One of the most frequently consumed sources of natural antioxidants is tea. High content of phenolic substances in it, makes it an excellent functional drink. At present, interest in tea is great not only as an independent drink, but also as a raw material for the production of tea extracts. The study was conducted on extracts obtained from samples of leaf tea of foreign and Russian origin in the following parameters: the content of soluble solids in tea extracts; total content of phenolic substances; total content of flavonoids; total content of tannins; antiradical activity by the DPPH method; restoring force by the method of FRAP. During the study of tea species, different in the way of processing and in the region of origin, it was determined that the leader among the presented teas is the white tea of Chinese origin, which has the highest antiradical activity and the highest content of tannins. Comparing green tea from China and Russia, it can be concluded that the content of individual groups of substances varies slightly against the background of slightly higher anti-radical activity of Chinese tea. In the group of black teas, the Indian "Harmutti" tea is in the lead by the results of the test, significantly exceeding tea from the Krasnodar Territory by anti-radical activity and the total content of phenolic substances. Thus, promising types of tea for the prevention of diseases (diabetes, atherosclerosis, hypertension, Alzheimer's disease), arising as a consequence of oxidative stress, are tea white Chinese and green tea Krasnodar.

The aim of the study was to determine the type of solvent that allows the most complete extraction of antioxidant substances from white, black and green tea (Camellia sinensis). The objects of the study were extracts of three types of tea obtained using various solvents: water, a mixture of water-ethanol (75% vol./25% vol.), A mixture of water-ethanol (50% vol./50% vol.), A mixture of water -ethanol (25% vol./75% vol.) and ethanol (96%). In extracts of white, black and green tea, the total content of phenolic substances, flavonoids, antiradical activity by the DPPH method, and the restoring force by the FRAP method were determined. The maximum values of the total content of phenolic substances were found in the extract of white tea based on ethanol and a water-ethanol solvent system (50/50), black tea when extracted with water, green tea with a water-ethanol solvent ratio (50/50). High values of the total content of flavonoids were established for white tea extract based on a water-ethanol solvent system (50/50), black tea when extracted with water, green tea, when using ethanol as a solvent. Low antiradical activity was found in white tea extract based on a water-ethanol solvent system (50/50), in ethanol-based black tea, and green tea showed low values when extracted with water. The highest index of restorative power was found in white tea extract based on a water-ethanol solvent system (25/75), in black and green tea when extracted with water. Thus, as a result of the study of extracts of white, black and green tea, it was found that when the white tea is extracted with a water-ethanol (50/50) solvent system, the largest amount of antioxidant substances is extracted. The maximum amount of antioxidants from black and green tea is extracted using water as a solvent.

Buckwheat is a generous source of phenolic compounds, vitamins and essential amino acids. This paper discusses the procedure of obtaining innovative gluten-free, precooked pastas from roasted buckwheat grains flour, a fertile source of natural antioxidants, among them, phenolic acids. The authors also determined the effect of the extruder screw speed and the level of moisture content in the raw material on the quantity of free phenolic acids. The qualitative and quantitative analysis of phenolic acids in pasta was carried out using high-performance liquid chromatography electrospray ionization tandem mass spectrometry (HPLC-ESI-MS/MS). The chromatographic method was validated. For extracts with the highest total content of free phenolic acids and unprocessed flour from roasted buckwheat grain, the TLC-DPPH test was also performed to determine the antioxidant properties of the tested pasta. The level of moisture in the raw material had an impact on the content of phenolic acids. All pastas made from buckwheat flour moistened up to 32% exhibited a higher total content of free phenolic acids than other mixes moistened to 30 and 34% of water.

This article examines the chemical characteristics contained in the waste of juice production of black currants and blueberries. the influence of antioxidant substances on the human body is considered. The aim of the article is to study the chemical composition and antioxidant activity of freshly frozen blueberries and black currants, fresh juice of blueberries and black currants, raw and dried pomace of the studied berries, which underwent short-term heat treatment, water extracts and concentrated water extracts of these berries, as well as the subsequent comparison of the values of all data. We demonstrate methods for determining the total content of phenolic compounds, total flavonoids, total anthocyanins, FRAP method (method for determining antiradical activity), a method for evaluating antioxidant properties using a model system of linoleic acid, as well as a method for determining the restoring force. Studies were carried out on water-alcohol extracts obtained at atmospheric pressure and temperature of 37 °C. The results of the study show that dried blueberries, compared with other objects studied as blueberries and blackcurrants, have the maximum values of all chemical characteristics, which is the best option for human health.

This study was aimed to characterize the physical and chemical properties of borassus palm fruit mesocarp, to determine the best type of solvent to extract bioactive compounds by maceration method, and to evaluate the antioxidant properties of bioactive compounds using DPPH (1,1-difenil-2-pikrilhidrazil) method. Carotenoid was separated based on TLC(thin layer chromatography) method, which produced spots. To confi rm the results, the spots were scanned using UV-vis spectrofotometry. The results showed that the water content of borassus fruit mesocarp was 77.31%, while total fat, ash content, and tannin were 0.11%, 1.43%, 0.08%, respectively. Total Carotenoid was 8324.6 µg/100g with β carotene content was 6217.48 microgram/100g. The best solvent used in extracting the bioactive compounds was ethanol and acetone with (1:1) ratio. The highest yield was 4.3% and bioactive compounds in palm fruit mesocarpextracts as antioxidants was about 87% as carried out by DPPH method, so it could become a potential antioxidant. TLC Identifi cation produced two spots. One spot was identifi ed as carotenoids from xanthophyll group and the other one was β-carotene.Keywords: Natural antioxidants, borassus palm fruit mesocarp, bioactive compounds ABSTRAKPenelitian ini bertujuan untuk karakterisasi senyawa bioaktif dalam mesocarp buah lontar berdasarkan sifat fisik dan kimia, mengetahui jenis pelarut terbaik untuk mengekstrak senyawa bioaktif dengan metode maserasi, serta mengevaluasi sifat antioksidan senyawa bioaktif mesocarp dengan metode DPPH (1,1-difenil-2-pikrilhidrazil). Dasarpemisahan karotenoid dengan metoda KLT (kromatografi  lapis tipis) pada ekstrak lalu dikuatkan dengan hasil scanning menggunakan spektrofotometer UV-Vis. Hasil penelitian menunjukkan bahwa mesocarp buah lontar mengandung kadar air 77,31%; total lemak 0,11%, kadar abu 1,43%; tanin 0,08%; total karotenoid 8324,6 µg/100g dengan kandungan senyawa  karoten 6217,48 µg/100g. Perlakuan pelarut terbaik untuk proses ekstraksi senyawa bioaktif adalah etanol dan aseton dengan rasio (1:1). Hasil rendemen tertinggi yaitu 4,3% dan potensi senyawa bioaktif dalam ekstrak mesocarp buah lontar sebagai antioksidan dengan metode DPPH yaitu sekitar 87%, sehingga berpotensi sebagai salahsatu senyawa antioksidan. Identifi kasi dengan metode KLT yang menghasilkan 2 noda yaitu noda 1 diduga karotenoid dari golongan xantofi l dan noda 2 yatu  karoten.Kata kunci: Antioksidan alami, mesocarp lontar, senyawa bioaktif

The article presents results of antioxidant compounds determination (total amount of phenolic compounds, total amount of flavonoids) and parameters of the antiradical activity (by the DPPH method) and reducing power (by the FRAP method) in different types of coffee beans depending on roasting degree (weak, medium, strong), coffee variety (Robusta and Arabica) and the importing country. The researchers used the products presented in the retail chains of Samara. The study purpose was to reveal a universal and most common source of functional substances with an antioxidant effect for the human body and use it both in its pure form and in combination with other products (BAS). According to the research results, Robusta coffee (Coffea Canephora) of medium roasting from Brazil has high indicators for all the conducted analyses and can be used as an additional source of antioxidant substances, and as a raw material for obtaining BAS. Coffee Arabica (Coffea Arabica) of medium roasting of Indonesian origin has the highest restoring power, and the highest content of phenols and flavonoids. Coffee Arabica (Coffea Arabica) of a strong degree of roasting from India has the lowest rates. All other types of coffee have average, slightly different results.

Background: Nowadays, natural antioxidants are used to replace synthetic antioxidants for delaying or preventing the oxidation of edible oils. In this study, phenolic compounds and antioxidant properties of methanol extracts of Spirulina microalgae (Arthrospira platensis) were measured. Methods: Phenolic content was measured by Folin–Ciocalteau method and antioxidant activity was measured by the 2, 2-diphenyl-1-picrylhydrazyl (DPPH) method. Also, spirulina microalgae as natural antioxidant, was added to sesame oil for improving its oxidative stability. The effects of methanol extract of these microalgae in four concentrations (0, 500, 1000 and 2000 ppm) and synthetic antioxidants of butylated hydroxyl anyzole (BHA) and butylated hydroxytoluene (BHT) in two levels (100 and 200 ppm) in retarding the sesame oil oxidation were examined. Results: The results showed that spirulina extract had 50.54 mg gallic acid/g samples total phenols and antiradical activity (84.38%). By increasing the concentration of the extracts, the oxidation process decreased. Methanol extract at 1000 ppm concentration had the highest antiradical activity than other concentrations and its antiradical activity was alike the synthesis antioxidant of BHA. By Increasing of storage period, peroxide values in 500 and 1000 ppm of spirulina extracts first increased then decreased and in other treatment increased. During storage time thiobarbituric acid index increased. However, this increase was higher in control treatment than others. Conclusion: According to the stated content, it can be said that methanol extracts of spirulina have appropriate antioxidant properties and spirulina can be used as a natural antioxidant to improve the oxidative stability of sesame oil.

Interest in the consumption of berries is largely due to the content of biologically active substances in them and their importance as dietary antioxidants. Polyphenolic compounds found in blackcurrant berries are known as agents that act prophylactically and therapeutically on the human body. The following were determined: total content of phenolic substances, flavonoids, anti-radical activity according to the DPPH method, restoring power according to the FRAP method, anthocyanins, organoleptic characteristics, dietary fiber content, vitamin C content for feedstock, semi-finished products (blackcurrant berries, blackcurrant puree, two types freeze-dried snacks from blackcurrant berries). According to the results of the study, it was found that the freeze-dried berry (snacks of two types of freeze-drying) showed good results: 42.05 mmol Fe2 +/1 kg (snacks with a structure-forming agent, 5% pectin), 38.6 mmol Fe2 +/1 kg ( snacks) restoring power according to the FRAP method, 47.1 Ec 50 mg/ml (snacks), 79.4 Ec 50 mg/ml (snacks with a builder, pectin 5%) anti-radical activity according to the DPPH method, 766 mg HA/100 g ( snacks), 835 mg HA/100 g (snacks with a builder, pectin 5%) total phenolic content, 374 mg K/100 g (snacks), 392 mg K/100 g (snacks with by a touring agent, 5% pectin) total flavonoid content, 166.07 mg CG/100 g (snacks), 174.21 mg CG/100 g (snacks with a structuring agent, 5% pectin) anthocyanins content, 50.1% (snacks), 66.9% (snacks with a builder, pectin 5%) vitamin C content, 76.8% (snacks), 90% (snacks with a builder, pectin 5%) dietary fiber, 1.92% (snacks), 2.13 % (snacks with a builder, pectin 5%) – titratable acidity. Thus, we can conclude that vacuum drying provides samples with good physicochemical properties and is better than a dried sample.

Abstract. Batubara R, Hanum TI, Affandi O, Wahyuni HS. 2020. Chemical compounds contained in young and mature leaves of agarwood species Wikstroemia tenuiramis and its antioxidant properties. Biodiversitas 21: 4616-4622. The genus Wikstroemia is one of the genus of agarwood producing trees which has not been widely researched and published. One type of this genus is Wikstroemia tenuiramis Miq, which grows naturally in North Sumatra, the leaves are like other types of agarwood leaves can be used as raw material for agarwood leaves tea. A research has been conducted to determine the chemical contents contained in the young and mature leaves of agarwood plants species W. Tenuiramis. This research methods applied qualitative analysis using phytochemical screening, quantitative analysis to determine tannin content using titration method, antioxidant activity analysis using 2,2-diphenil-1-picrylhydrazil (DPPH) method, and compound tracing using Py-gas chromatography-mass spectrometry (Py-GC-MS) instruments. The qualitative phytochemical analysis results showed no difference in chemical compounds contained in both the young and mature leaves. Both the young and mature leaves contained flavonoids, triterpenoids, and tannins, and did not contain alkaloids, steroids and saponins. The young contained tannins of 1.079 ± 0.001% and the mature contained tannins of 4.645 ± 0.021%, not significant statistically. Py-GC-MS analysis showed the presence of various 30 bioactive compounds contained in both young and mature leaves. The analysis results also showed that both the young and mature leaves had very strong antioxidant activity. Our findings suggest that the two types of leaves have equal utility value of in term of chemical contents and antioxidant potentials.

Since their discovery in 2004, carbon dots have attracted strong interest in the scientific community due to their characteristic properties, particularly their luminescence and their ease of synthesis and derivatization. Carbon dots can be obtained from different carbon sources, including natural products, resulting in a so-called ’green synthesis’. In this work, we obtain carbon dots from tomato juice in order to obtain nanoparticles with the antioxidant capabilities of the natural antioxidants present in that fruit. The obtained material is characterized regarding nanoparticle size distribution, morphology, surface functional groups and optic properties. Antioxidant properties are also evaluated through the DPPH method and their cytotoxicity is checked against human dermal fibroblast and A549 cell-lines. The results indicate that carbon dots obtained from tomato have a higher antioxidant power than other already-published antioxidant carbon dots. The bandgap of the synthesized materials was also estimated and coherent with the literature values. Moreover, carbon dots obtained from tomato juice are barely toxic for healthy cells up to 72 h, while they induce a certain cytotoxicity in A549 lung carcinoma cells.

Several therapeutic benefits of medicinal plants are attributed to antioxidant properties, since antioxidant compounds play an important role in the prevention of various diseases and aging. Many products have synergistic action from combinations of plant extracts that contain natural antioxidants. The present study aimed to evaluate the synergistic effect of Pfaffia glomerata extract with Arrabidaea chica extract for antioxidant action. In the study the extract of the inflorescences of P. glomerata and the extract of the leaves of A. chica were used. The synergism between P. glomerata extract and A. chica extract was evaluated using the ratio between experimental and theoretical antioxidant activity, which was determined using the DPPH method and the potential total reactive antioxidant method (TRAP). The combination of P. glomerata extract and A. chica extract showed a synergistic effect, in which the antioxidant property of this combination was substantially superior to the sum of the individual antioxidant effects. This demonstrates that the combined extracts can be important for the development of products that have a high antioxidant potential.
