocarpus merupakan tumbuhan genus utama keluarga Moraceae dengan jumlah spesies hampir 1.400. Beberapa spesies dari genus tersebut dapat dimanfaatkan sebagai makanan dan obat tradisional di Asia Tenggara, termasuk Indonesia. Jenis yang banyak tumbuh di Indonesia yaitu Artocarpus altilis (sukun), Artocarpus camansi (kluwih), Artocarpus heterophyllus (nangka), Artocarpus integer (cempedak), dan Artocarpus odoratissimus (tarap). Tumbuhan tersebut memiliki potensi sebagai bahan obat dan punya nilai gizi yang tinggi. Review ini bertujuan untuk mengkaji perbedaan antar spesies, profil fitokimia, dan aktivitasnya sebagai antioksidan dari kelima tumbuhan tersebut. Narrative review ini ditulis berdasarkan penelusuran literatur yang berupa publikasi artikel penelitian yang ada di basis data Google Scholar, PubMed, dan Science Direct. Selain itu digunakan sumber pustaka lain berupa buku dan naskah tugas akhir untuk memperkaya isi artikel. Hasil kajian literatur terhadap 5 tumbuhan tersebut menunjukkan bahwa beberapa tumbuhan memiliki kemiripan morfologi daun walaupun secara fisik masih bisa dibedakan. Profil fitokimianya memiliki keunikan dengan kandungan utama berupa senyawa fenolik termasuk flavonoid, stilbenoid, arilbenzofuron, dan neolignan yang tersebar pada bagian daun, buah, bunga, dan kulit. Keunikan tersebut ditemui dengan adanya senyawa golongan flavonoid terprenilasi dan tergeranilasi. Senyawa fenolik tersebut mempunyai kemampuan sebagai antioksidan pada beberapa model uji dan potensial untuk dikembangakan sebagai antioksidan atau kandidat obat terutama untuk penyakit yang melibatkan mekanisme radikal bebas dalam mekanisme patofisiologinya.

Yellowfin tuna is one of Indonesia's main export commodities, its meat contains high protein and can be processed into a variety of commercial food products. In the processing of loin, fillet and tuna steak, ± 10% of flaked meat is produced which can be used for processing commercial products. Spaghetti is one of the commercial products that is easily processed with raw materials and additives that are cheap and easy to obtain as well as halal and thoyib. The raw materials used are tuna flakes, spaghetti noodles and seasonings. The research objective was to analyze the chemical composition of tuna flakes and tuna topping spaghetti as well as the added value and level of consumer preference. This research uses laboratory methods, the percentage of additional selling value and consumer preferences. Proximate chemical composition of tuna flakes, namely: water content (74.80 - 75.25%); protein (16.35 - 17.00%); fat (1.43 - 1.50%); minerals (5.38 - 5.45%); carbohydrates (0.65 - 0.80%). Chemical composition of tuna topping spaghetti, namely: water content (62.73 - 69.13%); protein (7.08 - 8.34%); fat (0.42 - 0.76%); minerals/ash (0.93 - 1.16%) and carbohydrates (24.41 - 25.54%). The added value of tuna flakes in the processing of tuna topping spaghetti for two packages of spaghetti noodles (18 portions) is Rp. 147,355 (80.79%). The level of consumer preference (25 panelists) towards the visual value of tuna topping spaghetti is “very like” (76.0%) and “like” (24%); smell values, namely "really like" (72.0%) and "like" (28%); the value of taste, namely "really like" (80.0%) and "like" (20%); Texture values are “really like” (80.0%) and “like” (20%) and taste values are “really like” (76.0%) and “like” (24%).

Crude Palm Oil (CPO) is palm oil obtained from the extraction or compression process of oil palm fruit flesh and has not been purified. Palm oil is usually used for food, cosmetic industry, chemical industry, and animal feed industry. Increasingly open insight and increasing consumer awareness of the importance of food safety and quality assurance supported by technological developments and laboratory analysis methods, new types of contaminants in food products are also found. Currently, the Indonesian government is facing challenges regarding the issue of 3-monochloro-1,2-propanediol ester (3-MCPD Ester) and glycidyl ester (GE) in palm oil which can hamper Indonesia's palm oil trade in the future. The practice in the field affects the quality of CPO and the retrieval of low-quality CPO is mixed with high-quality CPO. And the length of time the process of pumping CPO from reclaimed tanks to VCT affects the quality of CPO. So this study aims to modify the pumping time and storage time of CPO from Reclaimed tanks to VCT by mixing samples from VCT (fresh CPO) and samples from Reclaimed tanks (lower quality CPO).

The society awareness in consuming halal, safe, and healthy foodstuff within these past few years kept on increasing. This was closely related to responsible food manufacturers which produced sustain halal foods, as evidenced by ownership halal certification. In order to increase the satisfaction of food producers and to maintain their commitment to extend the halal certificates, the quality of halal authority service should always be enhanced. This study aims to identify the Customer Satisfaction Index (CSI) value, to determine the influence of halal label and product attributes toward customer’s satisfaction and loyalty of meatball stalls in Yogyakarta, and to identify the influence of halal label toward selling volume on certified meatball stalls. The instruments used were questionnaires containing 21 quality attributes of halal certificate renewal service. Analyses were performed using Structural Equation Modeling (SEM). The model was composed of seven latent variables: halal certification, brand, price, taste, service, customer satisfaction and customer loyalty. Result of the research showed that taste and halal certification have significant effect on the customer’s satisfaction and loyalty of certified meatball stalls. Halal certification have affected the certified meatball stalls in Yogyakarta by increasing the selling volume of 25-37.5%.

Moringa oleifera L. have good nutritional content including phenolic compounds which can be used as antioxidants and can grow in lowlands and highlands. The purpose of this study was to determine the total phenolic content of the ethanol extract of M. oleifera leaves with variations in the area of ​​collection. The 50% ethanol extract was obtained from the simplicia of M. oleifera leaves by using the maceration method. Analysis of total phenolic content in the extract was carried out using a spectrophotometer instrument with the addition of reagent Folin-Ciocalteu and gallic acid as standard. The results of total phenolic content in Sleman, Wonosari, and Wonosobo areas were (127.87 ± 2.71) mg GAE / g extract, (99.40 ± 2.68) mg GAE / g extract, and (142 , 92 ± 1.81) mg GAE / g extract. The highest phenolic content in the ethanol extract of moringa leaves was found in Wonosobo areas.

The global halal pharmaceutical sector is valued at USD 132 billion by 2021. (Pharmaceuticals, 2020). This sector is seen as a high priority development area. Apart from food products, Muslim consumers are also becoming more aware of halal pharmaceuticals. They are beginning to see the potential detrimental effects created by product development, testing, and production, all of which could be deviating from the halal values. Based on this uncertainty, the public at large is increasingly questioning the sources of their pharmaceutical products. Under such circumstances, the situation of children contracting contagious diseases has been noted to be on the rise in Malaysia, especially in the last few years. As a result, health authorities are concerned that there would be parents who may reject the immunization programs for their children out of the fear that the vaccines used may infringe on some strict religious rules. (Johari Ab Latiff, 2018) A conservative Muslim may sometimes reject the inoculation over concerns that some vaccines were derived from contents of pigs or porcine, of which Muslims are forbidden to consume. Vaccines are part of the pharmaceutical products, and like all other pharmaceutical products, they can be developed using halal ingredients, which can replace the use of non halal contents or animal products and their derivatives for medication. The implementation of halal certification for vaccines is strictly bounded by Shariah law and Fatwa. Malaysia. As a Muslim country, Malaysia is widely and globally regarded as one of the pioneers in halal pharmaceuticals. This can be traced to its world first halal pharmaceutical standard which was introduced as MS 2424: Halal Pharmaceuticals – General Guidelines since 2012, with first revision in 2019. Nonetheless, from then until presently, Malaysia has not been able to provide halal certification for the vaccine products. The implementation of the halal certification for vaccine products in Malaysia may have been triggered by the use of non-halal or forbidden ingredients in the manufacturing of those vaccine products. Thus far, the Malaysian Standard of the MS 2424 is the only standard, and it is also only a general guide. There is a need to develop a more thorough manual that can be adhered to by pharmaceuticals. This necessity to certify vaccine products as halal for the context of Malaysia has thus put the Halal Certification Body, like JAKIM, to be in limbo

Online food delivery service (FDS) is the new gig economy in this era of new normal. Online FDS refers to the process whereby food that was ordered online is prepared and delivered to the consumer. FDS falls at the end of a food supply chain, the final stage just before the food reaches customers. However, this stage can make or break a wholesome food production, particularly in halal food supply chain. This paper revisits the guidelines of FDS in Malaysia; then extended to the measures taken during Covid-19 pandemic. The focus is food safety and quality, and halal supply chain. It is hoped that this overview will become a source of information for the public for their peace of mind, and the food delivery service providers to deliver wholesome food to their customers
