Beberapa komponen antioksidan dihasilkan oleh bahan pangan secara alamiah termasuk bahan dari hasil perairan. Keong Matah Merah (Cerithidea obtusa) merupakan komoditas perikanan yang biasa dikonsumsi masyarakat dan diyakini bisa digunakan sebagai obat. Tujuan penelitian ini adalah untuk menganalisis aktivitasantioksidan dan komposisi kimia dari Keong Matah Merah. Komposisi kimia Keong Matah Merah dianalisis dengan metode AOAC untuk kandungan proksimat, kandungan mineral dengan metode APHA, kandungan asam amino dengan metode AOAC . Penentuan aktivitas antioksidan dilakukan dengan metode Molyneux. Hasil penelitian menunjukkan bahwa Keong Matah Merah (Cerithidea obtusa) mempunyai kadar: air 77,5%, protein 13,8%, lemak 2,8%, dan abu 4,5%, makro mineral tertinggi natrium 283,45 mg/100 g dan terendah kalsium39,78 mg/100 g, kadar mikro mineral tertinggi selenium 39,25 mg/100 g dan terendah tembaga 0,29 mg/100 g. Kandungan asam amino esensial tertinggi isoleusin 4,82 % dan terendah arginin 0,95%, kandungan asam amino non-esensial tertinggi asam glutamat 12,08% dan terendah sistein 0,84%. Ekstrak metanol pada Keong Matah Merah mempunyai aktivitas sebagai antioksidan kuat dan mempunyai nilai IC50 58,19 ppm dengan pembanding vitamin C sebesar 3,55 ppm.Kata kunci: Keong Matah Merah, Cerithidea obtusa, gizi, antioksidanAntioxidant compounds are frequently produced by natural foods. Matah Merah Snail (Cerithidea obtusa) is one of fishery commodities which is commonly consumed by society and traditionally used for therapeutic purposes. The aim of this research was to investigate the nutrient composition and antioxidant activity of Matah Merah (C. obtusa). The nutrient compounds were analyzed using proximate contents according to AOAC method, mineral contents using APHA method, and amino acid contents using AOAC method. The results showed that Matah Merah Snail (Cerithidea obtusa) contained 77.5% of moisture, 13.8% of protein, 2.8% of fat, and 4.5% of ash. Analyses of macro- and micro-minerals revealed that the highest level of macro-minerals was sodium 283.45 mg/100 g and the lowest one was calcium 39.78 mg/100 g. The highest level of micro-minerals was selenium 39.25 mg/100 g and the lowest one was copper 0.29 mg/100 g. The highest content of essential amino acidswas isoleusin 4.82% and the lowest one was arginine 0.95%. The highest content of non-essential amino acids was glutamic acid 12.08% and the lowest one was cysteine 0.84%. Methanol extract of Matah Merah Snail (C.obtusa) displayed potential antioxidant activities with IC50 value of 58,19 ppm, with IC50 of vitamin C as positive control was 3,555 ppm.Key words: Matah Merah Snail, Cerithidea obtusa, nutrition , antioxida

The aim of this study is determine the IC50 extracts values of white peel and flesh of red watermelon, white peel and flesh of yellow watermelon as antioxidants. To determine antioxidant activities DPPH reagent was used as well as UV-Vis Spectrophotometry was used to measure vitamin C as a positive control measurement. The samples mixed with ethanol in various concentration of 5, 15, 25 and 35 mg/L. The results showed that the IC50 values for each extract of red watermelon flesh, yellow watermelon flesh, white peel of red watermelon, and white peel of yellow watermelon were 16.619 mg/L, 16.575 mg/L, 14.729 mg/L, and 16.782 mg/L, respectively. Vitamin C as the positive control has IC50 value of 9.526 mg/L. These IC50 values showed that vitamin C had higher antioxidant activity than watermelon extracts, but the extracts of watermelon still categorized in strong natural antioxidants. This study concluded that watermelon is good to be consumed because it is a very strong antioxidant.

Rosehips, which are commonly grown in nature in shrub form, are always popular due to their importance in terms of nutrition and health. Because fruits are rich in vitamin C, total phenol and mineral contents and antioxidant activities. Nowadays, there is high demand for natural products. Rosehip grows spontaneously in Turkey. In this study, 9 individuals were examined. Consequently, significant differences were stated according to genotypes for pomological and phytochemical characteristics. Vitamin C, phenol and antioxidant activity were found to affect P and Zn nutrients. Additionally, it was detected that P, K, Ca, Mg, Na Fe, Cu, Zn and Mn contents ranged in 0.09-0.17%, 1.35-1.86%, 1.05-1.44%, 0.43-069%, 50.00-100.00 ppm 28.50-48.30 ppm, 3.30-7.00 ppm, 8.06-12.56 ppm and 50.85-85.35 ppm, respectively. In this context, one of the genotypes has been found promising due to its content.

Objective: Ziziphora clinopodioides is an edible medicinal plant belongs to the Labiatae family that widespread all over Iran. It used as culinary and also in cold and cough treatments in Iran. The aim of present work was to evaluate the effect of different timeframes during the hydrodistillation on essential oil composition, antimicrobial and antioxidant activity. Materials and Methods: The essential oil of Z. clinopodiodes was extracted via hydrodistillation with Clevenger apparatus. The fractions of essential oil were captured at 6 times from the beginning of the distillation: (10, 20, 60, 120, 180 and 240 min). The fractions of essential oil were analyzed by GC/MS and their antibacterial, antifungal and antioxidant activities were studied by Disk - well diffusion and DPPH methods respectively. Results: Six distillation times and whole essential oil were captured during the hydrodistillation. Essential oil yield dropped off significantly during distillation progressed (1.0% for 10 min and 0.025 for 240 min). 1,8 Cineol, Isomenthone, Pulegone, Piperitenone and Citronellic acid were major compounds in fractions and they were affected by distillation times. Pulegone was major compound in all of essential oils. In antioxidant activity assay, whole essential oil was stronger than was stronger than positive control and fractions of essential oil, because of higher levels of Isomenthone, Piperitenone and Citronellic acid. Strongest antimicrobial activity against S. aureus, E. coli and C. albicans was observed from 10 min fraction. Conclusion: Our results indicated that distillation time can create essential oils with specific properties and we can achieve to more efficient essential oil in short times.

ABSTRACT Sponges are a component of coral reef biota that has bioactive compounds with a greater percentage of activity compared to compounds produced by terrestrial plants. This study aims to determine the presence of antioxidant activity in the ethanol extracts of sponge Ianthella basta from the waters of Tumbak Village. Ianthella basta sponge was extracted using maceration method with 96% ethanol solvent. Antioxidant activity testing was carried out using the DPPH method with a concentration of 100 µg / mL, 75 μg / mL, 50 μg / mL, and 25 μg / mL and Vitamin C p.a as positive control. Each sample was made three repetitions of the test. Testing using a UV-Vis spectrophotometer. The results showed that the ethanol extract of the Ianthella basta sponge had antioxidant activity with a percentage of 48.73% at a concentration of 100 µg / mL. Keywords: Ianthella basta sponge, Antioxidants, Extraction, DPPH  ABSTRAK Spons merupakan salah satu komponen biota penyusun terumbu karang yang mempunyai senyawa bioaktif dengan persentase keaktifan lebih besar dibandingkan dengan senyawa-senyawa yang dihasilkan oleh tumbuhan darat. Penelitian ini bertujuan untuk mengetahui adanya aktivitas antioksidan di dalam ekstrak etanol Spons Ianthella basta dari perairan Desa Tumbak. Spons Ianthella basta diekstraksi menggunakan metode maserasi dengan pelarut etanol 96%. Pengujian aktivitas antioksidan dilakukan dengan menggunakan metode DPPH dengan konsentrasi 100 µg/mL, 75 µg/mL, 50 µg/mL, dan 25 µg/mL dan Vitamin C p.a sebagai kontrol positif. Masing-masing sampel dibuat tiga kali pengulangan uji. Pengujian menggunakan alat spektrofotometer UV-Vis. Hasil penelitian menunjukkan bahwa ektrak etanol Spons Ianthella basta memiliki aktivitas antioksidan dengan persentase sebesar 48,73% pada konsentrasi 100 µg/mL. Kata Kunci: Spons Ianthella basta, Antioksidan, Ekstraksi, DPPH

Many ethnic fermented soybean products (FSPs) have long been consumed as seasoning and protein sources in East Asia. To evaluate the quality of various FSPs in East Asia, non-targeted metabolite profiling with multivariate analysis of six traditional FSPs (Natto; NT, Cheonggukjang; CG, Doenjang; DJ, Miso; MS, Doubanjiang; DB, Tianmianjiang; TM) was performed. Six FSPs could be clearly distinguished by principle component analysis (PCA) and partial least square-discriminant analysis (PLS-DA). Amino acid contents were relatively higher in NT and CG, sugar and sugar alcohol contents were relatively higher in MS and TM, isoflavone glycoside contents were relatively highest in CG, isoflavone aglycon contents were the highest in DJ, and soyasaponin contents were the highest in CG. Antioxidant activity and physicochemical properties were determined to examine the relationships between the FSPs and their antioxidant activities. We observed a negative correlation between isoflavone aglycon contents and 2,2’-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) activity. Furthermore, the order of ABTS activity of FSPs has a positive correlation with the order of soybean content in the six FSPs. Herein it was found that primary metabolites were affected by the main ingredients and secondary metabolites were most influenced by the fermentation time, and that soybean content contributed more to antioxidant activity than fermentation time.

AbstractAntioxidant activity of the aerial part and bulbs of Allium paradoxum was investigated by eight in vitro assay systems. Extracts showed good antioxidant activity. IC50 for 1,1-diphenyl-2-picryl hydrazyl radical-scavenging activity was 890.9±43.2 and 984.9±33.5 µg/ml for the aerial part and bulbs, respectively. The aerial parts have better reducing power than bulb extracts but not comparable with Vitamin C (P>0.001). Extracts showed weak Fe2+ chelating ability, the IC50 being 959±47 and 530±24 µg/ml for bulbs and aerial parts, respectively. Both tested extracts exhibited good hydrogen peroxide scavenging in a concentration dependent manner. They exhibited good antioxidant activity against the hemoglobin-induced linoleic acid system that was comparable with vitamin C (P>0.01). They showed good activity against cumene hydro peroxide induced hemolysis in RBCs. In addition, they possessed antihemolytic activity. The extract from aerial parts had significantly higher total phenol and flavonoid content than did bulbs. Amounts of eight elements (Cu, Mn, Zn, Fe, Ni, Pb, Cd and Cr) were also determined in the bulb and aerial part using atomic absorption spectroscopy. They contained higher Fe and Mn contents than other elements.

This study used S. polycystum and T. deccurens were extracted with various solvents (n-hexane, ethyl acetate and ethanol) to determine phytochemical screening and antioxidant activities. Extraction of samples by maceration method, antioxidant activity assay using the immersion method of DPPH (1,1-Diphenyl-2-picryl Hidrazil) measured absorption at a wavelength of 515 nm and compared with the control of antioxidant vitamin C. The results showed that antioxidant activity of the methanol, ethyl acetate, n-hexane extract of S. polycystum have low antioxidant activity with the value IC50 340,06, 180,54, and 502,25 mg/mL. Methanol, ethyl acetate, n-hexane extracts of  T. deccurens have low antioxidant activity with value IC50 491,02, 411,80, and 502,7 mg/mL. This potential is lower than vitamin C IC50 value of 1,72 mg/mL.

This paper aimed at studying the antioxidant efficacy of the methanolic leaf extract of Clerodendrum splendens, a plant of the Lamiaceae family. Phytochemical tests carried out on extracts of Clerodendrum splendens leaves have been able to detect the presence of secondary metabolites such as Flavonoids, Tannins, Saponins and Terpenoids. The results of the antioxidant activity have shown that CSF2, CSF3 fractions and CSB, CSG fractions similarly inhibited hepatic lipids but significantly less than vitamin C. Compared to all fractions, the CSB fraction shows the best inhibitor on the peroxidation of hepatic lipids because at 150 μg/mL, there is a maximum activity (2.5 μg/mL of protein). However, it is found that CSF3, CSF2 and CSG have higher IC50 values than vitamin C (5.613±0.117) while CSEB, CSB and CSC fractions showed lower IC50 values than vitamin C, which is used as the reference reducing compound. The lower the IC50 value compared to vitamin C, the greater the antioxidant capacity of the plant extract. The results of this study suggest that Clerodendrum splendens represents an untapped source of compounds with potential antioxidant activity that could be explored in the development of new therapeutic natural products.

The objective of this work was to evaluate the influence of temperature on the content of bioactive compounds of fruits of guabiju (Myrcianthes pungens (O. Berg) D. Legrand). The peel, pulp and seed of fresh guabiju were analyzed in relation to physical-chemical composition, metals, color, phenolic compounds, flavonoids, anthocyanins, vitamin C and antioxidant activity. On the dehydrated samples at temperature of 60 °C, where also determined the moisture and water activity. The fractions of the fruit showed high amounts of metals. After drying, moisture of 1.3, 1.0 and 0.9% were observed for peel, pulp and seed and water activity of 0.44 to 0.54. All the samples darkened, with less variation in the dehydrated peel (∆E 9.2). The samples showed high values of bioactive compounds, and in the fresh peel were observed higher levels of phenolic compounds (8459.8 mg EGA/100g dry extract), anthocyanins (152.0 mg/100 dry extract) and vitamin C (222.9 mg/100g) and on the dehydrated seed higher value of flavonoids (7480.7 mg EQ/100g dry extract). There was 86.3% degradation of anthocyanins in the dehydrated peel. The best values of antioxidant activities were obtained for the dehydrated peel (IC50 1.37 mg/mL), seed (IC50 1.49 mg/mL) and in the fresh peel (IC50 1.41 mg/mL).
