Many industrialized areas of the world demand for the nutraceuticals due to rapidly growing health risks linked with higher consumption of processed foods. Tateishi Kazu vegetable soup or miracle soup is widely consumed around the world because of its nutraceutical properties. In the current research, the Tateishi Kazu vegetable soup was made from both organic and nonorganic sources, such as carrot, burdock root, shiitake mushroom, daikon radish, and radish leaves. We analyzed colour, antioxidant properties, cell viability, and mineral and free amino acid contents of both soups. The L ∗ a ∗ b and pH values revealed no drastic changes in the colour of the organic soup stored for 96 hours. The essential amino acids were present in higher amounts in an organic soup compared to the nonorganic soup. Similarly, the total mineral contents of the organic soup were higher than the nonorganic soup; however, potassium was the major mineral in both soups. Higher phenolic contents with elevated 2,2-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), 2,2-diphenyl-1-picrylhydrazyl (DPPH), and superoxide dismutase (SOD) activity were noticed in organic soup. Moreover, both soups showed considerable reduction in cell viability of HepG2 cells tested through the MTT assay. From the present study, we concluded that the organic Tateishi Kazu vegetable soup can be of great importance to food industry due to the presence of viable nutrients and pharmacological properties.

Liver fibrosis results from chronic liver injury and is characterized by the accumulation of extracellular matrix in excess driven by hepatic stellate cells (HSCs) activation. Chrysin (CHR) is a natural flavonoid that is limited by its low solubility to exert its anti-inflammatory, antioxidant and anti-fibrotic properties. The aim of this study was to investigate the biocompatibility of CHR complexes with two cyclodextrins (CDs)-(2-hydroxypropyl)-β-cyclodextrin (HPBCD) and random methyl-β-cyclodextrin (RAMEB), and their potential to induce anti-inflammatory, antioxidant and anti-fibrotic effects. Biocompatibility of the complexes was evaluated on Huh7 and LX2 cell lines: MTT and Live/Dead tests indicated the cell viability and an LDH test showed the cytotoxicity. Immunohistochemical staining of Nuclear Factor Kappa B (NF-κB) nuclear translocation was performed to evaluate the anti-inflammatory effect of the complexes. Oxygen Radical Absorbance assay, Superoxide Dismutase activity and Glutathione Peroxidase (GPx) assays indicated the antioxidant properties of the chrysin complexes. Finally, the complexes’ anti-fibrotic potential was evaluated at the protein and gene level of α-sma. In HSCs, CDs induced higher cytotoxicity correlated with lower cell viability than CHR–CD. The 1:1 CHR–RAMEB pretreatment avoided p65 translocation. The 1:2 CHR–RAMEB complex increased ORAC values, improved SOD activity and produced the highest stimulation of GPx activity. CHR–RAMEB reduced α-sma expression at lower concentration than CHR–HPBCD, proving to be more efficient. In conclusion, both CHR–CD complexes proved to be biocompatible, but CHR–RAMEB showed improved anti-inflammatory, antioxidant and anti-fibrotic effects that could recommend its further use in liver fibrosis treatment.

Beberapa komponen antioksidan dihasilkan oleh bahan pangan secara alamiah termasuk bahan dari hasil perairan. Keong Matah Merah (Cerithidea obtusa) merupakan komoditas perikanan yang biasa dikonsumsi masyarakat dan diyakini bisa digunakan sebagai obat. Tujuan penelitian ini adalah untuk menganalisis aktivitasantioksidan dan komposisi kimia dari Keong Matah Merah. Komposisi kimia Keong Matah Merah dianalisis dengan metode AOAC untuk kandungan proksimat, kandungan mineral dengan metode APHA, kandungan asam amino dengan metode AOAC . Penentuan aktivitas antioksidan dilakukan dengan metode Molyneux. Hasil penelitian menunjukkan bahwa Keong Matah Merah (Cerithidea obtusa) mempunyai kadar: air 77,5%, protein 13,8%, lemak 2,8%, dan abu 4,5%, makro mineral tertinggi natrium 283,45 mg/100 g dan terendah kalsium39,78 mg/100 g, kadar mikro mineral tertinggi selenium 39,25 mg/100 g dan terendah tembaga 0,29 mg/100 g. Kandungan asam amino esensial tertinggi isoleusin 4,82 % dan terendah arginin 0,95%, kandungan asam amino non-esensial tertinggi asam glutamat 12,08% dan terendah sistein 0,84%. Ekstrak metanol pada Keong Matah Merah mempunyai aktivitas sebagai antioksidan kuat dan mempunyai nilai IC50 58,19 ppm dengan pembanding vitamin C sebesar 3,55 ppm.Kata kunci: Keong Matah Merah, Cerithidea obtusa, gizi, antioksidanAntioxidant compounds are frequently produced by natural foods. Matah Merah Snail (Cerithidea obtusa) is one of fishery commodities which is commonly consumed by society and traditionally used for therapeutic purposes. The aim of this research was to investigate the nutrient composition and antioxidant activity of Matah Merah (C. obtusa). The nutrient compounds were analyzed using proximate contents according to AOAC method, mineral contents using APHA method, and amino acid contents using AOAC method. The results showed that Matah Merah Snail (Cerithidea obtusa) contained 77.5% of moisture, 13.8% of protein, 2.8% of fat, and 4.5% of ash. Analyses of macro- and micro-minerals revealed that the highest level of macro-minerals was sodium 283.45 mg/100 g and the lowest one was calcium 39.78 mg/100 g. The highest level of micro-minerals was selenium 39.25 mg/100 g and the lowest one was copper 0.29 mg/100 g. The highest content of essential amino acidswas isoleusin 4.82% and the lowest one was arginine 0.95%. The highest content of non-essential amino acids was glutamic acid 12.08% and the lowest one was cysteine 0.84%. Methanol extract of Matah Merah Snail (C.obtusa) displayed potential antioxidant activities with IC50 value of 58,19 ppm, with IC50 of vitamin C as positive control was 3,555 ppm.Key words: Matah Merah Snail, Cerithidea obtusa, nutrition , antioxida

The study aimed to characterize the antioxidant properties regarding the Sida cordifolia with special reference to its detailed biochemical analysis. The study revealed that chlorophyll A (0.9 ± 0.3 mg/g), total chlorophyll content (3.0 ± 0.7 mg/g), total carotenoid content (0.3 ± 0.1 mg/g), total soluble proteins (7.5 ± 0.1 mg/g), and total phenolic contents (5.6 ± 1.3 mg/g) were found highest in flower tissue of S. cordifolia. However, peroxidase (POD) contents (118 ± 31 units/g), superoxide dismutase (SOD)  activity (64 ± 1.5 units/g) were maximum in the leaf tissues, while catalase (CAT)  contents (133 ± 25 units/g), ascorbate peroxidase (APX)  contents (145 ± 44 units/g) were also found more in the flowers of S. cordifolia rather than other parts. Our results conclude that leaves, stem, flower of S. cordifolia could be exploited in pharmacology due to presence of different antioxidants reflected in flower and leaf extract make them potent and profound therapeutic agents.                     KEY WORDS: Alkaloids, Flavonoids, Phenolics, Antioxidant, Sida cordifolia   Bull. Th e authors reviewed literature on methodic evaluations of human requirements of protein, based on Russian and foreign data bases (Scopus, Web of Science, MedLine, RINTs, eLIBRA RY) via key words in article headings, and evaluated quality and quantity of protein in diets of workers exposed to occupational hazards. Average requirements of amino acids and their additional intake for bett er health state in certain occupational groups remains a topical problem. Th e article covers list of methods for quantitative and qualitative evaluation of proteins in foods and diets. Findings are diff erences in approaches to protein quantity regulation in Russian Federation and WHO/FAO/UNU (protein normal level in RF is higher, depends on physical exertion, with lower quantity of amino acids with branched chain in structure of essential amino acids). Th erapeutic and prophylactic diet corresponding to Order N46 of Russian Health Ministry for main occupations of metallurgic workshops can be considered as high-proteous and balanced in amino acid contents. Necessity is to study adequate intake of amino acids in workers exposed to occupational hazards, for improving protective and adaptative body mechanisms, and prevention of occupational and occupationally conditioned diseases.

Natural antioxidants effectively counteract changes caused by UV radiation in human skin cells. However, their action is limited due to their lipo/hydrophilicity. Therefore, the aim of this study was to analyze the mutual protective action of hydrophilic ascorbic acid and partially lipophilic rutin against UVA/UVB-induced changes in membranes phospholipid and endocannabinoid system in keratinocytes and fibroblasts. Obtained results clearly showed that, despite the stronger antioxidant properties of ascorbic acid, the lipid membranes were more effectively protected against UV-induced oxidation by rutin, including changes in phospholipid fatty acid levels, prevention against reactive aldehydes formation and endocannabinoids degradation. Ascorbic acid more strongly prevented UV-induced endocannabinoid receptors expression in fibroblasts, especially CB1. However, the combined action of used antioxidants resulted in the greatest cytoprotective effect, which was evident in the inflammatory marker TNFα down-regulation and increased cell viability following cell irradiation. The applied mixture of antioxidants showed a stronger protective in relation to membrane phospholipids in keratinocytes and in the endocannabinoid system in fibroblasts. In conclusion, it can be suggested that combined antioxidant capacities of ascorbic acid and rutin protects against lipid peroxidation but also decreases the UV-induced inflammation by direct interaction with the endocannabinoid system, thus increasing skin cell viability.

Cymbopogon citratus DC (Stapf.) is a perennial grass and it is distributed around the world. It is used as a condiment for food and beverage flavouring in the form of infusions and decoctions of its dried leaves. Our previous studies have shown antioxidant, anti-inflammatory and gastroprotective activities for the infusion and its phenolic fractions. The aim of the present work was to develop oral dosage forms from a Cymbopogon citratus extract to be used as a functional food with antioxidant properties. Initially, an essential oil-free infusion was prepared, lyophilized and characterized by HPLC-PDA. Total phenols were quantified with the Folin–Ciocalteu method and the antioxidant activity was assessed by DPPH assay. Gelatine capsules containing the extract with different excipients, selected after DSC and IR trials, were prepared. A formulation exhibiting better antioxidant behaviour in a gastric environment was attained. These results suggest that the proposed formulation for this extract could be a valuable antioxidant product and, consequently, make an important contribution to “preventing” and minimizing diseases related to oxidative stress conditions.

Ionizing radiation interacts with biomolecules to produce free radicals, which can damage all components of the cell. The aim of this study was to evaluate the protective effects of different doses of resveratrol against X-ray-induced damage in male rat. The animals were divided into five groups, each composed of six rats: two groups as control groups received saline or ethanol (ethanol in saline, 25%, V/V as a vehicle). Two groups received resveratrol (5 and 10 mg/kg.bwt) for 30 days before X-ray exposure. One group received X-ray. The rats were sacrificed 24 h after the last exposure, blood samples were collected and serum level of malondialdehyde (MDA), total antioxidant capacity (TAC), and the activities of superoxide dismutase (SOD) and catalase (CAT) were measured by spectrophotometric method. X-ray irradiation significantly increased the levels of MDA and decreased TAC as well as SOD activity as compared with control groups. Furthermore, resveratrol pretreatment led to remarkable decrease in MDA concentration and increase in the activities of SOD and CAT as well as TAC compared to those of controls. Our results revealed antioxidant properties of resveratrol and suggest it as a potent radioprotector to ameliorate X-irradiation induced damage in the body.

The aim of this study was to examine the quality characteristics of extruded red Jasmine rice flour (RJF) noodle that had been prepared with hydrocolloids, namely guar gum (GG), carboxymethyl cellulose (CMC), and xanthan gum (XG) at the concentrations of 0.0 (control sample), 0.2, and 0.4% (w/w), respectively. The use of hydrocolloids had no effect on total phenolic contents, antioxidant properties (DPPH, ABTS, and FRAP), color, and X-ray diffraction patterns (p > 0.05). In contrast, the hydrocolloids tended to increase the expansion ration of the noodle. GG and CMC improved cooking, textural, and sensory properties. Ultimately, 0.2%-GG showed the lowest cooking loss (5.07%) when compared with others. Moreover, it also provided the noodle with better textural properties such as tensile strength, extensibility, hardness, cohesiveness, and chewiness (p < 0.05). For these reasons, the highest acceptability (6.75) for the noodle was achieved with GG02. XG resulted in lower overall acceptability (5.05), particularly the 0.4%-XG recipe (p < 0.05). Thus, usage of 0.2%-GG was the best option for improving the qualities of extruded RJF noodle. XG was deemed ineffective for improving the noodle.

The concept of Safety Integrity Level (SIL) has been developed within different systems of standards (IEC 61508, EN50129 and DEF-STAN 00-56). These standards are applied in different areas: control technology (IEC 61508), railway technology (EN50128 and EN 50129), and defense technology (DEF-STAN-00-56). Nowadays, a lot of the mass transit turnkey projects around the world demand the contractors to follow CENELEC standards and SIL concept for the safety function implementation. Although the concept of SIL is mentioned in these standards, the interpretation of the concept of SIL in these standards is not consistent and unequivocal. This paper is written to elaborate the anomalies of SIL interpretation among these various standards in order for safety engineers to obtain a more detailed view on the concept of SIL over these standards.
