Ikan tuna merupakan komoditi perikanan andalan yang mudah sekali mengalami perubahan mutu. Pengawetan diperlukan untuk memperpanjang umur simpan ikan terutama di saat-saat musim ikan dan agar ikan dapat sampai ke tangan konsumen sebelum mengalami pembusukan. Teknologi pengawetan yang dapat diterapkan adalah pemberian asap cair karena bahan mengandung fenol yang berperan sebagai antioksidan. Tujuan dari penelitian ini adalah mengetahui pengaruh pemberian asap cair terhadap kandungan protein yang terdapat pada fillet ikan tuna dan mengetahui umur simpan fillet ikan tuna dengan penggunaan asap cair sebagai bahan pengawet yang disimpan pada suhu kamar (27o) dengan menggunakan metode ESS (Extended Storage Studies). Konsentrasi asap cair yang digunakan dalam penelitian antara lain konsentrasi asap cair 4%, konsentrasi asap cair 6% dan tanpa pemberian asap cair. Penelitian ini menggunakan metode ESS (Extended Storage Studies) yang diperoleh dari uji sensori selama penyimpanan dengan menentukan kesukaan terhadap penampakan, warna, bau, tekstur dan parameter lain yang diamati yaitu uji pH, kadar air dan uji protein. Hasil penelitian menunjukan bahwa dengan penambahan asap cair tidak mampu mempertahankan kadar protein yang terkandung pada fillet ikan tuna selama proses penyimpanan dengan rata-rata penurunan kandungan protein untuk semua perlakuan sekitar 4,01% dan penambahan asap cair 6% mampu disimpan selama 54 jam, 2,33 kali lebih lama dibandingkan dengan tanpa penambahan asap cair. Tuna fish is a commodity of fishery products is very easly get change of the quality. Preservation is needed to prolong the life of save the fish especially at the time when the fish season and so that the fish can reach the consumer before experiencing the decay. Preservation technology that can be applied is the giving of liquid smoke because the ingredients contain fenol who act as antioxidants. Objective of this research is to find out the shelf life of tuna fish fillets by using the liquid smoke as preservatives and stored at room temperature (27o). This research uses the method ESS (Extended Storage Studies) obtained from sensory test during storage with determine the gladness of the appearance, color , smell, texture and other parameters observed namely pH test, the level of water and protein test. Based on the research results obtained using the method ESS, shows that the quality of tuna fish fillets with the addition of liquid smoke is best obtained on the treatment of liquid smoke concentration of 6% with long storage time during 54 hours, with the main quality parameters cause damage obtained from pH test results and sensory test.

A study on quality of jelly candy formulated from k-carrageenan and konjac (jelly powder), hasbeen conducted. The objective of this study was to determine the best ratio of k-carrageenan andkonjac in the formulation of jelly candy. The ratio of k-carrageenan and konjac was varied from40:25; 35:30; 30:35; to 25:40. The quality parameters observed on jelly candy produced were gelstrength, elasticity, stickiness, water activity (a w), and sensory test. Results showed that the bestratio of -carrageenan to konjac was 40:25 (formula A) which produced candy with physicochemicalquality closed to that of commercial one with hardness of 470.7 g, elasticity of 4.5 mm, stickinessof 36.15 g, and a wof 0.5. While the results of the sensory test showed that the difference ratio of -carrageenan and konjac had no significant effect on the product. Based on that result, the bestformulation in production of jelly candy was formula A.

ABSTRACT         The aim of this study was to determine the effect on the freshness quality of thorns leaves milkfish storing at ambient temperature in vacuum packaging. This study used a non-factorial randomized design (CRD) which was storage time consisting of 4 treatments H0 (0 days), H2 (2 days), H4 (4 days), and H6 (6 days). Each treatment was carried out with 3 times replication. Based on the test results, it showed that the difference in different storage duration significantly affected on freshness value of fish (TVB and TMA) of thorns leave milkfish at ambient temperature, along with the time of storage of vacuum packaged fish, the value of TVB and TMA increased on the 6th day of storage (H6) had the highest TVB and TMA values of 24.40 mgN / 100g and 3.43 mgN / 100g, respectively. Keywords: milkfish leave thorns, pindang, sensory, vacuum.ABSTRAKTujuan dari penelitian ini adalah untuk mengetahui nilai kesegaran ikan pindang bandeng tanpa duri kemasan vakum pada suhu ambient. Penelitian ini menggunakan rancangan percobaan adalah Rancangan Acak Lengkap (RAL) non faktorial yakni waktu penyimpanan yang terdiri dari 4 perlakuan yaitu H0 ( 0 hari), H2 (2 hari), H4 (4 hari) dan H6 (6 hari). Masing-masing perlakuan dilakukan sebanyak tiga kali pengulangan, sehingga diperoleh jumlah satuan percobaan sebanyak 12 unit. Berdasarkan hasil pengujian, perbedaan lama penyimpanan berbeda secara signifikan mempengaruhi nilai kesegaran ikan (TVB dan TMA) bandeng tanpa duri yang disimpan pada suhu ambeien, seiring dengan  waktu penyimpanan ikan pindang bandeng tanpa duri kemasan vakum, nilai TVB dan TMA meningkat. Pada hari ke 6 penyimpanan (H6) memiliki nilai TVB dan TMA tertinggi masing-masing 24,40 mgN/100g dan 3,43 mgN/100g.Kata kunci: ikan bandeng tanpa duri, pindang, vakum

Aimed of this study was to determine the effect of the concentration of liquid smoke powder of coconut (Cocos nucifera Linn) and storage time and their interaction in maintaining the quality of smoked milkfish presto. The chemical qualities were based on water content and crude protein content, and the organoleptic qualities were based on colour, odour, texture and flavour. The research was conducted in Randomized Complete Block with two factorial design. The first factor was the concentration of liquid smoke powder 0%, 5% and 10%; whereas the second factor was storage time 0, 2 and 4th days at room temperature; using 3 replications. The results showed that smoking process with different concentration of liquid smoke powder and different storage time affect the chemical and organoleptic qualities of milkfish presto smoke, between 2 treatments their interaction gave significant effect (p <0.05) on milkfish presto smoke chemical quality and shows the linear pattern of trends (55.03% – 62.91% water content and 28.66% – 34.00% crude protein content). Based on organoleptic tests, the concentrations of 5% liquid smoke powder and 2 days storage time gave the best combination that can maintain the quality of milkfish presto smoke.Keywords: milkfish presto smoke, liquid smoke powder, storage time   ABSTRAKTujuan penelitian ini adalah untuk mengetahui pengaruh konsentrasi bubuk asap cair tempurung kelapa (Cocos nucifera linn) dan lama penyimpanan beserta interaksinya dalam mempertahankan kualitas bandeng presto asap. Kualitas kimia berdasarkan pada kadar air dan kadar protein kasar, sedangkan kualitas organoleptik berdasarkan pada warna, aroma, tekstur dan rasa. Rancangan percobaan menggunakan Rancangan Acak Kelompok dengan percobaan faktorial terdiri atas dua faktor. Faktor pertama adalah konsentrasi bubuk asap cair 0%, 5% dan 10%, sedangkan faktor kedua adalah lama penyimpanan hari ke-0, ke-2 dan ke-4 pada suhu ruang. Masing-masing perlakuan diulang sebanyak tiga kali. Hasil penelitian menunjukkan bahwa proses pengasapan dengan konsentrasi bubuk asap cair yang berbeda dan lama penyimpanan yang berbeda dapat mempengaruhi kualitas kimia dan organoleptik bandeng presto asap. Ditunjukkan juga bahwa hasil interaksi keduanya memiliki pengaruh  nyata (p<0,05) terhadap kualitas kimia bandeng presto asap dan menunjukkan pola kecendrungan dengan pola linier (kadar air 55,03% – 62,91% dan kadar protein kasar 28,66% – 34,00%). Berdasarkan uji organoleptik, konsentrasi bubuk asap cair 5% dan lama penyimpanan 2 hari adalah kombinasi terbaik yang dapat mempertahankan kualitas bandeng presto asap. Kata kunci: bandeng presto asap, bubuk asap cair, lama penyimpanan

Backgroud: During this traditional way of preserving fish is usually done by fumigation but is now developed another preservation method that uses liquid smoke method. Method: Liquid smokes used in this study are from the liquid smoke “waa sago” with concentration 5% + NaCl 5%, soaked 10 minute, the type of fish used tuna (Thunus sp). Meat tuna soaked in liquid smoke and stored for 10 days at room temperature. This study aimed to determine the microbiological quality (total plate count), soaked smoked tuna with liquid smoke "waa sago" during storage at room temperature. Result: Results of analysis of total bacteria in smoked tuna still eligible SNI and safe and suitable for consumption. Liquid smoke "waa sago" can extend the shelf life of tuna fish for 10 days at room temperature. Liquid smoke has antibacterial properties more easily applied and more secure than conventional smoke and tar fraction containing aromatic hydrocarbons have been separated, so that the products are free polutean liquid smoke and carcinogens. Conclusion: Total bacteria in tuna, marinated with liquid smoke waa sago stored for 10 days, still meets ISO standards. Liquid smoke from sago waa potential as an antibacterial because it can maintain the quality of smoked tuna microbiologically during storage at room temperature.

Study on the purification and quality test of used cooking oil with turmeric has been done. This study aims to determine the quality of cooking oil after purified turmeric. The quality parameters of oil studied were the moisture content, free fatty acids (FFA), and peroxide. The methods used for determination of these parameters were gravimetry for moisture content, acid-base titration for free fatty acids, and iodometric for peroxide. The test results for water from 0.6% to 0.4% free fatty acid from 1.2% to 0.2%, and peroxide levels before and after purification were successively from and 6 meq/g to 4 meq/g, respectively. Only free fatty acids of all three parameters met the requirement of SNI.

<p>The objective of the experiment study was to determine the effect of canary shell liquid smoke on the chemical, physical and sensory qualities of beef stored at room temperature. Beef samples were dipped in liquid smoke solution<br />with the concentration of 0, 4, 8, and 12% (v/v) during 15 minutes and then stored for 0,2, and 4 days at room temperature. Each treatment was carried out three times and the variables measured were water, phenol and acid<br />content, pH, water-holding capacity, cooking loss and sensory properties of samples. Data on chemical and physical qualities were analyzed using analysis of variance (Completely Randomized Design/CRD) with factorial 4x3. The<br />sensory properties were analyzed by a non parametric h-test. The results showed that liquid smoke concentration up to 12% significantly (p&lt;0.05) increased water holding capacity and cooking loss of samples. Storage time up to four days<br />significantly (p&lt;0.05) increased its pH value, cooking loss, whereas water-holding capacity was decreased. The meat sensory test showed that flavor and slimming rate were affected significantly (p&lt;0.05) by liquid smoke. There was no<br />interaction between liquid smoke concentration and storage time. In conclusion, the addition of liquid smoke up to 12% increased phenol and acid content, while the physical quality of meat has decreased. 123456The study was conducted to investigate the effect of curing on the quality of beef and buffen and also to find out the relationship between the quality of beef and buffen with their storage time. Six treatments of which three from beef were taken as dry salt cured beef (A), dry sugar cured beef (A), brine cured beef (A) and three from buffen as dry salt cured buffen (A), dry sugar cured buffen (A) and brine cured buffen (A). These samples were cured at room temperature for 10 days and then dried. The dried sample was stored for 120 days and analyzed on first day, 30th day, 60th day and 120th day. The quality of cured meat samples were studied by chemical analysis. All the samples were acceptable up to the end of the storage time. Dry matter, ash, crude protein and ether extract of all the samples decreased gradually with elapse of storage time. The initial (0 day) dry matter, ash, crude protein and ether extract content of the samples were ranged from 98.00-99.10%, 13.07-15.33%, 75.01-81.07% and 3.70-5.50%, respectively and at the end of 120 days of storage the dry matter, ash, crude protein and ether extract content of the samples ranged from 89.50-90.50%, 12.80-14.802%, 73.68-74.97% and 3.35-4.25%, respectively. Statistical analysis indicated that with the elapse of storage time quality parameters of meat samples decreased significantly (P<0.01). Quality parameters also varied among the samples. A significant difference exists in species when considering the value of fat. The relationship between the quality of beef and buffen shows that dry matter and crude protein are highly significant (P<0.01), ether extract is significant (P<0.05) and ash was statistically not significant with their storage times. Although the values are non significant, the loss of protein was lower in brine cured meat than other sample. Field activities conducted to determine the level of mercury content in the water flow of Lake Payawan,Tumbang Panggo Village, Tasik Payawan District, Katingan Regency, Central Kalimantan Provincebased on laboratory test results to obtain the results of mercury content in upstream to downstream ofLake Payawan. From this research, it is necessary to test the quality of water in the laboratory in orderto analyze the water quality parameters so it can be known mercury content (Hg) in Lake Payawanwater flow. From the test results on 6 points river water samples in the laboratory of the IndustrialResearch and Standardization Center of Banjarbaru City showed the highest mercury content found insample number 3 with P. 2076 test code taken at the location of the middle Lake Payawan TasikPayawan District with mercury levels located At a rate of 0.069 μg / l or 0.000069 mg / l, this reflectsthe presence of other factors that may also affect the level of mercury content in Lake Payawan flow.

Liquid smoke contains acid, carbonyl, and phenolic compounds, so it is very appropriate to be used as a preservative. Traditional smoking can be replaced with liquid smoke because it is safer and more practical. The study of the use of coconut shell liquid smoke has been used in skipjack fish to determine the effect of liquid smoke concentration and storage time on dissolved protein content and total bacteria in smoked fish. The quality of smoked fish was determined by two treatments, namely the variation in the concentration of liquid smoke (2, 3, 4, and 5%) and storage time (2, 4, 6, 8, and 10 days). The results showed that the best concentration of liquid smoke to produce smoked skipjack fish is 3% with a water content of 62.41% and dissolved protein content of 17.58%. The maximum storage time of smoked skipjack tuna is 6 days with a total plate count (TPC) value or total bacteria 1.8 x 105.

The addition of salt and herbal plants such as bay leaf (Eugenia polyantha) and lemongrass (Cymbopogon citratus DC) extacts can extender the shelf life and increase the flavor of the salted eggs. The purpose of this study was to determine the quality of eggs produced from using the herbal plants in terms of the organoleptic testing. This research used eggs from laying hens with salted egg making media consisting of rubbing ash plus salt, supplemented with bay leaf (Eugenia polyantha), lemongrass (Cymbopogon citratus DC), with storage period of 10 days. Organoleptic test results showed that the addition of bay leaves and lemongrass to the production of salted eggs, did not significantly improve the quality of salted eggs produced. The lack of storage time in the egg marinating process led to the incomplete, in salt water absorption into the egg. It is concluded that the addition of bay leaves and lemongrass to the media of making salted chicken eggs did not have a significantly different effect on the organoleptic quality of the salted eggs.
