As a response to the growing demand of consumers for active, natural ingredients of cosmetic preparations, manufacturers are looking for new raw materials, rich in compounds with high antioxidative activity. In this research an attempt were made to evaluate the content of phenolic compounds, L-ascorbic acid and the antioxidant potential (DPPH•, ABTS•+ method) of aqueous and aqueous-glycerine extracts from cherry (Prunus avium L), and sweet cherry (Prunus cerasus L.). The next stage of this work was the application of analysed extracts to cleaning preparations. The best antioxidant properties were demonstrated for the aqueous-glycerine extract of sweet cherry fruit, which also was exhibit the highest phenol and L-ascorbic acid content. After application of analysed extract aqueous-glycerine extract of sweet cherry fruit to the gel, it was showed high foam stability. The model formulations enriched with the aqueous extracts of cherries and sweet cherries had a higher foaming ability, compared to the formulations containing the aqueous-glycerine extracts. The addition of both cherry and sweet cherry fruit extracts to the formulations resulted in a decrease in viscosity, in comparison with the baseline sample. The highest decline in viscosity (15% in relation to the baseline sample) was noted for the aqueous extract of sweet cherry fruit. None of model formulations, containing analysed extracts, did not induce skin lesions in the epidermal patch tests. The results indicate that the extracts can be used as a valuable cosmetic raw material, which have strong antioxidant ability and at the same time did not adversely affecting the usable properties of the washing gel.

During the last century due to the changes in landscape management, in country people’s lives and with intensive fruit-growing the native cultivars of apple fruit trees have been gradually disappearing. The aim of the study was to compare the juices made of native apple cider cultivars. The cultivars-‘Boikovo’, ‘Jadernicka moravska’, ‘Kardinal zihany’, ‘Panenske ceske’, ‘Parmena zlata zimni’, ‘Strymka’ growing in the locality of the Litencicke Hills in the eastern part of the Czech Republic were selected. For comparison, the fruits of commercial ‘Idared’ cultivar were also included. The chemical composition, antioxidant capacity, phenols, flavonoids and ascorbic acid content and the influence of juices on scavenging activity of nitric oxide and hydroxyl radical were measured. The mutual ratio of examined properties which were found, provide information about qualities and possibilities of use of native cultivars. High antioxidant properties characterize the juice of native apple cultivars. In particular, the ‘Strymka’ cultivar contained 2,637.34 mg of AAE (ascorbic acid equivalent) per litre in case of antioxidant capacity. In the juice of this cultivar the value of 144.05 mg of ascorbic acid per litre was recorded. As regards the ‘Panenske ceske’ cultivar, antioxidant capacity was 2,548.38 mg of AAE l-1 and in relation to ascorbic acid, the value was 145.35 mg l-1. Similarly, high values were observed in both cultivars concerning the scavenging effect of apple juices on hydroxyl radical and nitric oxide (the ‘Strymka’ cultivar 16.38% and 19.26%, the ‘Panenske ceske’ cultivar 16.31% and 18.60%).

Berries of Actinidia kolomikta (A. kolomikta) are known for high ascorbic acid content, but the diversity of phenolic compounds has been little studied. The present research aimed to investigate phenolic compounds and antioxidant activity in berries and leaves of twelve A. kolomikta cultivars. The UHPLC-ESI-MS/MS technique was used to determine differences among cultivars in the quantitative composition of individual phenolic compounds. Antioxidant activity was determined by DPPH• free radical scavenging and CUPRAC methods. In the present study, 13 phenolic compounds were detected in berries, whereas leaves contained 17 phenolic compounds. Flavonols were the primary class found in both berries and leaves; other identified phenolic compounds were flavan-3-ols, flavones and, phenolic acids; and dihydrochalcone phloridzin was identified in the leaves. The amount and variety of phenolic compounds in berries and leaves and antioxidant activity were found to be cultivar-dependent. The highest total content of phenolic compounds was found in the leaves of the cultivar ‘Aromatnaja’ and in the berries of the cultivar ‘VIR-2’. Results of this study have confirmed that berries and leaves of A. kolomikta could be a valuable raw material for both food and pharmaceutical industries.

Cinnamon rose (Rosa majalis Herrm.) is the one of two species of rose hips growing in the Kemerovo region. The rose hips pharmacopoeial raw material are fruits which used as a vitamin agent. The rose hips pharmacological effect is due to the rich complex of biologically active substances contained in its fruits. Cinnamon rose belongs to the high-vitamin species. Ascorbic acid content can reach 4-14% in it. Due to the high content of organic acids and polyphenols, rose hips and preparations based on it have a fairly strong antioxidant effect. They are often used to prevent vitamin C deficiency, which is especially important for the region local population living in a territory with a harsh continental climate, characterized by long cold winters. Therefore, the rose hips from Kuzbass flora further study is an urgent goal to expand the medicinal plant raw material base and to provide the population of the region with a vitamin product. The study was aimed at assessing some biologically active compounds content (tannins, organic acids, ascorbic acid) in the cinnamon rose fruits growing in the region. Ascorbic acid quantitative determination was carried out by HPLC, organic acids and tannins - by titration. The analysis showed that the ascorbic acid content in the raw materials collected in the Topkinsky district of the region reaches 0,450±0,003 %, organic acids - 3,728±0,051 %, which corresponds to the PI requirements for this type of raw material. Tannins quantitative content reaches 5.76 %. Obtained experimental data comparative analysis with the literature confirmed the fact that one of the main factors affecting the rose hips vitamin content is the geographical factor.

Natural fruits antioxidants play a significant role in inhibiting reactive oxygen species and scavenging free radicals, thus avoiding chronic, degenerative diseases such as cardiovascular disease, aging, cholesterol rates and cancer. The study covered six categories of each three tastes of different pomegranate fruits obtained or purchased in Erbil/Kurdistan-Iraq, a total of 54 samples (6x3x3) were analyzed. Each type was tested for ferric reduction of antioxidant power assay, reduced power method, ascorbic acid content, total phenol and total flavonoid. Our results have shown that the Sour Smilan cultivar has the highest antioxidant properties, ferric antioxidant power reduction (536.89±14.65), ferric power reduction (0.965), ascorbic acid content (0.252±0.012), total phenol (139.66±3.49), total flavonoid (23.08±2.23), and short comparative studies have been conducted to analyze the amount of iron (11) in pomegranate in order to analyze their interferences to the antioxidant activity reported in the ferric reduction of antioxidant power assay.

There was grounded the expedience of using unconventional vegetable raw material, namely Pinus sylvestris needle that partially replaced hop for beer enrichment. The optimal parameters of extraction of Pinus sylvestris needle relative to anti-oxidant activity of extract: hydromodulus 1:20, temperature 60 ºС, extraction 30 min. The needle extract has pure smell, harmonic refreshing taste with needle note. The content of ascorbic acid in extraction is 0,275 mg / 100 g, antioxidant activity – 202,3 C/100 g. The quantitative ratio of hop and pine needle in beer receipt was determined by the way of mathematical modeling. Quantitative content of Pinus sylvestris needle is no more than 20 % by mass from the rated norm of hop that is enough for preserving hop bitterness and smell. The receipt of beer, including Pinus sylvestris needle, was elaborated. The quality parameters of ready drink were studied. The addition of needle increases the beer gustatory properties, decreases methanol content. The content of ascorbic acid in ready drink is 3,52 mg/100 g. Antioxidant activity of elaborated beer is 178,1 C/100 g that determines its high biological value. The influence of beer with needle extract on antioxidant system of organism of biological objects was assessed. Under conditions of acute pathological condition the beer with needle extract decreases oxidative influence of drink on brain of biological objects. The beer “Smaragd” decreases toxic effect on organism of living creature due to its antioxidant properties. The introduction of needle extract that includes vegetable antioxidants in beer is the one of the ways to increase antioxidant capacity of ready drink. It opens the prospect of studies, directed on elaboration of arrangements of stabilization of different sorts of beer. The studies may be introduced in production that has positive effect on ready product quality.

Although the effects of melatonin on plant abiotic and biotic stress resistance have been explored in recent decades, the accumulation of endogenous melatonin in plants and its influence on fruit quality remains unclear. In the present study, melatonin accumulation levels and the expression profiles of five synthesis genes were investigated during fruit and leaf development in sweet cherry (Prunus avium L.). Melatonin was strongly accumulated in young fruits and leaves, then decreased steadily with maturation. Transcript levels of PacTDC and PacSNAT were highly correlated with melatonin content in both fruit and leaves, indicating their importance in melatonin accumulation. Furthermore, application of 50 and 100 μmol·L−1 of melatonin to leaves had a greater influence on fruit quality than treatments applied to fruits, by significantly improving fruit weight, soluble solids content, and phenolic content including total phenols, flavanols, total anthocyanins, and ascorbic acid. Meanwhile, melatonin application promoted the antioxidant capacity of fruit assayed by 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2′-azinobis (3-ethylben zothiazoline-6-sulfonic acid) (ABTS), and ferric reducing antioxidant power (FRAP). These results provide insights into the physiological and molecular mechanisms underlying melatonin metabolism of sweet cherry.
