The complex studies of chemical and biochemical composition of the vegetable raw material were carried out; their influence on technological parameters and microstructure of forcemeat of semi-smoked sausages was detected to prove the expedience of using the spicy-aromatic plants in the production technology of semi-smoked sausages. Antioxidant properties of thyme and juniper were studied. The quality and safety of the new types of semi-smoked sausages were proved on the base of their study by organoleptic, physical-chemical, structural-mechanic, microbiological parameters. On the base of received results it was persuasively proved the expedience of using the flour of germinated and non-germinated lentil in combination with the meat raw material, especially with chicken, spicy-aromatic plants in composition of semi-smoked sausages, because it favors the improvement of their biological value. Thyme and juniper decelerate the intensity of hydrolysis products creation by 2 % and peroxide creation in the average by 12 % in the studied samples comparing with control. It was determined the maximal storage life of the new types of semi-smoked sausages that is 15 days at temperature 6±2 °С.

У статті наведено результати досліджень якості та безпечності м'яса та ковбасних виробів українських виробників за органолептичними, фізико-хімічними та мікробіологічними показниками. Проаналізовано основні показники безпечності продуктів, які реалізуються в торговій мережі. По результатам досліджень встановлено основні причини невідповідності згідно з діючими стандартами – це показник загального мікробіологічного забруднення (МАФАМ) і перевищення кількості бактерій групи кишкових паличок, що свідчить про порушення технологічних режимів та санітарно-гігієнічних вимог виробництва, зберігання, транспортування та реалізації. The article contains research results of quality and safety of meat and sausages of Ukrainian producers on organoleptic, physical-chemical and microbiological parameters. We analysed basic parameters of safety products that are sold in the trading network. The results studies found the main causes of non-compliance under the current standards – a measure of total microbial contamination (MAFAM) and excess amounts of E. coli bacteria, indicating a violation of technological regimes and hygiene requirements of production, storage, transport and sale.

The article considers the possibility of using whole-grain flour from germinated wheat grain as a raw material component containing easily digestible sugars, essential amino acids, vitamins and minerals. For the intensification of the germination process, the treatment of wheat at the acoustic source of elastic oscillations is used at a frequency of (22 ± 1.65) kHz and power of 340 W and an exposure time of 5 minutes. The obtained whole-ground flour from germinated wheat grain has a weighted average particle size of flour 177 ± 25 microns. This flour was used in the production of model bread samples by partial replacement of high-grade flour in the amount of 10–50%. Based on the determination of technological parameters, it was found that the use of whole-grain flour from germinated wheat grain increases the sugar-forming and gas-forming ability of the flour mixture, intensifies the fermentation process. It has little effect on the quantity and quality of gluten. The optimal value of the drop number was found for the first-grade baking wheat flour and whole-grain flour from germinated wheat in a ratio of 80:20, respectively. This ratio was also defined as the best organoleptic evaluation of laboratory test baking bread samples. The model sample had an attractive appearance, a convex brown, uniform porosity, non-sticky, elastic crumb, pronounced taste and aroma. The authors note that the improvement of the production technology of bakery products obtained using whole-grain flour from germinated wheat grain is possible by choosing the optimal dosage of introducing this type of raw material and monitoring the technological parameters of the process.

Pitaya peel can be used as a raw material for betalains extraction. The aim of this research was to quantify phenolic compounds, antioxidant activity and betalains on pitaya peel. Furthermore, evaluate the betalains stability against various pH conditions and exposure time of heating. The results showed that pitaya peel contains phenolic compounds and presented antioxidant activity. Moreover it showed high concentration of betalains (101.04mg equivalent to betanin. 100g-1) which were stable over a wide pH range (3.2 - 7.0) and were resistant to heating (100oC) up to 10 minutes at pH range from 3.7 to 5.5. Therefore, pitaya peel is a promising source of betalains which can be applied as a natural colorant for food.

<span style="font-family: Times New Roman; font-size: small;"> </span><p>Four formulations of chicken burger were prepared: control product without inulin, and products with 1.0, 2.0 or 3.0 % of inulin (in relation to the weight of meat, fatty raw material, and water), respectively. Physical, chemical and sensory analyses were made to evaluate the effect of inulin on the quality of cooked burgers. The results showed that the application of inulin did not cause significant decrease of the thermal processing yield nor the shear force of the products. However, the addition of inulin resulted in slight, but significant differences (P &lt; 0.05) in chemical composition and energy value of burgers. Burgers of all formulations were acceptable in sensory characteristics. The addition level of inulin not higher than 1.0 %, did not result in deterioration of physical, chemical and sensory quality characteristics of chicken burgers. To improve the nutritional value of chicken burgers, the modification of fatty acid composition is recommended.</p><span style="font-family: Times New Roman; font-size: small;"> </span>

The article presents the results of the development of a new type of rabbit meat product - meatloaf. The consumption of healthy and nutritious foods rich in macro- and micronutrients, low in lipids and cholesterol, as well as various nutritional supplements, is preferable for the modern consumer. One of the promising types of meat as a dietary raw material is rabbit meat. As a result of the studies, a physicochemical analysis was carried out, the amino acid composition of rabbit meat was determined, and an organoleptic and tasting assessment of rabbit meatloaf was given. The technological scheme, the recipe is developed and the technological parameters of the meatloaf preparation are determined. It is recommended to store meatloaf no more than 10 days at a temperature of 0–2 °C with a humidity of 85-90 %. Meatloaf from rabbit meat has functional properties, contains a large number of vitamins PP – 174.3 mg, potassium minerals – 5052.8 mg, magnesium – 382.4 mg, phosphorus – 2875 mg, sodium – 8598.7 mg.The results of the nutritional and biological value of rabbit meatloaf allow us to make an informed conclusion about the high level of their nutritional value, which clearly illustrates the values of quality indicators.

Разработаны рецептуры и технологии хлеба и хлебобулочных изделий из композитной смеси пшеничной муки высшего сорта и гречневой муки (1) и обойной муки из зерна пшеницы 5-го класса (2) с применением полисахаридов (ПС) в концентрациях, %: ксантана 0,5; трагаканта 0,6. В процессе исследования в опытные образцы хлеба вводили ПС: трагакант (Sugarflair Colours, Англия), ксантан (Deosen, Китай), гуар (Guarsar, Индия), гуммиарабик (Sugarcraft Essentials, Англия) в концентрациях от 0,5 до 1,5%. Установлено положительное влияние ксантана и трагаканта на качество хлеба. Влажность хлеба из композитной смеси (1) увеличилась на 0,54 и 1,64%; пористость – на 6,0 и 1,4% соответственно. Влажность хлеба (2) увеличилась на 0,6 и 5,1% соответственно, пористость – в среднем в 1,7 раза. Разработанные образцы хлеба с добавлением ПС рекомендованы для рациона как источник основных нутриентов. По микробиологическим показателям опытные образцы соответствуют требованиям ТР ТС 021/2011. Калорийность образцов из муки (2) и композитной смеси (1) составила 178,84 и 198,00 ккал соответственно, что необходимо учитывать в диетическом и функциональном питании. Разработанные рецептуры и технологии хлебобулочных изделий с добавлением ПС перспективны для применения на предприятиях хлебопекарной промышленности и индустрии питания. The opportunity of using polysaccharides (PS) in the recipes and production technology of bakery products from a composite mixture of high-grade wheat flour and buckwheat flour (1) and wholemeal flour from fifth-grade wheat (2) with concentrations of xanthan 0,5% and tragacanth 0,6% was studied. Polysaccharides of various origins were introduced into the experimental samples, namely: tragacanth (Sugarflair Colors, England), xanthan (Deosen, China), guar (Guarsar, India), and gum arabic (Sugarcraft Essentials, England) in concentrations from 0,5 to 1,5%. The positive influence of xanthan and tragacanth on the quality of bread was established. Humidity of bread from the composite mixture (1) increased by 0,54 and 1,64%; porosity – 6,0 and 1,4%, respectively. Humidity bread (2) increased by 0,6 and 5,1%, respectively, porosity – an average of 1,7 times. Designed bread samples with the addition of PS are recommended for the diet as a source of essential nutrients. According to microbiological parameters, the prototypes satisfy the requirements of TR CU 021/2011. The caloric value of the samples from flour (2) and composite mixture (1) was of 198,00 and 178,84 kcal, respectively, what needs to be considered to consider dietary and functional nutrition. The data obtained allow us to recommend our developed technological solutions to bakery enterprises.

Рассмотрен опыт внедрения системы менеджмента безопасности пищевой продукции на ОАО Кондитерский комбинат «Кубань». Установлены физические, химические и микробиологические факторы, снижающие безопасность продукции, производимой на ОАО Кондитерский комбинат «Кубань», – мучных кондитерских изделий и продукции цеха шоколадного производства. Перечислены разработанные и внедренные на комбинате пререквизитные программы для предупреждения опасности загрязнения продукции. Установлено, что внедрение превентивных мер позволило: поэтапно сократить количество критических контрольных точек на комбинате с 88 до 4, обеспечить отсутствие рекламации по качеству и безопасности выпускаемой продукции от контролирующих органов, снизить в 2019 г количество претензий от потребителей на 10%. по сравнению с 2018 г. The experience of implementing the food safety management system at OJSC Kuban Confectionery plant is shown. Physical, chemical and microbiological factors that reduce the safety of products produced at the Kuban Confectionery plant-flour confectionery products and products of the chocolate production workshop, have been established. Preliminary programs developed and implemented at the plant to prevent the risk of contamination of products are listed. It was found that the introduction of preventive measures allowed: to gradually reduce the number of critical control points at the plant from 88 to 4, to ensure that there are no complaints about the quality and safety of products from regulatory authorities, to reduce by 10% in 2019 the number of claims from consumers compared to 2018.

In order to utilization the molybdenum tailings which be deposited in large quantities. Test used it to prepare glass-ceramics as main raw material, TiO2 as nucleation agents and CaO-Al2O3-SiO2 system and wollastonite as the principal crystalline phase. Heat treatment system of glass-ceramics was based on the differential thermal analysis. The crystalline phase, microstructure and characteristics of glass-ceramics were analysis by XRD, SEM and physical, chemical properties test. The result shows that the performance of glass-ceramics was superior to the other types of building decoration stone.

Osteoarthrosis is the most widespread disease of musculoskeletal system, which leads to different level of disability in 10–30% of cases. The age of the person is one of the key risk factors for the development of such disease. The most effective resolution is a surgery in which joints are replaced, but this method is very risky and expensive especially for elderly people. That is why development of the composition and research in new technological aspects of biotechnological medication is an actual course in pharmacy. The aim of research: development of the composition and production technology of injection solution of hyaluronic acid as sodium hyaluronate for the therapy of degenerate inflammatory disease of articulation. The object of the study is an injection with sodium hyaluronate for intra-articular administration. Evaluation of the test results when choosing the optimal technology for preparing the injection solution was carried out by the visual method (description, transparency), and by the method of rotational viscometry (viscosity). The suitability of the sterilization regime was determined by physicochemical methods (appearance, transparency, viscosity, pH of the solution) and microbiological method (sterility) according to the requirements of SPhU. The quantitative content of sodium hyaluronate was determined by spectrophotometry (SPhU, 2.2.25) using a carbazole reagent. The results of the studies  has  been developed the optimal composition  of the drug based on stabilized sodium hyaluronate by the excipient BDE. The resulting solution in its physical-chemical properties are a clear, highly viscous aqueous solution. The developed composition contains (in %): Sodium hyaluronate with a molecular weight of ~ 2 MDA (in terms of 100% substance) – 1.0; BDE – 0.75; sodium chloride – 0.85; phosphate buffer – up to pH from 5.0 to 8.5; water for injection – up to 100%. The critical parameters of the technological stages for the production of a drug with sodium hyaluronate are determined experimentally. Specific critical parameters are the degassing of a viscous solution, filtration and the conditions of the sterilization mode of the injection solution. It was experimentally established that the optimal parameters for the filtration stage are the use of a Durapore hydrophilic membrane made of polyvinyl difluoride (PVDF), the temperature of the solution is 50 ± 0.5 °C and the use of back pressure mode to reduce the volume wich is filtered per unit time. It was determined that the sterilization mode with saturated steam at a temperature of 121 °C for 8 min is optimal and ensures the quality of the solution in quality criterion of «Sterility». Samples of the experimental series of injection solution, obtained by the developed technology, comply with the requirements of SPhU for drugs for parenteral use according to physical-chemical and biological quality criteria as appearance, transparency, viscosity, pH of the solution, sterility, assay sodium hyaluronate.
